감식초 및 감고추장을 이용한 감초고추장의 최적 배합비 설정 (Extablishment of Optimum Recipe on Persimmon Chokochujang using Persimmon Vinegar and Kochujang)

  • The optimum recipe of persimmon chokochujang using persimmon vinegar and kochujang was established by four-dimensional response surface methodology. The organoleptic color of persimmon chokochujang showed maximum score in 18.16g of persimmon vinegar, 5.58g of garlic and 1.62 g of sucrose. The organoleptic aroma of persimmon chokochujang showed macimum score in 18.19g of persimmon vinegar, 4.57g of garlic and 2.06g of sucrose. The organoleptic taste of persimmon chokochujang showed maximum score in 19.28g of persimmon vinegar, 4.97g of garlic and 2.34g of sucrose. The organoleptic color of persimmon chokochujang showed maximum score in 18.81g of persimmon vinegar, 4.81g of garlic and 2.65g of sucrose. Optimum mixing ranges for organoleptic properties of persimmon chokkochujang were 18.25~19.25g of persimmon vinegar, 4.60~5.00g of garlic and 2.06~2.65g of sucrose.

감식초 제조를 위한 초산발효 최적 조건 및 감식초의 품질특성 (Optimum condition of Acetic acid Fermentation for Persimmon Vinegar Preparation and Quality evaluation of Persimmon Vinegar)

  • This study was carried out for the purpose of improving the persimmon vinegar. The acetic acid bacteria strain JST-3, using acetic acid fermentation was isolated from the traditional persimmon vinegar. The optimum conditions for high yield of acetic acid were studied in the shaking bath. Acetic acid bacteria was cultured at 3$0^{\circ}C$ for 4 days and transferred to persimmon alcoholic juice for acetic acid fermentation. The optimum initial acidity for acetic acrid fermentation was 1%(w/v) and the addition of glucose or yeast extract was observed to produce relatively low yield of acetic acid. Succinic and acetic acid were major organic acid in the persimmon vinegar, The contents of lactic acid which was known to increase off-flavor were very low. Sensory evaluation revealed that the persimmon vinegar prepared in this study was superior to two commercial ones in the aroma and taste.

복발효 감식초의 품질 (Quality of Persimmon Vinegar Fermented by Complex Fermentation Method)

  • To prepare the basic information for the fermentation of high quality persimmon vinegar in the farm. the quality of the complex fermented persimmon vinegar(CFPV) was compared to that of naturally fermented persimmon vinegar (NFPV). The titratable acidity of the CFPV was 3% which was the half concentration of the NFPV. The content of total free sugar by HPLC was 6% in CFPV and NFPV was 5%. Organic acid compositions in persimmon vinegar were oxalic acid, malic acid, lactic acid, citric acid, succinic acid and glutaric acid in addition to acetic acid. Total content of the organic acids in NFPV was higer than in CFPV. Especially, the content of latic acid in NFPV was very higher than that of CFPV. the flavour, color and taste of persimmon fruit itself in CFPV were stronger than those in NFPV.

진공농축에 따른 감식초의 이화학적 특성 변화 (Change of Physicochemical Characteristics of Persimmon Vinegar by Vacuum Concentration)

  • 본 연구에서는 감식초의 유효성분 손실은 최소화하면서 음용시 느껴지는 이취인 톡쏘는 향과 맛을 약화시켜 섭취하기 부드럽게 하고, 좋은 식품소재로서 감식초의 활용도를 높이기 위해서 감식초 농축액을 제조할 때 진공농축 정도에 따라 변하게 되는 이화학적 특성들을 조사하여 적정 농축방법을 확립하는데 기초자료로 활용하고자 하였다. 감식초를 진공농축시킴에 따라 색도, 점도, pH, 산도, 유기산함량, 유리당 함량과 같은 이화학적 특성들은 큰 차이를 나타내는 것으로 나타났다. 위의 결과들을 종합해 볼 때 음용시의 기호도와 다른 식품소재로서의 활용도를 높이기 위한 감식초의 농축정도는 $30^{\circ}Bx$ 이하로 진공농축하여 음용시 이취나 이미로 작용하는 너무 강한 톡쏘는 맛과 향을 어느 정도 제거시켜 적당한 맛과 향을 유지하게 하고 유효성분을 최대한 보존시키는 것이 좋을 것으로 판단된다.

감식초 농축액들의 향기성분 분석에 대한 전자코의 적용 (Application of Electronic Nose for Aroma Analysis of Persimmon Vinegar Concentrates)

  • 새로이 개발되어 식품과학 분야에 도입되기 시작한 conducting polymer로 구성된 32개의 센서를 장착한 전자코를 이용하여 감식초의 농축시 향기성분의 변화를 측정하고 그 데이터를 관능검사와 비교 분석하여, 감식초의 향기성분 분석에 전자코의 활용가능성 여부를 알아보았다. 관능검사와 유기산 분석결과는 감식초 농축액들간의 농축정도에 따른 향기성분 및 유기산 함량의 변화와 차이를 분명히 나타내고 있었으나, conducting polymer로 이루어진 32개의 센서 array가 장착된 전자코는 감식초의 농축 정도에 따른 향기 성분의 패턴 변화를 감지하지 못하고 모두 같은 패턴으로 나타내주고 있어서 conducting polymer 센서가 장착된 전자코는 감식초의 향기성분 분석에는 적합하지 않은 것으로 판단된다.

난지과실을 이용한 식초제조 (Vinegar Production from subtropical Fruits)

  • Optimum processing conditions for vinegar fermentation using fig, pear and persimmon were determined. Alcohol contents in the fermentatio broth of crushed fruits of fig, pear and persimmon were 7.5%, 5.1% and 6.8%, respectively. Alcohol contents increased up to 14.3~15.1% by adding 24% of sugar to the fruit juices. The total acidity of 7.04%, 3.30% and 3.66% were obtained for fig, pear and persimmon, respectively, through acetic acid fermentation of fruit juices containing 8% ethanol. Acetic acid yield increased by shaking during fermentation for pear and persimmon broth. Acetic acid yield increased 1.80~1.92 times by adding 0.5% of yeast extract to the fermentation broth of pear and persimmon. After fermentation, each fruit vinegar was clarified up to 93.1~97.4 of light transmittance by using 0.6% of kaki shibu for 4 days at 1$0^{\circ}C$. After aging for 60 days at 1$0^{\circ}C$, the acidity of fruit vinegar decreased slightly. Tannin content of persimmon vineger was remarkably higher than the other, while light absorbance of pear vinegar was higher than the other vinegars. Acetic acid was identified as the main volatile organic acid in the fruit vinegars, while propionic, isobutyric and isovaleric acids were identified as the minors. The content of non-volatile organic acids in the pear vinegar was higher than that in the persimmon vinegar. Sensory evaluation results indicate that the fig vinegar was preferred to the pear vinegar in the aspects of color, flavor and overall acceptability, but the fig vinegar had a strong background taste. Sensory scores of the persimmon vinegar increased significantly by pasteurization, but those of the fig and pear vinegars did not by pasteurization.

불량 단감을 이용한 속성 감식초의 제조와 품질 평가 (Preparation and Quality Evaluation of the Quick Fermented Persimmon Vinegar Using Deteriorated Sweet Persimmon)

  • 경제성이 없는 불량한 단감을 효율적으로 활용하기 위하여 속성으로 감식초를 제조하여 국내 시판식초 및 재래식 감식초의 일반성분, 유기산, 알코올 및 무기성분을 비교.분석하여 품질평가하였다. 모든 식초의 pH는 2.02-3.02였으며 양조식초가 2.02로 가장 낮았고, 감식초 (A)가 3.02로 가장 높았다. 총 산은 4.62-9.78%이었고 감식초 (B)가 가장 낮았고 양조식초가 가장 높게 나타났다. 식초중의 유기산으로 acetic, citric, tartaric, malic, succinic, formic, oxalic acid가 검출되었으며 특히 acetic acid가 3.96-8.36%로서 높았다. 총당의 함량은 0.45-6.43%이었고 양조식초가 0.45%로 가장 낮았고 감식초 (B)가 가장 높았다. 총 질소의 함량은 0.025-0.046%이었고, 아미노태질소는 0.015-0.029%이었다. Fe, Zn, Mn, Cu의 함량은 낮았고, 유해 중금속은 검출되지 않았다

시판 및 속성 감식초의 이화학적 특성 (Physicochemical Properties of Markdting and Intensive Persimmon Vinegars)

  • Physicochemical properties of marketing and intensive persimmon vinegar were investigated, the results are as following; Total acidity in D, H, S, J, sweet persimmon(SP) and persimmon vinegar were 4.20, 3.03, 2.58, 3.30, 5.92 and 5.81%, respectively, and the value of intensive persimmon(IP) vinegars wre higher than that of others. SP sample was lower than any other vinegar as compared to L value in colors, no sample was lower than H and S vinegar inturbidity and browning. Brix of IP samples were lower than that of other vinegars, there was a little fructose in the all samples. Among the organic acids, galacturonic acid content except acetic acid was the highest, and ascorbic and malic acid were detected a little, Calium content was the highest of minerals in persimmon vinegars, phosphorus was detected a little. Alcohols of 5~6 types were analyzed in each samples, free amino acids of 17~24 dypes were analyzed, D and IP vinegars have more acohols and amino acids, and their contents were higher than the others. Volatile components of 6~9 types were analyzed in each samples, these have more ethanols except acetic acids than other volatile components, and the contents of IP samples were higher than that of marketing persimmon vinegars.

Microbiological Characteristics and Volatile Components of Deastringent Persimmon Vinegar

  • Acetic acid producing bacteria were isolated from deastringent persimmon vinegar and the major bacterium was identified using morphological and biochemical tests. Acetobacter sp. AH-1 was motile, gram negative rod with catalase positive and oxidase negative. The strain can grow up to 5 % ethanol and 2% NaCl as well as 25% glucose. Optimum temperature and pH for growth were 3$0^{\circ}C$ and 5.0, respectively. Volatile constituents of persimmon vinegar were analyzed by purge and trap sampling . Acetic acid adn alcohol were the largest volatile compounds quantitiatively in persimmon vinegar. Among alcohols, 20methyl-1-propanol, isoamyl alcohol and amyl alcohol were detected. Isovaleradehyde and benzaldehyde for aldehyde, isoamyl acteate, ethyl formate, propyl aceetate, and ethyl acetate for esters were likely to contribute to persimmon vivegar flavor.

Chitosan 처리로 청징화된 감식초의 저장중 품질 변화 (Quality Changes during Storage of Persimmon Vinegar Clarified by Chitosan Treatment)

  • Persimmon vinegar was clarified with 400mg/L chitosans of two different molecular weights (MW 150 and 37 kDa), and its quality changes were investigated during storage at room temperature for 6 months. No significant changes in pH, acidity, and tannin content were observed. However, turbidity and browning slightly increased while protein content slightly decreased. Soluble solids content slightly decreased when treated with high MW chitosan. Color L* value decreased while a* and b* values increased with storage periods. The major organic acid in the persimmon vinegar after 6 months storage was acetic acid with minor lactic, malic, tartaric, galacturonic, and succinic acids. Overall, the quality of persimmon vinegar clarified by chitosan treatment, irrespective of molecular weight, was more stable without noticeable changes during storage than that of control group without chitosan treatment.
