고춧가루 오염 미생물의 제어에서 방사선종별 조사 효과 (Comparison of Irradiation Effect of Different Radiation Types on Decontamination of Microorganisms in Red Pepper Powder)

  • This study investigated the reduction of microbial population and sensory properties in red pepper powders irradiated by gamma ray, electron beam, and X-ray. Populations of total aerobic bacteria and yeast & molds in red pepper powders were decreased by irradiation treatment in a dose-dependent manner. Gamma ray, electron beam, and X-ray at doses above 8 kGy caused 100% inhibition on growth of aerobic bacteria in red pepper powders. Inhibitory activity of X-ray on sterilization of red pepper powders was significantly equal to or higher compared to gamma ray and electron beam. Color and off flavor in red pepper powders were no significant difference among the control and samples irradiated with gamma ray, electron beam, and X-ray. As a result, the gamma ray, electron beam, and X-ray irradiation can be used to sterilize the microbial growth in red pepper powders without quality loss.

Microbiological Contamination of Fresh-Red Pepper and Packaged-Red Pepper Powder in South Korea

  • The aim of this study was to determine microbiological contamination of fresh-red pepper and packaged-red pepper powder commercially available in South Korea. Thirty-seven fresh-red peppers were collected from 5 farms and 31 packaged-red pepper powders were purchased from retail markets in South Korea. Foodborne pathogens (Escherichia coli, Salmonella spp., Listeria monocytogenes, Staphylococcus aureus and Bacillus cereus), total viable counts, Enterobacteriaceae, coliforms, yeast and mold, and Aspergillus flavus were determined. Detection percentage of contamination of Bacillus cereus in fresh-red pepper was 8.1%, which was lower than the 39% of detection rate in packaged-red pepper powder. The contamination level of Bacillus cereus was 1~3 log CFU/g in packaged-red pepper powder. Escherichia coli was detected in 5.4% of fresh-red pepper samples and was not detected in packaged-red pepper powder. Enterobacteriaceae and coliforms were detected in both of fresh-red pepper and packaged-red pepper powders. Foodborne pathogens, except Bacillus cereus and Escherichia coli, were not detected.

고추가루의 저장성에 미치는 질소치환의 영향 (Effects of Nitrogen Flushing on the Storage Stability of Red Pepper Powders)

  • 고추가루 저장성에 미치는 질소치환의 영향을 검토하기 위하여 온도 및 포장조건에 따른 고추가루의 품질 변화를 조사하였다. 고추가루 저장 중 capsanthin 및 capsaicin 함량은 온도가 증가함에 따라서 이들 함량의 감소가 증가하였으며, 질소가스 치환포장은 함기포장보다 온도 및 포장조건에 따라서 이들 함량의 감소가 적었다. 고추가루 저장 중 갈변도는 저장온도 및 포장조건에 따라서 상이 하였는데, 온도가 증가할수록 갈변도는 증가하였고 질소가스 치환포장은 함기포장 보다 갈변도가 감소하였다. 그리고 표면색깔 변화 중 저장 10개월 동안 L값과 b값은 거의 변화가 없었으나 a값은 온도가 올라감에 따라 감소하였다. 따라서 고추가루 저장 중 질소가스 치환포장은 함기포장 보다 고추가루의 품질이 우수하였다.

국내 원산지별 고춧가루의 매운맛 비파괴 측정기술 개발 (Development of non-destructive pungency measurement technique for red-pepper powder produced in different domestic origins)

  • In this research, the feasibility of non-destructive measurement technique of pungency measurement was investigated for the red-pepper powders produced in different domestic areas in South Korea. The near-infrared absorption spectra in the range of 1100 nm~2300 nm was used to measure capsaicinoids content in red-pepper powders by using a NIR spectroscopy equipped with Acousto-optic tunable filters (AOTF). Fourth three different red-pepper powders from 14 different locations were collected and separated in three different particle size (below 0.425 mm, 0.425~0.71 mm, 0.71~1.4 mm) for the spectral measurements. The partial least square regression (PLSR) models to predict the capsaicinoids content depends on particle size were developed with the measured spectra. The determinant coefficients and standard errors of the developed models for the red-pepper powders of below 0.425 mm, 0.425~0.71 mm, and 0.71~1.4 mm were in the range of 0.859~0.887 and 12.90~12.99 mg/100 g, respectively. The PLS model with the pretreatment of Standard Normal Variate (SNV) for the red-pepper powders below 1.4 mm particle size showed the best performance with the determinant coefficient of 0.844 and the standard error of 14.63 mg/100 g.

Non-destructive quality prediction of domestic, commercial red pepper powder using hyperspectral imaging

  • We analyzed the major quality characteristics of red pepper powders from various regions and predicted these characteristics nondestructively using shortwave infrared hyperspectral imaging (HSI) technology. We conducted partial least squares regression analysis on 70% (n=71) of the acquired hyperspectral data of the red pepper powders to examine the major quality characteristics. Rc2 values of ≥0.8 were obtained for the ASTA color value (0.9263) and capsaicinoid content (0.8310). The developed quality prediction model was validated using the remaining 30% (n=35) of the hyperspectral data; the highest accuracy was achieved for the ASTA color value (Rp2=0.8488), and similar validity levels were achieved for the capsaicinoid and moisture contents. To increase the accuracy of the quality prediction model, we conducted spectrum preprocessing using SNV, MSC, SG-1, and SG-2, and the model's accuracy was verified. The results indicated that the accuracy of the model was most significantly improved by the MSC method, and the prediction accuracy for the ASTA color value was the highest for all the spectrum preprocessing methods. Our findings suggest that the quality characteristics of red pepper powders, even powders that do not conform to specific variables such as particle size and moisture content, can be predicted via HSI.

고추씨 혼합비율에 따른 고추가루의 흡습특성 비교 (Comparison of Sorption Characteristics of Red Pepper Powders with Their Seeds Mixing Ratio)

  • 고추씨 혼합비율에 따른 고추가루를 상대습도 11%에서 93%까지 8단계의 상대습도별로 $15^{\circ}C,\;25^{\circ}C$$40^{\circ}C$의 온도구에 저장하면서 고추가루의 흡습특성을 비교하였다. 저장시간에 따른 고추가루의 흡습곡선은 고추씨 혼합비율에 관계없이 RH 43% 이하에서는 단시간 내에 평형에 도달하여 수분함량의 변화가 거의 없었으나 RH 75% 이상에서는 평형수분함량이 급격히 증가하였다. 따라서 RH 75% 이상에서는 갈변현상이 나타났고, RH 33% 이하에서는 탈색현상이 나타났다. 고추씨를 완전히 제거한 고추가루의 단분자층 수분함량은 온도에 따라서 5.88%에서 7.35%로서 온도가 내려감에 따라 증가하였고, 고추씨 혼합비율이 높을 수록 단분자층 수분함량은 감소하였다.

  • 고추장의 품질 개선을 위하여 열풍건조시 처리방법을 달리한 고춧가루를 첨가한 고추장을 제조하고 90일간 숙성시키면서 이화학적 특성 변화를 조사하였다. 고추장의 pH는 숙성중 vit. C 첨가구가 가장 낮았고, 총산도 또한 vit. C 첨가구가 가장 높았다. 환원당 함량은 대조구가 가장 높았고 이후 90일까지 모든 고추장에서 완만한 증가를 보였다. 아미노태질소함량은 숙성 75일까지 계속 증가하여 마쇄건조 첨가구의 함량이 유의적인 차이를 보이며 가장 높았고 이후 감소하였다. 고추장의 색도에서 L값과 a값은 숙성이 진행됨에 따라 모두 증가한 반면 b값은 감소하였으며, 마쇄건조 첨가구 고추장의 L, a, b값이 다른 시료보다 모두 높았다. 관능검사 결과 고추장의 외관, 맛 및 종합적인 기호도에서는 마쇄건조 첨가구가 가장 높았다. 이상의 연구를 통해서 고추장 제조시 고춧가루는 고추를 마쇄하여 열풍 건조시킨 것을 첨가하면 고추장의 품질을 보다 높일 수 있음을 알 수 있었다.

Detection of Gamma-irradiated Red and Black Pepper Powders in a Model Meat Product by Photostimulated Luminescence

  • This study examined the photostimulated luminescence (PSL) detection method suggested by the Korean Food and Drug Administration to assess whether the method can be used to identify irradiated spices in restructured pork patties, which served as a model system for processed meat products. Red and black pepper powders were irradiated at 0, 5.0, 7.5, and 10 kGy, and pork patties were formulated with the spice at irradiated pepper concentrations of 0.1% and 0.5%. PSL was then used to estimate amounts of light derived from the spice itself and pork patties. The results of PSL analysis showed that red and black pepper powders were determined as positive and presumptive positive, respectively, when irradiated at more than 7.5 kGy. However, when used in pork patties, all samples were negative for irradiation. Thus, PSL may not be useful in detecting irradiated ingredients used in processed meat products.

시중에서 유통되고 있는 일부 국산 고추가루와 수입산 고추가루의 영양성분 및 맛성분에 관한 비교연구 (A Comparstive Study of Nutrients and Teste Components in Korean and Imported Red Peppers)

  • This study was performed to compare the contents of nutrients and taste components in Korean(King and Dabok) and imported(from Myanma) red pepper powders. Red pepper imported from Myanma was narrower and lighter and showed significantly higher contents of moisture and lipid. Lower amount of fructose and glucose shown in imported red pepper powder seemed related to lower sensory score in sweet taste. Capsaicin was contained much higher in imported red pepper powder and looked related to higher score in pungent tastes. Organic acids like oxalic acid, malonic acid, succinic acid, pyroglutamic acid were significantly lower in imported red pepper powder. Imported red pepper powder showed lower amount of $\beta$-carotene, capsanthin and color value(L, a, b) than Dabok and obtained lower sensory score in color.

Development of Models for the Prediction of Domestic Red Pepper (Capsicum annuum L.) Powder Capsaicinoid Content using Visible and Near-infrared Spectroscopy

  • Purpose: The purpose of this study was to non-destructively and quickly predict the capsaicinoid content of domestic red pepper powders from various areas of Korea using a pungency measurement system in combination with visible and near-infrared (VNIR) spectroscopic techniques. Methods: The reflectance spectra of 149 red pepper powder samples from 14 areas of Korea were obtained in the wavelength range of 450-950 nm and partial least squares regression (PLSR) models for the prediction of capsaicinoid content were developed using area models. Results: The determination coefficient of validation (RV2), standard error of prediction (SEP), and residual prediction deviation (RPD) for the capsaicinoid content prediction model for the Namyoungyang area were 0.985, ${\pm}2.17mg/100g$, and 7.94, respectively. Conclusions: These results show the possibility of VNIR spectroscopy combined with PLSR models in the non-destructive and facile prediction of capsaicinoid content of red pepper powders from Korea.
