  • The main purpose of this study was to present the basic materials that help the nursing of the infants and consultation of childcare by examinating the knowledge and practice of the mothers about the weaning diet. The data for this study was collected from 205 mothers with infants(6-36 months) who visited two hospitals or one university hospital in Seoul, who were living in one apartment Suwon area between July. 7. and September 10, 2000. The 57 questionnaires were used for collecting the data and SAS program was used to analyse the data. The results are as follows. 1. The items of low score in the result of the knowledge data were as follows. [Initial weaning time, the important nutritional problem in infant, considering factor during feeding, the relation of proper weaning food & age, the time of used by cup, to apply of proper spicies in weaning food, the time of completing weaning, the time of stopping weaning at abnormal sign, and the inappopriate reason of dry mixed powdered food (Sunsik) as a weaning food.] 2. Higher educated mothers presented more high score than lower educated mothers in the knowledge about the weaning. (p<0.05) 3. Before the weaning, more mothers were using the commercial milk (51.2%) than the breast milk (13.2%). 4. Mothers get the knowledge about the weaning from the infants care book of cook books(26.4%). 68% of mothers had not received any consulting service with regard to the weaning, 10.2% of them consulted Pediatrician about the weaning and 0.5% of them with nurse. 5. Most mothers began supplymentary food, from four to six months (65.4%). the ratio was about the same as the ratio of mothers who knEw the appropriate time for the introduction of supplymentary food(83.2%) 6. The main solid food was commercial food, not home-prepared food. 7. Higher educated mothers used home-prepared weaning food more often than lower educated mothers(P<0.05). 8. The used rate by spoon was 57.4%, but the rate of mother's knowledge data was 95.0%. 9. The time of completing the weaning was in 12-18 months(53.8%). It is similar to the mother's knowledge data(52.7%) Conclusion ; According to knowledge data, it turns out that most mothers know moderatly about the weaning (everage 60/100). However their knowledge and practice on the methods & procedures on the weaning were inadquate. Especially, most mothers did not consult with those qualification about the weaning. Therefore, the role of the nurse as a provider of information on the weaning should be emphasized with varied educational programs in many health care center.

  • The purpose of this study is to gather basic data on dietitian's general characteristics, working conditions, job achievement and job satisfaction. Thereby, a formulation can be worked out to improve dietitian's job achievement and satisfaction. The study was conducted during one week period, spanning July 23 to July 30, 1998. The method of the study was to distribute 560 questionnaires to the primary school dieticians working in the city of Tae Jun, located in Choong-Cheong Province. Out of 560 questionnaires that was distributed, 327 were returned. Moreover, 318 out of 327 questionnaires that was returned was valid enough to be processed by the SAS Program. About sixty percent of the respondents(61.1%) indicated that they were between 26 to 30 years old. Moreover, approximately half of the respondents(48.8%) were unmarried. In terms of the level of education, the bachelor's degree was reported as the most common education level(56.3%), while 3.8% of the participants reported achieving graduate degrees. The number of years in working in the profession ranged from 2 to 5 years. Furthermore, approximately 74% of the respondents indicated that, on average, they earned over ₩800,000 per month. In terms of the type of the school setting, 52.8% of the respondents worked in the urban setting, whereas, 60.0% worked in the rural school setting. Of these schools, about thirty eight percent(38.7%) of the schools were relatively small sized schools(400 students or less ). In terms of dietitian's sense of job satisfaction, the areas that showed relatively high level of satisfaction was in the menu control work(3.90) and purchase control work(3.90). However, appallingly low job satisfaction was indicated in the areas of personnel management (2.96%), and nutritional education and counsel(2.73%). Furthermore, job satisfaction varied greatly depending on age, wage, type of the food service, and type of school. The highest satisfaction was indicated in the areas of supervisory position(3.42), work itself(3.31%), co-workers(3.11). Other facets that led to job satisfaction were periodic wage increase(2.19%) and promotion opportunities(2.79%). In conclusion dietitian's job achievement showed significant correlation with job satisfaction. The study suggests that, in order to improve the overall job satisfaction of the dieticians, it is necessary to improve the working conditions of dieticians in primary schools. Secondly, there is a necessity for improving the status of the dieticians by raising the salary and treating the dieticians with the same level of respect in comparison with teachers or executive officials. Finally, another way of raising the job satisfaction of the dieticians is to provide opportunity for continuing education. So that, they can further their career in their chosen field.

  • The $\beta$3-adrenergic receptor ($\beta$3AR) plays a major role in thermogenesis and lipolysis in brown and visceral adipose tissue, and has been implicated in the pathogenesis of obesity and metabolic disorders. The purpose of this study was to estimate the effects of $\beta$3AR gene polymorphism on the risk of hyperglycemia in 980 Korean women who attended a weight loss program in a local clinic. Each subject s height, weight, BMI, WHR, obesity index and body composition were measured. The genotype of the $\beta$3AR gene in codon 64 was analyzed by the PCR RFLP method. Serum concentrations of fasting glucose, of total and HDL cholesterol, and of TG were determined. Genotype distributions were as follows : 67% WW type, 31% WR type, and 2% RR type. Among the many measured parameters, fasting glucose levels were significantly higher in the WR/RR type compared with the WW type (p=0.0ll). When the subjects were divided into two groups by a fasting blood glucose level higher or lower than 6.105mmol/L (110mg/dl), the frequency of hyperglycemia showed a significant difference in relation to $\beta$3AR genotype as measured by $\X^2$-analysis (p=0.014); the frequency of hyperglycemia was significantly higher (at 24.8%) in WR/RR type subjects, compared to 18.2% in WW type subjects. When all of the measured parameters were included in stepwise logistic regression analyses to find the risk factors for hyperglycemia, the odds ratios for hyperglycemia were 1.573 (p=0.0ll) for the WR/RR type of the $\beta$3AR gene, 1.053 (p=0.001) for TG, 1.044 (p=0.037) for BMI, and 1.026 for age (p=0.031). These data suggest that the WR/RR genotype of the $\beta$3AR has a very strong association with increased blood glucose level and might be a significant risk factor for hyperglycemia among Korean women.

  • This study was done to investigate the health-related habits, dietary intakes and serum lipid levels in overweight and obese women by body mass index(BMI). Subjects were 137 pre-menopausal women aged 19 to 49 years. They were divided by 3 groups, overweight($23{\leqq}BMI<25$), obese($25{\leqq}BMI<30$) and morbidly obese($BMI{\geq}30$) according to their BMI. Body composition was determined by bioelectrical impedance analysis(BIA) method. Dietary intakes were examined by 3-day record method and nutrient intakes were analyzed by the Computer Aided Nutritional analysis program for professionals(CAN-pro 3.1). Serum lipid levels were measured using automatic biochemical analyzer(Selectra E). The average age, height weight and BMI of subjects were 31.7 years old, 159.3cm, 69.4kg, and $27.4kg/m^2$, respectively. Their average consumption of energy were 1712kca1 and 86.4% of estimated energy requirement(EER). Their mom ratio of carbohydrate:protein:fat was 55.2:14.6:30.2. Particularly, the fat consumption of subjects tended to be elevated with increasing BMI. There was no significant difference in nutrient intakes among 3 groups. But the mom intakes of Ca, Fe, vitamin C and Na of all the subjects were 70.1%, 81.2%, 75.7% of recommended intake(RI) and 258.9% of adequate intake(AI), respectively, The intakes of vegetables and seaweeds were significantly higher in morbidly obese group while the intake of fruits was higher in overweight group compared to the other groups. Serum lipid analysis showed that there were no significant differences in the levels of total cholesterol, triglyceride and LDL-cholesterol among the groups. But the serum HDL-cholesterol level of the overweight group was significantly higher than that of the other groups. LDL-/HDL-cholesterol ratio and AI index were significantly higher in the morbidly obese group compared to the other groups. In addition, The systolic blood pressure of morbidly obese group was significantly higher compared to the other groups. Overall data suggest that morbidly obese women have to more concern about reducing systolic blood pressure and nm lipid levels by decreasing their fat consumption and salt intakes as well as loosing body fat. In addition, all the subjects participated in this study have to be careful about their meals and health-related behaviors in order to prevent obesity-related chronic diseases.

  • This study was conducted to investigate the differences in daily nutrient intakes, dietary habits and nutrition knowledge between male and female college students. Male undergraduate students 004 subjects) and female undergraduate students (229 subjects) , enrolled at H University in Daejeon, were recruited for this study. The mean age of the subjects was 22.9 year in male and 20.4 year in female students. Daily intakes of energy and nutrients were calculated from the records of one day of dietary food intakes by 24-hour recall method, and general information, dietary habits and attitudes, food intake frequency and food preferences and knowledge for food and nutrition were surveyed through a questionnaire. About $70.1\%$ of male and $66.1\%$ of female students were in the normal range of BMI (18.5 - 23), and $25.2\%$ of male students were over-weighted in contrast to $27.7\%$ of female students were underweight. Males and females were taking $77.2\%$ and $77.9\%$ of RDA for energy, respectively, and $54.8\%$ of male and $48.0\%$ of female students were taking energy under $75\%$ of RDA. Many of them showed deficient intakes of calcium, iron, vitamin A and riboflavin. Average of MAR was 0.75 in male and 0.72 in female students. NAR for calcium, iron, vitamin A and riboflavin in male students were 0.55, 0.69,0.75 and 0.61, respectively, compared to 0.53, 0.51, 0.70 and 0.67 in female students. The nutrients, which have INQ less than 1, were calcium and riboflavin in male, compared to calcium, iron, and riboflavin in female students. There were no gender differences in meal regularity and meal skipping rates, but female students showed higher rates of skipping dinner than males (p < 0.001) About $50.8\%$ of female students were ingesting snacks 1 - 2 time/day, compared to $27.1\%$ of male students. For the food intake frequency, fruit group was significantly eating more for female than male students (p< 0.001) Though female students got higher scores for nutritional knowledge test (p < 0.001) than male students, they did not show better dietary habits or dietary attitudes than male students actually. Therefore, a more active and actual education program accustomed to the different genders and ages with focus on real changing of dietary behaviors needs to be developed and run in schools and local departments.

  • This study was conducted to investigate employee food-hygiene and nutrition awareness and performance and to study the current education programs for children at child care centers and kindergartens located in Seoul, Republic of Korea. A self-evaluated type of questionnaire was developed for foodservice employees and teachers using a five-point Likert scale. Employees with an employment history of <1 year and who were <30 years old had the lowest scores for food-hygiene and nutrition awareness and performance. Employees with a cooking license had a higher awareness score regarding cross-contamination than those without a license. Higher nutritional awareness and performance scores were also observed for employees who had more experience as cooks and who had received a nutrition education than those who did not. Approximately 94% and 76.4% of the employees had experience in sanitation and nutrition education, respectively. Most teachers responded that food sanitation-nutrition education for children seemed necessary in a child-care center; however, only 63.9% of the teachers actually taught sanitation-nutrition education to children. The biggest limitation to conduct food sanitation-nutrition education was the "lack of professionalism" of teachers, because only 48.1% of teachers had received a sanitation- utrition education. Thus, a food sanitation-nutrition education program for foodservice employees and teachers must be developed and implemented actively to improve the quality of food service and nutrition education in child care centers and kindergartens.

  • This research was conduced to 1) examine the influence of milk group intake on the dietary, considering dietary diversity and nutrient adequacy, 2) identify which foods truly contribute to the intake of specific nutrients 3) point out the dietary problems of this age group. The subjects were 664(male 357, female 307) healthy toddlers of the ages of 12-36 months, who had neither been taking any medicine-type supplements nor had any diseases that affect the dietary intakes, chosen among the outpatients of university and private hospitals in Seoul and Kyonggi province during Mach-August, 1999. The 24 hour recall method and CAN Pro(food analysis program) were used to analyze the amount of nutrient intake. The grouping of the subjects for the analysis by monthly age was based on the 98 Korean Child growth standard. The results that the milk group intake showed significant negative correlations with the grain group(r=-0.194, p<0.01), the vegetable group(r=-0.115, p<0.01) and the fruit group(r=-0.125, p<0.01). It also showed that the more the milk group intake, the lower the Dietary Diversity Score(r=-0.131, p<0.01), and the more the intake of raw milk, the more dificient the intake of iron(r=-0.211, p<0.01), vitamin A(r=-0.169,p<0.01), vitamin B$_1$(r=-0.078, p<0.05) and vitamin C(r=-0.187, p<0.01). Foods contributory to nutrient intake for of 12-14 months of were mostly infant formula, and the contribution ratio was high. In the age of 15-17 months, the subjects obtained most of the nutrients from raw milk., liquid-type yoghurt, soybean milk, cooked rice, etc. As for iron intake, the age of 21-23 month obtained the most from ionic drinks, and 24-29 months from raw milk, chocolate cakes, ionic drinks, etc. Though the NAR(Nutrient Adequacy Ratio) and MAR(Mean Adequacy Ratio) generally tended to increase accordingly with the DDs, as for nutrients Ca, vitamin A, vitamin B$_1$, and vitamin C the NAR marked the highest when the DDS marked the lowest(due to infant formula). And for iron, even when the DDS was 5 the NAR value was low. Im conclusion, the more the milk group intake, the lower was the dietary diversity. High dependency on infant formula and others from milk group over the age of 12 months proved to result in a decrease of nutritious solid food intake, iron deficiency and a low dietary diversity score, which can lead to an unbalanced diet. Therefore, nutrition education towards mothers/caretakers of toddler is of urgent need, in order to reduce the fluid milk group intake of low nutritional density and to provide various solid foods the children. • The purpose of this study was no investigate serum lipid levels of primary school children and to estimate their intakes of total fat and fatty acids. Subjects fasting blood samples were obtained and analyzed for serum triglycerides(TG), total cholesterol(Chol) and high density lipoprotein-cholesterol (HDL-Chol). Low density lipoprotein cholesterol (LDL-Chol), LDL-Chol/HDL-Chol ratio(LPH), and atherogenic index(AI) were calculated,. Dietary intake of nutrients was assessed by means of a 24-hour recall method using food models and other measuring tools . The serum levels of TG, Chol and LDL-Chol in girls were higher than those in boys, but the serum HDL-Chol level of girls was lower than that of boys. As the degree of obesity increased, the serum TG level of girls was lower than that of boys. As the degree of oesity increased , the serum TG level of girls increased. The serum LDL-Chol level was higher in obese boys than in normal ones. Percentage s of subjects at risk of cardiovascular disease based on corresponding criteria of TG, Chol,HDL-CHol and LDL-Chol were 25.9%, 7.6%, 20.7% and 10.1%, respectively. The serum TG level of children provided with the national school lunch program(NSLP) was lower than that of children without NLSP. The total fat intake of boys was higher than that of girls, but calorie-adjusted fat intake became similar between the two groups. Intakes of polyunsaturated fatty acids(PUFA), monounsaturated fatty acids(MUFA) and saturated fatty acids(SFA) were 13.3$\pm$9.5g, 16.1$\pm$9.3g and 21.4$\pm$14.2g in boys, respecitively , and 12.6$\pm$11.3g, 15.3$\pm$9.7g and 19.9$\pm$13.1g in girls, respectively . The ratios of polyunsaturated /monoun-saturated /saturated /saturated fatty acids(P/M/S) in boys and girls were 0.7/0.8/1.0 and 0.8/0.8/1.0 respectively. The ratios of $\omega$6/$\omega$3 fatty acids in boys and girls were found to be 12.1 /1.0 and 8.6/1.0 , respectively. These results indicated the urgent need of nutritional education in primary schools to prevent further increase in childhood obesity and hyperlipidemia . Therefore, this study will contribute to the establishment of dietary guidelines and health recommendation for school children.

  • This study was conducted to compare the rates of hyperlipidemia, hypertension, high blood glucose, and liver dysfunction, between 64 obese children (24 boys and 11 girls who were moderately obese, and 21 boys and 8 girls who were severely obese) and 45 normal weight children (31 boys and 14 girls) from 13 elementary schools in Kangnung city. Among the boys with severe obesity, the levels of serum triglycerides and LDL-cholesterol (133.60 $\pm$ 49.99 mg/dl and 105.00 $\pm$ 41.12 mg/dl( respectively) were significantly higher compared to the normal Weight group (81.16 $\pm$ 23.59 mg/dl and 87.74 $\pm$ 32.095 mg/dl, respectively) of moderately obese group (102.30 $\pm$ 36.03 mg/dl, 89.99 $\pm$ 32.10 mg/이, respectively). In girls, only serum triglycerides were significantly higher in the severely obese group (154.30 $\pm$ 46.84 mg/dl), compared with the normal weight group (80.00 $\pm$ 25.31 mg/dl) or moderately obese group (106.40 $\pm$ 41.73 mg/dl). In boys, blood pressure in the severely obese group (systolic: 120.5 $\pm$ 9.74 mmHg; diastolic: 80.95 $\pm$ 10.44 mmHg) was significantly higher compared with the groups of normal weight or moderately obese children. The rate of hypertriglyceridemia was significantly different among normal weight, moderately obese, and severely obese boys (9.7%, 41.7%, and 76.2%, respectively). The proportion of boys who had an Atherogenic Index(AI) higher than 3 was found to be significantly higher in the severely obese group (28.6%), compared to 6.5% in the normal weight group and 4.1% in the moderately obese group. Among boys, a significantly higher rate of hypertension was found in the severely obese group, which showed high systolic blood pressure and high diastolic pressure (81.0% and 81.0%), compared with the normal weight group (16.1% and 22.6%) and moderately obese group (33.3% and 33.3%). In conclusion, the diagnosis and management of obese children needs to be tailored to gender and the degree of obesity. Furthermore, a systematic management program needs to be developed for early screening and detection of obesity in order to minimize the risk of hyperlipidemia and hypertension, especially in severely obese children.
