Development of Food Questionnaire for Korean Americans (재미 한인을 위한 식이섭취빈도 조사 설문지에 관한 연구)

  • This study was conducted to develop a food frequency questionnaire for an epidemiological study of dietary patterns and nutrient intake among Koeran American. A random sample of 101 Korean Americans between the ages of 17 and 71 residing in New York and New Jersey was interviewed by the method of 24-hour dietary recall. The foods Korean Americans consumed most frequently were rice (91% of the population), kimchee (81%), coffee(59%), bread(49%), apple(45%), bean sprouts (33%), milk (30%), dried anchovies (27%), eggs(27%), juice (26%), bulgogi, and soybean paste soup (24%, equally. The classification of food items standardized portion sizes were according to both Block's questionnaire and the standardized portion sizes by the Korean Nutrition Association. The value of this food frequency questionnaire is that it can accurately estimate dietary food patterns and nutrient intake among Korean Americans for epidemiological studies. It could also potentially be modified to study the relationship between specific diseases and food intake in the future.

Effects of Cheap Talk on Improving Communicative Ability in Severe Broca's Aphasics (칩톡 사용이 중증브로카실어증 환자의 의사소통기능 개선에 미치는 효과)

  • This study investigated the improvement level of communication ability by mediation method using Cheap Talk in four severe Broca's aphasia patients, who have more difficulties in expression than comprehension. In the preliminary and post test, making nutritious rice dish and vegetable pancakes were performed. In the mediation stage, the activities of going to markets, making kimchi and bean paste soup were performed and script activities were performed in the first week and activities using picture cards were executed in the next week by turns. The results of this study were as follows. First, the communication functions of all subjects were improved under all of the courses using Cheap Talk. Second, the method of mediation by using picture cards showed higher communication functions than the method of mediation by using script activity with the use of Cheap Talk.

A study of dietetic on the constipation (변비(便秘)의 식료방법(食療方法)에 관한 연구(硏究))

  • Objectives : This research examined about dietary therapy on the constipation based on the literary findings, for clinical treatment and prevention of the constipation. Methods : This Research examined on histories, compositions, applications, and effects of the constipation on about 100 cases of dietary therapy of the constipation from recent Chinese literatures Results : 1. Various vegetables, animals and mineral materials including herbs, grains, vegetables, fruits, food and drink were used for the dietary therapy. 2. Methods of the preparation for use as therapeutics were decoction, pulvis, gruel, medicinal wine, cake, tea, paste and gelatin and etc. 3. Frequently used materials were sesame oil, honey, ear mushroom, shiitake mushroom, kelp, walnut seed, hemp seed, groundnut, glutinous rice, apricot stone, yellow bean peel, radish, potato, spinage, and spring onion. Conclusion : Though dietary therapy for the constipation is not based on clinical or experimental data, but through experience. It is mostly based on Yin-Yang and five elements, visceral manifestation, channels and their collateral channels and chinese herbal medicine theories. If we use them properly according to oriental medicine method, it will be effective on treating and preventing the constipation.

  • The living body consists of proteins, carbohydrates and fats. The above components are unstable to the change of circumstances ; thus ; when they are buried under the ground for a long time, they are disintegrated by physical effects such as pressure, water etc. However, it was recently reported that the part of the components of living body, especially fat thought in small guantity, remained in a relative stable state for many milleniuns. In addition, turned out that the structure of the composition of the fatty acid and sterol is different according to their species. For example, the plants - rice, barley, bean - and the animals - (togs, cow, pig, fish - have different structure of fat. Residual fat analysis is a research in the chemical composition of fat vemained in archaeological evidences on the basis of chemical structural differences as mentioned here in above. This paper introduces the residual fat analysis of archaeological evidences practical in Japan.

Effects of Sulfur Dioxide on Catalase Activity in Plants (식물체의 catalase 활성에 미치는 아황산가스의 영향)

  • The experiments were conducted to examine the effects of sulfur dioxide on catalase activity in germinating seeds under dark conditions and in green plants under light conditions. Three kinds of plants, bean (Glycine max M.), cabbage (Brassica oleracea L. Chungbang No.1) and rice (Oryza sativa L. Suwon No.213-1) were used in this study. Both thegerminating seeds and the leaves were treated with various concentrations of sulfur dioxide for both one green plants with two and twelve hours. In the results of the measurement of catalase activity it was found that plant injuries by sulfur dioxide for the period of photosynthesis were higher than those for the period of respiration. In the control, apparent catalase activity under the light condition of photosynthesis showed a considerable decrease in comparison with catalase activity under the dark condition of respiration. This tendency also appeared markedly in the gas treatment. In the gas treatment for twelve hours, the decrease of catalase activity was higher than that of one hour in both photosynthesis and respiraton. It was thought that sulfur dioxide was an inhibitor of catalase activity in higher concentration of the gas.

The Use of the Pathogen-specific Bacteriophage BCP8-2 to Develop a Rice Straw-derived Bacillus cereus-free Starter Culture (단일 박테리오파지를 이용한 볏짚 유래 Bacillus cereus free 스타터 컬쳐의 개발)

  • The purpose of this study was to develop a rice straw-derived Bacillus cereus (B. cereus)-free starter culture for traditional soybean fermented products using a B. cereus-specific bacteriophage, BCP8-2. To determine the optimal medium that supports the growth of rice straw-derived microorganisms and BCP8-2 activity, 5 different culture media were tested. The 5% ground bean (GB) medium was selected for further study. No B. cereus was detected in the BCP8-2-treated rice straw in GB medium, whereas B. cereus at a level of $10^7$ CFU/mL was recovered in the no-phage control. The total bacterial count reached approximately $10^9$ CFU/mL regardless of phage addition. When the 16S rRNA sequence-based microbial community was monitored using denaturing gradient gel electrophoresis (DGGE) and pyrosequencing, a similar microbial community was observed in the phage-treated and control samples. In conclusion, we demonstrate that phage can be used to prepare a rice straw-derived B. cereus-free starter culture with minimal effect on natural microflora.

Survey on the Chitinolytic Activity from Some Plants for the Industrial Utilization (공업적 이용을 위한 식물성 키틴분해효소의 탐색)

  • The survey on the chitinolytic activity of some plants was performed for the purpose of obtaining some reliable and inexpensive sources of chitinase. Rice, soybean for sprouting, kiwi fruit, almond and crude papain were investigated. Rice bran, seed coat of the soybean and the pericarp of kiwi fruit showed a considerable activity, while the bean after the removal of the seed coat, the mixture of rice integument and endosperm, polished rice, and defatted soybean powder didn't have any detectable activity. These crude enzymes have shown to contain both endo- and exochitinase activity. The effects of pH and temperature on the enzyme activity were variable. Furthermore we have observed the chitosanolytic activity from these enzyme Preparations. The rice bran had the highest activity in the enzymatic degradation of chitosan, and seed coat of soybean and the pericarp of kiwi fruit followed. On the basis of the fact that crude papain was not only commercially available but also the most potent in the endochitinase activity and the lowest in the exochitinase activity, we could conclude that crude papain was considered as the most suitable source of the chitinase among plants studied in this paper. In addition, rice bran was worth further investigation from the point of utilizing agricultural by-product.

Difference between variable was significant that age, religion that have pride about traditional food, attainments in scholarship, monthly income that used time much traditional food, degree that give from traditional food to snack is age, attainments in scholarship, years of married life, religion, reason that give snack to traditional food is daughter-in-law order, kind of traditional food that give to snack is age, monthly income mouth, opinion about accession and development of traditional food is age, religion, daughter-in-law order, reason that must inherit and develop traditional food is attainments in scholarship, time that eat much traditional food is attainments in scholarship, a person, medium that learn cuisine of traditional food is age, opportunity that is been interested to traditional food is age, attainments in scholarship, years of married life. By utilization rate of food-tasting food subdivisions of the season, used much by rice-cake soup, fermented rice punch, order of cake made from glutinous rice New Year's Day, by herbs, Gimgui, Ogokbap's order January Full Moon Day on the lunar calendar. By a cake made in the shape of a flower, azalea honeyed juice mixed with fruits as a punch order to Samjitnal, by beans panbroiling, dropwort raw order Buddha's Birthday, Tano Festival uses Charyunbyeong and used Tteoksudan in Yudu and used much by young chicken soup with ginseng and other fruits, watermelon order period of midsummer heat. Used songpyon and fermented rice punch in Full-moon Harvest Day, and Junggujeol used Chrysanthemum griddle cakes made in flower Pattern, and red-bean gruel taken on the winter solstice, and Nappyeongjeolsik was utilizing Goldongban. Pyebaek food utilization ratio was high the utilization rate by chestnut, jujube, chicken, wine order. The contributiveness food utilization rate was high the utilization rate by rice cake, dried croaker, fruit, oil-and-honey pastry order. The large table food utilization rate was high the utilization rate by fermented rice punch, fruit, steamed short-ribs order.
