  • The emission of noxious gases is a significant problem in pig production, as it can lead to poor production, welfare concerns, and environmental pollution. The noxious gases are the gasses emitted from the pig manure that contribute to air pollution. The increased concentration of various harmful gasses can pose health risks to both animals and humans. The major gases produced in the pig farm include methane, hydrogen sulfide, carbon dioxide, ammonia, sulfur dioxide and volatile fatty acids, which are mainly derived from the fermentation of undigested or poorly digested nutrients. Nowadays research has focused on more holistic approaches to obtain a healthy farm environment that helps animal production. The use of probiotics, prebiotics, dietary enzymes, and medicinal plants in animal diets has been explored as a means of reducing harmful gas emissions. This review paper focuses on the harmful gas emissions from pig farm, the mechanisms of gas production, and strategies for reducing these emissions. Additionally, various methods for reducing gas in pigs, including probiotic interventions; prebiotic interventions, dietary enzymes supplementation, and use of medicinal plants and organic acids are discussed. Overall, this paper provides a comprehensive review of the current state of knowledge on reducing noxious gas in pigs and offers valuable insights for pig producers, nutritionists, and researchers working in this area.

Micro-ethnographic case study with in-depth interviews, field observations, and paper reviews were used for this study. Experiences of doctors and nutritionists from Taiwanese hospitals where deliver vegetarian hospital diets were analyzed. This research found out Taiwanese life respect culture has influence on introducing vegetarian diets in hospital, besides most Participants agreed to use vegetarian diets for the medical purpose according to their clinic experiences and research results. Meanwhile there is no restriction to compel patients to keep vegetarian diets. All participants answered food has a large effect on the human body and further study on vegetarian diets' efficacy is required. The hospital chief's decision making is crucial to introduce vegetarian diets in hospitals. For the bigger picture, social supports, organizational supports and national policy supports are all important factors for it. The implications and recommendations for Korean hospitals were discussed. The public awareness for vegetarian diet for medical purpose along with research on its efficacy would be needed. In order to make good use of a vegetarian diet for medical purposes, we first need to build a vegetarian-friendly environment, go deep into the study of a diet's effects using diverse methodologies, and combine the diet with traditional medicine theory. Based on the results of this primary study, more related studies should be carried out in the future.

  • In this manuscript, several effective feeding and management systems to reduce environmental pollution in swine production have been briefly introduced. It is logical that reducing the excretion of nutrients in manure should be the first step to reduce the environmental impact of pig production. it is evident that the excretion of nitrogen and phosphorus can be reduced when more digestible or available feedstuffs are used. Also, it is well known that proper feed processing can reduce anti nutritional factors (ANF) and improve nutrient digestibilities. Supplementation of effective feed additives can reduce excretion of nitrogen and phosphorus due to efficient feed utilization. These include enzymes (e.g., phytase), antibiotics, probiotics, organic acids and growth hormones ($\beta$-agonists and porcine somatotropin). One of the most effective ways to reduce pollutants from swine manure is to use synthetic amino acids in feed manufacturing. Many studies showed that reduction of 2 to 4% unit (U) of dietary protein with supplemental amino acid (AA) could dramatically reduce (15 to 20%) nitrogen excretion. Regarding feeding strategies, it has been recognized that phase feeding regimen could be used to reduce nitrogen and phosphorous excretion by feeding pigs in better agreement with age and physiological state. Feeding barrows and gilts separately, known as split sex feeding, can also decrease excretion of nitrogen and phosphorus. With the increasing concerns on the negative impact of animal production systems on the environment, animal nutritionists and producers should be aware that sustainability of animal agriculture is as important as high production performance. Therefore, some feeding and management strategies described in this manuscript will help to reduce environmental pollution in swine production. Proper combination of feeding regimen and environment-friendly diet formulation through nutritional approach will be more effective to reduce nutrient excretion in swine production system compared to single approach to do so.

  • This study has been focused on understandings for the problems of dietitian who perform nutrition service in the field of industry foodservice and then focused on using of its findings as basic material for smooth nutrition service performance through analyzing job satisfaction, job characteristic and its importance of dietitians' task in industry foodservice. A questionnaire survey of 120 nutritionists who have engaged themselves in industry foodservice―60 are under direct management and 60, held in trust―has been performed, and 95 responses (79%) have been collected and categorized, except some unfinished responses. The examined data have been classified statistically by using of SPSS, and then analyzed into frequency, percentage, mean value, standard deviation, and correlation among factors, according to questionnaires. The findings of the research can be summarized as following: The details of the surveyed dietitians were: 20-25 years old on an average; working less than two years; college graduates; mere employees; receiving monthly pay of 70~100 won on an average; working more than 52 hours weekly; and providing with four meals a day in a single menu. For job satisfaction and job characteristic, the service itself and the understanding of the service appear as main features. For the relative importance of the service, the findings show that the menu making, sanitation and cost control occupy an important position, while nutrition counseling, nutrition education and dietary control by ailments make up very low portion. For the cause of not enacting the nutrition service, the lack of counseling ability and the overburden of food service are at the top. The findings of this research, therefore, present the needs of the service capacity education and the reduction of excessive foodservice hours of dietitians in order to secure the efficient nutrition service in industry foodservice. To achieve this goal, first of all, there should be an intensive education course in school by using of practice hours. for enhancing practical service adaptability, and then the computerization of foodservice should be executed perfectly to reduce the excessive foodservice hours.

  • The current socioeconomic climate has meant more children spend more time alone at home even for dining. This study was performed to characterize modem Korean childrens´food ecology based on mealtime atmosphere. A total of 705 elementary school students, 347 girls and 358 boys took part in the study. They were chosen evenly from the Seoul metropolitan areas, provincial cities, or rural areas, and were asked to fill out a questionnaire. The questionnaire was categorized to determine various factors related to food ecology, life styles, and health related symptoms. The average age of the study subjects was 11.5 years. The average height, weight, body mass index, and Rohrer index were 143.2cm, 37.6kg, 18.2 and 127.2 respectively. A significant number of children(39.2%) answered their bed time was between 11 and 12 pm. Only 28.3% answered that the whole family has breakfast together, and 47.7% have dinner together. A considerable number of children, 17.8% for breakfast and 6.9% for dinner, answered they eat alone. Most of the children answered they like to have dinner with the whole family. Half of the children answered they do not feel hungry before having breakfast. Proportions of children for their favorite meal time were 66.8%, and 25.4% and 7.8% for dinner, school lunch, and breakfast respectively. The largest proportions of children, 53.3% and 68.7%, have breakfast and dinner at home. Most of the children(75.2%) never purchase their dinner. Forty two% of the children answered they like school lunch, however, 60% of children answered they leave portions of lunch uneaten occasionally or always. Only 38.0% and 46.2% of the children have nutritionally adequate diet for breakfast and dinner. Children having more meals with the whole family possessed a more positive attitude towards breakfast compared to the children who eat with the whole family less frequently. In conclusion, Korea children are exposed to different health threatening food ecology problems related to changing environments, and consistent concern and support from community nutritionists are required.

  • Objectives: This study aimed to compare customers' perceptions of the need for a low-sodium diet and sodium-reduced operations in the industry foodservice by age. The relationships between health concerns and perceptions of the need for sodium-reduced operations and low-sodium diets in the industry foodservice were analyzed. Methods: A survey was conducted among 340 industry foodservice customers aged 20-50 years and residing in Seoul, Korea. This study investigated the respondents' health concerns, their perception of the need for sodium-reduced foodservice operations, their perception of a sodium-reduced diet, and the general details of the foodservices they used. A cross-tabulation analysis and ANOVA were performed to identify differences in measurement items by age, and a simple regression analysis was performed to examine relationships between measurement items. Results: For the customers' perception of the need for a sodium-reduced foodservice operation, the item "it is necessary to provide separate spices and sauces to reduce sodium intake" achieved the highest score (3.88 points out of a possible 5 points). For the perception of a sodium-reduced diet, the item "I think it is helpful for one's health" obtained the highest score (4.13 points). Respondents' health concerns had a positive effect on increasing the level of perception of the need for sodium-reduced foodservice operations and that of a sodium-reduced diet. Conclusions: Foodservice nutritionists could help enhance their customers' perceptions of the needs for sodium-reduced foodservice operations and sodium-reduced diets by frequently providing them with sodium-related health information.

  • The increasing demand of the crops (soybean and corn) for biofuel production has increased the focus of the animal nutritionists to look for alternative feeds, which are economic and environmental friendly. To identify microalgae as suitable candidate as an alternative feed, growth response of Chlorella vulgaris was studied under varying concentrations of carbon dioxide (0.07, 1.4, 3.0 and 5.0%) and photon densities (39.19, 72.97, 105.41, 116.22, 135.14, $175.68\;{\mu}mol/m^2/s$) by employing a photo-bioreactor. Swine wastewater was also investigated as nutritional source to economize the biomass production. Results showed that the higher biomass production was found to be at 3.0% $CO_2$ compared to other $CO_2$ concentrations. However, no difference in biomass production was found at $105.41\;{\mu}mol/m^2/s$ and above photon densities with 12 h of photoperiodicity. It was observed that C. vulgaris could easily grow in 200 times diluted swine wastewater and growth was found to be similar with that of artificial medium. Provided the conducive conditions for optimal growth, it has also the potentiality of depleting ammonia nitrogen ($NH_4$-N) and orthophosphate ($PO_4^{3-}$-P) completely from the wastewater after 3~4 days of cultivation. Thus, growing C. vulgaris would not only solve the problem of animal feed, but also help in biological $CO_2$ mitigation and wastewater treatment.

  • In order to investigate if nutrition-related TV programs give the public correct and useful imformation, 26 producers(PD) having worked for any one of the nutirtion-related TV programs were surveyed by using questionnaire on the attitudes toward seeking an expert's advice about the issues and the panelist's constitution of one typical nutrition-related TV show program broadcasted during the last 5 years was analyzed. The most important reason for selecting the nutrition-related issues was to satisfy the interests and demands of audiences. Both being motivated by food-related accidents and to educate people for the health promotion were the second ones. In the process of nutrition-related program production, 53.9% of PDs always requested expert's advice, while 46.1% occasionally did. Professors in food and nutrition were regarded as the most proper advisor. Dietitians, physicians and physicians of Chinese medicine wer the next in order. The similar pattern were shown in the rankd of specialists actually invited as panelists to the program. Both the speciality and being well-known were less positive and favorable for participating in the program compared to experts in other areas. The number of programs about food and nutrition broadcasted on the TV show during 1993-1997(July) was 361(about 30%). The total of 1,043 specialists appeared, 2.9 persons per program on the average. Of these, only 12.9% were professors in food and nutrition as well as dietitians. The largest(20.2%) was physicians or medical professors, and 13.6% cooks and 12.6% physicians of Chinese medicine. Of 361 programs 45 were thought to be undesirable on the panelist constitution. Particualrly in 19 programs, where nutritionists were not invited, physicians or physicians of Chinese medicine explained diet therapy, food, nutrient or dietary habit.

  • This study is an analysis on how current elementary teachers think about nutrition education, how they are teaching it, and problems that have occurred. The main purpose of this analysis was to deal with future problems in nutrition education by analyzing the present situation . The survey was done on 544 currently working elementary school teachers. from the 9 education departments within Seoul, 2 schools were chosen from each department by stratified random sampling. The survey used a questionnaire that was passed out personally to teachers from September 1, 1997 to the 19th. The 544 usable questionnaires were analyzed by using the teachers had nutrition education training and the average score of nutrition knowledge was 13.30 $\pm$2.73 out of 20. Nutrition education was being taught as apart of other subjects in 87.9% of the schools, and mainly by lecture. Audio visuals aids were used by 53.7% of the teachers and the most common was the VTR. Nutrition education was taught as a part of physical education and 41.5% were using teacher guides to help them. 91.9% of the teachers supported the idea of nutrition education in elementary schools. Nutrition education was supported by 80. 0% of teachers to begin when children are in kindergarten, proving that early nutrition education is supported. The analysis showed that nutrition education should be taught by parents(29.4%) , teachers(29.2%), and nutritionists(25.9%) relating that family , education, and school lunch programs should tie in with each other. 96.7% of the teachers responded that they would teach nutrition education. However, 41.0% disagreed with having a separate course for nutrition education . Proper eating habits, nutrition and its diseases, and growth with nutrition were the main categories within nutrition education and the most effect method was thought to have audio visuals, guides for teachers , and to link the subject matter with school lunch programs. The teachers main responses to problems with children were that they are too much instant food, did not eat in a variety , and had no manners in eating. Ironically, the believed that malnutrition, fainting and growth stunt were not important nutrition problems.
