본 연구는 식생기반재인 피트모스를 대체하기 위하여 우드칩에 폭쇄처리를 적용해 보았으며, 물리 화학적 분석을 통해 피트모스와 특성을 비교하였다. 또한 피스모스와 전처리 우드칩을 각각 90 : 10, 70 : 30 및 50 : 50 (w/w) 비율로 혼합하여 식생기반재를 제조한 다음 물리 화학적 특성 및 생육 특성을 비교하였다. 전처리 우드칩의 부피밀도, 공극률 및 pH는 각각 $0.26g/cm^3$, 93.3% 및 5.7로 나타났으며, 이는 식생기반재로서 적합한 물리 화학적 범위에 포함되는 것으로 확인되었다. 특히, 피트모스와 전처리 우드칩을 70 : 30 (w/w) 혼합하여 제조된 식생기반재는 배추, 잔디 및 싸리에 있어서 피트모스보다 높은 발아율, 초장생장 및 잎 생장을 나타냈으며 또한, 식물생장에 적합한 부피밀도, 공극률, 수분보유력, pH 및 C/N비를 나타냈다(각각 $0.20g/cm^3$, 91.8%, 76.1%, pH 5.2 및 51.0).
초고압 공정(HPP)은 비가열 공정 중 하나로 식품 중의 세균 증식을 억제하는 방법으로 근래 들어 상업적으로 각광 받고 있다. 자작나무 수액은 여과 및 UV 살균과정을 거쳐 유통되지만 상업적으로 사용하기에는 식품공전 미생물 규격에 적합하지 않아 추가 살균처리 없이 유통을 하기에는 적합하지 않은 단점이 있었다. 본 연구에서는 그 단점을 보완하고 저장유통기한을 연장하기 위해 비가열가공 살균법으로 최근 주목받고 있는 HPP를 적용하고자 하였다. 최적 조건을 설정하기 위해 HPP 조건을 달리 하여 63일 동안 저장하여 변화를 관찰하였고, 그 결과 압력이 높고 처리시간이 길어질수록 미생물제어에 효과적이였다. 설정된 550 MPa, 120 sec의 조건으로 HPP 처리한 후 $5^{\circ}C$와 $10^{\circ}C$에 저장하며 미생물 및 품질변화를 관찰하였다. HPP 미처리군의 경우에는 4-7일차에 급격한 미생물 증식 및 이화학 변화가 일어났지만 HPP 처리군의 경우 $5^{\circ}C$에서 45일, $10^{\circ}C$에서 28일간 저장하는 동안 일반세균, 대장균, 대장균군, 진균 모두 증식이 없어 미생물학적으로 안전한 것으로 나타났다. 또한, pH, 산도, 당도, 탁도 및 갈변도의 변화를 살펴본 결과 $5^{\circ}C$에서는 45일까지 변화가 없었고, $10^{\circ}C$에서는 28일 차에서 pH 감소, 산도, 갈변도, 탁도의 증가로 급격한 변화로 24일 저장하는 것이 이화학적으로도 안정하다고 평가하였다. 이상의 결과로 볼 때 자작나무 수액은 효과적인 살균처리를 하지 않으면 미생물증식, 탁도 및 갈변도 변화, 산도증가로 유통기한이 4일 이하로 저장성이 많이 낮지만, HPP 처리함으로 인해 미생물 증식을 막고 그에 따른 수액의 이화학적 안정성을 확보하여 수액의 품질수명을 기존 미처리군에 비해 6배 연장시킬 수 있을 것으로 판단된다.
암면은 우수한 물리화학적 특성을 가지고 있어 작물 재배 생산에 많이 사용된다. 그러나 높은 구매 비용과 폐기가 용이하지 않다는 단점이 있다. 배지의 재사용은 이러한 단점을 보완할 수 있다. 배지는 재사용 시 소독 및 재수화 과정을 거쳐야 하며, 이 과정에서 발생되는 다양한 물리화학적 변화 또한 고려하여야 한다. 본 연구는 두 가지 암면배지(재사용, 미사용)의 물리적 특성을 비교하고, 재사용 암면 배지의 재수화 과정에서 발생하는 화학적 특성 분석을 통해 암면 배지의 재사용 가능성을 판단하고자 하였다. 배지 물리화학성 비교 실험은 2023년 3월부터 8월까지 토마토 재배에 사용된 암면배지와 미사용 암면배지를 이용하여 진행되었으며, 재배 기간 동안 암면에 공급된 배양액의 전기전도도와 pH는 각각 1.8-3.5 dS·m-1, 5.8-6.0이었다. 배수시간 및 배수량은 관수모니터링 시스템 상단 및 하단에 설치된 로드셀을 통해 측정되었다. 암면배지의 물리적 특성 비교에서 무게와 밀도는 재사용 암면배지에서 높은 경향을 보였으며, 포수 후 평균 배수 시간은 재사용 암면이 미사용 암면에 비해 1.5배 늦었다. 암면 배지의 부분별 염류 농도는 재사용 암면배지가 미사용 암면배지에 비해 낮게 나타났다. 관수 시간에 따른 배액의 전기전도도 변화는 배수가 시작되는 시점에서 가장 컸으며, 배액의 양이 증가할수록 급속하게 작아지는 경향을 보였다. 위 실험 결과를 통해 관수시간 및 관수량과 배액의 전기전도도 변화율은 exponential decay한 관계를 보였다.
This study was performed to examine the physicochemical and antioxidative properties of the sponge cakes with different contents (0, 2, 4, 6, 8%, w/w) of lemon balm (Melissa officinalis) powder (LBP). An increase in LBP content in the cake led to a significant increase in the baking loss rate, specific volume, DPPH radical scavenging activity, ABTS radical scavenging activity, total phenol contents and total flavonoid contents of the cakes (p<0.05). As the LBP content increased, significant decreases were shown in the specific gravity of batter, sugar contents, pH, lightness, redness and yellowness of the cakes (p<0.05). Ash contents, uniformity index and other textural properties of hardness, springness, cohesiveness, and brittleness did not show any significant differences between the sample groups (p>0.05). These results suggest that LBP can be applied to sponge cakes to achieve positive textural properties such as uniform pore formation and increased volume with increased antioxidant properties.

Alkaline- or salt-assisted extractions have been widely used to extract edible insect proteins, however, there is a need for extraction techniques that balance cost-efficient production as well as preserving the protein properties. Mealworm proteins (Tenebrio molitor larvae) were extracted using three different extraction methods-alkali (AMP), salt (SMP), and water (WMP)-and then physicochemical and techno-functional properties were examined. AMP had high yield, protein, and amino acid contents, whereas WMP had high moisture, ash, and fat contents. SDS-PAGE showed a wide range of molecular weights in WMP whereas mostly low molecular weights were observed in AMP and SMP. AMP had poor protein solubilities compared to SMP and WMP across all pHs. AMP had enhanced water-holding capacity and emulsion stability, whereas WMP had improved oil-holding capacity and foaming properties. WMP formed a gel with and without the transglutaminase. The physicochemical and techno-functional properties demonstrated that water-soluble mealworm protein was superior to alkali-and salt-soluble mealworm proteins. Considering the cost efficiency and minimal impact on the environment as well, a cold press juicer could be utilized for mass production of mealworm protein compared to the conventional methods of protein extraction using alkali and salt.
In this study, changes in the physicochemical properties and functional components of uncooked foods, including carrots, cabbage, shiitake (Lentinus edodes) and white button (Agaricus bisporus) mushrooms, sea mustard, and laver treated with electrolyzed water were investigated. No changes were observed in the primary compositions of any of the materials that were hot air- or freeze-dried after being treated with electrolyzed water. The lightness (L), redness (a), and yellowness (b) values of the carrots, shiitake, and laver were not affected by drying, while changes did occur in the cabbage (L-, a-, and b-values), mushrooms (a-value), and sea mustard (b-value) specimens that were hot air- or freeze-dried following the treatments with electrolyzed water. The dietary fiber contents of all the materials increased when they were hot air-dried. Vitamin C content decreased when the samples were treated with alkalic electrolyzed water. No changes occurred in the lectin, $\beta$-carotene, or total phenolic compound contents after the electrolyzed water treatments, suggesting that electrolyzed water could be used effectively as a pasteurization step for uncooked carrots, cabbage, shiitake and white button mushrooms, sea mustard, and laver.
The optional ingredient jasoja(Perillae semen) was adopted to improve Dongchimi in qualify during fermentation The final weight percentage of jasoja in Dongchimi was adjusted to 0, 0.25, 0.5, 0.75, or 1.0% Per radish. Physicochemical characteristics were determined during fermentation for 45 days at 10$^{\circ}C$. As the fermentation of Dongchimi proceeded, the pH decreased with the increase of total acidity; however, the decreasing rate was slowed down by increasing the level of jasoja. The delayed pH drop of Dongchimi was limited only for the initial period of fermentation and the ultimate pH became almost comparable even for the 1% treatment. The total vitamin C content increased initially to a certain level depending on the level of jasoja, and then decreased later. Dongchimi with 0.5% jasoja contained the highest level of total vitamin C and reducing sugars. In case of 1% treatment, the typical pattern of an initial high content followed by a gradual decrease in reducing sugar was destroyed by a rapid fermentation at the later stage. Turbidity level, along with total solid contents of the liquid part of Dongchimi increased in all treatments as the fermentation proceeded although the extent was rather suppressed by jasoja. As a result of fermentation, the colorimetric lightness values decreased, with the intial increase followed by the decrease at a certain point in redness and yellowness and the increase in color difference values (ΔE). Overall, fermentation with 0.5% jasoja for 11 to 30 days appeared to improve the quality of Dongchimi.
This study was conducted to investigate the physicochemical characteristics of Eungi, which is used as a breakfast or health food. We manufactured lotus root starch and Eungi by a traditional method and discovered that the viscosity of Eungi with 4-5% starch content was similar to fermented milk. When the physicochemical properties and sensory acceptability of a Eungi beverage combined with different amounts (0.5, 1.0, 1.5, and 2.0%) of lotus root starch were investigated, consumer acceptability was highest with Eungi combined with 0.5% starch and 6% sugar. When the physicochemical properties and sensory acceptability of Eungi beverage combined with different extract bases were investigated, the acceptability of taste and texture was highest with purple sweet potato extract and the acceptability of color was highest with omija extracts.
