Evaluation of stingless bee (Tetragonula pagdeni) honey properties and melissopalynological analysis from different geographical origins in Thailand

  • Background: Honey from different geographical origins can have distinct characteristics due to variations in the floral sources available to stingless bees in different regions. The most abundant stingless bee for meliponiculture in Thailand is Tetragonula pagdeni. However, only a few studies about the properties of honey from a different origin were carried out. The objective of this study was focused on a comparative study to evaluate the melissopalynological, physicochemical, antioxidant activities, and total phenolic contents (TPCs) of stingless bee honey produced by T. pagdeni from different parts of Thailand. Results: Fifty honey samples were collected from five locations, and the physicochemical properties of T. pagdeni honey samples are acidic (pH 3.02-4.15) and have a high water content (18.42-25.06 %w/w), which is related to the regions of meliponary. Melisopalynological analysis reveals the predominant pollen from Melaleuca quinquenervia, Cocus nuciferca, Nephelium lappaceum, Salacca wallichiana, and multiflora honey. All honey samples were analyzed for their TPC and 2,2-diphenyl1-picrylhydrazyl radical scavenging activity. The results show that all samples had high TPC and antioxidant activities with a strong correlation (p < 0.05). Conclusions: The data from this study indicates the importance of geographical origin, which links physicochemical properties, phenolic compounds, and functional characteristics to their floral. Besides, the floral sources and harvesting location affected the properties of stingless bee honey. Our results identify Melaleuca honey as a promising source of phenolic content and antioxidant activity that can be used as a functional food, as well as multiflora and Cocus honey. However, further studies are required to characterize the phenolic compound and its biological potential, which could be a stingless bee honey biomarker and quality control, simultaneously with the physicochemical analysis.

Effects of Different Drying Methods on Quality Traits of Hanwoo Beef Jerky from Low-Valued Cuts during Storage

  • To determine the effects of various drying methods on the quality characteristics of beef jerky from low-valued cuts, Hanwoo beef shank muscles were either hot air-dried, shade-dried, or sun-dried. The physicochemical quality and microbiological safety of the Hanwoo beef jerky were analyzed during a storage of $25^{\circ}C$. Moisture content and water activity ($a_w$) of the samples decreased as the time period of storage increased, regardless of the drying condition (p<0.05). Shade-dried jerky showed higher $a_w$ compared to others after storage of 20 d (p<0.05). The pH value of hot air-dried jerky was higher than those of others (p<0.05). For color properties, sun-dried samples showed higher redness ($a^*$) and yellowness ($b^*$) compared with the properties of others (p<0.05). The hot air-dried jerky showed higher shear force values than the sun-dried or the shade-dried jerky after 10 and 20 d (p<0.05). However, the total plate counts (TPCs) of naturally dried jerky (shade and sundried) were higher than hot-air dried jerky after storage of 10 and 20 d (p<0.05). With regard to sensory properties, naturally dried jerky showed higher tenderness, juiciness, and overall acceptability scores than the hot air-dried jerky (p<0.05). In conclusion, although natural drying appears to be more susceptible to microbiological contamination than hot air-drying, the natural drying method seems to result in superior quality than the hot air drying method.

Study on water quality prediction in water treatment plants using AI techniques (AI 기법을 활용한 정수장 수질예측에 관한 연구)

  • In water treatment plants supplying potable water, the management of chlorine concentration in water treatment processes involving pre-chlorination or intermediate chlorination requires process control. To address this, research has been conducted on water quality prediction techniques utilizing AI technology. This study developed an AI-based predictive model for automating the process control of chlorine disinfection, targeting the prediction of residual chlorine concentration downstream of sedimentation basins in water treatment processes. The AI-based model, which learns from past water quality observation data to predict future water quality, offers a simpler and more efficient approach compared to complex physicochemical and biological water quality models. The model was tested by predicting the residual chlorine concentration downstream of the sedimentation basins at Plant, using multiple regression models and AI-based models like Random Forest and LSTM, and the results were compared. For optimal prediction of residual chlorine concentration, the input-output structure of the AI model included the residual chlorine concentration upstream of the sedimentation basin, turbidity, pH, water temperature, electrical conductivity, inflow of raw water, alkalinity, NH3, etc. as independent variables, and the desired residual chlorine concentration of the effluent from the sedimentation basin as the dependent variable. The independent variables were selected from observable data at the water treatment plant, which are influential on the residual chlorine concentration downstream of the sedimentation basin. The analysis showed that, for Plant, the model based on Random Forest had the lowest error compared to multiple regression models, neural network models, model trees, and other Random Forest models. The optimal predicted residual chlorine concentration downstream of the sedimentation basin presented in this study is expected to enable real-time control of chlorine dosing in previous treatment stages, thereby enhancing water treatment efficiency and reducing chemical costs.

  • This work carried out to analyze the physicochemical properties and investigate the assessment of heavy metal contamination of stream sediments of the Yudeung and the Gab streams in the Daejeon area. The pH of stream sediments of the Yudeung stream shows the range of weak acid and weak alkaline. Most of stream sediments contain about 80% sand grain and have low water and cation retention capacity. Hence the stream sediments are not suitable fur various plans to grow up. The analysis of heavy metals in the stream sediments shows that the concentration of Pb, Cr and Cd increases from upstream to down stream. It is likely that the trend has a relationship with the water. Contamination of stream water. The authors recommend that clay materials be replenished in the stream sediments to increase the self-purification capacity and to make the suitable condition for growing up of various plants, and that water quality of the stream which can Influence into the contamination of stream sediments be monitored.

A Study of Antimicrobial Resistance in Escherichia coli and the Distribution of Indicator Microorganisms in Asan City (아산시 지표미생물의 분포와 Escherichia coli의 항생제 내성에 관한 연구)

  • Efforts to evaluate water pollution using indicator microorganisms have been underway for decades, and driven by research on water purity control applications, water quality criteria are growing more and more strict. Furthermore, recent reports indicate that high concentrations of antibiotics are not absorbed, and are present in excrement from animals and humans dosed with unnecessarily high levels of antibiotics. This has emerged as very important issue from the standpoint of being an ecological and health hazard. In this study, water pollution was analyzed through physicochemical and microbiological means, and antibiotic resistance in indicator microorganisms was assessed. In physicochemical analysis, biochemical oxygen demand (BOD)$_5$ and chemical oxygen demand (COD)$_{Mn}$ evaluation showed that pollution by organisms was highest at the G1 location with a high human population, and the DP location which has many livestock-containing households. The indicator organism levels at the G1 location were: Total Coliforms (1205 colony forming units (CFU)/100 ml), Fecal Coliforms (270 CFU/100 ml), Escherichia coli (253 CFU/100 ml) and Fecal Streptococci (210 CFU/100 ml), while for the DP location levels were: Total Coliforms (1480 CFU/100 ml), Fecal Coliforms (438 CFU/100 ml), E. coli (560 CFU/100 ml), and Fecal Streptococci (348 CFU/100 ml). Levels of fecal indicator microorganisms such as Fecal Coliforms, E. coli and Fecal Streptococci were high at all locations in the fall (the period after the rainy season), and the yearly distribution was similar between these organisms. If the number of livestock-containing households was high, almost all strains of E. coli (as distinct from the other indicator organisms) showed resistance to antibiotics, with the degree of resistance varying between areas. E. coli strains from the OY area in particular, which has a high population density, showed strong resistance to AM10 and Va30. While strong antibiotic resistance was observed overall at the DP and OY locations, no resistance was observed at the EB location.

Physicochemical quality characteristics of hot water extracts of processed ginseng based on different heat treatments (열처리 방법에 따른 가공 인삼 열수추출물의 이화학적 품질 특성)

  • The present study was carried out to investigate the physicochemical properties of hot water extracts of red ginseng powder prepared by two-stage hot air drying method using steamed ginseng and steaming liquid for 2.5 h under high-temperature and high-pressure autoclave condition. The total polyphenols, total flavonoids, total sugar, acid polysaccharides and crude saponin in hot water extracts from red ginseng powder were analyzed and determined, and the flavor components of ginseng were measured using color difference meter and an electronic tongue. The total polyphenol, total flavonoid, total polysaccharide, and acid polysaccharide of the red ginseng hot water extract obtained by autoclaving (ARG) were 9.06 mg GAE/g, 3.38 mg NE/g, 35.22 g/100 g, and 10.90 g/100 g, respectively. The final contents of the total polyphenols, total flavonoids, crude saponin were higher than those determined using other red ginseng methods; the time required for steamed red ginseng production reduced. The total ginsenoside content of ginseng including Rb1 was 10.69 mg/g, which is the lowest ARG. The processing conditions affected the conversion to ginsenosides unique to red ginseng. Red ginseng and steaming liquid obtained from the autoclave are expected to be in need for non-food materials and products as well as foods by improving the flavor components through conversion of red ginseng components into low molecular weight.

Effects of Fermented Rice Bran Addition on the Quality Improvement of Pork (발효쌀겨 배합사료 급여가 돈육의 육질 개선에 미치는 효과)

  • This study was conducted to evaluate the meat quality of pork produced by feeding fermented rice bran (FRB) (10 to 20%). In the proximate composition analysis there were no significant differences, but the FRB treated groups showed a tendency for higher moisture content and a lower fat content. There were no significant changes found in the physicochemical property analysis, except for cooking loss and water holding capacity, which are the most important factors for estimating meat quality. The cooking loss of the FRB pork was significantly lower than that of the control group (p<0.01). The water holding capacity of the 20% FRB roup was higher than that of the control group (p<0.01). The shear force value of the 20% FRB group was also higher than that of the control group, but the 10% FRB group showed no difference from the control group. The total free amino acid volume of the meat increased, depending on the volume of FRB added. The contents of glutamic acid, glycine, and alanine, which are important factors for taste and flavor, were higher in the FRB groups an the control group. In the sensory analysis, the FRB groups showed high scores for color, aroma, flavor, juiciness, taste, and overall acceptability. Taken together, adding FRB to the feed improved the quality of pork.

Characterization of Water Quality and Bacteria of Leachate from Animal Carcass Disposal on the Disposal Lapse Time (매몰 시간의 경과에 따른 구제역 가축 매몰지 침출수 특성에 관한 연구)

  • In this study, the physicochemical properties of leachate and the bacteria existence in leachate using molecular biology methods for 4 animal carcass disposals on the disposal lapse time was analyzed. The result of leachate physicochemical analysis in the middle stage (been buried 20 months) showed higher EC, DO, $HCO_3{^-}$, TOC, T-N and $SO_4{^{2-}}$ concentration compared to the first stage data (been buried 5 months). For identification of leachate using 16S rRNA method, Lysinibacillus sphaericus, Bacillus pumilus, Pseudoclavibacter helvolus, Pseudochrobactrum saccharolyticum and Corynebacterium callunae in the first stage, Bacillus cereus, Lysinibacillus sphaericus, Bacillus circulans and Corynebacterium glutamicum in the middle stage was observed, while there were detections of pathogenicity bacteria such as B. cereus and L. sphaericus. This study improves our knowledge of the fate and transport in geologic media, treatment, risk analysis on the leachate from animal carcass disposal sites.

A Comparison of Cooking Quality on Commercial Eco-Friendly Functional Rice (시판 친환경재배 건강기능성 쌀의 취반 가공적성 비교)

  • The physicochemical properties and cooking qualities of four rice varieties (Goami, Giant-embryonic rice, Baegjinju, Aranghyangchal) which grown under ecofriendly farming as development of material for chronic disease tailored instant rice and porridge, respectively, were investigated. The contents of crude protein, crude lipid and crude fiber were the highest in Goami. The water absorption rate of Aranghyangchal at $85^{\circ}C$ was higher than other rice. However on rice flour, the water absorption rate and solubility of all functional rices at $85^{\circ}C$ were higher than control (brown rice flour). In addition viscosity of all functional rices at $100^{\circ}C$ were higher than control (brown rice flour). In spite of brown rice, Aranhyangchal showed no significant differences about hardness of Ilpum (white rice). The sensory evaluation was shown that Aranghyangchal was the highest in glossiness, flavor, roasted nutty taste, cohesiveness and overall preference. Although Giant-embryonic rice and Baegjinju were brown rice, overall preference was higher than Ilpum (white rice). These study results were showed that the functional rices could be good to make instant rice.

Production of Mozzarella Cheese Analogue by Ultrafiltration (한외여과를 이용한 Mozzarella Cheese Analogue 제조에 관한 연구)

  • The purpose of this study was to improve the production of Mozzarella cheese analogues manufactured using mixtures of soy milk and concentrated raw milk by performing ultrafiltration (UF) and to assess the quality of these cheeses during a 30-day storage period at $4^{\circ}C$, relative to that of Mozzarella cheese manufactured with the traditional method. The solid consistency of Mozzarella cheese analogue prepared from milk mixtures was lower than that of cheese manufactured from raw milk or soy milk and increased during storage, which is considered to be the result of decreasing water levels, as well as with increasing soy milk concentrations. In the Mozzarella cheese analogue generated using the milk mixtures, the fat content decreased with increase in the soy milk concentration, while it decreased during the storage period. Lactose levels were lowest in cheese composed of soy milk or raw milk and processed by UF, and decreased during storage in cheese produced using milk mixtures. In milk mixtures containing soy milk, the protein concentration increased with increasing amounts of raw milk and did not change during the storage period. The water-soluble nitrogen compound level was similar between cheeses and increased only slightly during storage. The amount of non-protein nitrogen compounds was higher in the cheese analogue than in the control cheese and tended to increase during storage. Analysis of the physicochemical traits of the Mozzarella cheese analogue yielded the following results: During storage, titratable acidity levels increased while pH tended to decrease. After analysis using electropherograms, it was classified as ${\alpha}$-, ${\beta}$-, or ${\kappa}$-casein. The results of rheometry tests showed that in the Mozzarella cheese analogue prepared from milk mixtures, with raw milk concentrated by UF, increases in concentration rate lead to lowered hardness, elasticity, cohesiveness, and brittleness. When cheese was produced from milk mixtures and concentrated by UF, meltability increased as the concentration rate increased, although to an extent that was less than that observed for the control cheese, and tended to increase during storage. Sensory evaluation showed that the analogue cheese was much better than the control cheese in terms of formation, appearance, and flavor.
