단고추 종류와 데침처리에 따른 영양성분 변화 및 잔존율 비교 (Changes of Nutrient Composition and Retention Rate of Sweet Pepper by Different Types and Blanching Method)

  • Purpose: To provide the nutritional information of sweet peppers, we have evaluated changes of nutrient content and retention rates by different sweet pepper types and blanching method. Methods: Four types of raw and blanched ($100^{\circ}C$, 30 sec) sweet peppers were prepared and their weight, nutrient content (3 water soluble vitamins, 10 minerals) and retention rates were analyzed. Results: The weight of blanched sweet peppers was decreased than that of raw sweet peppers. From the results of the two-way analysis, the type of sweet pepper had a greater influence than blanching method used on the thiamine, riboflavin, folate and vitamin C contents (but not niacin) (p<0.05). Red pimento contained the most thiamine (0.1 mg/100 g), riboflavin (0.16 mg/100 g), folate ($47.89{\mu}g/100g$) and total niacin (0.11 mg/100 g). Red paprika contained high levels of riboflavin (0.15 mg/100 g) and folate ($44.96{\mu}g/100g$). Orange paprika contained the highest vitamin C content (116.29 mg/100 g). In addition, the mineral content, with the exception of Se, was strongly influenced by the type of sweet pepper rather than the blanching method (p<0.001). The K content of sweet peppers was higher than other minerals. Overall, after blanching, high retention rates (over 70%) were observed in all types of sweet peppers. However, the retention rates of thiamin, vitamin C and Se showed lower levels (less than 70%). Conclusion: The vitamin and mineral contents depends more on the type of sweet pepper; although vitamin and mineral (except Se) contents showed some changes after blanching. Our results can be utilized to determine the effects of cooking processes on nutritional information.

고추 재배 농가들의 품질 인식에 관한 연구 (A Study on the Quality Perceptions of Red Pepper Growers)

  • This article indicates that the perceptions on the quality of agro-food are socially constructed. Farmers who were producing red pepper in Eumsung county had somewhat different perceptions on the quality of red pepper according to their own marketing channels. Farmers who were selling their red pepper to consumers by direct marketing tend to think the quality attributes more important as follows; information on producers, ingredients, taste and smell, amount of pesticides input, cleaning the harvested red pepper, quality certification by public authority, and brands. Consumers tend to think safety and production area more important, while farmers tend to think the quality attributes as follows; taste, color, variety, soil environment, and largeness. Based on these research findings, we can give some recommendations as follows; 1) the agricultural extension organization in the Eumsung county should change the strategy for local agriculture towards quality management of red peppers. and 2) the local government need to examine the feasibility of quality certifying on red pepper.

Effect of Mixed Liquid Fertilization on Growth Responses of Red peppers and Soil Chemical Properties

  • We evaluated the effect of mixed liquid fertilizer (MLF) on growth responses of plants and soil chemical properties. A pot experiment with red pepper (Capsicum annuum L.) using loam soil was conducted for 81 days in a temperature-controlled glasshouse, and four N fertilization treatments were laid out in a completely randomized design with three replicates: control (C), chemical fertilizer treatment (CF), and two rates (MLF-0.5 and MLF-1.0) of MLF treatment. Soils were periodically sampled and analyzed for pH, EC(Electrical Conductivity), total N, inorganic N and total C, and some growth characteristics of red peppers were measured. During the experimental periods, the pH of MLF soils was higher than that of CF soils. Soil EC increased right after application of CF or MLF, and the intial increase persisted in CF and MLF soils at the end of experiment. Soil total-N increased right after application of CF or MLF, and this initial increase persisted only in MLF-1.0 soils. Soil inorganic N content initially increased in CF or MLF-1.0 soils, but the initial increase disappeared in 56 days after transplanting. Soil total-C was maintained higher in MLF-1.0 soils and lower in CF soils than in control soils, and the intial increase in MLF-1.0 soils finally disappeared to the level of control soils. Plant height, dry weight of plant organs (shoots, roots and fruit), and the number, diameter and length of red pepper fruits were greatest in CF plants. On the other hand, the effect of MLF-application was different depending on the rate of application. However, no consistent effect of N treatments on some major elements of the organs of red peppers was observed. The amounts of N taken up by plants were 1.3 g for CF, 0.8 g for MLF-1.0, 0.5 g for MLF-0.5 and 0.4 g for control treatments. The results of this study showed that mixed liquid fertilizer (MLF) could appropriately serve as an alternative to chemical N fertilizer in red pepper cultivation.

  • Red pepper powder is produced from dried red pepper through milling process with roller mill. Traditional Roller mill is convenient for crushing wax and fiber parts in red pepper. However, some metallics are produced by the friction of two rollers when it operates without feeding of red peppers. In order to reduce this metallic problems created in the roller mill in the process of red pepper, a new roller mill mechanism which enables two roller to apart when red pepper is not fed between two rollers was introduced. Adjustment of clearance between two rollers was able to conducted by the current difference between idling and crushing process. Two types of roller surface, grove and flat, and two different roller mills, cast iron and Ti coating, are tested and compared in this experiment.

일시 수확한 고추의 품질 (Quality of Single-Harvested Red Peppers)

  • 'Manita', a red pepper cultivar being cultivated currently and 'HL', a cultivar bred for single-harvest by National Horticultural Research Institute were grown by direct sowing and raising seedling methods, respectively, and all the fruits on the tree were harvested once. Fruits were grouped into 6 grades by color and appearance and their chemical compositions were analyzed. Generally, 'HL' showed less redness and contained less amounts of capsaicin, organic acid, Vit. C, and sugar than 'Manita'. Regardless of cultivar and cultivation method, red-old fruits, ripened and partially dried on the plant, had more red color (21-30%) and more capsaicin (40.0-78.3 mg% vs. 33.2-52.7 mg%), but less sugar (12.70-16.69% vs. 14.46-17.43%) than red-fresh fruits. No difference was found between direct sowing and raising seedling.

우리나라 고추 바이러스 종류, 병징 및 발생 형태 (Viruses and Symptoms on Peppers, and Their Infection Types in Korea)

  • 전국 52개 지역에서 2002년, 2004년에서 2006년, 4년 간 고추 바이러스 이병물을 채집하여 바이러스 감염양상을 조사하였다. 감염된 바이러스 종류는 Cucumber mosaic virus(CMV), Pepper mottle virus(PepMoV), Pepper mild mottle virus(PMMoV), Broad bean wilt virus 2(BBWV2), Tobacco mild green mosaic virus(TMGMV), Tomato spotted wilt virus(TSWV) 6종이었다. CMV, PepMoV PMMoV와 BBWV2의 발생률은 각각 29.4%, 13.6%, 14.3%, 25.6%이었다. TMGMV와 TSWV의 발생률은 1.0%로 매우 낮았다. 2002년과 2004년의 CMV 발생률은 53.3%와 34.2%로 가장 높았으나 2005년과 2006년에는 18.2%와 11.9%로 감소하였다. BBWV2의 발생률은 2002년에 1.3%, 2004년에 1.8%로 낮았으나, 2005년에 41.3%, 2006년에 58.2%로 크게 증가하였다. CMV+BBWV2의 발생률은 2002년에 0.0%, 2004년에 2.1%이었으나 2005년과 2006년에 각각 33.3%와 83.2% 증가하여 BBWV2의 단독감염과 함께 복합감염에서도 급격히 증가하였고 CMV+BBWV2+PepMoV의 삼중 복합감염률은 평균 6.4%이었다. CMV는 고추 잎에 심한 모자이크병징, BBWV2는 원형반점 병징을 일으키며, CMV와 BBWV2의 복합감염 경우에는 퇴록병징을 일으켰다. TSWV는 고추 잎과 과일에 전형적인 다중 원형반점을 일으켰다.

Microbiological Contamination of Fresh-Red Pepper and Packaged-Red Pepper Powder in South Korea

  • The aim of this study was to determine microbiological contamination of fresh-red pepper and packaged-red pepper powder commercially available in South Korea. Thirty-seven fresh-red peppers were collected from 5 farms and 31 packaged-red pepper powders were purchased from retail markets in South Korea. Foodborne pathogens (Escherichia coli, Salmonella spp., Listeria monocytogenes, Staphylococcus aureus and Bacillus cereus), total viable counts, Enterobacteriaceae, coliforms, yeast and mold, and Aspergillus flavus were determined. Detection percentage of contamination of Bacillus cereus in fresh-red pepper was 8.1%, which was lower than the 39% of detection rate in packaged-red pepper powder. The contamination level of Bacillus cereus was 1~3 log CFU/g in packaged-red pepper powder. Escherichia coli was detected in 5.4% of fresh-red pepper samples and was not detected in packaged-red pepper powder. Enterobacteriaceae and coliforms were detected in both of fresh-red pepper and packaged-red pepper powders. Foodborne pathogens, except Bacillus cereus and Escherichia coli, were not detected.

  • 통고추의 열발광 특성(TL)분석에서 2.5 kGy 이상의 조사 시료에서 분리된 미네랄 시료는 $150^{\circ}C$ 부근에서 TL glow curve ($TL_1$)를 나타내었고, 조사선량이 증가할수록 peak intensity가 증가하였다. 재조사(1 kGy) 방법에 의한 TL ratio($TL_1/TL_2$)는 TL 분석의 신뢰도를 높여주었다. DNA comet assay에서 비조사 시료(씨)는 전형적인 intact cell을 나타내었으나 감마선 조사 시료에서는 long tail을 가진 comet을 나타내면서 선량 의존적으로 tail length가 증가되었다. 미생물학적 방법으로써 DEFT/APC값 측정에서는 조사선량에 따라 분말고추와 통고추에서 비교적 높은 상관을 보였다. 이상의 결과에서 DNA comet assay와 DEFT/APC 방법은 방사선 조사 건고추의 screening 방법으로서, TL은 확인방법으로서 적용가능성이 확인되었다.

시판 라면스프 및 고춧가루 중의 매운맛 성분 Capsaicin 함량측정을 통해 추정된 한국인의 Capsaicin 섭취량 범위 (Approximate Amounts of Capsaicin Intakes Determined from Capsaicin Contents in Powdered Soups of Korean Instant Noodles and Hot Peppers)

  • In order to get a quantitative information of capsaicin intakes derived from Korean daily spicy food, capsaicin contents in powdered red hot peppers and powdered soup of Korean instant noodles were measured by high performance liquid chromatography. Capsaicin contents were 0.03~0.33mg/g in the powdered hot pepper, 3.67~5.50mg/g in the powdered soup with most spicy taste, 2.15~3.14 mg/g in the soup with medium level of spicy, and below 1.5mg/g in the soup with mild taste of Korean instant noodles. From the results, it was estimated that the amounts of daily intake of capsaicin from hot pepper were about 0.38~4.95mg/day, and capsaicin intakes from one pack of Korean instant noodles were about 10~60mg.

일시 수확형 고추의 숙성도와 재배 요인에 따른 화학적 특성 (Changes of Various Chemical Components by the Difference of the Degree of Ripening and Harvesting Factors in Two Single-harvested Peppers (Capsicum annuum, L.))

  • SR211과 SR213은 모두 색소 함량이 매우 높았으며 매운맛 특성을 좌우하는 capsaicinoids 함량은 SR211의 경우 숙성도와 상관없이 150 mg/100 g 이상의 매우 높은 함량을 갖는 것으로 분석된 반면, SR213은 5 mg/100 g 미만의 매우 낮은 함량을 갖는 것으로 분석되었다. 재배시기에 따른 품질 특성 변화를 3년간 모니터링 한 결과, 두 품종 모두 고유의 매운맛과 색상 특성을 안정적으로 유지하는 경향을 보여 SR211은 고색소의 강한 매운맛 고추, SR213은 고색소의 약한 매운맛 고추를 생산하는데 적합한 품질을 갖는 것으로 나타났다. 또한 두 품종 모두 유리당 함량과 ascorbic acid 함량이 높아 화학적 품질이 매우 높은 것으로 나타났다. 따라서 이러한 고품질의 일시수확형 고추의 개발 및 보급이 이루어진다면 한국산 고추 특유의 맛뿐만 아니라 영양학적, 상품적 가치가 매우 높은 고품질 제품화가 가능할 것이며, 이는 국제적인 브랜드 상품으로 발전하기 위한 윈동력이 될 것으로 사료된다.
