Distribution of Hemolytic Vibrio sp. in Sea Water of the Beaches of Busan During Mid-summer (여름철 부산시 소재 해수욕장 해수의 용혈성 비브리오균 분포)

  • The distribution of hemolytic Vibrio sp. from sea water of three main beaches located in Busan (Gwangan(G), Haeundae(H) and Songjeong(S) beaches) was investigated from June to September 2006 ; this is mid-summer and the main season for bathing. The monthly detection ratio from each beach was 29.2% (7 of 24 samples, G), 33.3% (8 of 24 samples, H), and 16.7% (4 of 24 samples, S). The most probable number(MPN) of strains detected ranged from 1.8-36(G), 1.8-180(H) and 1.8-18(S) MPN/100mL. Of the isolated strains, 24 strains showed definite hemolytic activity. These 24 strains were identified as Vibrio fluvialis, Vibrio vulnificus, Aeromonas hydrophila, Actinobacillus ureae and Eikenella corrodens. Vibrio fluvialis was detected from all three beaches investigated. Vibrio vulnificus was detected from Haeundae and Gwangan beaches. Gwangan beach had a higher detection ratio of Vibrio sp. than Haeundae and Songjeong beaches. These results suggest that seafood harvested from the vicinity of theses beaches may cause food poisoning and risk management to prevent Vibrio septicemia is required, especially for Haeundae and Gwangan beaches.

Caloric Restriction vs Testosterone Treatment ; The Effect on Body Fat Distribution and Serum Lipid Levels in Overweight Male Patients with Coronary Artery Disease (관상동맥경화증인 과체중 남성에서 열량제한과 Testosterone 투여가 체지방 분포 및 혈청 지질 농도에 미치는 영향)

  • In middle-aged men, abdominal obesity has been an important risk factor of coronary artery disease (CAD) as well as a predictor of hypertension, dyslipidemia, insulin resistance and glucose intolerance. Particularly, risks from abdominal obesity increase when adipose tissue accumulates in visceral compartment. Many studies showed that weight reduction by caloric restriction improves abdominal obesity and reduces lots of cardiovascular risk factors. Testosterone treatment also results in a significant decrease in visceral fat area and normalizes endocrine metabolism. However there is no study that compare the effect of caloric restriction with that of testosterone treatment. The purpose of this study is to investigate the effect of caloric restriction and that of testosterone treatment on body fat distribution, serum lipids and glucose metabolism in male patients with CAD. Forty five middle-aged overweight-obese men with CAD participated in 12 weeks' program. They were matched with age, body weight, body mass index (BMI) and divided into three groups : control group (n = 15) , caloric restriction group (-300 kcal/day, n = 15) and testosterone treatment group (testosterone undecanoate tablets, n = 15) . After 12 weeks, control group did not have any changes in anthropometries, lipid profile, body fat distribution, glucose metabolism and hormonal status. Expectedly, caloric restriction group showed decreases in body weight, BMI, waist to hip ratio, % body fat. Ten percentage of total cholesterol and 23% of triglyceride in serum were also decreased. In body fat distribution, total fat areas at both L1 and L4 levels were significantly reduced in this group without reduction in muscle of thigh and calf. However, testosterone treatment group did not have any significant changes in body weight, % body fat, serum lipid profile and abdominal fat distribution. In conclusion, weight reduction by caloric restriction is more beneficial in body fat distribution and serum lipid level than testosterone treatment in overweight male patients with CAD. This result suggests that modest weight reduction is possible to help decrease risk factors of CAD.

Relationship between intra-household food distribution and coexistence of dual forms of malnutrition

  • BACKGROUND/OBJECTIVES: The relationship between food intake and nutritional status has been clearly established. Yet, there are only limited studies on food intake among family members and their nutritional status. The study examined the relationship between intra-household food distribution and coexistence of dual forms of malnutrition (DFM) in the same household. SUBJECTS/METHODS: Households with a malnourished child and overweight mother were categorized as DFM. Intra-household food distribution among family members was reported using ratios, which are a measure of individual intakes as compared to all household member intakes adjusted to RDA. RESULTS: A1,899 families were included in the study. The prevalence of DFM was 29.8% (95%CI 26.5-31.2). Children consumed lower amounts of energy (OR 1.34; 95%CI 1.06-1.69, P = 0.011), carbohydrates (OR 1.2; 95%CI1.03-1.61, P = 0.022), protein (OR 1.3; 95%CI 1.03-1.64, P = 0.026), and fat (OR 1.3; 95%CI 1.05-1.66, P = 0.016) than their mothers and other family members. In contrast, mothers consumed more carbohydrates than children and other family members (OR1.24; 95%CI 1.02-1.51, P = 0.03). CONCLUSIONS: This study is the first to report on the food distribution among family members and its relationship with occurrence of DFM in Indonesia. The results confirm the occurrence of an unequal food distribution between children and mothers, which increases risk of DFM in the household. The results also demonstrate that nutritional education at the household level is important to increase awareness of the impact of DFM.

Quantitative Microbial Risk Assessment for Clostridium perfringens in Natural and Processed Cheeses

  • This study evaluated the risk of Clostridium perfringens (C. perfringens) foodborne illness from natural and processed cheeses. Microbial risk assessment in this study was conducted according to four steps: hazard identification, hazard characterization, exposure assessment, and risk characterization. The hazard identification of C. perfringens on cheese was identified through literature, and dose response models were utilized for hazard characterization of the pathogen. For exposure assessment, the prevalence of C. perfringens, storage temperatures, storage time, and annual amounts of cheese consumption were surveyed. Eventually, a simulation model was developed using the collected data and the simulation result was used to estimate the probability of C. perfringens foodborne illness by cheese consumption with @RISK. C. perfringens was determined to be low risk on cheese based on hazard identification, and the exponential model ($r=1.82{\times}10^{-11}$) was deemed appropriate for hazard characterization. Annual amounts of natural and processed cheese consumption were $12.40{\pm}19.43g$ and $19.46{\pm}14.39g$, respectively. Since the contamination levels of C. perfringens on natural (0.30 Log CFU/g) and processed cheeses (0.45 Log CFU/g) were below the detection limit, the initial contamination levels of natural and processed cheeses were estimated by beta distribution (${\alpha}1=1$, ${\alpha}2=91$; ${\alpha}1=1$, ${\alpha}2=309$)${\times}$uniform distribution (a = 0, b = 2; a = 0, b = 2.8) to be -2.35 and -2.73 Log CFU/g, respectively. Moreover, no growth of C. perfringens was observed for exposure assessment to simulated conditions of distribution and storage. These data were used for risk characterization by a simulation model, and the mean values of the probability of C. perfringens foodborne illness by cheese consumption per person per day for natural and processed cheeses were $9.57{\times}10^{-14}$ and $3.58{\times}10^{-14}$, respectively. These results indicate that probability of C. perfringens foodborne illness by consumption cheese is low, and it can be used to establish microbial criteria for C. perfringens on natural and processed cheeses.

A Study on Distribution and Packaging of Korean Fresh Ginsengs in Domestic Markets (국내 수삼의 유통 및 포장 실태)

  • 국내수삼의 유통 및 포장실태를 조사하고자 1998년 9월 중순부터 1999년 2월까지 생산지로 금산, 풍기, 강화와 소비지로 경동시장과 S 플라자에서 조사하였다. 유통은 수확 후 생산지역의 수삼센터로 운송되고 여기서 중간거래상에 의해 도매가 이루어지며 이를 소비지인 서울 경동시장이나 백화점, 센타내 소매점으로 운반, 소비자에게 판매되고 있다. 수감 거래시 거래단위는주로 차단위 (1차는 750g)가 사용되고 있고 백화점에서 g단위를 사용하고 있었다. 등급은 년근, 색택, 크기 및 모양에 따라서 특대, 특, 대, 중, 소 등으로 나뉘어 거래되고 있다. 같은 등급에서도 수삼개체간의 크기에 따른 편차가 적게는 17%에서 많게는 130%까지 차이가 나므로 수삼의 등급화가 시급히 이루어져야 함을 알 수 있었다. 수삼의 포장실태는 도매단계에서는 10~20kg 용 골판지 상자를 주로 사용하고 PP마대를 일부사용하고 있으며 소비자 단계에서는 PE 봉투가 주로 사용되며 선물용으로 평량 350~390 g 짜리 마닐라판지로 만든 상자를 사용하고 있다. 이와 같이 수삼의 포장은 소비자보다는 거래를 위한 것이며 소비자용도 적정 포장화가 필요하며, 규격포장 개발을 통해서 수삼유통 현대화가 이루어져야 된다고 사료되었다.

Relationships between Actual Sanitary Management Practices during Production and Distribution, and Microbiological Quality of Dosirak Items Marketed in CVS (편의점 판매용 도시락 생산 및 유통과정시의 위생관리 실태와 시판제품에 대한 미생물적 품질간의 상관관계)

  • Sanitary management practices from 8 packaged meals (Dosirak) manufacturing establishments were surveyd during production and distribution and their microbiological quality of dosirak items marketed in CVS were analyzed. Correlation coefficients were calculated to deternine significant relationships between sanitary management practices and microbiological quality of packaged meals. The results of self evaluation on sanitary management practices indicated 'doing practice well' in personnel and equipment sanitation management but time-temperature control management were practiced satisfactorily only about 55% as compared with the managerial standard guidelines. Significant relationships between the status of actual sanitary management practices and microbiological quality of Dosirak items were not found, but general status of microbiological quality of Dosirak items revealed positive relationship with the size of operational structure and the status of time-temperature control management practices.

Studies on Distribution of Secondary Amines in Raw Marine Fishes (해산류(海産類)중의 제(第)2급(級) 아민분포(分布)에 관(關)한 연구(硏究))

  • The materials carcinogenic agent, nitrosoamine, is distributed in food circumstances, and is formed when both nitrite and secondary amine are present. Nitrites are added to fishes as a color fixative or preservative and secondary amines exist in fishes. In order to find the distribution and contents of secondary amines, analysis of 19 kinds of fish was conducted. The results showed that, significant differences were not observed in the quantity of secondary amines in 19 kinds of fish by district. The highest value was 20.29 ppm in Theragra chalocogramma and the lowest was 0.022 ppm in Ostrea denselamellosa. Six fishes below 1 ppm were Nibea imbricata, Misgurnus mizolepis, Astroconger myriaster, Evynnis Japonica, Ostrea denselamellosa and Solen gouldi. Dimethyl amine only was identified and diethylamine or diphenylamine was not detected in all kinds of 19 fishes.

Accumulation of Aluminum to Lactic Acid Bacteria under Anaerobic Conditions (혐기조건하 젖산균에서 알루미늄의 축적)

  • Present study was investigate to evaluate the aluminum absorption effect on lactic acid bacteria(Lactobacillus acidophilus ATTC 4356, Lactogacillus bulgaricus ATTC 11842, Lactobacillus casei IFO 3533, and Streptococcus thermophilus KCTC 2185 ; LAB) and Clostridium perfringens ATCC 3627 (CP) in artificial intestinal tract. Their growth rate, aluminum accumulation and cellular distribution was studied under anaerobic broth system. All of above microbes were inhibited by adding 10 to 100ppm of aluminum. The degree of aluminum in LAB (Lactobacillus acidophilus ATCC 4356, Lactobacillus bulgaricus ATCC 11842, Lactobacillus casei IFO 3533, and Streptococcus thermophilus KCTC 2185) was higher than of CP. The largest amount of aluminum was accumulated in Lactobacillus bulgaricus ATCC 11842. Aluminum accumulation in LAB was distributed in 49.1% at cell wall, 27.3% at plasma membrane, and 23.6% at cytoplasm, respectively. This study suggests that LAB might help to eliminate the ingested aluminum in intestinal tract.

Drying Characteristics of Apple Slabs after Pretreatment with Supercritical CO2

  • Supercritical $CO_2$ pretreatment before dehydration leads to a faster dehydration rate. The best supercritical $CO_2$ pretreatment conditions for the most effective dehydration were $45^{\circ}C$, 25 MPa and $55^{\circ}C$, 25 MPa. Increasing pressure of the supercritical $CO_2$ pretreatment system tended to accelerate the dehydration rate more than increasing temperature did. Samples pretreated at higher temperatures and pressures showed greater shrinking and pore distribution on scanning electron microscopy. Control samples maintained their cell walls, whereas samples pretreated at higher temperatures and pressures showed more cell disruption, and more pores were observed. Pore sizes of control and pretreated samples were about 100 and $70{\sim}80\;{\mu}m$, respectively. Samples pretreated at higher temperatures and pressures had smaller pores and a denser distribution.

Nonparametric analysis of income distributions among different regions based on energy distance with applications to China Health and Nutrition Survey data

  • Income distribution is a major concern in economic theory. In regional economics, it is often of interest to compare income distributions in different regions. Traditional methods often compare the income inequality of different regions by assuming parametric forms of the income distributions, or using summary statistics like the Gini coefficient. In this paper, we propose a nonparametric procedure to test for heterogeneity in income distributions among different regions, and a K-means clustering procedure for clustering income distributions based on energy distance. In simulation studies, it is shown that the energy distance based method has competitive results with other common methods in hypothesis testing, and the energy distance based clustering method performs well in the clustering problem. The proposed approaches are applied in analyzing data from China Health and Nutrition Survey 2011. The results indicate that there are significant differences among income distributions of the 12 provinces in the dataset. After applying a 4-means clustering algorithm, we obtained the clustering results of the income distributions in the 12 provinces.
