BACKGROUND/OBJECTIVES: The intake of sugar has increased worldwide, and it is well established that childhood experiences and food preferences affect lifelong eating habits. To discourage sugar intake, nutrition education was imparted, and the effectiveness of the nutrition education program was investigated by considering the nutrient density and major dietary sources of sugar intake. SUBJECTS/METHODS: Twenty four-hour dietary recall and sugar intake frequency of 96 pre-school children (educated n = 47; non-educated n = 49) were collected on 3 consecutive days (1 weekend day, 2 weekdays) after 11 weeks of imparting nutrition education. Dietary intake of nutrients and total sugar were analyzed, and the intake frequency of sugar source foods were identified. All nutrition education programs were focused on a hands-on education program, and consisted of cooking lab, play, activity, animation, and visual materials. The difference between the two groups was verified by the Chi-square test or t-test. All statistical analysis was performed with significance level at P < 0.05. RESULTS: Compared to the non-educated group, the intakes of protein (P < 0.001), fiber (P < 0.01), potassium (P < 0.05), iron (P < 0.05), zinc (P < 0.05), and iodine (P < 0.001) were significantly higher, and the intakes of carbohydrate (P < 0.01) and total sugar (P < 0.05) were significantly lower in the educated group. The cumulative percent of sugar intake of top 20 sugar source foods in the educated group (82.80%) was lower than that of the non-educated group (85.75%). The contribution of beverages on total sugar intake was lower in the educated group. The average frequency of consuming sugary foods was significantly lower in the educated group (P < 0.05). CONCLUSIONS: Our results indicate that nutrition education on discouraging sugar intake is effective in reducing the amount of total sugar consumed, resulting higher nutrient density in the diets of pre-school children.
We attempted to define the sources of sodium intake for the Korean population at prepared dish level to provide a basis for developing sustainable nutrition policies and feasible programs for sodium intake reduction. Dietary intake data from 2008 and 2009 Korea National Health and Nutrition Examination Survey was used in the analysis for sodium intake sources. Sodium intake from individual dish consumed by each subject was calculated and used in delineating major sodium sources at dish and dish group level for sub-populations of different sex and age. Also, sodium intake was compared between eaters and non-eaters of some specific dish groups with considerable contribution to total sodium intake. The number of subjects included in the analysis was 18,022 and mean sodium intake was 4,600 mg/capita/day. Major sources of sodium intake at dish group level were in the following order: kimchi (1125 mg, 24.5%), noodles (572 mg, 12.4%), soups (488 mg, 10.6%), stews (399 mg, 8.7%), and cooked rice (284 mg, 6.2%). The magnitude of contribution to total sodium intake by soups and stews was different by age group. Sodium intake difference between eaters and non-eaters was much larger for kimchi group (2,343 mg for male, 1,452 mg for female) than for soups or stews. Interaction between consumption of aforementioned specific dish groups and age was highly significant (p < 0.0005) for both sexes. This study revealed an importance of having not only the control over sodium content of foods/dishes, but also the customized approach for different groups of population to accomplish an appreciable reduction in sodium intake.
Purpose: For college students, poor eating habits can cause problems with adult health. This study investigated the status of sweet food intake and the degree of stress in college students in the Seoul and Gyeonggi areas to provide a basis for nutrition education by analyzing the relationship between stress and sugar intake. Methods: The subjects were 760 college students, and the survey was conducted using a questionnaire. Statistical analysis for collected data was performed using SPSS (version 21.0). Results: The stress score showed higher stress in female students. Females had more stress in their employment and study-related problems than males. For changes in food intake under stress, the intake was increased greatly in females than in males. For food preference changes before and after stress, males preferred more spicy foods and less salty foods after stress. After stress, females significantly preferred sweeter and spicier foods and less salty, sour, and bitter foods. The intake of sweet foods by stress factors showed that the intake of snacks was higher under the condition of 'worry, fatigue, and tension', and the intake of beverages was increased significantly under the condition of 'anger and aggression'. Conclusion: Sweet foods were preferred under stress, and the amount of intake was increased. Education on food selection and nutrition information should be provided to prevent health problems that can be developed by the reckless intake of sweet foods. Active guidance is needed for college students to select the proper snacks instead of nutritionally insufficient foods to relieve stress.
This study was conducted to investigate the effect of the nutrition education on the nutrition knowledge, eating behaviour and nutrient intake of the children. Questionnaire and dietary record were executed to 105 children in the 4th and 5th grade in elementary school with nutrition education and 107 in the same grade without nutrition education. The results were as follows; In nutrition aspect, higher acknowledgement and precision level was observed(p<0.001) in the educated group. Higher practice will of nutrition knowledge, lower rate of skipping meal, better appetite were also observed in the educated group. In the aspect of food group intake, meatㆍfishㆍegg, tofu and bean, fruits, milk and milk products intake frequency were higher in the educated group. Most nutrient intake except fat and vitamin B₂ were observed to be higher in the educated group. Therefore, it was concluded that continuous nutrition education was recommended in order to put positive effect on the eating behaviour and nutrient intake of the children.
The purpose of this study was to investigate differences in the diet with the amount and the qualitative assessment of nutrient intakes by the economic level. Data from the 1998 Korean Health and Nutrition Survey were used. Using the poverty line based on the 1998 Korean minimum cost of living, Subjects (n = 10400) were classified into high class (36.1%), middle class (40.7%) and low class (23.1%). Chi-square-test and Analysis of Variance following Duncan's multiple range test were used to test the difference in nutrient intake pattern among three groups ($\alpha$ = 0.05). The amount of nutrient intake and nutrient intake adequacy were statistically different by the economic level (p<0.01). The ratio of energy intake from carbohydrate is higher than the criteria of WHO recommendation in all economic levels. Especially people in the low class depended much on the carbohydrate for the energy intake. The ratio of energy from the protein and fat are lower in the middle and low class than that of the high class. The Intake level of calcium and vitamin B$_2$ were lower than those of the Recommended Dietary intake level, regardless of economic status. It also showed differences in major food sources of nutrients by the economic level Consequently, it seems that the nutrition policy and program should be prepared according to their economic status. Also, there should more detailed studies to find out the nutrient intake pattern, their determinant, and health consequences.
A survey was performed to 238 male young men who were living alone (104 persons) or living with roommates (134 persons). Their average age was 22.6 years old, height 171.8cm, and weight 65.6kg. Their daily calcium intake level was averaged 271.9 $\pm$ 169.1mg, which was 38.8% of Korean Recommended Dietary Allowances(RDA). Comparing calcium intake of each mealtime, breakfast, lunch, dinner, and snacks were composed of 18.6%, 30.0%, 34.0% and 17.4%, respectively. Their daily iron intake level was averaged 8.9 $\pm$ 10.8mg, which was 74.3% of Korean RDA. Comparing iron intake of each mealtime, breakfast, lunch, dinner, and snacks were composed of 15.4%, 33.6%, 36.3% and 14.7%, respectively. Deficiency of these minerals in young male adults were severe and the nutrient qualities were also poor and the deficiency was more profound in calcium than in iron. And we observed iron nutrition differed significantly according to their living status, such as iron intake and its %RDA were significantly worse in single living subjects than the other. However calcium did not show significant difference. It was found mineral intake, especially iron, could be improved in young men living with roommates than living alone and regular breakfast could improve calcium and iron intakes. Purpose: The purpose of this study was to describe the differences between early and delayed enteral nutrition on nutritional intake. Methods: A pilot cohort study was conducted with 45 critically ill adult patients who had a primary medical diagnosis. Energy prescribed and received were collected during the four days after initiation of enteral nutrition. Adequate feeding was defined as the energy intake more than 90% of required energy. Results: A total of 23 patients (52%) were received early enteral nutrition (within 48 hours of admission). Energy intake of early enteral nutrition was less than intake of delayed enteral nutrition during the four days of the study. Although the difference on day one was significantly greater than the differences on day two, the differences on day two were not different from days three or four. No statistical differences in the adequacy of nutritional intake were found between patients in the early and the delayed group. Conclusion: In critically ill patients receiving early enteral nutrition, more aggressive administration from the beginning will improve the nutritional intake. Additional studies including a large multi-centre, randomized clinical trial are recommended.
This study was conducted to investigate the intake status of beverages and water in Korean adults using data from the 8th National Health and Nutrition Examination Survey. The 'total water' intake was 2,250.6 g for men and 1,871.2 g for women. Men and women consumed an average of 314.9 g of 'total beverages', of which 'coffee' was the largest at 107.5 g, followed by 'others'(65.4 g), 'milk' (44.8 g), 'soda' (44.1 g), 'teas' (20.9 g), and 'fruits and vegetables' (18.5 g). The intake of 'plain water' was 1,059.9 g, and the intake of 'water from food' consumed was 547.3 g. The 'total water' intake decreased with increasing age in males and females (p<0.001). Both men and women showed a tendency toward increased 'total water' intake as income levels increased. 'Plain water' intake accounted for 51.4% of the 'total water' intake in males and females. The intake of all nutrients significantly increased from the Q1 group to the Q4 group by quartile ranges of total water intake. The results of this study showed that the intake of healthy water should be considered, and care and educational programs are needed, especially for older people, to ensure adequate water intake.
This study investigated the correlation between consumption of sugar intake by fifth grade students in primary schools and development of Attention Deficit Hyperactivity Disorder (ADHD). A total of 107 students participated, and eight boys and one girl (8.4% of the total) categorized as high risk for ADHD according to diagnostic criteria. There were significant differences in the occupations and drinking habits of the respondents' fathers between the normal group and risk group. In a comparison of students' nutrition intake status with daily nutrition intake standards for Koreans, students consumed twice as much protein as the recommended level, whereas their calcium intake was only 60% of the recommended DRI (dietary reference intake). Regarding intake volume of vitamin C, the normal group posted 143.9% of the recommended DRI, whereas the risk group showed only 65.5% of the recommended DRI. In terms of simple sugar intake from snacks, students in the normal group consumed 58.4 g while the risk group consumed 50.2 g. These levels constituted 12.5% of their total daily volume of sugar intake from snacks, which is higher than the 10% standard recommended by the WHO. In conclusion, children who consumed less sugar from fruit snacks or whose vitamin C intake was less than RI was at increased risks for ADHD (P < 0.05). However, no significant association was observed between total volume of simple sugar intake from snacks and ADHD development.
The purpose of this study was to investigate the differences in food and nutrient intake by smoking status among Korean. Food and nutrient intake in relation to smoking status was studied in 7,370 adults, aged 20 years and older in 1998 Korean National Health and Nutrition Survey, in which 24 hour recall method was used for dietary survey. Information of subject's smoking status was collected by interview as a part of health behavior survey. Analysis of variance was used to test the differences in food and nutrition intake among subjects following after Duncan's multiple range test among four different smoking exposure categories. Food intake of male ex-smoker was the highest in most of the food groups among the four groups of daily current smoker, occasional current smoker, ex-smoker and never smoker. There was significant differences observed in food intake of sugar, fruits, beverage, seasoning by the smoking status. It had been also observed that significantly high intake of energy from carbohydrate in non smoker compare to current smoker especially in male subjects. Fiber and vitamin C intake was also higher among non-smoker (never smoker and ex-smoker) than current smoker. In general, food and nutrient intake pattern of ex-smoker resembled those of never smoker than those of current smoker. Not likely the observation from European and American studies, fat intake was not statistically different between smoker (current) and non-smoker (ex-smoker and never smoker) among Korean.
