Physico-chemical and Sensory Characteristics of Pork Cutlet Containing Ginseng Saponin (인삼사포닌이 첨가된 돈가스 제품의 이화학적 및 관능적 특성)

  • The pork cutlets containing different concentrations of dried ginseng powder (1%, 2% and 3%) were manufactured and compared the physico-chemical and sensorial properties with control containing no dried ginseng powder. The color(CIE, L, a, b) values were not significantly different between the treatments and control. The TBA values were lower for pork cutlet containing dried ginseng powder than those for control at the beginning stage (5 days) when they were vacuum packaged and stored at 4$^{\circ}C$ or 15days, however, there were not significantly different after 5 days of storage. The TBA values were remained low level (<0.5mg malonaldehyde/kg sample) when the pork cutlets were vacuum packaged and stored at -20$^{\circ}C$ for 90 days. In fatty acid composition, pork cutlet containing dried ginseng powder contained higher ratios of PUFA/SFA and lower ratios of MUFA/SFA when compared to those of control. Sensory panels evaluated that pork cutlet containing 1% of dried ginseng powder had the highest preference scores in flavor and overall palatability.

The Suitable Processing Condition for Gelatin Preparation from Yellowfin Sole Skin (각시가자미껍질로부터 젤라틴 제조를 위한 조건의 검토)

  • To utilize effectively fish skin wasted from fish processing, a yellowfin sole skin gelatin was prepared by alkaline extraction method and the physico-chemical properties were examined. Conditions for the suitable extraction and decolorization for gelatin preparation from yellowfin sole skin are as follows: the skin is limed with 1.5% calcium hydroxide solution at $5^{\circ}C$ for 5 days, washed throughly with tap water, extracted with 6 volumes of water ($pH5.0{\sim}7.0$) to dehydrated skin for 3 hours at $50^{\circ}C$, and then bleached with 3% activated carbon. Though yellowfin sole skin gelatin was prepared under above condition, the physico-chemical property values such the melting point and gelling point of that were lower than those of pork skin gelatin. Therefore, the purified yellowfin sole skin gelatin requires a suitable modification operation for more a good quality gelatin manufacture.

  • The purpose of this study was to investigate the physico-chemical effects of a potato starch and a purified potato starch under the condition of the microwave heating. They were exposed to the microwave energy in a 950 W, 2,450 MHz oven for 30 through 120 seconds. As the microwave heating time was increased, the contents of moisture and the crude fat of the samples were remarkably decreased irrespective of the starch composition, but on the other hand the contents of crude ash was slightly decreased and the crude protein was almost unchanged. The rings of crystallinity come to gradually changed in the X-ray diffraction pattern, and then the only 1 ring, of which interplanner spacing is wide, is changed strikingly. As the microwave heating time is increased, the starch granules which observed by a scanning electron microscope were broken partially with a special form, and the granules of purified potato starch were broken faster than those of potato starch. With the same condition that the microwave heating time was increased, while the gelatinization temperature comes to fall, the swelling power and the solubility were increased. Besides these, while the gelatinization temperature of the purified potato starch was lower than that of the potato starch, both the swelling power and the solubility of the purified potato starch is higher than those of the potato starch.

Correlation between the Factors of Soil Physical Property in Upland Soil (밭작물 토양물리성 지표관련 인자의 상관분석)

  • The investigations were conducted to improve the physical properties by analyzing physico-chemical properties on the different soil families of textures at 20 upland fields located in the parts of Gyengsangbuk-do area. Soil physico-chemical properties were analyzed for bulk density, hardness, porosity, moisture, pH, EC and organic mater by soil depth on the different soil families of textures. Bulk density distributions were higher than 1.2 Mg $m^{-3}$ in the optimum range. Hardness distributions were lower than 20 mm in the optimum range. Therefore, the physical properties of upland soil was deteriorated. Correlation coefficient of bulk density with hardness and organic mater were higher significantly, that was positive and negative, respectively. The soil hardness had the greatest distribution degree to the crop yield and bulk density and organic matter followed. Conclusively, To improve the physical properties of upland soil was more effective to fertilizing organic matter than other ways.

Physico-Chemical Properties of Paddy Soil and Actual Farming Conditions in Gyehwa Reclaimed Tidal Land (계화간척지 논토양의 물리화학적 특성 및 영농실태)

  • In order to establish the fertilization and soil management method in Gyehwa reclaimed tidal land, we investigated soil property and actual farming condition. Soil properties of 100 field paddy soil and farming surveys of 177 farm households were conducted. Average of effective soil depth was 17.8 cm, which was very smaller than the optimum level 50 cm. The hardness and bulk density of subsoil were $12.40kg\;cm^{-2}$ and $1.59g\;cm^{-3}$, respectively. These results showed that soil physical condition of Gyehwa reclaimed tidal land was very poor. Soil salinity ranged from 0.03 to 0.12%, and average of pH was 6.0, which implied that desalinization of Gyehwa reclaimed tidal land was progressed. However, soil nutrients in Gyehwa reclaimed tidal land were very unbalanced conditions as following, available phosphate $58mg\;kg^{-1}$, available silicate $85mg\;kg^{-1}$, cation exchangeable capacity $7.4cmolc\;kg^{-1}$ and organic matter $8.6g\;kg^{-1}$. On the farm household in Gyehwa reclaimed tidal land, fertilization amounts were $200-54-61(N-P_2O_5-K_2O)kg\;ha^{-1}$ They mainly practiced spring tillage(84%) rather than autumn tillage(16%), and only 14% of them applied rice straw annually in the paddy soil.

  • Korea shows the soil pH is 5.8 ~ 6.2 by many factors including the geological structure and climate condition. There is known as the cause for soil acidification by weathering of the mineral, excessive use of the chemical fertilizer, and extensively diffused acid rain. The purpose of research is environmentally-friendly material neutralization technology development utilizing the waste resources against by acid soil. The experiment analyze the physico-chemical property of the acid soil and waste resource materials (waste lime, oyster shell, bottom ash). The Batch-Test was performed under 3 stage. As a result, the acid soil showed up acid soil about 3.19. And waste lime, oyster, bottom ash showed the alkalinity with 9.62, 10.08, 9.17. In case of 1 batch-test experimental result, waste lime and oyster shell, the alkalinity was shown over 7.5 and the good efficiency was showed, on the other hands, the bottom ash showed the pH 4 the neutralization efficiency which is low. waste resource materials to be applied to 2 steps was chosen as the waste lime except the bottom ash and oyster. In 2 step batch-test experiment, it was exposed to be the most appropriate in case of doing the combination ratio of the waste lime and oyster shell with 9 : 1. It was exposed to be efficient most in the effeciency and aspect of economical efficiency combination ratio of the soil and materials was 9.6 : 0.6 with 3 step batch-test experimental result.

Variability of Quality Related Characters in the Recombinant Inbred Lines from Milyang 23 and Gihobyeo (밀양23호와 기호벼 교잡 재조합자식계통(RILs)의 품질관련 특성 변이)

  • The rice quality related traits including physico-chemical traits were evaluated with one hundred sixty-four MG RILs derived from the cross between Milyang 23, Indica/Japonica hybrid type, and Gihobyeo, Japonica type. The variation distribution of all traits examined approximately fit normal distribution and transgressive segregants over parents were observed for all traits. The occurrence of such transgression could be associated with the interactions of complementary QTL alleles from two parents. However in this study, it could not be concluded that our results of segregation were due to either complementary gene effects or overdominance of a major gene. These factors should be verified by further studies. Correlations between traits were evaluated by regressing phenotypic values of one trait on those of another traits. There are highly significant correlation between grain thickness with grain width, white core and white belly. But between white belly and alkali digestion value showed highly negative significant correlation. Contents of protein showed highly negative correlation with amylose and Mg/K ratio but showed highly correlation with K and Fat contents. Hardness of cooked rice showed highly correlation with adhesiveness, elasticity, gumminess, chewiness.

Effects of Nutrient Property Changes on Summer Phytoplankton Community Structure of Jangmok Bay (장목만에서 여름철 영양염 특성 변화가 식물플랑크톤 군집구조에 미치는 영향)

  • Phytoplankton production is affected by various physico-chemical factors of environment. However, one of the most critical factors generally accepted as controlling primary production of phytoplankton is nutrients. It has recently been found that the succession of phytoplankton groups and species are closely related to the chemical properties of ambient water including nutrient limitation and their ratios. In Jangmok Bay, silicate and nitrate are primarily supplied by rainfall, while phosphate and ammonia are supplied by wind stress. Typhoons are associated with rainfall and strong wind stress, and when typhoons pass through the South Sea, such events may induce phytoplankton blooms. When nutrients were supplied by heavy rainfalls during the rainy season and by summer typhoons in Jangmok Bay, the dominant taxa among the phytoplankton groups were found to change successively with time. The dominant taxon was changed from diatoms to flagellates immediately after the episodic seasonal events, but returned to diatoms within 3~10 days. Pseudo-nitzschia spp. were dominant mainly in the presence of low phosphate levels during the first of the survey which included the rainy season, while Skeletonema costatum was dominant when phosphate concentrations were high due to the strong wind stress during the latter half of the survey as a result of the typhoon. The competition between S. costatum and Chaetoceros spp. appeared to be regulated by the silicate concentration. S. costatum preferred high silicate and phosphate concentrations; however, Chaetoceros spp. were able to endure low silicate concentrations. These results implied that, in coastal ecosystems, the input patterns of each nutrient supplied by rainfall and/or wind stress appeared to contribute to the summer succession of phytoplankton groups and species.

Physico-Chemical Properties of Organically Cultivated Upland Soils (유기농경지 밭 토양의 물리화학적 특성)

  • The upland soils (56 samples) from organic farms in Gyeonggi-do (12 sites), Gangwon-do (8 sites), Chungcheong-do (14 sites), Gyeongsang-do (4 sites), Jeollado (18 sites) in Korea were collected and their physical and chemical properties were analyzed by RDA's methods. In the results of physical property, the bulk density of soils averaged $1.14Mgm^{-3}$ (surface soil), $1.38Mgm^{-3}$ (subsoil), respectively. The porosity of them was 57%, 48%. Organically managed soil's (OS) bulk density was lower than conventional soil's but OS's porosity was a little higher than conventionally managed soil in surface soil. The depth of plough layer in organically managed soils was 21.2 cm indicating that the organic farming had good effect on soil physical property. In the results of chemical property, the surface soil pH was 6.9 and the contents of organic matter (OM) was $26gkg^{-1}$, available phosphate (Avail. $P_2O_5$) was $554mgkg^{-1}$, exchangeable calcium (Exch. Ca) was $8.9cmol_ckg^{-1}$, exchangeable potassium (Exch. K) was $0.89cmol_ckg^{-1}$, exchangeable magnesium (Exch. Mg) was $2.0cmol_ckg^{-1}$. The subsoil pH was 6.8 and the contents of OM was $21gkg^{-1}$, avail. $P_2O_5$ was $491mgkg^{-1}$, exch. Ca was $7.9cmol_ckg^{-1}$, exch. K was $0.68cmol_ckg^{-1}$, exch. Mg was $1.8cmol_ckg^{-1}$. The nutrient accumulation emerged in organic farming. Compared to the optimum nutrient range for the conventional upland soils, the exceed rate of pH, OM, available phosphate, and exchangeable Ca, K, and Mg was 79, 52, 64, 84, 66% and 55%, respectively, which mainly resulted from the over-application of lime materials or livestock manure compost. With these results it is suggested that organic farm need to reduce the use of inputs, which make soil alkalification or nutrient accumulation. More study on effects of inputs on lowering soil pH from alkalification could help organically managed soil to be improved.

Effects of Size Adjusted with Red Ginseng Powders on Quality of Fish Pastes (사이즈를 조절한 홍삼분말의 첨가가 어묵의 품질 특성에 미치는 영향)

  • Fried fish pastes containing different size and amounts of red ginseng powder (RGP) were manufactured, and their physico-chemical and biological properties, including color changes, preservation, weight loss after heating, lipid oxidation, and total colony count were analyzed to improve fish paste quality. Sensory evaluation of fish pastes containing RGP was carried out, and the results showed that 1% and 850 ${\mu}m$ sized RGP additives were most preferred. In the color change test, decreased $L^*$ (lightness), increased $a^*$ (redness), and increased $b^*$ (yellowness) values were observed, which was similar to other additive-containing commercial fish pastes. In the physical properties test, hardness and chewiness significantly increased in the 90 ${\mu}m$ sized RGP group. Weight loss of fish pastes containing RGP after heating was attenuated compared to commercial fish pastes. Fish paste containing RGP showed an inhibitory effect on lipid oxidation. Especially, the 10 ${\mu}m$ sized RGP group showed the most significant inhibitory effect on lipid oxidation and reduced total microbes during storage. Therefore, 1% addition of RGP can give rise to high quality fish pastes through improvement of sensory evaluation and physico-chemical properties. Moreover, functionally and physiologically improved fish pastes can be produced by adding different amounts of RGP.
