The Effects of High Pressure and Various Binders on the Physico-chemical Properties of Restructured Pork Meat

  • This study was carried out to investigate the effect of high pressure and the addition of non-meat proteins on the physico-chemical and binding properties of restructured pork. Pressurizations were carried out at up to 200 MPa and non-meat proteins used as a binder were isolated soy protein (ISP), sodium caseinate (SC), whey protein concentrate (WPC) and egg white powder (EWP). The pH values of all treatments were affected by the level of pressure. $L^*$-value of all treatments increased significantly (p<0.05), while both $a^*$-value and $b^*$-value of all treatments showed a significant decrease (p<0.05) with increasing pressure level. Binders could contribute only additive effects on both pH and color of the treatments. It was found that high pressure improved the water binding capacities and binding strength of the treatments. Binders also improved the binding strength of restructured pork. However, SC and WPC had no effect on water binding properties under high pressure. These results indicate that the application of high pressure had more significant effect on restructuring meat than binders.

Effects of High Pressure and Sodium Nitrite Levels on Cured Color Development and Residual Nitrite Concentration in Pork Homogenates

  • This study investigated the effects of high pressure with or without thermal treatment on the cured color development and residual nitrite contents of model meat systems (pork, NaCl and sodium nitrite). At low nitrite levels (${\leq}50{\mu}g/g$), 200 MPa of pressure alone (P) did not develop the cured meat color (p>0.05). Thermal treatment (T) showed curing pigmentation (higher CIE L* and CIE a*), and the impacts were more effective when pressure was combined with thermal treatment (PT). In contrast, nitrite levels did not contribute to the cured meat color when ${\geq}200{\mu}g/g$ of nitrite was added to the meat. At high nitrite levels, although the typical cured color that is induced by thermal treatment did not present by pressure alone, the PT treatment still showed a pinker color with low residual nitrite content compared to the T treatment. The higher the pressure level (300 MPa), the greater the cured meat pigmentation with lower residual nitrite. Therefore, the present study demonstrates the possible application of high pressure, both for cured pigmentation and reducing residual nitrite, respective to typical thermal treatments.

Evaluating on the Effects of Circumferential Thinning Angle and Bending Load on the Failure Pressure of Wall-Thinned Elbow through Burst Tests (파열 시험을 통한 감육곡관의 손상압력에 미치는 원주방향 결함 폭과 굽힘하중의 영향 평가)

  • This study performed burst tests using real-scale pipe elbow containing simulated local wall-thinning to evaluate the effects of circumferential thinning angle and bending load on the failure pressure of wall-thinned elbow. The tests were carried out under the loading conditions of internal pressure and combined internal pressure and bending loads. Three circumferential thinning angles, ${\theta}/{\Pi}=0.125,\;0.25,\;0.5$, and different thinning locations, intrados and extrados, were considered. The test results showed that the failure pressure of wall-thinned elbow decreased with increasing circumferential thinning angle for both thinning locations. This tendency is different from that observed in the wall-thinned straight pipe. Also, the failure pressure of intrados wall-thinned elbow was higher than that of extrados wall-thinned elbow with the same thinning depth and equivalent thinning length. In addition, the effect of bending moment on the failure pressure was not obvious.

Effects of Time-Dependent High Pressure Treatment on Physico-chemical Properties of Pork

  • The effects of high pressure processing, pressure level (50, 100, 150, and 200 MPa) and pressurized time (0, 5, 10, 15, 30, 45, and 60 min) on the physico-chemical properties of pork M. longissimus dorsi were evaluated. The pH value was affected by both pressure level and pressurized time, especially at 200 MPa (P<0.05). In color measurement, $L^*$ and $a^*$-values were increased by both pressure level and pressurized time, but $b^*$-value did not differ significantly (P>0.05). Water holding capacity (WHC) was significantly decreased (P<0.05) depending on pressure level and pressurized time, while cooking loss was gradually increased. Warner-Bratzler shear force did not differ significantly (P>0.05) among the treatments. These results indicate that high pressure processing below 200 MPa for 1 hr had no effect on the quality of cooked meat, although some alterations were observed before cooking.

  • Purpose: The purpose of the study was to investigate the effects of subtraction meditation on perceived stress, self-efficacy, blood pressure, and pulse rate in paramedic students. Methods: A quasi-experimental study with non-equivalent comparison groups using pre and post-test design was performed. The experimental group consisted of 27 participants who attended the meditation program, and the control group consisted of 26 non-participants of the program. The data were analyzed using SPSS/WIN 24.0. Results: There were a statistically significant differences between the experimental group and the control group in perceived stress(t=2.301, p=.026), systolic pressure(F=18.531, p=.000), diastolic pressure(F=9.745, p=.003), and pulse rate(F=33.869, p=.000) between pretest and posttest results. Conclusion: The subtraction meditation program can help reduce perceived stress, systolic pressure, diastolic pressure, and pulse rate.

Effect of Water Drinking on the Postprandial Fall of Blood Pressure in the Elderly (식후저혈압 위험 노인의 식전 물 섭취가 식후 혈압변화에 미치는 효과)

  • Purpose: The purpose of this study was to examine preventive effects of water drinking on postprandial fall of blood pressure in the elderly. Method: Participants were 25 elders who had experienced postprandial fall of systolic blood pressure of more than 15mmHg in a previous study. Within subject repeated measures design using random order allocation was used to control extraneous variables among participants. During the experiment, each participant had to drink 400mL water before lunch, whereas when in the control, they only had their lunch. Blood pressure and heart rate were measured for both times before lunch and at 15 minutes intervals up to 90 minutes after lunch. Data were analyzed using descriptive statistics, repeated measures of ANOVA, paired t-test and Bonferroni adjustment as Post-hoc analysis. Results: Water drinking before lunch elicited significant pressor effects by increasing systolic and diastolic pressure $13.9{\pm}4.7/5.2{\pm}2.2mmHg$ compared blood pressure during the control p<.005, p<.022. Heart rate, however, did not change significantly at either time. Conclusion: Drinking water before meal is recommended for elders who experience postprandial hypotension. However, the appropriate volume of water to prevent postprandial fall in blood pressure should be further studied.

  • This paper describes the nonlinear analyses of a 1:4 scale model of a prestressed concrete containment vessel (PCCV) using an axisymmetric model and a three-dimensional model. These two models are refined by comparison of the analysis results and with testing results. This paper is especially focused on the analysis of behavior under pressure and the temperature effects revealed using an axisymmetric model. The temperature-dependent degradation properties of concrete and steel are considered. Both geometric and material nonlinearities, including thermal effects, are also addressed in the analyses. The Menetrey and Willam (1995) concrete constitutive model with non-associated flow potential is adopted for this study. This study includes the results of the predicted thermal and mechanical behaviors of the PCCV subject to high temperature loading and internal pressure at the same time. To find the effect of high temperature accident conditions on the ultimate capacity of the liner plate, reinforcement, prestressing tendon and concrete, two kinds of analyses are performed: one for pressure only and the other for pressure with temperature. The results from the test on pressurization, analysis for pressure only, and analyses considering pressure with temperatures are compared with one another. The analysis results show that the temperature directly affects the behavior of the liner plate, but has little impact on the ultimate pressure capacity of the PCCV.

The Effects of Temporary Visual Block on the Foot Pressure and Foot Area of Chronic Stroke Patients (일시적인 시각차단이 만성 뇌졸중 환자의 지면 족저압 분포와 족부면적에 미치는 영향)

  • Purpose: The purpose of this study was to investigate the effect of temporary visual block existence and nonexistence on the change in foot pressure and foot area in stroke patients. Methods: Sixty-one chronic stroke patients volunteered to participate in the study. Foot pressure and foot area were measured using the Biorescue system. The subject maintain a comfortable standing position on the pressure-measuring plate one meter away from the computer. The sequence of the visual variation data while standing on the measuring plate was collected randomly. The data were collected with three repetitions and used the five-second measuring values except the first second and the last second according to each visual condition. All data were analyzed using SPSS version 21.0. The significance level for the statistical inspection was set as 0.05. Results: The comparison between the visual existence and nonexistence status showed statistically significant effects on foot pressure and foot area. The visual nonexistence status showed more improvement in foot pressure symmetry and area than visual existence status. Conclusion: This study shows that the foot pressure and foot area for the chronic stroke patients changed according to the visual states. It is predicted that these data will be used in rehabilitation training programs and to present temporary changes in visual status for stroke patients.

Effects of the Body Shaping Foundation on Blood Flow and Wearer Comfort for Middle-aged Women (시판 체형보정용 파운데이션이 중년여성의 혈류 및 착용 쾌적감에 미치는 영향)

  • The study investigated the effects of five commercial body shaping foundation items on clothing pressure, blood flow, body shaping effectiveness, and wearer satisfaction for middle-aged women. The study measured clothing pressure at each of the 10 designated measurement points for twelve subjects wearing the foundations. Blood flow changes were recorded and body shaping effectiveness was analyzed by comparing differences in girth when wearing and not wearing the foundations. The subjects rated wearer comfort along a 7-point Likert scale. The results were that clothing pressure was present at all measurement points, and all foundations placed the least pressure on the anterior underbust girth. In addition, clothing pressure was high in the order of the lateral, posterior, and anterior areas. As clothing pressure increased, blood flow and velocity decreased and overall wearer satisfaction was assessed to be less comfortable. Body shaping effectiveness was evident across all the items, as all decreased girth measurements significantly. In conclusion, the appropriate level of clothing pressure provided by experimental foundations which is positive for blood flow and has an excellent body shaping effect was found to be between 0.53 and 1.77 kPa.

Studies on the Cardiovascular Effects of Ambrein Pretreatment in Rats

  • The pharmacological actions of ambrein were investigated alone or in combination as a pretreatment with agonists (adrenaline, noradrenaline, acetylcholine, histamine, nicotine), antagonists (atropine, atenolol) and calcium channel blocker (verapamil) in vivo in anaesthetized SWR rats using blood pressure, heart rate and myocardial contractility as parameters. Ambrein in the dose range of 50-200 mg/kg to the normotensive anaesthetized rats demonstrated negative chronotropic effect and increased the myocardial contractility significantly. At the mid dose (100 mg/kg) this increase in contractile force was 36% and 44% above the normal at 30 min and 60 min intervals post-treatment, respectively. Both of the lower and high doses (50 mg/kg and 200 mg/kg) had similar effects. Furthermore, this contractile response was dose related. Also, this compound produced a considerable increase in myocardial contractility when used as a pretreatment with some agonists and antagonists. The results on blood pressure did not show a considerable change when ambrein was used alone. However, ambrein pretreatment at the dose of 100 mg/kg did not block the effects of adrenaline, noradrenaline, isoprenaline and acetylcholine on heart rate and blood pressure. On the other hand, this pretreatment attenuated the sympathoadrenal effects of nicotine significantly. Chronotropic and blood pressure changes produced by histamine were also inhibited by ambrein pretreatment. This pretreatment significantly reversed the effects of atenolol but failed to demonstrate any change in the negative chronotropic, inotropic and hypotensive responses induced by verapamil. It is concluded that ambrein induced nonselective dose dependent antagonism of the effects of some agonists and antagonists require contribution of some neuromediators. However, the positive isotropic effects of ambrein possibly involve the enhancement of slow Ca channels and/or activation of ${\beta}-adrenergic$ receptors in the heart. At this moment it is difficult to explain the exact mode of action of ambrein and the studies dealing with Ca channel blocker and adrenergic blocker followed by ambrein may help to define the factors which contribute to its positive inotropic effects.
