Antimicrobial Activities of 'Formosa' Plum at Different Growth Stages against Pathogenic Bacteria (생육 시기에 따른 자두류 중 후무사의 식중독균에 대한 저해효과)

  • To determine the antimicrobial activity of methanol extracts form 'Formosa' plum against 4 kinds of pathogenic bacteria, the fermosa were got at different growth stages and were extracted using methanol, respectively. The Formosa methanol extracts treated with 5.0 mg/disc showed the highest antimicrobial activity against 4 kinds of pathogenic bacteria and those of Formosa 1-4(immature fruit), which thin out 10∼25 days before foal harvest, showed higher antimicrobial activity against gram positive and gram negative microorganisms than Formosa 5-6(mature fruit). Especially, the methanol extracts of Formosa 1 and 2 were exhibited the strongest growth inhibiting activities to these bacteria. The minimal inhibitory concentrations(MIC) of immature Fomosa methanol extracts was 320 $\mu\textrm{g}$/mL against Escherichia coli 0157:H7 and 160 $\mu\textrm{g}$/mL against Staphylococcus aureus respectively. The MIC of immature Formosa methanol extracts to Salmonella typhimurium and Listeria monocytogenes were 640 $\mu\textrm{g}$/mL. These results suggest that methanol extracs of immature formosa can be used as an effective natural antimicrobial agent in food.

  • ISC3는 EPA가 권장하는 가우시안 대기확산 모델로서 일반적으로 공장 배출원으로 인한 일정 기간동안의 대기확산농도와 범위를 예측하기 위하여 사용되어진다. ISC3 모델은 다양한 점오염원, 면오염원, 등을 취급할 수 있을 뿐 아니라 building wake와 down wash 그리고 거리의 함수로써 final plum rise를 옵션으로 사용할 수 있고 단순지형이나 복합지형의 고려가 가능하다. ISC3 모델은 단순지형 장기모델인 ISCLT3와 복합지형 단기모델인 ISCST3가 있으며 모델의 수행에 있어 약간의 차이점이 있다. (중략)

  • Organophosphorus insecticide residues were investigated in six kinds of fruits and five kinds of vegetables.The materials used in this experiment were grape, musk melon, apple, peach, plum, apricot, lettuce, green pepper, cucumber, pumpkin and tomato which were collected from June to september 1986 in Seoul. Residual pesticides investigated were Diazinon, Parathion, MEP (Fenitrothion), Malathion, EPN, MPP (Fenthion), PAP (Phenthoate) and Dimethoate and all samples were analysed by gas chromatographic technique with NPD (Nitrogen Phosphorus Detector). No sample was found to approach proposed national maximum residue limits in Korea.

Production of Fermented Honey Wine (벌꿀발효주의 제조)

  • In order to compare methods of making a mead and a melomel, changes of alcohol contents, reducing sugar, soluble solids, pH and total acidity during fermentation of a mead and Japanese plum melomel was investigated. Fermentation rate of the melomel were much faster than the mead. Reducing sugar and soluble solids were continuously decreased until the 16th day of fermentation, while alcohol contents were increased continuously during the same period. After fermentation of 21 days, alcohol contents of the mead was reached 7.6%, while that of the Japanese plum melomel reached 12.4%. pH and total acidity were not changed considerably during the whole fermentation period. Clear honey wines with transmittance of 99.4% were obtained by membrane filtration. In conclusion, the method of making melomel using the osmotically extracted fruit juice with honey was found to be more advantageous than the method of making a simple mead.

Bacterial Fruit Rot of Apricot Caused by Burkholderia cepacia in China

  • An unreported disease of apricot was observed in orchards in Zhejiang province, China. Symptoms started as water soaked lesions on the fruit surface. Later, water-soaked areas developed and spread to the entire fruit, resulting in soft rot of the whole fruit. The causal organism isolated from symptomatic fruits was identified as Burkholderia cepacia based on its biochemical and physiological characteristics and confirmed by the cellular fatty acid composition and Biolog data as well as 16S rRNA gene sequence analysis. The bacterial isolates caused similar symptoms when inoculated onto fruits of apricot. In addition, European plum, Japanese plum, nectarine and kiwifruit were susceptible to the B. cepacia pathogen. However, the B. cepacia pathogen failed to cause any visible symptoms when it was inoculated onto 16 other fruits. This is the first report of a bacterial disease of apricot caused by B. cepacia in China.

Effect of Edible Coatings on Softening of the Stored Immature Plums (식용코팅이 미숙 자두의 연화에 미치는 효과)

  • Immature plums(Prunus salicina L.) were coated with edible coatings, calcium-added methyl cellulose(CaMC) and hydroxy propyl methyl cellulose-15(CaHPMC-15). Weight loss and respiration rate of immature plums coated with CaMC and CaHPMC-15 were lower only at the earlier storage period. The titratable acidity of plums was decreased and pH was increased during storage, Soluble pectin, pectinesterase, and polygalacturonase activity as the marker of softening were commonly increased with storage time, but those increases were lower in CaMC and CaHPMC-15-coated plums. Mechanical firmness became significantly soft during storage, while the coated plums were remained harder. As a result of sensory evaluation, softening of plum tissue was found during storage, but the coated plums had the harder texture. These data suggest that the application of CaMC or CaHPMC-15 coatings into immature plums can reduce the postharvest softening during storage.

Characteristics of Organic Acid Contents and Fermentation Solution of Prunus mume in South Korea

  • This study was carried out to get the information of Plum tree (192 germplasm) collected in Korea, and to evaluate the organic acid contents and fermentation solution. The organic acid content of fruit was 50.9 ± 6.0 mg/g, and which was composed of 55.5% of citric acid, 43.4% of malic acid and 1.1% of oxalic acid, and showed large difference among germplasms. Oxalic acid and malic acid made no differences in organic acid content according to flesh color, whereas citric acid and total organic acid contents were highest in orange color and lowest in whitish green. Malic acid, citric acid and total organic acid contents did not show differences among fruit weight groups, but oxalic acid content was highest at fruit weight of 5.1 ~ 10.0 g and lowest at more than 20.1 g. The sugar content of fermentation solution of fruit was 55.7 ± 1.6 °Brix and the harvest rate was 116.7 ± 8.7%. The correlation coefficients among fruit weight, the sugar content (°Brix) and harvest rate of fermentation solution were very low, and there were correlations of r=-0.551⁎⁎ between fruit weight and oxalic acid, r=-0.767⁎⁎ between malic acid and citric acid, and r=0.834⁎⁎ between citric acid and total organic acid content.
