The Biblographical Study on the Processing Methods of Traditional Nuruk (전통누룩 제조에 대한 문헌고찰)

  • Review of Korean and Chinese traditional nuruk was performed on the longitudinal change of ingredients and method of each nuruk. Manufacturing process of common nuruk was that flour, wheat chaff, grinded green pea and smartweed were doughed, footpressed to make 凹 type, covered it with mugwort, lotus leaf and cocklebur leaf and suspended it with string for 60 days to get wild mold. This is named Beungkuk. Manufacturing process of Sankuk was that cooked rice or uncooked rice grain was scattered, mixed often for 30 days. Ryokuk and Hongkuk are called Sankuk.

Use of Nisin as an Aid in Reduction of Thermal Process of Bottled Sikhae (Rice Beverage)

  • Conventional commercial thermal process for preparing Sikhae (Rice beverage) in a hermetically sealed container was evaluated to solve the nutritional deterioration and organoleptic inferiority problem caused by severe heat treatment. A milder thermal process with an aid of Nisin, a GRAS-grade, selectively germicidal compound, was introduced to destroy the putrefactive microorganisms. In this experiment, hot-filling method with Nisin, and thermal processing (at 110$^{\circ}C$ for 15 minutes with Nisin, at 121$^{\circ}C$ for 25 minutes without Nisin) were compared. The quality of Sikhae could be enhanced and over 90% of the thermal process could be conserved by this process in terms of sterilizing value without quality deterioration when processing the bottled Sikhae at 110$^{\circ}$ for 15 minutes $\{(F^{10}{_{121})_{process}=1.54\}$.

Xanthan Gum Production from Hydrolyzed Rice Bran as a Carbon Source by Xanthomonas spp.

  • The aim of this study was to utilize rice bran, the main waste product of paddy processing, in xanthan gum production by Xanthomonas campestris fermentation. Deffated rice bran was enzymatically hydrolyzed using cellulase, gluco-amylase, alpha-amylase and xylanase at various pHs and temperatures within 0-12 h. The highest sugar content reached at $35^{\circ}C$, pH 5.5 in 6 h with 41.66%. The enzymatic hydrolysate was used as the carbon source for xanthan gum production by X. campestris NRRL B-1459 and X. campestris pv. campestris. The highest productivities obtained were 21.87 and 17.10 g/L, respectively. Viscosity measurement for the obtained xanthan gums and commercial gum was carried out in gum solutions at various pHs and temperatures. The highest viscosity was reached with 1% gum solutions at $20^{\circ}C$ and pH 5.5 for all gums with viscosity values of 470, 131 and 138 mPa sec, respectively. This work has provided relevant scientific information about the use of rice bran, an abundant agroindustrial residue, to produce xanthan gum.

Ruminal Dry Matter and Fiber Characteristics of Rice Hulls-bedded Broiler Litter Compared with Rice Straw

  • Ruminal digestion of dry matter (DM) and neutral detergent fiber (NDF) of processed (ensiled, deepstacked or composted) broiler litter (BL) was determined in situ and in vitro, and compared with rice straw (RS). DM disappearances at 24 and 48 h and digestion of differently processed BL were higher than those of RS. Compared with RS, processed BL was low in NDF disappearance at 72 h incubation, digestion rate ($K_dB$) and digestibility at 0.025 of passage rate; however, deepstacked BL was similar in these NDF characteristics. Processing of BL affected ruminal digestion of nutrients such as DM and NDF adversely. NDF of composted BL, especially, was the most indigestible. This in situ nutritional evaluation indicated that deepstacked BL, the most widely used form of BL, was superior in DM characteristics (fractions, ruminal disappearance and digestibility) and similar in NDF characteristics (ruminal disappearance and digestibility) to RS.

  • This study aims to determine the technical aspects of organic food systems in rice agribusiness and analyze the pattern of economic and institutional structures of agribusiness in East Java of Indonesia. Also, this study investigates the feasibility of farming and understands the strategies of rice agribusiness development. This study was conducted in several places in East Java of Indonesia, covering the district of Blitar, Kediri, Bondowoso, Tulungagung, and Malang. The data were collected through a structured questionnaire and focus group discussion. Furthermore, the data were analyzed using efficiency analysis, revenues analysis, and SWOT analysis. The findings indicated that, technically, the district of Bondowoso, Malang, Kediri, and Tulungagung had implemented the organic systems, while the district of Blitar applied under semi-organic systems. The pattern of economic institutions of agribusiness commodity consists of the production facility, farming, post-harvest and product processing, marketing, and support services institutional. These results showed that the organic rice farming is economically viable, and the government support was provided in the form of the establishment of development centers, the facilitation of agricultural machines, integrated crop management field school, and the organic certification. These findings suggest that several places in East Java have prospective opportunities for production of rice agribusiness development.

Some Physical Properties of Chopped Rice Straw (절단 볏짚의 물리적 성질)

  • This study was performed to determine the kinetic friction coefficient bulk density, dynamic and static angle of repose, and terminal velocity of the chopped rice straw in the moisture range of 8~23%, which could be used for better design and operation of the processing machinery and handling facilities. Friction coefficient was determined from the horizontal traction force measured by pulling the container holding the mass of rice straw on the various plate materials. Bulk density was measured with an apparatus consisting of a filling funnel and a receiving vessel. Dynamic angle of repose was calculated from the photos of bulk samples piled by gravity flow on a circular platform. Static angle of repose was determined by measuring the side angle of the bulk material which was left in the cylindrical container after natural discharge of the bulk sample through a circular hole in the bottom plate. Kinetic friction coefficients of rice straw on the PVC, mild steel, stainless steel, and galvanized steel were in the range of 0.303~0.434, 0.222~0.439, 0.204~0.448, and 0.206~0.407, respectively. and indicated linear increase with moisture content. The effects of moisture change on the friction coefficients were in the order of PVC, mild steel, galvanized steel, and stainless steel. Bulk density, dynamic and static angle of repose, and terminal velocity were in the range of 56.8~60.3 kg/m$^3$, 41.4~45.9$^{\circ}$, 94.4~100.8$^{\circ}$, and 1.07~4.48 m/s, respectively, and were increased linearly with the moisture content.

Optimization of Sweet Rice Muffin Processing Prepared with Oak Mushroom (Lentinus edodes) Powder (표고버섯 첨가 찹쌀머핀의 최적화 및 품질특성)

  • The purpose of this study was to bake sweet rice muffins with oak mushroom ($Lentinus$ $edodes$) powder. The process included substituting sweet rice flour for cake flour and adding oak mushroom powder. This study determined the optimal mixing conditions of oak mushroom muffins by adjusting the amounts of oak mushroom powder, whole eggs, and soybean oil. The mixing conditions for the oak mushroom muffins included 3 categories: oak mushroom powder (X1), whole eggs (X2), and soybean oil (X3) by Central Composite Design (CCD) which was optimized by Response Surface Methodology (RSM). Oak mushroom muffin formulation was optimized using rheology. Yellowness (p<0.001) and redness (p<0.05) displayed a linear model pattern, whereas lightness (p<0.05) was represented by a quadratic model. Among the sensory properties, variables that appeared to show significant values such as appearance (p<0.5), texture (p<0.5), and overall quality (p<0.5) were used to identify optimums. The result of mechanical properties showed significant values in gumminess (p<0.5) and chewiness (p<0.5). The numerical and graphical methods used in this study determined that the optimum formulation for oak mushroom powder sweet rice muffins was 8.75 g of oak mushroom powder, 235.95 g of whole eggs, and 19.93 g of soybean oil.
