Use-friendly Active Packaging of Powdered Infant Formula in Single-serve Portion Augmented with Anti-oxidative Function (산화억제 가능성과 사용편의성을 가진 일회성 조제분유 포장)

  • In the modified atmosphere packaging of powdered infant formula, the oxygen inside the package may cause its quality deterioration and needs to be minimized for quality preservation. A way of oxygen scavenger inclusion in the single-serve package without contacting the product was devised for removing oxygen residing initially and permeating through the seal layer during the storage. A polyethylene/pulp multi-layer porous filter bag of 5 × 7 cm containing 13 g of powdered infant formula was packaged in an 8 × 9 cm size aluminium laminated film package with a Fe-based oxygen scavenger of 1.8 g. After nitrogen flushed packaging, the active packages were stored at 30℃ for 254 days with periodical quality measurement. The active package could remove the initial residual oxygen of 1.4% completely and maintain absence of oxygen for the whole storage, which contributed to reduced oxidation observed in lower product peroxide value compared to that of the product in the control package. There was no influence of packaging treatment on content of 5-hydroxymethylfurfural, reaction product of initial nonenzymatic browning. The devised oxygen-scavenging single-serve package showed a potential to improve the preservation of infant formula powder and extend the shelf life.

Water-Vapor Transfer Characteristics of Carrageenan-Based Edible Film (카라기난 필름의 투습 특성)

  • Water-vapor transmission rate and water-vapor permeability of carrageenan-based edible film with three different thicknesses of 0.05, 0.08 and 0.11 mm were measured to investigate the potential applicability of the films to powder foods at five different temperatures (20, 25, 30. 35 and $4^{\circ}C$) and three different relative humidities (50. 70 and 90% RH). Water-vapor transmission rate of the carrageenan-based film was gound to be 2.3 times higher than that of polyethylene (PE) film and water-vapor permeability of the film was 45-230 times higher than that of PE film. Water-ydpor permeability of the film seemed to increase linearly with the film thicknees like other hydrophilic edible films. Water-vapor transmission rate were found to be dependent on the temperature. Activation energies of the water-vapor transmission rate of the film were found to be between 7.898 and 12.8702 kj/mol depending on the film thickness. The water-vapor transmission rate of the film showed the typical kinetic compensation effect between activation energies and preexponential factors. which was proved by the linear increase in the value of logarithms of preecponential factor.

Effects of beta glucan extract from Phellinus baumii on the eusociality of ants (장수상황버섯 베타글루칸 추출물이 개미 집단생활에 미치는 영향)

  • Beta glucan was purified from Phellinus baumii and tested for its effect on the group performance of ants, a principal model of eusociality and of superorganisms. Japanese carpenter ants (Camponotus japonicus) were reared on diets containing beta glucans to characterize their effects on eusociality. Culturing structures for ants were assembled by implanting autoclaved soil into polyethylene terephthalate bottles. Three different eusocial strength indices were used to study the effect of beta glucan extract (BGE) on eusocial activities - the number of residence chambers, cooperative defense index (CDI), and group size and composition. Control, low- BGE, and high-BGE diets were prepared with the following three levels of BGE supplements in sucrose powder: 0, 20, and 50% (g/g). More residence chambers were observed in the BGE-fed groups than in the control. The CDI against a foreign queen ant was calculated according to the time taken to subdue the foreign queen. The high-BGE group took less time to complete their defense formation than the other groups. Differences were evident between control and BGE-fed groups in the total numbers of ants and eggs. The BGE-fed groups showed a significant increase in both the number of workers and the number of eggs. When fed with BGE, ants responded positively for all three eusocial strength indices. These results show that BGE exerts beneficial effects on the eusociality of ants as a superorganism.

Preparation and Characterization of ClO2 Self-Releasing Smart Sachet (이산화염소 자체 방출 스마트 샤쉐의 제조 및 특성 연구)

  • Chlorine dioxide (ClO2) is widely used for post-harvest sterilization treatment. However, there are limitations in the retail application of ClO2 due to difficulties in handling, expensive facilities, and safety concerns. Therefore, it is necessary to develop a ClO2 technology that can be easily applied and continuously released for a long period. In this study, a series of ClO2 self-releasing sachets were developed. First, poly(ether-block-amide) (PEBAX) and polyethylene-glycol (PEG) composite films containing different ratios of citric acid (CA) were prepared using the solution casting method. The as-prepared PEBAX/PEG-CA composite films were evaluated using FT-IR, DSC, and TGA to confirm chemical structure and thermal properties. Subsequently, PEBAX/PEG-CA composite films were designed in the form of a sachet and NaClO2 powder was transferred into the sachet to achieve a ClO2 self-releasing system. The ClO2-releasing behavior of the sachet was investigated by measuring the release amount of the gas using UV-vis. The release amount of ClO2 increased with increasing CA contents owing to the existence of higher protons (trigger) in the polymer matrix. Further, ClO2 gas was released for a longer time. Therefore, the as-prepared smart sachet can be tuned according to applications and packaging sizes to serve an optimal sterilization effect.
