  • This study was conducted to investigate antioxidant component content during maturity for judgement of optimum harvest time in black soybean. For high-functional black soybean production, accumulation pattern of isoflavone and saponin contents and anti oxidative activity according to maturity stage were investigated. Varieties used in this experiment were Ilpumgemojeongkong and heukcheongkong, which are the recommended black soybean in Korea. Isoflavone and saponin contents during maturity period in black soybean was the highest at $6{\sim}7$ days earlier than general harvesting time. It was indicated that optimum harvesting time for high quality soybean were $3{\sim}7$ days earlier than harvesting time for higher yield. As a result of investigation about accumulation pattern of antioxidant components by maturity stages in seed, total isoflavone content was the highest at 61 DAF in Ilpumgeomjeongkong and at 77 DAF in Heukcheongkong. Contents of total saponin were the highest at 61 DAF and at 71 DAF, respectively. In case of leaf, total isoflavone content was the highest at 55 DAF in Ilpumgeomjeongkong and Heukcheongkong. Contents of total saponin were the highest at 18 DAF and at $55{\sim}71$ DAF, respectively. It showed that black soybean's leaf could be developed as a new health food material, owing to high contents of antioxidant components and biological activity and it's suitable harvest time was at $R_7$.

  • Bread was prepared with five different levels of germinated soybean powder (0%, 4%, 8%, 12% and 16%) and the quality characteristics were investigated. Moisture content decreased, while protein, fat and ash content increased with increasing germinated soybean powder content. Addition of germinated soybean powder increased the weight, but decreased the height, volume and specific loaf volume of bread. The incorporation of germinated soybean powder lowered the lightness and yellowness of bread crust. Textural profile analysis showed that hardness, springiness, gumminess and brittleness increased with the increase of germinated soybean powder level, but no significant differences were observed in cohesiveness. Total isoflavone contents of bread increased after baking, and the increase of aglycones was particularly noted. From the results of sensory evaluation, recommended addition level for germinated soybean powder was considered to be 8% or less.

  • Three varieties of soybean, Chungtaik, Hillkong, and Endaedu which have been recommended to cultivate widely in Cheju Island, were chosen to study their amino acid metabolism in order to determine their nutritional values. 1) The total nitrogen contents of these soybeans were decreased in the order of Chungtaik, Hillkong, and Endaedu, indicating that the last variety is undesirable for a recommened formae even under a favorable condition of cultivation. The Hillkong variety may well be recommended for cultivation for a source of lipid rather than protein. 2) From analysis fo free amino acids, it was found that Hillkong contained normal amounto f vaious amino acids but Endae여 contained them in very abnormal fashion suggesting that an improved scheme of fertilization is necessary. Data from Chungtaik indicated it was excessively supplied with N fertilizer. 3) The amino acid contents of proteins extracted from these soybeans showed that Chungtaik contained less number of amino acids in its protein than the other two. The distribution of these amino acids appeared normal in Hillkong but quite irregular in Endaedu. In conclusion, both Chungtaik and Hillkong could be recommended for cultivation, the former as a protein source, the latter a lipid source of foods. Endaedu, however, may be liable to further research before it will be recommend for cultivation.

  • Sustainable and healthy diet is a challenge in recent world. Despite the global depletion of water resources, Korea has no system for controlling its water footprint. This study established the water footprint tables of Korean food using the Water Footprint Network databases, and applied them into two meal plans for 19~64 year-old adults recommended in the Dietary Reference Intakes for Koreans 2020. Nut, oil, and meat's water footprints were higher and those of fruit and vegetable were lower. Sesame oil had the highest water footprint of 21,793 L/kg and pineapple had the lowest domestic water footprint of 102 L/kg. Water footprint of one serving size of beef was 925 L, that of chicken was 260 L, and those of soybean were 43 L in global and 81 L in domestic. The water footprint of the recommended 2,400 kcal meal plan was 2,882 L, and that of 1,900 kcal meal plan was 1,915 L. The water resources can be saved by choosing food with lower water footprint. The results of this study can be used in the further researches for more sustainable and healthier Korean diet.

  • The purpose of this study was to assess the qualities of cook/chilled soy sauce-glazed soybean curd with various packaging conditions as a trial to develop health-oriented convenience foods. The effects of three packaging methods, linear low density-polyethylene (LLD-PE), top sealing, and modified atmosphere packaging(MAP) on the shelf-life of HACCP-based cook/chilled soy sauce-glazed soybean curd were evaluated during 20 days of chilled storage in terms of time-temperature, microbiological (total aerobic plate count, psychrotrophic plate count, coliform, and fecal coliform count), chemical(pH and peroxide value(POV)), and sensory evaluation. The results of microbiological and chemical analyses were within the limits of the microbial and chemical standards for all phases after cooking. No significant differences were detected in microbial counts of the samples for all three packaging methods. However, sensory evaluation indicated that the top sealing and MAP methods showed a longer shelf-life than LLD-PE packaging. Recommended shelf-life of the product was 12 days for LLD-PE packaging, and 16 days for both top sealing and MAP. In conclusion, MAP was considered as the most effective packaging method for assuring microbial and sensory quality of this cook/chilled product.

  • The present study was conducted to determine the best level of substitution of soybean meal by sunflower cake in diets for kids through the evaluation of quantitative carcass traits. Thirty-two Boer kids X 1/2 NDB (no defined breed), males, non-castrated, with 4 months of age and initial body weight of $15{\pm}3.2$ kg, were randomly assigned to individual pens. The treatments contained four substitution levels of soybean meal by sunflower cake (0, 33, 66 and 100% DM). At the end of the experimental period, the animals were slaughtered. There was no influence of the treatments on any of the mean values of the evaluated measures (p>0.05): 21.78 kg (body weight at slaughter), 8.65 kg (hot carcass weight), 8.59 kg (cold carcass weight), 40.27% (hot carcass yield), 39.20% (cold carcass yield), 7.73 $cm^2$ (rib eye area), 46.74 cm (carcass outer length), 45.68 cm (carcass internal length), 36.92 cm (leg length), 26.04 cm (leg perimeter), 48.66 cm (hind perimeter), 58.62 cm (thoracic perimeter), 0.20 (carcass compactness index), 68.48% (total muscle of the leg), 2.79% (total leg fat), 55.19% (subcutaneous leg fat), 28.82% (total bone), 81.66 g (femur weight), 14.88 cm (femur length), 0.38 (leg muscularity index), 2.53 (muscle:bone ratio) and 33.42 (muscle:fat ratio). The substitution of soybean meal by sunflower cake may be recommended up to a level of 100% without alterations to quantitative carcass traits.

  • Two determinate soybean cultivars, 'Baegunkong' and 'Namhaekong', were planted on 8 Jone, 23 June, and 8 July 1996 at Cheju at planting densities of 33, 43, 53, 63 plants per $m^2$ to determine the optimum planting density of double crop soybean for recently recommended cultivars in Cheju area at various planting dates. The plant height, and the diameter and node number of main stems decreased as planting was delayed. The plant height increased but the stem diameter and node number decreased with increasing planting density. Pod number per plant was greater for Namhaekong than for Baegunkong and was not affected by planting date. Pod number per plant decreased but pod numbers per $\textrm{m}^2$ increased with increasing planting density. The number of seeds per pod was greater at the two later plantings and fewer at the highest planting density. 100-seed weight decreased with delaying planting. The seed weight was lighter at the highest planting density for Baegunkong but there was no difference for Namhaekong among the planting densities. The seed yield of Baegunkong was greater for 23 June and 8 July plantings (2,280 and 2,420 kg/ha) than for 8 June planting (1,450 kg/ha) while that of Namhaekong was greatest at 23 June planting (2,690 kg/ha) compared with 8 June and 8 July plantings (1,890 and 2,080 kg/ha). Across the planting dates and cultivars, seed yield increased from 1,860 to 2,290kg/ha as the planting density increased from 33 to 53 plants/$\textrm{m}^2$ and then leveled off with a further increase in planting density.

  • The expansion of upland crop cultivation in rice paddy fields is recommended by the Korean government to solve the problem of falling rice price and reduction of rice farmer's income due to oversupply of rice. However, water use efficiency is significantly influenced by the land use change from paddy field to upland. Therefore, this study aimed to evaluate the water budget of soybean grown in using APEX (Agricultural Policy and Environmental eXtender) model. The amount of runoff was measured in a test bed located in Iksan, Jeollabu-do and used to calibrate and validate the simulated runoff by APEX model. From 2019 to 2020, the water budget of soybean grown in uplands were estimated and compared with the one grown in paddy fields. The calibration result of AP EX model for runoff showed that R2 (Coefficient of determination) and NSE (Nash-Sutcliffe efficiency) were 0.90 and 0.89, respectively. In addition, the validated results of R2 and NSE were 0.81 and 0.62, respectively. The comparative study of each component in water budget showed that the amounts of evapotranspiration and percolation estimated by APEX model were 549.1 mm and 375.8mm, respectively. The direct runoff amount from upland was 390.1 mm, which was less than that from paddy fields. The average amount of irrigation water was 28.7 mm, which was very small compared to the one from paddy fields.

  • This experiment was conducted to determine the optimum row width and plant spacing within row under the tropical environment for a leading soybean variety Palmetto and it was carried out at Eakmat Experiment Station in Vietnam. The experiments were arranged in a split plot design with four replications and the test was repeated twice in two years. Variations for seed yield due to the distance between rows were significant at 1 per cent level in 1967 test(dry season growing) and at 5 per cent level in 1968 test. Significant differences for plant height, lodging, maturity, number of branches per plant, and number of pods per plant due to the row width were not found in both tests, while significant differences in difference spacing within row was found in all traits studied. Interaction between width of row and spacing within row for seed yield and plant height were found at five percent level in 1967 test. These results indicate that close planting may increase in seed yield and plant height in both seasons, and decrease in loadging. From these studies, one could be understood that the plant population, particularly in dry season, plays decisive roles on seed yield in soybean culture, and the maximum plant height and minimum value of lodging index were also observed in closest spacing plots. The highest soybean yield in late planting would be expected by a combinations of 30 cm(between rows)${\times}$5cm(between hills) plot, while 40cm ${\times}$ 5cm planting method would be suggested for rainy season growing. Highest seed yield was obtained at closet spacing in both dry and rainy season, and these results led to drilling method in seeding where about 20 seeds per meter of row could be recommended. Besides the seed yield, the close planting may produce some advantages, such as increase plant height and decrease lodging, weeds and erosion of surface soil.
