  • In this study, we investigated protection motivation and behavioral intention to prevent serious illnesses related to excessive sodium intake among the university students in Gyeongnam and Busan. Within the protection motivation theory (PMT) framework, a survey questionnaire was developed to measure participants' perceptions on the severity of and the vulnerability to the threat of serious diseases due to the high sodium intake as well as the effectiveness of preventive measures (response efficacy), and the ability to perform them (self-efficacy) along with their willingness to follow recommendations (behavioral intention). Data was collected in June 2015. Study participants were divided into either low (n=117) or high (n=177) sodium intake behavior groups based on their current behaviors. Exploratory factor analysis was performed to measure construct validity and Cronbach's alpha was calculated to check reliability of measurement items. The high sodium intake behavior group perceived higher vulnerability than the low sodium intake behavior group among four PMT factors. Differences of the other three factors were not significant between the two groups. The results of hierarchical regression analysis indicated that self-efficacy and response efficacy affected behavioral intention of high sodium intake behavior among students. Hence, development of strategies to increase self-efficacy and response efficacy are strongly recommended.

  • In order to develop an obesity management program for teenagers, we compared obese and non-obese girls attending high schools in terms of their dietary practices related to snack consumption. Dietary records were collected for 7 days. No significant differences were found for the average daily energy intake between obese and non-obese girls. However, the highest energy intake was greater for obese girls while not much difference was found for the lowest amount of energy intake. Obese girls had significantly lower intakes in calcium (P < 0.01), vitamin A (P < 0.001) and folate (P < 0.01). Mean energy intake from snack ($594.1{\pm}312.1kcal$) was significantly higher for obese girls than for non-obese girls ($360.1{\pm}173.1kcal$) (P < 0.001). A significant, positive correlation was observed between energy intake from snack and total daily energy intake (r = 0.34 P < 0.01) only for obese girls. In case of dietary behaviors, obese adolescent girls consumed significantly greater number of items for snacks and fewer foods for regular meals compared to non-obese girls (P < 0.05). This study suggested that obesity management programs for adolescents should focus on providing strategies to reduce snack through enhancing balanced regular meals.

  • This study was carried out with 200 students of Chungbuk National University to investigate their dietary behavior and calcium intake and to find out variables among general characteristics of subjects which influence dietary behavior and calcium intake. Questionaires and interviews were used for data collection. The results obtained were as follows: 1) Dietary behavior of college students were not desirable as a whole. The percentages of skipping breakfast and irregular meal among students were over one third, respectively. Especially students living alone skipped breakfast more frequently, took their meals more irregularly, and their eating frequencies of 6 food groups were lower compared to students eating at home. 2) Calcium intake was significantly different according to gender. Mean calcium intake of male students was 744.0 mg/day and that of female students was 480.8 mg/day. Average %RDA of calcium intake of female students was 68.5%. Resource food contributing to calcium intake in the first order was milk, next was yogurt, Small anchovies, kimchi made with Chinese cabbage, ice cream and soybean curd in that order. From the results of this study, we found that the students living alone and female students are exposed to high risk of poor dietary behavior and undernutrition of calcium. In conclusion, nutrition education programs for them are required as soon as possible.

  • The aim of this study was to investigate the relationship between intake experience of mother's milk intake/baby food intake, present eating habits, and atopy symptoms in elementary school students in Chungnam province. More frequent intake of mother's milk was associated with less atopy symptoms. Subjects who had good attitudes for baby food in the past had less unfavorite foods. In addition, subjects that ate fruits and vegetable-baby food had better eating attitudes for a balanced diet. Unbalanced diet was associated with worse behavior characteristics. Frequency of eating breakfast affected behavioral characteristics. As this study had regional and size limitations, it is necessary to further investigate the relationship between past intake experience of mother's milk/attitude towards baby foods and present eating habits/physical growth. Based on these results, past intake experience of mother's milk/attitude towards baby foods might affect present physical growth/development and eating habits of subjects.

  • This study was conducted to provide desirable way on the eating of sugar foods, specifically the differences between dietary attitude, dietary behaviors and intake frequency. Data was collected from 279 middle students in the Incheon region through a self-administered questionnaire. According to the results of the reliability and factor analysis, the dietary attitude, dietary behaviors and intake frequency was 3.52, 2.89 and 2.51, with a Cronbach alpha coefficient of 0.867, 0.789, 0.940 and KMO of 0.899. Factor analysis extracted three components of the sugar preference, which we named dietary attitude (factor 1), dietary behaviors (factor 2), and intake frequency (factor 3). The dietary attitude and dietary behaviors showed a significant difference between sugar preference and non-preference (p < 0.05). Also, intake frequency of sugar food showed a significant differences in chocolate, chocolate products, and ice cream between sugar preference and non-preference (p < 0.05), whereas no significant differences were found in cake, bread kinds, juice, sweetness milk, yogurt between sugar preference and non-preference (p > 0.05). A significant positive result of intake frequency of sugar food (p < 0.05) was shown for the dietary attitude, BMI, weight, and monthly pocket money. Based on this study, the reduction of sugar intake is needed especially for middle students.

  • BACKGROUND/OBJECTIVES: The prevalence of obesity, a worldwide pandemic, has been increasing steadily in Korea. Reports have shown that increased intermuscular adipose tissue (IMAT) is associated with an increased risk of cardiovascular disease, independent of body mass index. However, the relationship between dietary intake and IMAT accumulation in the Korean population remains undetermined. The objective of this study was to evaluate regional fat compartments using advanced magnetic resonance imaging (MRI) techniques. We also aimed to investigate the association between IMAT amounts and dietary intake, including carbohydrate intake, among Korean individuals with obesity. SUBJECTS/METHODS: This cross-sectional study, performed at a medical center in South Korea, recruited 35 individuals with obesity (15 men and 20 women) and classified them into 2 groups according to sex. Anthropometry was performed, and body fat distribution was measured using MRI. Blood parameters, including glucose and lipid profiles, were analyzed using commercial kits. Linear regression analysis was used to test whether the IMAT was associated with daily carbohydrate intake. RESULTS: Carbohydrate intake was positively associated with IMAT in all individuals, with adjustments for age, sex, height, and weight. No significant differences in blood indicators were found between the sexes. CONCLUSIONS: Regardless of sex and age, higher carbohydrate intake was strongly correlated with greater IMAT accumulation. This suggests the need to better understand sex differences and high carbohydrate diet patterns in relation to the association between obesity and metabolic risk, which may help reduce obesity prevalence.

  • Objectives: The purpose of the study was to compare intake of energy nutrients, physical characteristics, and the prevalence of metabolic syndrome according to protein intake group. Methods: Subjects were 827 men aged 40-65 years. The results presented were based on data from the 2012-2013 National Health and Nutrition Examination Survey and analyzed using SPSS. The odds ratio (OR) of metabolic syndrome was assessed according to the protein intake group and intake pattern of protein-rich foods. Results: The mean of protein intake was $73.96{\pm}0.71g$. According to level of protein intake, four groups (deficient, normal, excess 1, excess 2) were created and their percentages were 8.3%, 39.6%, 37.1%, and 15.0% respectively. The mean of daily energy intake was $2,312.33{\pm}24.08kcal$. It was higher in excess group 2 than in the deficiency group (p < 0.001). Moreover, the intake of all energy nutrients increased significantly with protein intake group (p < 0.001). The main contribution to daily protein included mixed grains ($10.96{\pm}0.32g$), milled rice ($7.14{\pm}0.30g$), chicken ($3.50{\pm}0.21g$), and grilled pork belly ($3.04{\pm}0.16g$). With regard to physical characteristics, and blood pressure and blood test results, only body mass index increased significantly according to protein intake groups (p < 0.05). The prevalence of metabolic syndrome in subjects was 38.5%, and there was no significant correlation with protein intake group. The OR of metabolic syndrome increased with protein intake, and was higher 4.452 times in excess group 2 than in the normal group (p < 0.05). Conversely, the OR of metabolic syndrome according to the frequency of protein-rich food intake did not show a significant correlation. Conclusions: The results of this study can be used as significant supporting data to establish guidelines for protein intake in middle-aged men.

  • The article demonstrates a method of studying human health and nutrition by applying a multi-disciplinary approach and examines how humans developed and survived by adjusting to their environment. This process involves physiological, cultural and genetic adaptation both independently and interactively. This study postulates that a sound human health may be the result of balance between nutrition and environmental conditions. It is noted that there is a positive correlation between malaria and fava bean intake, and sickle cell anemia and cassava intake. It is also suggested that the difference in disease structure in soybean and non-soybean consumption cultures can be explained by an ecological approach to studying nutrition. This study further suggest that the relationship between nutrition and socio-cultural system. epidmiological study of nutrition and cultural environment nutrition and conceptual characteristics, nutrition and food intake pattern, nutrition and health sociological functions and the physioloical, cultural and genetic adaptation can all be stimulating research subjects to be studied form and ecological point of view. This article also includes the results from a series of ecological studies conducted by the author investigating the relationship between nutritional status of Korean breast-feeding mothers and the composition of the human milk and also the Vitamin D status of Korean and their lifestyle. • Objectives: This study aims to evaluate the association between intake of energy, calcium and protein and permanent teeth caries in Korean children. Methods: Research data were obtained from the Fifth Korean National Health and Nutrition Examination Survey (KNHANES) and 1,274 Korean children within 9 to 12 years were selected as subjects for the study. The DMFT index, nutrition factors including total energy and protein intake, and degree of calcium intake were identified Chi-square test was performed to assess the difference of distribution in socioeconomic status, oral health behavior and nutrition factors according to sex. Multilevel linear regression analysis was performed to identify the relationship between DMFT index and the related variables. Results: Significant differences in energy, protein and Ca intake were confirmed according to the sex. Among 10 year-old children who intake total energy less than the recommended had few dental caries (p=0.058, ${\beta}=-0.411$). In addition, 11-year-old children having protein intake more than the recommended experienced dental caries (p=0.02, ${\beta}=0.588$). Conclusions: These results suggest that, there is significant differences between intake of energy and protein and dental caries among Korean children. However, further researches is needed to confirm between intake of energy and protein as a related factor.
