This study was conducted for the optimization of ingredients in salad dressing using Hwangdo peach (Prunus persica L. Batsch). The experiment was designed according to the D-optimal design of mixture design, which included 14 experimental points with 4 replicates for three independent variables (olive oil 40~65%, peach puree 27~50%, vinegar 8~20%). The linear regression models for pH, viscosity and color value and the quadratic regression models for emulsion stability, all sensory evaluation of the products were proven to be valid by the F-test for the overall significance of the regression model at a 5% level. Viscosity and pH of the products increased as olive oil content. Color value, viscosity and pH of the products increased as peach puree content. pH, viscosity, redness, and yellowness of the products decreased as vinegar content. Sensory evaluation result of the products showed that general preference for the products were increasingly affected by the increases in contents then decreased as they exceeded the optimum levels. In consequence, according to result from the first stage of the experiment, the optimum ingredients ratios of the raw materials were set in olive oil 52.43%, peach puree 35.07%, and vinegar 13.91% for ingredients of apricot dressing. These results provided the possibility that peach can be applied to the preparation of a dressing, and thereby present baseline data for the development of new dressings. This is also presumed to meet demands of customers who are always in pursuit of new products.

A laboratory- scale dual-column biofilter system was used to study the biofiltration of dimethyl disulfide (DMDS). The gas flow rate and DMDS concentration to the biofilter were varied to study their effect on the remov-al of dimethyl disulfide. Operating parameters such as pH, temperature, and water content were monitored during the biofilter operation and necessary precautions were taken to keep these parameters within the acceptable limits. It was observed that the removal efficiency of DMDS was optimal at neutral pH values. After five month op-eration, the neutralization of the filter beds with sodium carbonate became necessary for the optimum operation of the biofilters. The microbial population already present in the compost mixtures was found to be adequate in treat-ing DMDS. The compost mixtures were found to be similar in terms of biofiltration efficiency of DMDS. However, pressure drops observed in the first column compost mixture (compost/ peat mulch) was extremely high, making this compost economically not feasible. The second mixture (compost/bark) provided pressure drops within accept-able limits. A minimum residence time of 30 seconds at the optimal operating conditions appeared to be adequate for achieving high removal efficiencies (>90%).
Various commercial collagen mixtures aimed at improving the quality of meat products are available, but the optimal composition is unclear. This study aimed to compare the functional properties, including physicochemical characteristics and lipid oxidative stability, of loin ham marinated with three commercial collagen mixtures sold as food additives. The addition of collagen mixtures led to significant increases in the moisture content, water holding capacity (WHC), cooking yield, and instrumental tenderness, regardless of the type of collagen mixture. In particular, meat samples containing collagen mixture C showed the highest (p<0.05) WHC and tenderness among all groups. Furthermore, collagen mixture B induced increases (p<0.05) in pH values in both raw and cooked samples. The $a^*$ values of samples with collagen mixtures were lower (p<0.05) than those of samples without collagen mixtures. All collagen mixtures effectively improved oxidative stability during 7 days of storage at $4^{\circ}C$. The samples containing collagen mixture B had the lowest lipid oxidation (p<0.05) among groups. These results indicated that collagen mixture C could be used in injection brine to enhance the quality characteristics of meat products, particularly the WHC and tenderness. Collagen mixture A could be used for meat products with high fat contents based on its ability to improve lipid oxidative stability during long-term storage.

Human needs energy to maintain metabolisms, and these energy sources were uptake foods or nutritions. The most effective source was known for glucose among the nutrients, furthermore the glucose is an important source of energy for blood cells and control brain maintenences cells. But as food is plentiful and eating habits become more westernized, fast food and irregular meal times by works. Nowadays, diabetes were rapidly increased by malnutriton and obesity. Diabetes was the sixth highest on the list of causes of death in Korea, released by the Statistics Korea in 2015, which is considered a serious social problem for adult diseases. Therefore, this study aims to establish the optimal hot water extraction conditions of mixed herbs extract mixture compounds that are effective in diabetes. The independent factors were extraction temperature (X1: $40-120^{\circ}C$), extraction time (X2: 2-10 hrs.), and the ratio of water to sample (X3: 40-200 mg/mL). Their effects were assessed on dependent variables of the extract properties, which included soluble solid contents, Brix of sample extract, total polyphenols content, total flavonoids content and DPPH Radical scavenging activity. As a result, the content of total polyphenol content was the highest in No.12(6 hrs, $120^{\circ}C$, 67 mg/mL) and the highest total flavonoid contents was found in No.16(6 hrs, $80^{\circ}C$, 40 mg/mL). DPPH Radical scavenging activity showed the highest activity in No.7(8 hrs, $100^{\circ}C$, 100 mg/mL).

Beta-glucan is a polymerized polysaccharide on beta-1,3 chemical bonds. It has the main pharmacological action of various anticancer mushrooms and is colorless and odorless. In addition, it enhances phagocytosis of macrophages against mycobacterium tuberculosism and increases resistance of host against food poisoning bacteria. Owing to these advantages, beta-glucan was used in various health supplement foods such as immune boosters, hypotensive agent and hypoglycemic agent. Our study was aimed to investigate the effective components of beta-glucan, which was optimized via the contents of Sarcodon aspratus and rice bran. First, the mixture ratio condition of Sarcodon aspratus and rice bran were respectively 10:0, 7:3, 5:5, 3:7, and 0:10. The raw materials were fabricated using hot water extraction method. Distilled water of 100 mL was added to the raw material and extracted. After the extraction processed, the content of effective components was analyzed. The absorbance of beta-glucan was measured using a beta-glucan kit (Megazyme, (1-3) (1-4) BETA-D-GLUCAN ASSAY KIT). The absorbance analysis was repeated three times for accurate analysis. After the extracts were lyophilized, the yields of extracted raw materials according to the mixture ratio conditions of Sarcodon aspratus and rice bran (10:0, 7:3, 5:5, 3:7, and 0:10) were respectively 33.1%, 34.5%, 35.3%, 30.7%, and 24.3%. The absorbance was 1.52, 1.47, 1.50, 1.79, and 1.56, respectively. As a result, the optimum ratio of beta-glucan is 3:7 at Sarcodon aspratus and rice bran. This study suggested that the optimal amount of beta-glucan could be used as a health supplement foods and food additive such as immune boosters, hypotensive agent and hypoglycemic agent. However, the new condition (temperature, time) of hot water extraction to maximize the content of beta-glucan could be considered, could be necessary to compare with the existing extracts.
To improve the utilization rate of phosphate tailings (PTs) and widen the sources of subgrade filler, the PTs is employed to modify clay, forming a PTs modified clay, applied in the subgrade. Accordingly, the environmental friendliness of PTs was investigated. Subsequently, an optimal proportion was determined through compaction and California Bearing Ratio (CBR) experiments. Afterward, the stability of mixture with the optimal proportion was further evaluated through the water stability and dry-wet stability experiments. Finally, via the gradation and microstructure experiments, the strength mechanism of PTs modified clay was analyzed. The results show that the PTs were classified in the non-hazardous solid wastes, belonging to Class A building materials. With the increase of PTs content and the decrease of clay content, the optimum water content and the swelling degree gradually decrease, while the maximum dry density and CBR first increase and then decrease, reaching their peak value at 50% PTs content, which is the optimal proportion. The resilient modulus of PTs modified clay at the optimal proportion reaches 110.2 MPa. The water stability coefficient becomes stable after soaking for 4 days, while the dry-wet stability coefficient decreases with the increase of cycles and tends to be stable after 8 cycles. Under the long-term action, the dry-wet change has a greater adverse impact than continuous soaking. The analysis demonstrates that the better strength mainly comes from the skeleton role of PTs and the cementation of clay. The systematic laboratory test results and economic analysis collectively provide data evidence for the advantages of PTs modified clay as a subgrade filler.
Maltose 생산효소인 Fungamyl과 생전분의 알칼리성 현탁액에 고형분쇄마찰매체를 첨가교반하면서 증자액화과정을 거치지 않고 생전분으로부터 maltose를 직접 생성시키는 연구를 수행하였다. 불용성 생전분을 기질로 하는 분쇄마찰 효소반응계에서 효소반응은 증자액화된 전분을 기질로 하는 기종의 maltose 제조법과 비슷한 효소반응속도를 보였다. 그러나 24시간후 maltose 농도는 증자법을 초과하여, 생전분의 농도가 150g/l일 때 95g/l의 maltose를 얻을 수 있었고, 첨가생전분에 대한 수율은 0.60이었다. 또한 생산된 포도당, maltose, maltoriose의 농도는 각각 20, 95 그리고 13g/l였으며, maltose의 함량은 72%로서 증자법의 6%0에 비하여 매우 높았다.
Korean food waste, one of the abundantly available but environmentally problematic organic wastes in Korea, was utilized as solid-substrate by fungal strain Aspergillus niger ATcC 6275 for the production of enzymemixture containing amylase, cellulase and xylanase. The enzyme mixture can be used as high value-added animal feed. Solid-state fermentation method yielded a 84-fold enhancement in xylanase activity compared with submerged fermentation method. The effect of incubation period, incubation temperature, pH of medium, moisture content, inoculum size and enrichment of the medium with nitrogen and carbon sources were observed for optimal production of these enzymes The optimal amylase activity of 33.10 U/g, cellulase activity of 24.41 U/g, xylanase activity of 328.84 U/g were obtained at 8 days incubation with 50%(w/w) soy bean flake, with incubation temperature of $25^{\circ}C$, pH of 6.38, optimal moisture content of 55% and with inoculum size of $3.8{\times}10^6$spore/g. Enzyme activities were enhanced when ImM $CaSO_4$, 2% Malt extract and 2% galactose were added as mineral, nitrogen and carbon enrichment respectively.
본 논문에서는 MFCC를 이용한 GMM 기반의 음성과 혼합 신호 분류 알고리즘을 MPEG의 표준 코덱인 USAC에 적용하였다. 효과적인 패턴 인식을 위해 GMM을 이용하였고, EM알고리즘을 사용하여 최적의 GMM 파라미터를 추출하였다. 제안하는 분류 알고리즘은 두 가지 중요한 부분으로 나뉜다. 첫째는 GMM을 통해 최적의 파라미터를 추출하는 것 이고, 두 번째는 MFCC 값을 이용한 패턴인식을 통해 음성/혼합 신호를 분류하였다. 제안된 알고리즘의 성능을 평가한 결과 MFCC를 이용한 GMM 기반의 제안된 방법이 기존 USAC의 방법보다 우수한 음성/혼합 신호 분류 성능을 보였다.
폐아스팔트를 적정 처리하여 KS F 2572 규격을 만족하는 아스팔트용 순환골재를 회수한 후 신골재와 결합재(수분+유화아스팔트+에멀젼계 재생첨가제)의 최적의 혼합비율을 설계하여 현장 시공규격에 맞는 재활용 상온아스콘 혼합물을 생산하고자 하였다. 결합재의 최적 혼합비율 결정을 위한 실험 결과 수분함량이 증가함에 따라 전단강도는 감소하였으며, 수분함량이 3.0 wt%일 때 마샬안정도가 최대값을 보였다. 두 결과를 토대로 최적 수분함량은 3.0 wt%로 설정하였다. 또한 유화아스팔트의 함량에 따른 마샬안정도와 흐름치는 첨가량 0.5~2.5 wt%의 범위에서 모두 기준에 만족하였고, 공극률은 0.7~2.5 wt%의 범위에서 만족하였으므로 최적 첨가량은 공통으로 만족된 범위인 0.7~2.5 wt%의 가운데 지점인 1.6 wt%로 설정하였다. 재활용 상온아스콘 혼합물용 결합재의 최적 에멀젼계 첨가제 함량은 재활용 상온아스콘 혼합물의 마샬안정도와 포화도를 고려하여 0.1 wt%로 설정하였다.
