Effects of Oleoresin Spices on the Quality of Chicken Surimi during Frozen Storage (Oleoresin 향신료의 첨가가 계육 Surimi의 냉동저장중 품질에 미치는 영향)

  • Chicken surimi from mechanically deboned chicken meat was prepared with 0.2% oleoresin spices such as rosemary, thyme, sage, mace, marjoram, and bay. Samples were stored at -18$\^{C}$ for 14 weeks to observe quality change including lipid oxidation, color and textural properties. The pH of surimi decreased from pH 7.44∼7.58 stored at 1 day to pH 7.03∼7.13 stored at 14 weeks. The control surimi showed higher level of pH during storage periods. Color stabiilty of surimi decreased during frozen storage both in control and oleoresin added surimi. Control surimi comparatively maintained higher color stability during frozen storage because of higher L* and a* values, and lower b*. On the contrary, the marjoram addition significantly decreased L* and a* value, and increased b* value compared with other oleoresins. Therefore, the color of surimi seems to be affected original color of oleoresin spice itself. Gel strength showed loser level in oleoresin added surimi than control surimi. Oleoresin spices inhibited lipid oxidation significantly because less thiobarbituric acid-reactive substance(TBARS) were accumulated in oleoresin added surimi than control surimi. Sage was the most effective in minimizing lipid oxidation in frozen surimi as TBARS of sage added surimi stored for 14 weeks maintained only 42% compared with that of control. In conclusion, the 6 kinds of oleoresin in this experiment retarded oxidative rancidity in chicken surimi but there was no beneficial effect on the surface color and gel strength.

  • This study was intended to investigate the effects of solvents, particle size of a sample, sample to solvent ratio, temperature and time on the extraction of garlic oleoresin. Among eleven solvents used for oleoresin extraction from garlic, the optimal solvent was methyl alcohol. The most appropriate particle size of garlic, extracting temperature and mixing ratio of garlic to methyl alcohol were 20mesh, $25^{\circ}C$ and 1 to 3(w/w), respectively. On the basis of yield in oleoresin extraction, optimum extracting time was about 4 hours. The yield of oleoresin under the above-mentioned conditions was 21.3%. "L" and "b" as color appearance were decreased, whereas "a"was increased slightly during 60 days storage at 5$^{\circ}C$, $25^{\circ}C$ and 4$0^{\circ}C$. Changes in the pyruvate content showed close relation to pH value. During storage pyruvate content of garlic oleoresin was decreased as increasing storage temperature.

  • To improve the utilization of red pepper, the extracting conditions of oleoresin, such as kind of solvents, particle sizes of a sample, sample to solvent ratios, extraction temperatures and times, were studied. Among eight solvents used for oleoresin extraction from red pepper, the optimal solvent was acetone. The most appropriate particle size of red pepper powder, extracting temperature and mixing ratio of red pepper to acetone were 100 mesh, $25^{\circ}C$ and 1 to 3(w/w), respectively. The basis of yield in oleoresin extraction, optimum extracting time was about 5 hours. The yield of oleoresin under the above-mentioned conditions was 18.7%.

  • This study was designed to investigate the antioxidative effects of volatile oil and oleoresin of rosemary mary (Rosmarinus officinalis Linne), sage (Salvia officinalis Linne), clove (Syzygium aromaticum Merrill) and nutmeg (Myristica fragrans Houttuyn) using the Rancimat and POV test. The antioxidative effects of steam volatile oils of rosemary, sage clove. and nutmeg were not statistically significant, at the levels of 0.01, 0.05, 0.1% added to lard. The antioxidative effects of oleoresin of above 4 spices were increased with the oleoresin concentration. The comparison of the results between Rancimat and POV test of above 4 spices was almost same.

  • Thermal stability and quality change during storage of red pepper oleoresin were studied. Upon heat treatment, carotenoids in oleoresin from red pepper were more stable under nitrogen than air. In the thermal stabilities, the presence of air at $100^{\circ}C$ for 3 hours and 10 hours were 69.1% and 42.3%, respectively ; whereas, in the presence of nitrogen, 95.4% and 92.3%, respectively. In contrast, capsaicin was comparatively stable upon heat treatment in the presence of air. The retentions of capsaicin at $100^{\circ}C$ for 3 hours and 10 hours were 84.7% and 81.3% with air, those were 90.7% and 87.5% with nitrogen, respectively. Color appearance showed close relation to the stability of total carotenoids during 60 days storage at varying temperatures ; $5^{\circ}C,\;25^{\circ}C\;and\;40^{\circ}C$ were 69.4%, 48.0% and 35.1%, respectively. The degradation of total carotenoids during storage could be interpreted as a first order reaction. The activation energy obtained from the Arrhenius plot was 5.03 kcal/mole. Conversely, capsaicin was very stable under storage temperatures. More than 90% of capsaicin was remained upon completion of storage. In the mean time, pH of oleoresin was increased slightly as increasing storage temperatures.

Preparation of Gochujang Sauce and its Characteristics (전통 고추장을 이용한 소스의 제조 및 특성)

  • To develope a sauce using Gochujang which can give foreigners good overall acceptance such as good flavor, taste, color, viscosity and versatility to many foods, we studied on the rheological properties and color control, recipes with spices, herbs, syrup, salt and flavor ingredients and sensory evaluation by Chinese, American and Japanese including Korean. From the survey, the Americans suggested that the proper fellow food of Gochujang sauce be fried chicken, barbecue, hamburger and pina, and hoped to reflect red color, low viscosity, hot taste, low sweetness, salty and sourness and diet effect. The Chinese suggest pork and fried food as a fellow with Gochujang sauce and showed similar opinion in the sensory attributes like the Americans except sweetness. When 5% of starch and xanthan gum was added to sauce, respectively, the yield stress of Gochujang sauce showed 33.21 Pa similar to tomato ketchup. In fluidity measured by voistic flow meter, Gochujang sauce showed 6.2 cm/30sec more or less faster than tomato ketchup which showed 4.7 cm/30sec. Gochujang sauce tended to show strong red color and lightness as pH decreased. The pH adjustant and Paprica oleoresin(2%) improved a value to 12.11 and L value to 24.24 similar to tomato kechup(a:12.42, L:25.48). The 1st gochujang sauce product show 4.50 to 5.75 pots in the overall acceptance in the consumer test including foreigners and koreans. However, the 2nd Gochujang sauce product showed 5.90 points and 6.30 points in the pina and fried chicken, respectively, in the same consumer test. Therefore, we propose that Gochujang can be used for developing sauce products which is most acceptable for various foreigners.

  • Gochujang, a kind of fermented red pepper paste with soybean koji, is a traditionally using spices in Korea and is characterized by its special taste in combination with hot, sweet and salty taste, and its component are consist of protein, carbohydrates, capsanthin and capsinoids, vitamin and other minor components. We tried to develop Gochujang sauce characterized by mild hot and spicy taste, proper viscosity and its strong application to steak, fried food, pizza and others. Gochujang sauce tended to show strong red color and lightness as pH decreases and Paprica oleoresin improved a value to 12.11 and L value to 24.24 which is similar to tomato paste 1:1-1.5:1 ratio of Gochujang and tomato paste was evaluated to be acceptable in the aspect of Gochujang's characteristics.
