Protein and Content Amino Add Composition of Soybean Cultivars (콩 품종의 단백질함량과 아미노산 조성)

  • Soybean grain, the main source of protein and lipid, has been used for various purposes in our food resources. Therefore, to abtain and supply protein in safety, soybean must be considered as more and more important and it must be made many efforts in breeding for good quality and high protein. Contents of seed protein of the recommeded soybean cultivars in Korea were above 40 persents. Soybean seed protein was divided four fractions by solubility differences. Contents of fraction-albumines, globulines, prolamines and glutelines- were 7.59%, 71.43%, 1.32%, and 9.11% to total protein in Jangyeobkong. The major components of amino acids were glutamic acid, aspartic acid and arginine in order, cystein, methionine, and tyrosine were the minor components in soybean seed protein. Soybean seed protein is constituted mostly of 11s and 7s proteins. Contents of methionine and cystein, sulfur containing amino acid, in 11s protein has already identified higher than 7s protein's The yields of soybean curd were positively correlated with the soluble protein contents of the soybean varieties.

Protein, Ca, Mg and P Intakes of Breast-fed Infants during Lactation (모유영양아의 수유기간별 단백질, 칼슘, 마그네슘과 인 섭취량)

  • This study was longitudinally conducted to evaluate the intakes of protein, Ca, Mg and P of exclusively breast-fed infants compared with the Recommended Dietary Allowances (RDA) for Korean infants. Twenty Korean lactating women and their infants during the first 3 months of lactation in Incheon area were participated. Protein, Ca and Mg, and P contents in the milk were determined using semimicro Kjeldahl (N ${\times}$ 6.38) , atomic absorption spectrophotometer and colorimeter, respectively, and also the milk consumption of the infants was measured by the test-weighing method. Protein contents of the milk were 1.96, 1.63, 1.51, 1.25 and 1.16 g/100 ml, and protein intakes of the breast-fed infants were 9.00, 9.85, 9.17, 8.97 and 7.76 g/day at 7, 15, 30, 60 and 90 days postpartum. The average protein intake per body weight of the breast-fed infants was 1.84 g/kg/day. The average intakes of Ca, Mg, P were 172.1 mg/day, 15.2 mg/day and 91.4 mg/day, respectively, and the average Ca/P ratio was 1.91. There was positive correlation between protein and Ca, protein and p, and Ca and P contents while negative correlation between Mg and P, The body weight of breast-fed infants increased normally from 3.6 $\pm$ 0.41 g at birth to three month during lactation. It is suggested that the breast-fed infants in Incheon area consume almost adequately protein, Ca and P from the milk compared with RDA for Korean infants.

Seasonal Variation of Proximate Composition in Edible Portion or Ark Shell (Scapharca subcrenata) (새고막(Scapharca subcrenata) 가식부 일반성분의 계절변동)

  • In order to investigate the harvest time for the production of high value added ark shell(Scapharca subcrenata) cultured at the south coast of Korea, the seasonal variations of proximate composition(mois ture, protein, fat, ash and glycogen) in the edible portions of ark shell were measured from December 1994 to December 1995. Moisture contents were the lowest in spring, but the highest in summer season being the spawning season of the S. subcrenata. The other hand, protein contents were a maximum in spring and minimum in summer. In June, just before the spawning season, fat and glycogen content was the highest, and ash content was little changed through a year. After spawning season, glycogen contents, showed decrement. In evaluating the seasonal variation of protein, moisture, and glycogen content in ark shell, the relationships of moisture protein content, moisture glycogen content and glycogen protein content show to be reverse.

The Effect of Different dietary Patterns (between Non-Vegetarian and Vegetarian) on Protein Nutritional Status during Short-term (식사 Pattern의 차이가 단백질 영양상태에 미치는 영향)

  • The purpose of this study was to describe the protein nutritional status of female collegians between nonvegetarian diet groups(14) and vegetarian diet groups(19). Daily intake, protein were calculated from food direct measurement. Urea/creatinine, muscle mass, fatique conditions and hematological parameter were calculated. Blood samples were analyzed for total protein, albumin ammonia, urea, uric acid, creatinine, BUN contents. The results obtained are summarized as following : 1) On total dietary intake, especially Fe, vitamin C, niacin intake, vegetarian groups were higher than non vegetarian groups. 2) On composition of EAA(essential amino acids), vegetarians were highter than non vegetarian of leucine contents, but were lower lysine and threonine contents. 3) On urea / creatinine excretion, vegetarians were higher than non begetarians. Muscle mass were non signicant, fatique condition, vegetarians were normal state. 4) Non vegetarians were increased serum albumin total protein, uric acid, ammonia but vegetarians were decreased BUN, ammonia after experimental diet intake. 5) In process of time after meal, non vegetarians were increased serum albumin total protein, BUN, but vegetarians were decreased ammonia.

Effectiveness of Nutrition Education Program for Obese Children (비만아에 대한 영양교육 실시효과에 관한 연구)

  • This study was carried out to examine how dietary protein and calcium levels in rats fed fat-enriched diet affect the total lipid and cholesterol contents of blood and tissues. Male Sprauge-Dawley rats weighing approximately 200g were fed six purified diets which contained 18%(w/w) beef tallow, 1% (w/w) cholesterol, two source of protein, casein or isolated soy protein (ISP) and three levels of dietary calcium, 0.1%, 0.4% and 1.0%, first, for four weeks, and second, for eight weeks. The contents of the total lipid, cholesterol and triglyceride in blood, liver, heart and feces were determined. After four weeks feeding serum lipid and cholesterol concentrations significantly decreased in rats fed 1.0% (w/w) level calcium, regardless of dietrary protein sources. After eight weeks, these concentrations were significantly lower in the rats fed soy protein than in casein-fed rats. As dietary calcium level increased serum and tissue lipid and cholesterol contents were decreased and fecal lipid excretion increased. It is concluded that hypolipidemic and/or hypocholesterolemic effects of soy protein and calcium were partly due to decrease in lipid absorption.

  • The biochemical change during regeneration of perilla callus were investigated by comparing total protein and lipid contents, protein band pattern in SDS-PAGE, and fatty acid composition in the calli cultured for various period(0, 1, 3, 5 and 6 weeks) Calli were induced from cotyledon and hypocotyl explants of peplants of perilla on perilla on MS medium containing BA(0.5 mg/L) and NAA(0.5mg/L). The protein contents reached the peak at 3 weeks after induction of calli, and then was decreased. Total lipid contents was decreased as the culture period increased. The band pattern of polypeptides showed that 30KD and 45KD polypeptides and 22KD and 45KD polypetides were major proteins in the cotyledon and hypocotyl explants, respectively. However increase of culture period only 30KD protein was highly accumulated.

Comparison of protein and amino acid content in selected cultivars of non-glutinous rice in Korea

  • The objective of this study was to determine amino acid and protein contents of brown and milled non-glutinous rice of 13 cultivars in Korea. Protein contents of MRs (milled rices) were in order of Haepum (7.27%) > Hanareum No. 4 (7.14%) > Odae (6.84%). Protein contents of BRs (brown rices) were in order of Haepum (7.68%) > Odae (7.63%) > Hanareum No. 4 (7.60%). The amino acid content was the highest in Haepum (MR 5.76%, BR 6.49%), followed by Haedeul (MR 5.71%, BR 6.30%), and Odae (MR 5.63%, BR 6.29%). The essential amino acid contents of non-glutinous rices were in order of Haepum (MR 2.34%, BR 2.57%) > Haedeul (MR 2.31%, BR 2.48%) > Odae (MR 2.20%, BR 2.56%). The contents of amino acid and protein in BRs were considerably higher than those in MRs. Protein and most of amino acid contents were higher in Haepum than the other cultivars. The certificated reference material (CRM) 1849a (infant/adults nutritional formular) from National Institute of Standard and Technology (NIST) was used as the test sample to determine the precision and accuracy of the analytical method. The regression analyses revealed good correlations (correlation coefficient), greater than 0.99. The recovery values of the amino acids ranged from 93.17 to 99.59%. The limit of detection (LODs) ranged from 0.01 - 0.07 mg·100 g-1 and the limit of quantitation (LOQs) ranged from 0.03 - 0.21 mg·100 g-1 for all analytes.

A Study on Development of Protein Materials using Dead Flatfish from Fish Farms(1) -Antioxidant Functional Properties- (양식장 넙치 폐사어를 이용한 단백질 소재의 개발에 관한 연구(1) -항산화 기능특성-)

  • To develop the protein materials by the reutilization of dead flatfish from fish farms in Jeju island, the physicochemical characteristics and the functional activities of collagen peptide extracts were investigated. Flatfish skin collagen peptide (FSCP) and flatfish protein hydrolysate (FPH) were manufactured from dead flatfish. The differences of pH, moisture and fat contents between FSCP and FPH were not significant, fat contents were analyzed less than 0.3%, and trans-fat, saturated fat and cholesterol were not detected in both samples. Protein contents of FSCP and FPH showed about 92% and 95%, respectively. In the analysis of amino acids, glycine and hydroxy proline content in FSCP was 24.22% and 6.15%, respectively, showed a typical characteristics of the collagen protein, but essential amino acids contents such as threonine, valine, methionine, isoleusine, leusine and phenylalanine were relatively higher than those of FPH. Average molecular weight of FSCP was measured as 1,102 which was almost equal value with that of tuna collagen peptide. The antioxidant activities and functional properties showed high but did not show significant difference between two samples.

Effects of Formalin Treated Soy Bean as a Source of Rumen Undegradable Protein on Rumen Functions of Non-lactating Dairy Cows on Concentrate Based-diets

  • An objective of this study was to determine the effects of increasing contents of rumen undegradable protein (RUP) from formalin treated soy bean (FSBM) on rumen functions. Four rumen canulated non-lactating cows were randomly allocated to total mixed rations (TMR) containing different proportions of soy bean meal (SBM) and FSBM. Of rumen fermentation characteristics, concentrations of ruminal fluid ammonia and molar proportions of isoacids decreased with increasing contents of RUP in diets (p<0.01). The animals on TMR containing only SBM gained less weight and had smaller rumen volume than those on TMR containing RUP from FSBM (p<0.05). Organic matter and neutral detergent fiber digestibility in sacco were not different (p>0.05). The density of protozoa particularly small Entodinium sp. in ruminal fluid was higher in animal fed TMR containing SBM:FSBM (34:66) and FSBM than those fed TMR containing SBM:FSBM (66:34) and SBM (p<0.01). Total viable count, and net microbial protein synthesis as indicated by purine derivatives in urine increased with increasing contents of RUP from FSBM (p<0.01). It can be concluded that a reduction in net microbial protein synthesis in the rumen with increasing contents of RUP in the diet can be due to the reduction of preformed protein available for microbial growth as well as an increased turnover rate of microbial cells by predatory activity of protozoa.

EFFECT OF SOIL MOISTURE CONTENTS ON THE GROWTH, AND CHEMICAL CONSTITUENTS OF BURLEY TOBACCO AND ON THE PROTEIN PATTERN IN TOBACCO LEAF (토양수분 함량차이가 버어리종 담배의 생육, 내용성분 및 단백질 Pattern에 미치는 영향)

  • This study was carried out to investigate the effect of different soil moisture contents on the growth and chemical constituents of burley tobacco and on the protein pattern in tobacco leaf. Height, stem diameter, and largest leaf length of tobacco droughted from 45 to 60 days after transplanting was not recovered by rewatered amount of water supply from 60 to 75 days after transplanting, but leaf width enlarged. Dry weight per unit leaf area and total nitrogen content showed high values in low soil moisture, but total alkaloid contents were not different according to soil moisture contents. Soil moisture content didn't effect on the protein pattern of middle and upper leaves, but lower leaves showed the mild color and fewer numbers of the protein bands than those of midd1e and upper leaves.
