Rice is one of the most important food crops since it is consumed by approximately 60% of the world's population. The most abundant component of rice grain is starch that is an important source of energy. The second abundant component is protein, which is an important protein source for people in many developing countries that rarely take animal protein. However, the rice protein lacks the essential amino acid lysine. Therefore, nutritional improvement in the essential amino acid composition of rice proteins is required. On the other side, rice grain has attracted attention as a diet and health food in developed countries, because its proteins have superior physiological and food processing properties. Thus, nutritional improvements in rice seed proteins by changing amino acid composition or introducing an useful protein or peptide have been studied. This review aims at assessing the current research status of biosynthesis, accumulation, genetic improvement of seed storage proteins by mutation or genetic engineering in rice.

'Saemimyeon' a Tongil-type rice variety (Indica ${\times}$ Japonica), which contains high amylose contents is suitable for rice noodle production. Nowadays, the major parts of rice processing industry that includes products like rice flour and noodles are expected to partially replace wheat flour market. The volume of rice noodle market is getting bigger and can contribute to the rice surplus and farmer's income. This study was carried out to promote productivity and flour-making quality of 'Saemimyeon' by finding the most suitable transplanting and harvesting times. The transplanting days used were May $10^{th}$, May $17^{th}$, May $24^{th}$, May $31^{th}$, June $7^{th}$ and June $14^{th}$ and the planting distance used was 30 x 12cm. In addition, harvesting time was determined by days after heading time (40, 45, 50, 55 and 60 days). The field experiment was conducted at the experimental field in Miryang (Southern plain area of Korea) from 2015 to 2016. Our results suggest that the optimum transplanting days were from May $24^{th}$ to May $31^{th}$ which resulted to an average yield of 748~751kg/10a. Interestingly, yield was sharply decreased below 700kg/10a before May $10^{th}$ and after June $7^{th}$. The average grain filling rate before May $31^{th}$ was more than 83% but it declined to 75% after June $7^{th}$. The average temperature ranges from heading time to harvesting time was $ 21\sim25^{\circ}C$ and the estimated optimal temperature was $23.4^{\circ}C$ which is similar to May $24^{th}$ by regression equation. We found that the optimal harvest time was 45~50 days after heading time. It is hypothesized that low temperature at seed maturation time caused the lower grain filling rate therefore 'Saemimyeon' need to be transplanted before May $31^{th}$ for higher productivity. We found no statistical variation in amylose contents among experimental plots (28.2~30.4%). We conclude that the productivity of 'Saemimyeon' highly depends on temperature that is critical for grain filling stage controlled by transplanting time.
Two experiments were conducted to determine the digestible energy (DE) and metabolizable energy (ME) content of 19 rice bran samples and to develop prediction equations for DE and ME based on their chemical composition. The 19 rice bran samples came from different rice varieties, processing methods and regions. The basal diet was formulated using corn and soybean meal (74.43% corn and 22.91% soybean meal and 2.66% vitamins and minerals). The 19 experimental diets based on a mixture of corn, soybean meal and 29.2% of each source of rice bran, respectively. In Exp. 1, 108 growing barrows ($32.1{\pm}4.2kg$) were allotted to 1 of 18 treatments according to a completely randomized design with 6 pigs per treatment. The treatment 1 was the control group which was fed with basal diet. The treatments 2 to 18 were fed with experimental diets. In Exp. 2, two additional rice bran samples were measured to verify the prediction equations developed in Exp. 1. A control diet and two rice bran diets were fed to 18 growing barrows ($34.6{\pm}3.5kg$). The control and experimental diets formulations were the same as diets in Exp. 1. The results showed that the DE ranged from 14.48 to 16.85 (mean 15.84) MJ/kg of dry matter while the ME ranged from 12.49 to 15.84 (mean 14.31) MJ/kg of dry matter. The predicted values of DE and ME of the two additional samples in Exp. 2 were very close to the measured values.
Physico-chemical characteristics of glutinuous rice during soaking treatment at different temperature for Yu-Kwa (Korean traditional glutinous rice cake) processing were determined. Crude fat and protein contents of soaked glutinous rice decreased up to 30% to 50%, respectively, compared to raw rice, but there was a little difference in soaking periods. As the soaking period increased pH of soaking solution was decreased from 6.4 to 3.3, while Brix was increased from 0.5 to 13.6. Titration acidity of soaking solution and soaked rice were increased to 22.9 and 3.4, respectively, as the soaking period increased to 9 days at $20^{\circ}C$ soaking, but it was increased rapidly to 29.8 and 4.0, respectively, at $30^{\circ}C$. The three kinds of free sugar such as glucose, sucrose and maltose were detected. Glucose was the major produced free sugar during soaking, sucrose was not detected after 1 day soaking period. Characteristics of amylographic viscosity on soaked rice showed that there are no difference in pasting temperature by the soaking time and temperature, but the maximum viscosity was drastically increased on $1{\sim}2\;day$ soaking period and decreased rapidly after $2{\sim}3\;day$.
The purposes of this work were to investigate the changes in GABA content of six different rice cultivars along with viatmin E content and antioxidant activity after germination. Brown rice was soaked for 24 hr at 25$^{\circ}C$ and then germinated at 37$^{\circ}C$ for 48 hr. The content of GABA and vitamin E in the rice samples was measured by using spectrophotometeric and HPLC methods, respectively. Antioxidant activity was measured by ABTS (2,2'-azino-bis-(3-ethylbenzothiazoline-6-sulphonic acid)) and DPPH (1,1-diphenyl-2-picrylhydrazyl) radical scavenging methods. GABA and vitamin E contents were significantly increased after germination while no significant change in the antioxidant activity was observed. Among the samples tested, Geunnun cultivar contained the highest GABA content before and after germination. On the other hand, Sinmyungheugchal cultivar showed the highest content of vitamin E and antioxidant activity compared to other rice cultivars. In conclusion, the germinated rice with high GABA content can be used for a functional ingredient in rice processing industry.

This study was carried out to investigate the chemical characteristics of different organic liquid fertilizer during fermentation at plastic house in Chungbuk Agricultural Research and Extension Service. Chicken dung, soybean meal, and rice bran were used for nutrient sources. The obtained results from this study were summarized as follows; Total nitrogen contained the highest in soybean meal as 55 mg·kg-1, and phosphate and potassium contained high in chicken dung and rice bran in organic liquid fertilizer materials. The pH of chicken dung was near 7.0, that of soybean meal and rice bran indicated acidity(pH 3.8~4.4). The electrical conductivity of chicken dung consistently increased during fermentation, and that of soybean meal and rice bran increased and decreased early season and increased at late incubation period. Hydrogen sulfide gas occurrence of chicken dung was 3,200 mg·L-1 at early season and 1,600 mg·L-1 at late incubation period, and that of soybean meal and rice bran treatments were not or very low concentration of hydrogen sulfide gas during manufacturing period. The nitrogen and calcium content of organic liquid fertilizer were the higher in chicken dung and soybean meal than rice bran. The phosphate and magnesium content of rice bran was the high as 5.6 g·kg-1 and 1.5 g·kg-1, respectively. There was no difference in potassium content among the different liquid fertilizers during fermentation.

Glutinous rice is a key grain quality trait occupying an important part during rice processing in most rice growing areas. Amylose content (AC) of rice determine eating quality which is one of the major traits in rice breeding program. In this study, a gene pyramiding approach was used to introduce two dull genes, responsible for low amylose contents, for glutinous rice breeding using marker assisted selection (MAS). Two dull genes were located on chromosome 6 (wx-mq, AC: 12.7 %) and chromosome 10 (du1, AC: 10.3%), respectively. To test whether these two dull genes have an epistatic interaction, we developed an F2 population by crossing two nearly isogenic lines(NILs) harboring wx-mq and du1. Gene based marker and KASP marker were used to select NILs(NIL-nor, NIL-wxmq, NIL-du1, and NIL-wxmq/du1) from the F2 population. A two-way ANOVA revealed an epistatic interaction between the two genes in the F2 population. The mean of Amylose contents for NIL-nor, NIL-wxwq, NIL-(du1, and NIL-wxmq/du1 were 17.3%, 12.5%, 9.7%, and 7.2%, respectively. This interaction was confirmed by an analysis of NILs indicating that both genes are involved in the same genetic mechanism controlling amylose contents. This result will be useful for rice breeding related to amylose content.
The color sorting technique utilizing the image processing method is very applicable tool to analyze motion of a free-falling object in many agricultural and industrial research fields. In the present study, we have developed an image processing system and algorithm to sort good quality rice grains effectively from the bad ones. The system employs a high speed rate line-scan CCD camera with 2K-pixels and worked with a high speed DSP and FPGA in-line. It can accumulate acquired line-scan image data and visualize each grain image clearly. As a result, we can easily calculate the number of pixels occupied by grain(=grain size), gray level and its correct position by visualizing grain images rapidly.
Whole, peeled sweetpotatoes were subjected to four different processes: 15 min microwave heating followed by 15 min baking (1), 90 min baking (2), 15 min microwave heating (3), and 15 min boiling followed by 15 min microwave heating (4). Samples of green and cured roots were used in the study. Scanning electron photomicrographs revealed that cured roots contained larger numbers of starch granules in the parenchyma cells than green roots, most of them compounded. The starch in cooked green roots was gelatinized while for cured roots it was mostly hydrolyzed into dextrins and sugars. Starch in process (3) roots was mostly gelatinized while in process (1) and process (2) roots gelatinized starch appeared in little quantity, thus it was primarily converted to dextrins and sugars. The process (4) resulted in little conversion of starch. The process (1) product resulted in a similar product to the process (2) product.
An engineering design of the machines and equipment for processing grain as well as an understanding of processing itself need the knowledge of thermal properties of grain. Thermal properties of grain are thermal conductivity, thermal diffusivity and specific heat. Knowledge of any two and the bulk density of grain enables the third to be calculated. Several workers have investigated these properties, with special emphasis on thermal conductivity and diffusivity. However, some information is available on the specific heat of rough rice and barley but it is available only for a foreign variety of grain and for as a function of moisture content only. The objectives of this study were to develop a model for the specific heat of rough rice and barley which were a staple products in Korea as a function of initial temperature, moisture content and porosity of grain with cooling curve method, and to analyze the effect of these factors on the specific heat of rough rice and barley. The results of this study are summarized as follows; 1. The specific heat was $1.8209-2.7041kJ/kg\;^{\circ}K$ for Naked barley, 1.8862-2.5625 k.l/kg K for Covered barley, $1.5167-2.3779kJ/kg\;^{\circ}K$ for Japonica rice and $1.5260-2.3981kJ/kg\;^{\circ}K$ for Indica rice. 2. The model for the specific heat of rough rice and barley as a function of initial temperature, moisture content and porosity of grain was developed. 3. Specific heat of rough rice was decreased with initial temperature, but specific heat of barley was increased with initial temperature. 4. On the whole specific heat of sample grain was increased with moisture content of grain. 5. Specific heat of the grain was found to decrease with porosity except Indica rice.
