The objective of this study was to develop a computer measurement and control system which enable it possible to manage the natural air rough rice drying and storage properly and safely. The following contents of work were taken in this study in order to fulfill the above goal: 1) Design and construction of measurement system which can measure the rough rice drying conditions automatically and transfer them to computer system for data processing. 2) Development of a management software which can determine the need of fan operation by the analysis of drying and/or storage conditions. 3) Design and construction of a control system which deliver the computer decision of fan operation and make it on and off. 4) Technical and economical analysis of the computer measurement and control system development by the comparison experiments of the computer management and of the manual.

우리나라의 미곡종합처리장(Rice Processing Complex, RPC)은 1991년 시범사업으로 2개소가 설치된 이래 2002년 말 현재 328개소가 설치 운영되고 있다. 현재 RPC는 벼의 수확 후 처리공정을 일관화 한 시설일 뿐만 아니라 쌀 유통의 중심시설로 성장하였다. RPC의 건조시설은 대부분이 열풍건조와 상온통풍건조를 조합하여 사용할 수 있도록 설계되어 있다. 열풍건조에는 순환식건조기와 연속식건조기가 이용되고 있으며, 상온통풍건조에는 원형철제빈(사일로)이 주로 이용되고 있으며 일부 사각빈이 이용된다. 원형철제빈은 벼의 건조와 저장을 겸용하고 있다. (중략)

This study was conducted to develop a grain moisture content measurement sensor for automatic control of rough rice drying by natural air. For the above objective, the electrod type sensor was designed and tested. The sensor was able to produce electrical resistance which changes with moisture content of grain. An A/D converter and a micro-computer wed for processing measurement data of sensor. The developed sensor satisfied most design requirements and the results of statistical analysis show that there it no difference between the measurement method of sensor developed and of the dry-oven. Using the developed sensor and measurement system, we are able to measure moisture content of rough rice automatically in drying by natural air.
Developing rice endosperm cells display two morphologically distinct rough endoplasmic reticulum (ER) membranes, the cisternae ER (C-ER) and theprotein body ER (PB-ER), the latter delimiting the prolamine protein bodies. We (Li et al., 1993) have recently shown that the storage protein mRNAs are not randomly distributed on these ER types; the C-ER is enriched for glutelin mRNAs, whereas the PB-ER harbors predominantly prolamine transcripts. To address whether these ER types have differnet capacities to translate these mRNAs and translocate their proteins into the lumen, a microsomal fraction enriched in C-ER vesicles was prepared from devleoping rice seeds. When present in an in vitro translatin system, the microsomes were able to proteolytically remove the signal peptide and internalize both preproglutelin and preprolamine within the microsomal vesicles. Of the two species, preprolamine was more effectively translocated and processed. These results suggest that the C-ER has the capacity to recognize and bind both storage protein mRNAs during protein synthesis. Moreover, efficient translocation and processing of glutelin requires additional factors that are deficient or absent in the in vitro system.

It has been the need for commercializing Korean traditional food using the grains like the Korean rice cake as improvement in the food life depending on advanced food processing and changes to the industrial society. However, the Korean traditional food using the grains has some weak point such as the hardness as retrogradation of starch, reducing of texture and flavor, and decrease of coefficient digestibility in human body if it's left unattended for a long time. In this paper, it was investigated that the delaying or preventing method for retrogradation of Korean rice cake at its production and storage using the literature search of patent.
As for Ethephon treatment, the heading stage is 2 days later at the concentration of 250 ppm and 500 ppm for the booting stage that when there is no treatment, 4 days later at the concentration of 1000 or more ppm but no difference for the blossoming and ripening stage. The culm length get shorter as the concentration of Ethephon is higher and the rate of culm length damaged is 37% for 1500 ppm of booting stage, which is the most effective processing, and the inferior culm length damage rate is bigger than the superior culm length damage rate. There is no difference between the number of glumous flower, culm and litter weight and the non-processing and as for the thousand grain weight, it is slightly bigger than when there is not any processing. The rate of germination is indifferent, the number of seeds get numerous regardless of the concentration of treatment and the number augments by 5% maximum for the booting stage. The number of days it takes from treatment of desiccant to the moisture content for harvesting time is respectively 15 days for seeds of 30 day-treatment, 10 days for seeds of 35 days-treatment and 5 days for seeds of 40 to 45 day-treatment. As for the harvest time after treatment of desiccant, the treatment at $30^{th}$ days and $35^{th}$ after the earing is 8 days earlier than the culture by conventional methods, 8 days earlier for the treatment at $40^{th}$ day. When the desiccant treatment is implemented, the thousand grain weight is heavier as the number of days of treatment gets later. The rate of germination gets higher as the number of days of treatment after earing gets later but there is no statistically significant difference 35 days after the earing. Yields are 37% compared to the culture by conventional methods for the treatment of 30 days after the earing, 70% compared to the culture by conventional methods for the treatment of 35 days after the earing, and 92% compared to the culture by conventional methods for the treatment of 40 days after the earing. The treatment before the physiological maturity impacts greatly upon the quality of seeds.
Fermented foods available in Korea may be classified into four groups, namely, fermented soybean products, fermented cereal products, fermented vegetable products, and fermented fishery products based on raw materials used. The representative fermented foods based on soybean are Kanjang(soysauce), Doenjang(fermented soybean pastes), and Kochujang(red pepper added-fermented soybean paste). Such fermented products are made using Meju(functioning as a starter and prepared by fermentation of steamed soybean mash) as an essential ingredient, and used widely as a soup base and/or in seasoning side-dishes for everyday meals year around. Excepting Sikhae, all fermented products based on rice and other cereal grains are of alcoholic nature. Takju (Makgeolli) used to be made using rice as the major raw material, however, mainly due to the shortage of rice in recent years, other cereals, such as, barely, corn, and wheat flours are also used to replace rice today. Owing to such changes in the raw materials. the popularity of Takju has been somewhat reduced, yet it is still widely consumed in rural areas. Although Chungju is a popular rice wine with superior qualify over Takju, the amount consumed is considerably limited. The highest qualify rice wine, Bupju, in particular, is made by a low temperature fermentation using glutinous rice. Kimchi is an unique fermented vegetable product of long tradition in Korea. Although it was for consumption mainly in winter season serving as a source of vitamins, today it is widely used throughout the year. Except Kkakdugi and Dongchimi, all of the fermented vegetable products contain salted Korean cabbage as an essential item, while they abound in varieties depending on material composition and methods of processing, and also on seasons and localities Next to Kimchi in this category is Kkakdugi made of raddish in popularity and quantity consumed. The four groups of fermented food products described above are reviewed in some detail and evaluated in terms of their nutritional significances, processes and microorganisms involved. and their commercial potentials. Jeotkal (or Jeot) is a name given to all fermented products of fishery origin. A number of Jeot can be prepared by adding salt and allowing fermentation to the raw materials such as shrimp, anchovy octopus, clam, oyster, etc.
Relationship among the properties of rice, such as amylose contents of endosperm starch, sugar content and amylogram characteristics, and processing properties for rice bread was studied. The amylose content of the rice cultivars decreased in order of Nampungbyeo, Whachungbyeo>Punchilmi(fl)>Nampung CB243> Whachung du-I, Nampung EM90>Whachung-chalbyeo>shr. Protein contents of rice tested in this study were almost same level, however, shr, the high sugar rice, showed the highest protein content scored as 8.2%. The study showed that the amylose contents of rice cultivars were negatively correlated with their protein contents. The starting temperatures for gelatinization of the flour of Punchilmi(fl) and Shurunken(shr) were low, however, in case of Whachungbyeo and Nampungbyeo plus their mutants derived from the both, the stickiness and the hardness of the flours were shown to be positively correlated with the amylose contents. In addition, loaf volume tested using sensory evaluation and overall quality showed the same tendency. Among the rice cultivars tested in this study, breads made from white rice had good qualities in bread making process than those made from brown rice. The bread made from Nampungbyeo was demonstrated to have highest score e in overall quality, as well as the lowest retrogradation index during storage at $4^{\circ}C$
The physicochemical characteristics of pine nuts gruel were investigated to find the effects of processing condition during the processing. Three-dimensional response surface methodology was applied to investigate effects of ratio of water volume and pine nuts weight to rice weight and heating time on dependent variables of the physicochemical characteristics. The dependent variables in physicochemical characteristics were viscosity (cP), spreadability (cm), pH, soluble solid content (%), color, total sugar (%) and amylose content (%). The F-value of ratio of water volume and pine nuts weight to rice weight and heating time to viscosity were 8.91, 4.54 and 5.02 respectively and they are significantly different at 5% level. The F-value to spreadability were 5.44, 7.88 and 8.04 respectively and they are significantly different at 5% level. These results suggest that water volume, pine nuts weight and heating time greatly affect the viscosity and spreadability of pine nuts gruel. The processing condition also affect the soluble solid content. The changes of the processing condition did not affect the pH of pine nuts gruel. We found that the L, a, b value were affected more by ratio of water volume and pine nuts weight to rice weight than by heating time. The water volume affected more the total sugar and amylose content of pine nuts gruel than pine nuts weight and heating time.
Physicochemical properties of hydroxypropylated waxy rice starches were investigated to reduce steeping-time of yukwa (Korean oil-puffed rice snack) processing. Swelling power of hydroxypropylated waxy rice starch increased at relatively higher temperature $(60^{\circ}C)$ than native waxy rice starch $(70^{\circ}C)$. Solubility of hydroxypropylated waxy rice starches increased with increasing propylene oxide content. Pasting temperature $(66.3-66.9^{\circ}C)$ and peak viscosity (216-232 RVU) of hydroxypropylated waxy rice starch were higher than those of native starch (179 RVU) and increased with increasing propylene oxide content. DSC thermal transitions of hydroxypropylated waxy rice starches shifted toward higher temperature. Amylopectin melting enthalpy of hydroxypropylated waxy rice starch (8.4-9.2 J/g) was similar to native starch (9.0 J/g). X-ray diffraction patterns of native and hydroxypropylated waxy rice starches showed typical A-type pattern with no significant differences between them, suggesting hydroxypropylation only affected amorphous region. Results suggest hydroxypropylated waxy rice starch is not applicable for yukwa due to low puffing efficiency and dark color.
