Dyeability and Antibacterial Activity of Ginkgo Biloba Leaf Extract Using Three Kinds of Aqueous Extraction Solvents. (세가지 수계 추출 용매를 사용한 은행잎 추출액의 염색성 및 항균성)

  • The purpose of this study was to investigate dyeing properties and antibacterial activities of cotton and silk fabrics treated with Ginkgo biloba leaf extracted with three kinds of aqueous solvents: distilled water, electrolytic reduction water and electrolytic oxidation water. The optimum dyeing condition of Ginkgo biloba leaf was 120 min at 8$0^{\circ}C$. Electrolytic reduction water had the highest dyeability to both cotton and silk compared with electrolytic oxidation water and distilled water. A color of extract by distilled water and electrolytic oxidation water showed yellowish Yellow Red, extract by electrolytic reduction water showed reddish Yellow Red. Irrespective of kinds of extraction solvents, appropriate acidity of medium was pH 9∼11 and pH 3 for cotton and silk fabrics, respectively. Colorfastness to laundering and Light fastness showed generally low but crocking fastness was excellent. Antibacterial activities of the treated fabrics above were 99.9%.

Studies on the Production of Vinegar from Fig (무화과를 이용한 식초 제조에 관한 연구)

  • Possibility of utilization of fig as a source of vinegar was tested. Alcohol fermentation was conducted by inoculation of Saccharomyces bayanus into fig juice. After 5 days of fermentation at 27oC, fig wine with alcohol content of 13.6%. Then fig vinegar was produced by cultivation of Acetobacter sp. E which was isolated from fig vinegar. Optimum concentration of alcohol, starter content and fermentation temperature for the acid production were 8~9%, 5% and 27~30oC, respectively. More acetic acid was produced by adding 0.5% of yeast extract and 0.01% of Ca pantothenate. Adjustment pH of culture broth with acetic acid and shaking cultivation method were not effective in higher yield of acid production. Addition of sulfite up to 50 ppm did not inhibit for acetic acid fermentation. Addition of 1% bentonite or 1% kakishibu was more effective for the clarification of fig vinegar than any other clarifying agents tested. During aging and racking, acidity, absorbance and tannin content of fig vinegar decreased, while redness and yellowness increased. Aged and racked fig vinegar showed higher sensory score than non aged one in the aspects of color and overall acceptability.

Isolation of A Bacterial Strain for Fermentation of Omija Vinegar (오미자 식초 제조를 위한 식초산균 분리 및 동정)

  • In other to produce vinegar using Schizandra chinensis Ballon(omija), acetic acid bacteria(AAB) were selected from several conventional vinegars, and total 30 acetic acid bacterial strains were isolated. Among the isolated strains, a strain was selected from medium containing omija juice which showed the highest productivity of acetic acid. The strain was identified as Acetobacter sp. C5-1b. Optimum conditions for acetic acid production of Acetabacter sp. C5-1b were involved with 30t: of fermentation temperature and shaking culture. The acidity of culture medium was reached to 5.3% after 8 days shaking cultivation at 30℃.

  • Kimchi power made by kimchi fermentation and freeze-drying was added to Western foods of sauce, soup, pizza, cracker and bread. Flavor qualities of the processed fusionfoods were evaluated by analyzing volatile compounds and sensory evaluation. The optimum condition of kimchi fermented for the best flavor quality of freeze-drying was the ranges of pH4.0${\sim}$pH4.7 and acidity 0.5${\sim}$0.8. The number of volatile compounds identified from extracts of the freeze-dried kimchi powder was 24, which contained 7 alcohols, 5 esters, 5 acids, 3 sulfur-containing compounds, 2 aldehydes, 1 oxygen-containing and 1 other. Among the identified compounds, the most abundant compound was eugenol(39.40%), followed as the order of dodecanoic acid(4.91%), acetic acid(1.70%), methyl 2-propenyl disulfide(1.52%), hexanal(1.51%) and 2-pentylfuran(1.18%). These compounds affected the flavor quality of kimchi powder.

Antioxidant Activities and Quality Characteristics of Jelly Added Rehmannia Radix Preparata Concentrate (숙지황 농축액 첨가 젤리의 품질특성 및 항산화성)

  • We studied the antioxidant activities and quality characteristics of gelatin jelly prepared with different amounts (0%, 0.25%, 0.50%, and 0.75%) of Rehmannia Radix Preparata (RRP) concentrate. The moisture content of the control group was 61.62%, and the acidity and pH were 3.68 and 1.96%, respectively. The reducing sugar content of the jellies ranged from 10.83% to 13.1% (from 35.0 $^{\circ}Brix$ to 37.0 $^{\circ}Brix$). The acidity of the control group was the lowest, followed in order by the 0.25% RRP, 0.50% RRP, and 0.75% RRP groups. The lightness, redness, and yellowness of the Hunter color system decreased with increasing RRP concentrate, whereas the hardness, cohesiveness, and springiness increased with increasing concentrate. The total phenol content was the highest in 0.75%. Antioxidant activities such as DPPH radical scavenging and hydroxyl radical scavenging were the highest with the 0.75% group ($IC_{50}$ value of DPPH radical scavenging activity: 85.42 mg/mL for 0.75%, 484.25 mg/mL for control; $IC_{50}$ value of hydroxyl radical scavenging activity: 54.42 mg/mL for 0.75%, 135.54 mg/mL for control). The sensory evaluation results showed that overall preference and texture were the highest in the 5% addition group. From these results, it was suggested that the optimum amount of RRP concentrate to add to jelly is 0.50%.

Studies on the Manufacture of Adlay Yoghurt I. The Physicochemical and Microbiological Properties of Adlay Yoghurt (율무 Yoghurt 제조에 관한 연구 I. 율무 Yoghurt의 이화학적 및 미생물학적 성질)

  • This study was investigated the effects of the addition of adlay with levels of 1%(T1), 2%(T2), 3%(T3) and 4% (T4) in skim milk substrate on the physicochemical and microbiological properties of yoghurt during fermentation and storage period at 4$\pm$1$^{\circ}C$. Adlay yoghurt were fermented with the mixed cultures of YC-380, ABT-4 and ABT-D. Titratable acidity and pH values of all treatments were increased and decreased significantly(p<0.05) with fermentation period, respectively and increased and decreased slightly during the storage period, respectively. There were increased and decreased in order of all treatments fermented with YC-380, ABT-4 and ABT-D. Viscosity of adlay yoghurt increased rapidly in order of T4, T3, T2 and T1 during fermentation and slowly in order of T1, T2, T3 and T4 during the storage period. There were increased in order of all treatments fermented with ABT-D, YC-380 and ABT-4. The counts of viable cells of lactic acid bacteria in all treatments were rapidly and slightly increased during fermentation and storage period, respectively. There were increased in order of fermented with ABT-D, ABT-4 and YC-380 in all treatments. The counts of E. coli were not found in adlay yoghurt. In all treatments, T1 showed slightly high compared to that of control. Based on the results of this experiment, the optimum level of addition of adlay were 1% (w/v) for production of acid production, pH, viscosity and the counts of viable cells of lactic acid bacteria.

Effects of Dandalion (Taraxacum mongolicum) Powder on Quality Properties of Yoghurt (민들레분말 첨가 요구르트의 품질 특성)

  • The effects of adding Dandalion powder (Taraxacum mongolicum powder, TMP) to yoghurt manufacture on quality characteristics during the fermented and storage were investigated. Yoghurt samples were prepared with 0.3%, 0.6%, 0.9% TMP. Changes in Titratable acidity, Lactic acid bacterial (LAB) population, pH, viscosity, sensory characteristics were monitored during the fermented and storage. LAB and titratable acidity added with the TMP in yoghurt was higher, and pH, viscosity was lower than those of the control yoghurt during the fermented. Also the TMP yoghurt was lower viscosity than control in fermentation but this viscosity became to be increased higher than the control during storage. The sensory values of the yoghurt added with the TMP were low compared with the Control. Regarding taste, appearance, sensory properties it were suggested that the added optimum ratio of TMP for yoghurt was below 0.3%. This study suggests that dandalion powder (TMP) added yoghurt supply additional nutrients while maintaining the flavor and quality.

Development and Characterization of Sea Squirt Halocynthia roretzi Sikhae (멍게(Halocynthia roretzi) 식해의 개발 및 특성)

  • This study was conducted to develop and characterize sea squirt Halocynthia roretzi sikhae. According to the results for pH, total acidity, lactic acid bacteria, amino nitrogen and sensory evaluation of sea squirt sikhae during fermentation for 6 days at $15^{\circ}C$, the optimum fermentation periods were 4 days for sourness-disliking customers and 5 days for sour-disliking customers. No differences in the proximate compositions of sea squirt sikhaes fermented for 4 days (4D) and for 5 days (5D) were found. There was a difference in the eproximate compositions of commercial seasoned sea squirts, 4D and 5D, sea squirt sikhaes. The results of salinity, total acidity, amino nitrogen and sensory evaluation of two kinds of sikhae suggest that the taste was stronger for 5D than for 4D, both of which were superior to commercial seasoned sea squirts. There was, however, no difference in color of 4D, 5D and commercial seasoned sea squirts. The results of E. coli analyses suggest that sea squirt sikhae is a safe food in terms of sanitation.

Effect of Fly Ash on the Yield and Quality of Tobacco (석탄회 시용이 연초의 수량 및 품질에 미치는 영향)

  • This study was conducted to investigate the effect of fly ash on the yield and quality and to determine the optimum application amount of fly ash for tobacco(Nicotiana tabacum L). Two kinds of fly ash, anthracite and bituminous coal, were treated with different levels of 0, 20, 40, 60 MT/ha. Dry weights of tobacco at middle and topping growth stage were increased with application of fly ash, showing the highest dry weight at 40 MT/ha in both kinds of fly ash. It was showed that the bituminous coal had a little more effective for yield than that of anthracite. Comparing with the control, yields of tobacco applied with fly ash were significantly increased about 17.7% and 17.1% by the application of bituminous coal and anthracite, respectively. Quality of flue-cured leaves was better by application of fly ash than that of the control. The quality index was given the highest at 40 MT/ha for bituminous coal increasing by 24.6% and at 60 MT/ha fur anthracite increasing by 13.4% compared with the control. The economical efficiency considered of the yield and quality of tobacco was the highest at 40 MT/ha of bituminous. Soil pH, contents of available P2O5, organic matter, exchangeable Ca2+ and Mg2+ of soil during the growing season were increased by application of fly ash, showing more effectiveness in bituminous than that in anthracite. By the application of fly ash, the nutrients availability and the acidity of soil were reformed and they caused significantly the increase of growths yield, and quality of tobacco. By the application of lime reforming soil acidity, growth response, yields and quality of tobacco were not increased compared to the control, although the effect of reforming soil pH was remarkable.

Changes in the Quality of Baechu Kimchi added with Backryeoncho(Opuntia ficus-indica var. saboten) Powder During Fermentation (백련초 분말 첨가 배추김치의 저장 중 품질특성 변화)

  • The effects of Backryeoncho (Opuntia ficus-indica var. saboten) powder addition (0, 0.4, 0.8, and 1.2%) on the pH, titratable acidity, lactic acid contents, microbial contents, texture, and sensory evaluation of cabbage Kimchi, stored at $10^{\circ}C$ for 36 days were studied to establish an optimum recipe. Upon addition of Backryeoncho powder, pH was higher than that of Kimchi without powder after 36 days of fermentation. The titratable acidity was increased by the addition of Backryeoncho powder, and 0.4% powder added Kimchi showed the slowest changing level. During the fermentation period, the degree of salinity decreased with the addition of powder from 2.52 to 2.19 to 2.10. The a value was higher in Kimchi with added Backryeoncho powder in a dose-dependent manner compared with control Kimchi. The cutting force and compression force were higher during the fermentation period, and especially addition of 0.4% powder showed the highest value of hardness. The addition of powder slowed growth of lactic acid bacteria as compared with the control samples. In the sensory evaluation of overall taste, 0.4% addition of powder improved the quality of Kimchi. Therefore, addition of 0.4% Backryeoncho powder apears to be an acceptable approach to enhance the quality of Kimchi without reducing acceptability.
