Oxidative Stability of Seasoned-Dried Pacific Saury (Imported Product) Treated with Liquid Smoke

  • As a series of studies on improving the processing suitability of imported Pacific saury, oxidative stability of seasoned-dried Pacific saury treated with liquid smoke (T2 product) was examined during storage, comparing with control (C, seasoning only) and T1 (treatment of 0.05% BHT instead of liquid smoke). The pH of T2 treated with liquid smoke was relatively lower than those of C and T1 during storage. The contents of volatile basic nitrogen in all products increased continuously during storage. In the changes of TBA and POV of products during storage, the POV of T2 was lower than that of T1, and the TBA values of T1 and T2 were lower than that of C product. The major fatty acids were 22 : 1n-11, 20 : 1n-11, 16 : 0, 14 : 0, 22 : 6n-3, 20 : 5n-3, 18 : 4n-3, 16 : 1n-7, 14 : 1n-7 and 18 : 1n-9 in the both C and T2 products. The contents of polyunsaturated fatty acids in hath C and T2 somewhat decreased with increasing storage period, while those of saturated and monounsaturated fatty acids increased.

Transmittance Properties of Fishing Lamp in Stick-held Dip Net Fishing Vessel for Pacific Saury (꽁치봉수망 집어등 불빛의 수중 투과 특성)

  • The transmittance properties of fishing lamp in stick-held dip net fishing vessel for Pacific saury was investigated during nighttime operations in the North Pacific on May 19 and 24, 2003. The incandescent lamps of red color (750W${\times}$100) and halogen lamps (750W${\times}$521) were used as a fishing lamp for gathering Pacific saury. The relative irradiance of red incandescent lamp and halogen lamp in the air showed peak in 1,052nm of wave length. However, the irradiance of halogen lamp below 600nm of wave length was higher than that of incandescent lamp. The relationship between underwater illuminance (Y) and water depth (X) of sunlight in the observation areas A (37$^{\circ}$ 11'N, 178$^{\circ}$ 46'W) and B (31$^{\circ}$ 11'N, 178$^{\circ}$ 01'E) is represented as follows; $Y=2572.2{\cdot}e^{-0.0721X},\;R^2=0.9915$ $Y=3312.4{\cdot}e^{-0.0619X},\;R^2=0.9837$ The distribution of underwater illuminance of observation areas A and B showed low value of 0.31x and 0.61x in 50m depth, respectively. In the fishing grounds of Pacific saury, the light intensity of distribution depth was above 0.51x.

Changes in Amine Constituents of Kwamaege Flesh by Different Drying for Pacific Saury, Cololabis saira (꽁치과메기의 건조조건에 따른 Amine의 변화)

  • We investigated a DMA, TMA, TMAO, a toxic substance to human body can be generated during drying, in a Pacific saury, Cololabis saira. Changes of amine during drying showed a rapid increasing trend until a day of ninth according to an increasing of ambient temperature. And a content of DMA, TMA, TMAO during artificial drying is lowerd than during natural drying. A case of TMAO contents showed that it was decrease during TMA component is generated in drying process Also they can be generated in a drying process. Thus we concluded that an approvement in a general distribution of Kwamaege is needed for preventing a generation of a toxic component such as a DMA, TMA.

  • Various chemical indices were analyzed to clarify the tendency of rancidity during the repeats of heating so called roasting heating and/or reheating in dark muscled fish (mackerel and pacific saury). The total lipid contents of fresh mackerel and pacific saury were $36.7\%\;and\;28.4\%$ in saturated fatty acid, $33.0\%\;and\;20.2\%$ in monoenoic acid, and $29.9\%\;and\;49.7\%$ in polyenoic acid, respectively. The ratios of unsaturated fatty acid (UFA)/Saturated fatty acid (SFA) were 1.7, 2.5 and content of total lipid was $16.5\%\;and\;13.7\%$, respectively. Peroxide content gradually increased after roasting heating and reheating in mackerel while it decreased after reheating in pacific saury. Thiobarbituric acid value also increased during roasting and heating in all the samples but decreased after reheating. Acid value increased after roasting heating and reheating in all samples, particularly it was high in pacific saury which have a high composition of UFA. More conjugated dienes were formed when the meat was roasted at $180^{\circ}C$ than at $200^{\circ}C\;or\;220^{\circ}C$, and in the filet with skin than the skinless.

  • Bacterial mutagenicity of shellfish or canned products of red-muscle fish affected by hot-airdry processings and/or during storages was investigated by Ames preincubation method. Mussel (Mytilus edulis) and surf clam (Tapes japonica) dried under either 40$\circ$C, 50$\circ$C or 60$\circ$C until remained about 25 % water content was stored at 4$\circ$C or 25$\circ$C for 6 months. Commercially available canned product of pacific saury (Cololabis saira) and mackerel saury (Scotnberjaponicus), whose producer or date of manufacture was identical each other, was stored at 25$\circ$C for 6 months. Mutagenic substances from sample (25 g dry weight) were extracted and purified for mutagenicity assay against S. typhitnurium TA98 by the simultaneous distillation extraction (SDE) method (Lee et al. 1955). Mutagenicity of sample was expressed number of revertant per 25 g dry sample. Number of revertant from unheated mussel sample was appeared to be 135, relative to 22 from unheated surf clam sample. Mutagenicity of both shellfish was strongly affected by heat treatment, but a lesser extent by storage conditions, even at 25$\circ$C for 6 months. Revertants of the mussel sample dried at 40$\circ$C, 50$\circ$C, or 60$\circ$C was found to be 227, 779, and 883, respectively. Similar, but lower, mutagenicity was observed from the sample of surf clam dried at 40$\circ$C, 50$\circ$C, or 60$\circ$C than mussel. Mutagenicity of canned pacific saury and mackerel samples was not influenced by storage conditions. Number of revertant from pacific saury was 175 which was relatively higher than 5 from mackerel. Mutagenicity of fresh pacific saury and mackerel samples was significantly higher than that of their counterparts from canned products. These results indicate that mutagenicity of the shellfish was affected by heat treatment (40$\circ$C, 50$\circ$C, or 60$\circ$C) used for drying process, but not much by storage for 6 months at 4$\circ$C or 25$\circ$C and the mutagenicity of canned products of red-muscle fish was not influenced by storage, even at 25$\circ$C for 6 months.

  • Experiments were carried out to establish an effective artificial drying method of Pacific saury (Cololabis seira) to kwamaegi. Raw fish containing 67% moisture were dried up to containing less than 40% moisture by drying for 15 days. The fish lost moisture more rapidly during first 3 days of natural drying than artificial drying. Total lipid content increased from 16.1% to 30.3 and 29.8% by 15 days of natural and artificial drying, respectively. Neutral lipid occupying 91.63% of total lipid increased to 92~94% during 15 days of drying, while content of phospholipid and glycolipid decreased slightly. The values of peroxide and thiobarbituric acid increased up to 6 days of drying and then did not change. Peroxide levels were lower in artifically dried fish than in naturally dried ones.

Effect of Drying Conditions on Biogenic Amine Production and Lipid Oxidation in Semi-dried Pacific Saury Cololabis saira, Guamegi (꽁치(Cololabis saira) 과메기의 지질산화 및 biogenic amine 생성에 건조조건이 미치는 영향)

  • This study reviewed the effect of the drying conditions on the production of biogenic amines and lipid oxidation in semi-dried Pacific saury Cololabis saira or Guamegi. The moisture content of the Guamegi ranged from $32.71{\pm}2.37$ to $45.9{\pm}2.60$ g/100 g. The respective ranges of the acid value (AV) and peroxide value (POV) were $1.39{\pm}0.40$ to $15.79{\pm}0.47$ mg KOH/g and $76.14{\pm}2.19$ to $282.84{\pm}2.34$ meq/kg on drying for 3 days. The AV and POV increased for up to 3 days of drying and the values differed according to the amount of sunlight and temperature. However, lipid oxidation was reduced in Guamegi manufactured using a cold-air drying method. The fatty acid composition and the biogenic amine content in Guamegi during drying did not differ significantly with the drying method or drying date. The main saturated, monoene and polyene fatty acids were palmitic acid, eicosenoic & erucic acids, and eicosapentaenoic & docosahexaenoic acids, respectively. At 16.67 to 71.89 mg/kg, the histamine content was higher than that of other biogenic amines and it increased significantly during drying. In conclusion, this study showed that the packaging and drying conditions of Guamegi products need to be improved to inhibit lipid oxidation and biogenic amine formation.

Change of Nucleotides, Free Amino Acids in Kwamaegi Flesh by Different Drying for Pacific saury, Cololabis saira (건조조건에 따른 꽁치과메기의 핵산류, 유리아미노산의 변화)

  • New drying method was tested comparison with a traditional one used for production of Kwamaegi, semi dry pacific saury in east coast area of Kyungbuk province. During 15 days of total drying period, change in nucleotides and free amino acids were measured in edible portion of pacific saury from different dry methods, natural(traditional) and artificial method. ADP and AMP detected in raw fish were decrease while IMP, inosine, hypoxanthine increased during drying period. K1 values expressed as(Hx+HxR$\times$100/Hx+HxR+IMP) increased gradually throughout drying period, indicating the decline of freshness by drying. Freshness judged by change in nucleotides and related compounds was better in samples from artificial drying than from natural one. Special flavors of Kwamaegi were regarded to be synergistic actions of IMP and some amino acids. Content of total free amino acids of raw fish comprised 2.9g by weight(100g) and sum of glutamic acid, aspartic acid and histidine was over 34% of total amino acid content. Glutamic acid content. Glutamic acid, aspartic acid contents were reduced rapidly from 3rd to 9th day more decrease by artifical drying than by natural drying. Lysine content were gradually increased under two different drying conditions and threonine didn't change by two drying conditions.

Effects of Saury Meat on Antihyperlipidemic and Antiarteriosclerosis Activities in Sprague-Dawley Rats (꽁치육의 고지혈증 유발 쥐에서의 항고지혈증 및 항동맥경화증 효능)

  • The effects of dietary supplementation of pacific saury on anti-hyperlipidemic activities were investigated using an animal test study in which normal rats were fed four different parts of saury, such as the whole body, meat, internal organs, or a mixture of head, caudal fin, and bone. Serum total lipid and triglyceride levels were significantly (p<0.05) reduced in rats fed saury meat at a dose of 200 mg/kg of body weight compared to hyperlipidemic control rats. There were also significant decreases in serum total cholesterol and LDL-cholesterol levels in the rats fed saury meat at 200 mg/kg of body weight. In addition, the atheroscrelosis index and superoxide dismutase in blood lipids were significantly (p<0.05) lowered in rats fed saury meat at 200 mg/kg of body weight compared to the control rats. In conclusion, our results indicate that saury meat contains unknown physiologically active components as than compared to other parts of saury, and has potential for use in the prevention of hyperlipidemic arteriosclerosis.

Climate change and fluctuations of pelagic fish populations in the Far East region

  • Time series of ocean climate indices and catch records were used to identify the alternation patterns of pelagic fish populations in relation to climate regime shifts. During 1910-2008, an orderly alternation of dominant pelagic fish groups was observed in the Tsushima Warm Current (TWC; Yellow Sea-East China Sea-East Sea/Japan Sea) and Kuroshio-Oyashio Current (KOC; Northwestern Pacific) regions. After the collapse of herring fishery in the late 1920s, the sardine (A group) dominated in the 1930s, 3 other species (C group; Pacific saury, jack mackerel, and anchovy) dominated in the 1950s-1960s, chub mackerel (B group) dominated in the 1970s, and then sardine (A group) dominated again during cool regime in the 1980s. As sardine biomass decreased in association with the climate regime shift that occurred in the late 1980s, catches of C group immediately increased after the regime shift and remained at high levels during warm regime in the 1990s. Alternations of dominant fish groups occurred 6 times between 1910 and 2008. The dominant period of the 7 species lasted for 10-20 years. The catch of Pacific sardine in the TWC and KOC regions showed a negative correlation with the catch of the other 5 species (Pacific herring, anchovy, jack mackerel, Pacific saury, and common squid), suggesting that the abundance of the 5 species is strongly affected by the abundance of Pacific sardine in relation to the climate regime shifts. The total catch level of the 7 species in the KOC region was generally higher than that in the TWC region before 1991 but was lower after 1992, suggesting that the fish populations in the Pacific side are shifted to the TWC region by zonal oscillation of the oceanic conditions in relation to the climate regime shift in the late 1980s.
