The purpose of this study was to examine nutrition management conditions of lunch with the elementary schools and middle schools in the Changwon area. 292 students (5th and 6th graders) from three elementary schools and 330 students from three middle schools (boys, girls, and co-ed) participated in the aggregate selective plate waste measurement for 5 days. Planned menus, serving sizes and plate waste amount data were collected. Nutrient analyses for the planned, served and consumed menus at school lunches were performed by using CAN-PRO 3.0. Nutrient analyses of the planned, served and consumed menus were compared with nutrient management standard (former edition) for school lunch and 1/3 Korean Dietary Reference Intakes (KDRIs). Significant difference was found in the average consumption rate between the elementary schools (82.2%) and the middle schools (71.8%). Specifically, the consumption rates of steamed rice (p < 0.001), side dish 1 (p < 0.001), and Kimchi (p < 0.01) at the middle schools were significantly lower than those of the elementary schools. When the nutrient contents in the served menus were put into percentages to the nutrient contents in the planned menus, middle schools (92.3%) showed bigger serving loss than the elementary schools (95.4%). In the nutrient assessment comparied with nutrient management standard (former edition), middle school lunches showed comparatively less energy or less some nutrient contents against the standard than the elementary school lunches. Specifically, in case of boys in middle schools, Vitamin C was the only nutrient content that satisfied the standard in the planned menus, served menus and consumed menus. In the 1/3 KDRIs based assessment, middle schoolers were found not to be provided proper nutrients with school lunches. To improve nutrition management at middle school foodservices, dietitians should reinforce nutrient assessment for menu planning, and try to decrease serving loss and plate waste.
This retrospective study was designed to evaluate the nutrient contributions of the five meal components of school lunch menus planned for elementary students in two school districts (District A and B) in the Midwestern state of the United States. The 4-week cycle menu was planned for two time periods (Period 1 and Period 2) following guidelines for NuMenus and general menu planning principles. Menu components of planned and served menus for two time periods were analyzed using $Nutri-Kids^{TM}$. No significant differences in the nutrient content of between Periods 1 and 2 were found for District A. District B served significantly more vitamin A and total fat in Period 1 and significantly more calories, iron, vitamin A, protein, and total fat in Period 2 than was planned. The major nutrients provided by the entree component included protein, calories, cholesterol, total fat, saturated fat, and sodium. Milk was an important source of calcium and provided approximately one-third of the total protein and vitamin A in the meal. The vegetable/fruit component was the major source of vitamins A and C. The grain/bread component provided approximately 20% of the carbohydrates among five meal components. The miscellaneous component affected the sodium and fat content of the menus. Menu planners can use the results of this study to enhance their knowledge of the nutrient contributions of each meal component and as inputs for planning menus that meet children's nutritional requirements.
This study assessed the nutrient consumption of children from lunch at day care centers and kindergartens. A total of 184 lunch plates were selected in two child day care centers and two kindergartens in Seoul. Weights of the menus in planned meals were measured and amount of served and consumed lunches were calculated using a digital photography technique. Nutrients of the planned, served, and consumed lunches were assessed using CAN-Pro 4.0 and the Index of Nutritional Quality (INQ) was calculated for each meal. Compared with the estimated energy requirement for lunch for 3-5 year old children, the planned meals of the child day care centers and kindergartens contributed 42.8% and 98.8% of the daily energy requirements, respectively. At a child day care center, a served meal provided more nutrients than a planned meal since some children requested more servings after eating the served meals. This showed that the planned meal did not meet children's needs as well as the nutrient requirements. At the other child care center, children were served less than the planned meal by 6.8%, which resulted in serving less energy, calcium, potassium, and vitamin C than the required nutrients for lunch. Kindergarten A served meals with the energy requirement for lunch of 101.8%, but Kindergarten B served a meal with the energy requirement of 83.5%. Since the served portions were too small to meet nutrient requirements of the children, they consumed almost all the food served, and their nutrient consumption was similar to the nutrients served. Even though they consumed all the food served, their nutrient consumption did not meet their nutritional requirements. When assessed by INQ, the quality of the meal was good; children could consume enough nutrients when served proper quantity. Teachers who are responsible for serving meals need to be educated on proper portion sizes and how to encourage children to practice healthy eating. To promote healthy eating among children, parents need to provide children with messages consistent with what they have learned at institutions and to be a good role model in daily dietary life.
This study was done to compare nutrient intakes, anthropometric indices, and psychosocial factors related to smoking by smoking status among adolescent girls in Seoul. Subjects were high school students, and smokers were 17.6%. Nutrient intakes were analyzed by convenient method, and anthropometric measurements were done by Inbody 2.0. Psychosocial factors of smoking were examined based on the Theory of Planned Behavior : 26 attitudinal, 9 normative, and 17 control beliefs were used. Smokers smoked 5-7 cigarettes a day on average, with 1.26 pack-years of smoking, There were no significant differences in anthropometric characteristics, except fat distribution, between smoking(n=92) and nonsmoking(n=92) and nonsmoking(n=94) group. The percentage of alcohol groups. Especially, caloric intake (63.6% of RDA) were much below the recommended level. With respect to psychosocial factors, 18 out of 26 attitudinal beliefs were significantly different between smokers and nonsmokers. Smokers responded less negatively on the items of bad health effects of relax(p<0.001). In addition, smokers were more convinced of advantages of smoking (test, etc.)but responded less negatively on the disadvantages of smoking(bothering others, yellow teeth, bad breath, etc.). Smokers expressed less pressure for not smoking from siblings, friends, school seniors than nonsmokers. In addition, smokers, expressed less confidence in controlling the urge to smoker or quitting smoking in several situations, such as 'after a meal', 'feel bored', 'with friends', 'when angry' offered a cigarette by friends', 'drinking coffee or tea', 'drinking alcohol', 'seeing others smoke'(p<0.001). Smokers also felt less developing in applying specific skills for controlling the urge to smoker or quitting smoking. These findings suggest the need for developing smoking cessation programs for adolescent females, focusing on specific beliefs identified in this study.

Application of water-saving self-feeders can reduce water consumption of pigs by more than 50% . so the feeding-watering system one of the most important way of the reduction of the slurry. Bioactive deep litter housing can eliminate slurry. Matured urine, faeces and litter can use for the purposes of soil conditioning and fertilizing . Water-saving slurry handling technology can halve manure dilution so it can double the nutrient content of the slurry. By using of straw bale biofilter for reducing emissions of pig houses makes fattening of pigs possible close to populated area. Developed rate control system for slurry application make avoiding over-fertilization possible , can fulfill better the demand of nutrient of plants. By means of computer aided manure utilization system area distribution of soil characteristics can determinate . The system is suitable for planning the utilization of manure and slurry in environment -friendly way.
This study was conducted to investigate the perception about the construct in the Theory of Planned Behavior using In-depth interview for 24 housewives with elementary school children. Most housewives did not have an intention to buy organic vegetables more in the future than in the present. They showed positive attitudes toward organic vegetables in terms of non-use of pesticides and fertilizers, taste, nutrient content, freshness, mental health, and protection of the environment. They showed negative attitudes toward organic vegetables in aspect of price, credibility of organic vegetables, differences in nutrients, appearance, size, perishability, and accessibility. Children, especially those with diseases, were the most influential persons to their mothers for buying organic vegetables. Housewives' negative attitudes toward organic vegetables were barriers for buying more organic vegetables and they were not willing to overcome these barriers actively. Therefore, government policy and nutrition education to change attitudes is needed to increase consumption of organic vegetables.

A strategy for development of a functional rice in proved with human lactoferrin and enhancement of nutrient compounds was planned. For the purposes we have cloned and characterized a human lactoferrin cDNA from human mammary gland cDNA library A endosperm storage vacuole targeting sequence and the cDNA fragment was linked to endosperm specific glutelin promoter. The fusion gene fragment was inserted into a binary vector containing MAR gene. In addition a new ${\beta}$-galactosidase gene from Bifidobacterium of human was used as a reporter gene in the vector system, Rice plants showing a high concentration of amino acids in the endosperm cells were developed by using a biochemical mutation and bred for the transformation with the binary vector system Finally we have established a transformation method for the rice endosperm cells.
The purpose of this study was to measure the effects of counseling for hypertension patients. the subjects were 44 hypertension patients who visited the general, hospital, located in Daegu, to receive medical treatments. Among 44 hypertension patient, 22 patients received the nutrition counseling three times for 8 weeks and the rest of the patients didn't as a non-counseling group(control group). The lifestyle, food habit, nutrient intakes, anthropometric measurements, and body fat and blood pressure as a main index were analysed before and after the nutrition counseling. The result after the nutrition counseling are as follows: 1) Body mass index(BMI), systolic blood pressure(SBP) and diastolic blood pressure(DBP) were significantly decreased in women(p<0.05). 2) The food habit score and nutrition knowledge score were dramatically increased(p<0.001). 3) The calcium intake was significantly increased in women(p<0.01). And energy, carbohydrate and fat intakes were decreased both men and women but there were no significant differences. The calcium intake as an Index of nutrition quality(INQ) and nutrient adequacy ratio(NAR) were significantly increased 5) Fat and cholesterol intakes in a group whose blood pressure reduced were significantly decreased compared with a group that had the same or higher blood pressure. These results showed that a well-planned nutrition counseling program would reduce the risk of cardiovascular disease.
This experiment was planned to develop a functional supplements by food resources to prevent and lessen the bad effects caused by the environmental pollution such as bad food, air, water and heavy metals exposed to people these days. As for Its primary stage, the nutrient profile and sensory characteristics of the duck-extract were evaluated in this study. The duck-extract was formulated by the mixture of bone and internal organs of ducks and 6 medicinal herbs which were able to be used as foods and known to help the excretion and the repression of the poison inside the body for a long time. As we compared the six medicinal herbs mentioned above to the vegetable herbs, the nutrient profile of the medicinal herbs were superior to the vegetable herbs. The duck-extract was composed of protein 49.92%, carbohydrate 37.02%, dietary fiber 20.99%, lipid 7.60% and ash 5.46%. The ratio of Ca to P was 1 : 1.4, which was a suitable ratio for absorption, the contents of Na and K were low and those of micro-elements such as Fe, Mn, Zn and Cu high compared to other meat extracts. The essential amino acids accounted for 30.91% of total amino acids. The result of sensory evaluation was better in overall preferences than the ones which are already in the market. From these results, the nutrient profile of the duck-extract was estimated to be able to supply enough nutrients to the people whose nutritional balance was destroyed these days. This study also showed the effective way of using duck-extract and its application to the oriental medicine.
Interactive effects among eating behavior, obesity and serum lipid levels were studied in 117, 4~12 year old children residing suburban Seoul. Fasting blood samples are obtained and analyzed for serum triglycerides (TG), total cholesterol(TC), high density lipoprotein-cholesterol(HDL-C) and hematochrit. Obesity was determined by weight for length index(WLI)and the information on eating behavior including food habits and dietary intakes was obtained by questionaire using food record method for 2-consecutive days. Over 40% of children was classified overweight or obese by WIL and children's physical parameters were closely related to those of parents implying genetic influence on obesity. Although it did not reach the statistical significance, there was a tendency of higher TG, TC and low density lipoprotein-cholesterol(LDL-C)levels among girls compared to boys. Blood lipid levels of obese children were similar to those of other groups except TG, which was significantly higher(p<0.05) in obese group. Nutrient intakes seemed adequate in all subjects except iron, calcium and total calorie which were lower than RDAs. Lacking significant relationship between individual nutrient intake and obesity, there was significant correlation between food intake and blood lipid level especially in 10-12 year old group. Vegetable intake was negatively related to TG, LPH(LDL-C/HDL-C) and atherogenic index(AI), and positively to HDL-C. Skipping breakfast and frequent eating out appeared to cause imbalances in nutrient intake. These findings clearly revealed the influence of eating behavior on childhood obesity along with blood lipid profile. To ensure the proper growth and health of these children, devising method and developing media for nutrition education suited to our society should be accomplished first. With well-planned nutrition surveys and thorough intention, childhool obesity could be prevented from progress into adulthood obesity.
