The present study was designed to observe whether nutritional education on children or mothers of the children who avoid to eat vegetables can improve the preferences for the vegetables of the subjects. The subjects were 45 children who are fourth to sixth grade of primary school in Bibong. They were assigned to one of three groups which are Control, Children Education and Mothers Education groups. Control group was not given any special education, while experimental groups were given nutritional education for 4 weeks. The effects of education was evaluated in the aspects of preference changes for vegetables, nutritional knowledge, attitude and food behavior of the subjects The results are summarized as follows. 1. Preferences to cucumber, lettuce, chinese cabbage and raddish were high in three groups while greenonion, onion, lotus roots and red pepper didn't suit for their taste. 2. Significantly increased scores for the preference to red pepper, pumpkin, Dorajee(root of chinese bell-flower), braken, mushroom was shown only in the children who had nutritional education while the children in the group of Mothers Education improved their preference only cabbage and lotus roots. 3. Nutritional knowledge of the children in Children Education group has improved significantly(p<0.05). While there was no significant difference between control and Mothers Education group. 4. When scores for food habit of mother and children were estimated, there was no significant difference among three groups. However, score of food habit in children was higher than that of mothers. 5. Food habit and nutrition knowledge of mother were not well corelated with dietary attitude and behavior of their children. These results indicate that the program of nutrition education in the present study can improve the food choice of children for vegetable and correct one-sided food habit. The program applied in this study would serve a kind of model for the dietetic teachers to guide the children who mainly dislikes vegetables.
In an effort to determine the effect of ingredients on the sensory characteristics of dongchimi, 10 different samples of dongchimi were prepared in various combinations of 4 ingredients most notably red pepper, garlic, ginger, and green onion and their physicochemical, microbiological, and sensory characteristics were assessed. Each ingredient utilized for the preparation of dongchimi did not affect changes in pH and titratable acidity, but exerted significant effects on sensory scores of overall acceptability, acid odor, salty, and hot taste. In cluster analysis using the 'Ward' method, dongchimi samples were classified into three groups. The first group was the samples prepared with a variety of ingredients including garlic, and the second group included samples prepared with the sole ingredient, except for red pepper. The third group had features similar to those of the sample prepared without other ingredients. It was determined that garlic played a crucial role in the sensory properties of dongchimi, and the addition of various ingredients enhanced hot taste and reduced acid odor, sourness, moldy odor, and carbonated taste by their interaction.
A study was conducted to survey the fauna and the field density ofp lant parastic nematodes on important cash crops in Korea. Studies were carried out with sampling about five hundred grams of soil around roots of eighteen different kinds of crops from fifty five locations throughout the country. Nematodes were elutriated from over three thousand soil samples, and identified into sixteen different genera. Among them Ditylenchus species were found to be the most abundant in fields of garlic and onion, Helicoty-lenchus of sesame, chinese cabbage and mulberry, Meloidogyne of red-pepper, tomato, cucumber and peanut, Pratylenchus of mulberry and peach, Pratylenchus of apple, Chinese cabbage and radish, Trichodorus of potato, and Xiphinema of peach and potato. Field density of Meloidogyne species was increased with the longer continuous cultivation of red-pepper in the same field.
The consistant appearance of coliforms in fermenting kimchi was examined and measures of removing coliforms early in the fermentation were investigated. Allyl isothiocyanate $({\geq}50\;ppm)$, horseradish powder $({\geq}0.4%)$, and garlic juice $({\geq}2.0%)$ were effective in removal of coliforms early in kimchi fermentation. However, mustard powder and methyl methanethiosulfonate were not effective. Nisin, known as a promising agent for the prevention of kimchi over-acidification, allowed coliforms to survive in kimchi longer with only marginal extention of edible period. Individual kimchi ingredients such as Chinese cabbage, garlic, red pepper powder, ginger and green onion were all found to contain coliforms. Coliforms were not detected from garlics sold unpeeled and commercially prepared red pepper powder.
Several spices in the range of $1{\sim}3%\;(w/w)$ were added during Kimchi preparation in order to investigate their effects on the chemical changes and fermentation rate. The results showed that addition of red pepper powder by 2% slightly increased the fermentation rate reaching max. value after 36 hours, while 3% addition gradually increased its rate without max. point. Generally higher reducing sugar and acidity were measured for red pepper added Kimchi. The fermentation rate and its max. point were significantly increased as more garlic added and the max. value of ascorbic acid produced was also increased. Little effects were found for Welsh onion and ginger on Kimchi fermentation.
Effects of kimchi and its ingredients, vitamin C and $\beta$-sitosterol on the growth of Helicobacter pylori were investigated. Three kimchi variations were studied: a standard recipe (kimchi I) and two functional variations for cancer prevention and treatment made with organically grown ingredients (kimch II and III). Methanol extracts and juices from kimchi I and III did not inhibit the growth of H. pylori. However, 10 mm and 12 mm inhibition zones were formed by methanol extract and juice from kimchi II, which had higher concentrations of red pepper powder (RPP) than those of kimchi I and III. Among the major kimchi ingredients, methanol extracts of RPP, garlic and ginger substantially inhibited the growth of H. pylori. The maximal inhibition zone (30 mm) was attained with garlic treatment. Inhibitory effects of the RPP, garlic and the sub-ingredient mixture (prepared with radish, garlic, RPP, ginger, green onion, sugar and fermented anchovy juice) on H. pylori were decreased by lactic acid bacteria fermentation. Neither the fermented garlic nor the fermented sub-ingredient mixture inhibited the growth of H. pylori. But, the inhibition Bone of fermented RPP was 12 mm, which was less than the 16 mm inhibition zone formed by the non-fermented RPP. Vitamin C and $\beta$-sitosterol which are known to be functional active compounds of kimchi also showed no inhibitory effect on the growth of H. pylori after 3 days of incubation. Further study is needed to determine why the inhibitory effect is removed or decreased by lactic acid fermentation, and to determine if fresh kimchi and lactic acid bacteria of kimchi can inhibit the growth of H. pylori.

The antimutagenic effect of green-ye1low vegetables on the mutagenicities induced by N-methyl-N'-nitro-N-nitrosoguanidine(MNNG) and N-nitrosodimethylamine (NDMA) in Salmonella assay system and also their inhibitory effect on AZ-521 human gastric cancer cells were studied. Twenty-four items from twenty six kinds of vegetables(92%) revealed antimutagenic activity toward MNNG (p< 0.0l, 0.05). Perilla leaf, Korean cabbage, cauliflower, lettuce, mustard leaf, water dropwort, small water dropwort, carrot and burdock inhibited the mutagenicity more than 80%. The methanol extracts of the vegetables also showed the antimutagenic activity toward NDMA (p< 0.01, 0.05). Especially, perilla leaf, kale, soybean sprout and onion inhibited more than 80% of the NDMA induced mutagenicity in S. typhimurium TA100. Small water dropwort and perilla leaf exhibited the strong inhibitory effect (97~100%) on the growth of the AZ-521 human gastric cancer cells. Soybean sprout, water dropwort, broccoli, crown daisy, green red pepper, red pepper leaves, spinach, cabbage and sweet potato also inhibited growth of the cancer cells (p < 0.001~0.05).

This study developed a rainwater harvesting system for the irrigation of upland on sloping area. The assessment of water supply capacity was evaluated in farm field experience. This system consists of a water catchment device and a collapsible storage tank. The water catchment device was designed to collect runoff water in natural channel of 500 mm width into a pipe of 50 mm inner diameter. The device has funnel-shaped plan and cross-section of square. The storage capacity of the collapsible water tank was caculated to meet the water demand for irrigation in 30 a cultivated land for 10-year frequancy drought. The tank has a cuboid shape with a capacity of 30 ㎥, 5 m in width and length, 1.2 m in height. This system can supply 92% of the water required for drop irrigation of red pepper and 88% of the water required for drop irrigation of onions in 30 a cultivation land during the month of May and June. In the case of 16-dry days of 10-years frequency, this system is capable to irrigate 100% of required water for red pepper and onion, 76.7% of required water for Omija (Schisandra chinensis), and 51.5% of required water for autumn kimchi cabbage.

Changes in the contents of sugar, organic acid, free amino acid and uncleic acid-related compounds of leaf mustard-Kimchi during fermentation at 5~7$^{\circ}C$ were investigated. The leaf mustard-Kimchi was formulated with 4kg leaf mustard, 120g garlic, 80g ginger, 540ml salted anchovies, 1kg green onion, 200g red pepper powder, 200g ground red pepper, 60g whole sesame and 600ml glutinous rice paste. Changes in pH and acidity were relatively slow. Major free sugars were glucose(0.13%) and maltose(0.42%), and residual sugars(0.03-0.04%) were also detected after 32 days of fermentation. Major free amino acids containing more than 26.5mg% were proline, glutamic acid, alanine and histidine. Contents of total free amino acids increased from 244.8 to 397.2mg% by 24 days of fermentation. Of non-volatile organic acid, lactic acid was the most abundant(119.3mg%), and its content increased markedly after 10 days of fermentation. Other organic acids(below 53.1mg%) observed were malic, oxalic and citric acid. Contents of nucleic acid-related compounds were high in the order of hypoxanthine(22.8mg%), IMP(8.3mg%) and GMP(6.9mg%). Hypoxanthine content increased by 10 days(27.3mg%) and decreased thereafter, while the others decreased gradually during the overall period of fermentation.
In order to stably produce crops, there is an increasing demand for effective crop monitoring techniques in domestic agricultural areas. In this manuscript, a cultivation area extraction method by using deep learning model is developed, and then, applied to satellite imagery. Training dataset for crop cultivation areas were generated using RapidEye satellite images that include blue, green, red, red-edge, and NIR bands useful for vegetation and environmental analysis, and using this, we tried to estimate the crop cultivation area of onion and garlic by deep learning model. In order to training the model, atmospheric-corrected RapidEye satellite images were used, and then, a deep learning model using FC-DenseNet, which is one of the representative deep learning models for semantic segmentation, was created. The final crop cultivation area was determined as object-based data through combination with cadastral maps. As a result of the experiment, it was confirmed that the FC-DenseNet model learned using atmospheric-corrected training data can effectively detect crop cultivation areas.
