Red-Colored Phenomena of Ginseng(Panax ginseng C. A. Meyer) Root and Soil Environment (인삼근 적변현상과 근권 토양환경)

  • In order to elucidate the mechanism of red-colored phenomena(RCP) in ginseng(Panax ginseng C.A. Meyer), distribution of inorganic elements of ginseng root and its surrounding soil, and microflora in the soil were investigated. Red brown colored-substances were accumulated in the cell wall of epidermis at early stage of red-colored ginseng (RCG). Cell wall of the late stage of RCG was disordered and microorganisms were shown in the disordered cell wall. Al, Si and Fe contents among inorpanic elements in the epidermis of RCG were higher at two or three times than that of healthy ginseng. On the other hand, K content was higher at three times in healthy ginseng than that of RCG. Especially, Fe content was higher at three times in lateral roots of RCG than that of healthy ginseng. Total 21 strains of microorganisms were isolated on the 523 medium from surface soil, surrounding soil of both healthy and RCG, and RCG. Six strains of microorganisms among them were resistant to 2 mM Fe. Two species in Bacillus app. and Lactobacillus app. , and one species in Micrococcus sp. and Npisseria sp. respectively were identified. It seemed that RCP was closely related with the distribution and uptake of inorganic elements, was also correlated Fe-independent metabolism of microorganisms.

  • The red ginseng is very popular as a health food. It has been manufactured with raw ginseng by the conventional method. But, the yield of the heaven grade ginseng (the best quality red ginseng) among the whole products is around 5-7%, Therefore, the yield should be improved in order to increase economic returns. In this study, a new model of drying system was developed to improve the yield of heaven grade ginseng from 7% to 15% or more. For this system, temperature and relative humidity were controlled by the feedback control system, and a solenoid valve for steam supply and other variables were controlled by the PC. The special features of this system developed are an image processing system for monitoring the red ginseng during the drying process in the drying chamber, and a cylindrical porous tray for holding ginseng that is rotating with the speed of 0-10rpm in the drying chamber and makes uniform drying of red ginseng possible.

The Antihypertensive Effect of Red Ginseng Saponin and the Endothelium-Derived Vascular Relaxation (홍삼 사포닌의 혈압강하작용과 내피의존성 혈관 이완에 미치는 효과)

  • Intravenous administration of saponin from the root of Panax ginseng (red ginseng) lowered the blood pressure in a dose-dependent manner (10~100 mg/kg B.W) in anesthetized rats. Therefore, experiments were designed to study whether this lowering of blood pressure is associated with the release of endothelium-derived relaxing factor. Rings of thoracic aorta with and without endothelium were suspended for the measurement of isometric tension in organ chamber. All experiments were performed in the presence of indomethacin (10-5 M). Ginseng saponin (10-5~3$\times$10-4 g/ml) relaxed contractions induced by phenylephrine (10-5 M) in the aorta with endothelium but not in that without endothelium. Treatment of aortic rings with NG_monomethyl-L-arginine (L-NMMA 10-4 M for 30 min), a competive inhibitor of nitric oxide synthase and methylene blue (M.B., 3$\times$10-7 M for 30 min), an inhibitor of soluble guanylate cyclase, diminished the relaxation induced by ginseng saponin. In thoracic aortic rings from rats treated with ginseng saponin for 2 weeks intraperitoneally, the relaxation to acetylcholine was increased compared with non-ginseng treated rings. These data suggest that red ginseng saponin evokes hypotension and that vascular relaxations induced by red ginseng saponin are inediatpd by release of endothelium-derived relaxing factor.

  • Effects of red ginseng acidic polysaccharides (RGAP) on immune system were studied. The proliferation of spleen cells was induced by RGAP treatment per se. Cotreatment of lipopolysaccharide $(100\;{\mu}g/ml)$ or concanavalin A $(1\;{\mu}g/ml)$ with RGAP further stimulated the spleen cell proliferation. BALB/c mice treated with RGAP showed a slight splenic hyperplasia and increased antibody forming cell response to sheep red blood cells. Flow cytometry analysis revealed an influx of macrophages in the mice treated with RGAP.

  • Aqueous fractions from Korean red ginseng inhibited the phosphorylations of 40 KD and 20 KD polypeptides which were induced by phorbol-12-myristate-13-acetate (100 nM) in human platelets. Much more carbohydrates were contained in the aqueous fractions than proteins. An aqueous fraction extracted with methanol, mainly, consists of glycoproteins, molecular weights of which were below 18 KD. We may infer that the aqueous fraction from Korean red ginseng do antitumorous and antiplatelet functions.

Change in Ginsenosides and Maltol in Dried Raw Ginseng during Extrusion Process

  • Although widely applied in the food industry, extrusion cooking has not been applied to the traditional red ginseng process for steaming and drying ginseng. We therefore investigated the change in the effective components in red ginseng (total saponins, ginsenosides and maltol) from extruded raw ginseng. The variables were the drying temperature of the sliced raw ginseng (80 and $90^{\circ}C$) before the extrusion process and the moisture content (15 and 22%, w.b.) during the extrusion process. Ginsenosides Rg1 and Rg2 were detected in dried ginseng at $80^{\circ}C$, but ginsenoside Rg3, which was contained in red ginseng, was not detected. On the other hand, ginsenosides Rg1, Rg2 and Rg3 were detected in extruded ginseng at moisture contents of 15 and 22%. Total ginsenosides were highest at $90^{\circ}C$ drying temperature and 22% moisture content for the extrusion process.

Gas Liquid Chromatographic Analysis of Fatty Acids in Ginseng Products (Gas Liquid Chromatography에 의한 인삼(人蔘) 제품(製品) 중의 지방산(脂肪酸) 분석(分析))

  • Six commercial ginseng products, red ginseng, white ginseng I and II, red ginseng extract, white ginseng extract I and II were extracted with ethyl ether. Total fatty acid composition of the extracted free lipids was analyzed by gas liquid chromatography and digital integrator was used to measure the area of each peak. Crude lipid contents of red and white ginsengs were similiar. Those of red ginseng extract, white ginseng extract I and II were 1.10, 1.13 and 0.40%, respectively. It was found that 22 kinds of fatty acids existed in red and white ginsengs. Among them, 16 kinds of even numbered fatty acids were identified. Linoleic acid in red and white ginsengs was the most abundant. The contents of that in red ginseng, white ginseng I and II were 63.33, 45.55 and 41.06%, respectively. The next most abundant acid was palmitic acid, the contents of which were 11.30, 14.4 and 18.10% for red ginseng, white ginseng I and II, respectively. Major fatty acids for red ginseng extract and white ginseng extract I were linoleic and palmitic acids in the same order of magnitude. Linoleic and palmitic acids for red ginseng extract were 15.93 and 15.71 %, respectively, while linoleic and palmitic acids for white ginseng extract I were 21.94 and 19.15%, respectively. However, white ginseng extract II contained only 9.21% of linoleic acid and 16.13% of palmitic acid which was the major fatty acid.

Effect of Red Ginseng Extract on Storage and Antioxidant Activity of Tofu (홍삼 추출물이 두부의 저장성과 항산화 활성에 미치는 영향)

  • In relation to making tofu with red ginseng extract, the effects of added red ginseng extract on the storage and antioxidant activity of tofu were investigated. When red ginseng extract was added in $0.5%{\sim}2%$ of dried soybean, differences in texture, color and sensory properties were compared. The textural properties of tofu slightly increased depending on the added amount of red ginseng extract in terms of the hardness and springiness: significant difference was demonstrated in the tofu with 2% red ginseng extract, and the color properties also significantly increased in terms of the values of L, a, and b. As a result of sensory evaluation, although the preference to color tended to diminish, as the peculiar taste of red ginseng was significantly perceived, the overall preference did not show any statistical difference. Therefore, the addition of red ginseng extract may be interpreted as not having negative effect on the preference of consumers. There was no change at the early stage of storage in pH, turbidity and total microbial count when the tofu was stored at $15^{\circ}C$. However, the changes in pH and in turbidity, and total microbial counts according to the addition of red ginseng extract took place from the second day and from the sixth day of storage, respectively, suggesting that the shelf-life of tofu may be extended due to its antimicrobial effect. Especially, the highest antimicrobial effect was observed tofu with 2% red ginseng extract. Concerning the antioxidant activity of tofu using oxygen radical absorbance capacity (ORAC) assay, the antioxidant activity significantly increased along with the increase in concentration of red ginseng extract. In ORACOH.assay, the pro-oxidant activity was shown in the tofu added with red ginseng extract.

Quality Characteristics of Sponge Cake Prepared with Red Ginseng Marc Powder (홍삼박 분말을 대체한 스폰지 케이크의 품질 특성)

  • In this study, sponge cakes were prepared with 3, 6, 9, 12, and 15% red ginseng marc powder. The samples and a control were then compared in terms of quality characteristics, including batter viscosity and specific gravity, moisture content, water activity, volume index, weight, color, textural characteristics, and sensory qualities, in order to determine the optimal ratio of red ginseng marc powder in the formulation. The batter samples containing 0, 12, and 15% red ginseng marc powder had significantly higher viscosity than the other samples. Specific gravity of batter was not significantly different among the batter samples. The control group presented significantly higher moisture content as compared to the samples containing red ginseng marc powder samples. Water activity, volume index, and weight of all samples were not significantly different among the samples. In terms of crust color, lightness, redness, and yellowness of the crust samples decreased as the level of red ginseng marc powder content increased. For the crumb color, lightness and yellowness decreased, and redness increased, with increasing red ginseng marc powder content. Hardness, cohesiveness, gumminess, and springiness were not significantly different among the samples; however, the red ginseng marc powder samples had significantly higher chewiness than the control group. In the sensory evaluation, as the content of red ginseng marc powder increased, scores for color, flavor, softness, overall acceptability, moistness, and egg-flavor decreased, while scores for red ginseng taste, bitterness, astringency, and off-flavor incresed. Overall, the 3 and 6% red ginseng marc powder samples obtained fairly good sensory scores. In conclusion, the results indicate that adding $3{\sim}6%$ red ginseng marc powder to sponge cake is optimal, providing good physiological properties as well as reasonably high overall consumer acceptability.

Quality Characteristics of Injeulmi by Different Ratios of Red Ginseng Powder, Water and Sugar (홍삼가루, 수분 및 당 첨가량에 따른 인절미의 품질특성)

  • The purpose of this study is to find out the optimal mixing ratios of three different amount of red ginseng powder(0, 5, 10%), water(12, 16, 20%) and sugar(4, 8, 12%) per weight of glutinous rice powder. The microbial count increased with increasing moisture content. The microbial count has decreased in 10% addition group though the microbial count according to the red ginseng powder addition did not have a difference the having mind in 5% addition group. Control group(the red ginseng powder no addition) showed an exponential increase in the change in hardness according to the amount of the red ginseng powder addition 24 hours after(except the moisture addition amount 20%). However, the change in devotion hardly appeared without the relation in moisture and the amount of the sugar addition in the addition group of the red ginseng powder 5%. Moreover, the change in hardness besides the moisture addition amount 12% hardly appeared also in the addition group of the red ginseng powder 10%. It has been understood that the red ginseng powder addition 5% crowd smells, and the taste and the color are suitable though it was clarified to the red ginseng powder addition 10% crowd that a peculiar smell taste and taste to the red ginseng are very strong by the sensory inspection. In conclusion, according to its microbial count, texture and sensory analyses, the optimal Injulmi formulation consisted of red ginseng powder, water and sugar were 5, 16 and 8%. The results suggested that red ginseng powder is effective in increasing the self life of Injulmi.
