  • Background: By-products of pickled radish (BPR) are considered food waste. Approximately 300 g/kg of the total mass of raw materials becomes BPR. Production of pickled radish has grown continuously and is presently about 40,000 metric tons annually in Korea. The objective of the present study was thus to explore the possibility of using BPR as a ruminant feed ingredient. Results: BPR contained a large amount of moisture (more than 800 g/kg) and ash, and comprised mostly sodium (103 g/kg DM) and chloride (142 g/kg DM). On a dry matter basis, the crude protein (CP) and ether extract (EE) levels in BPR were 75 g/kg and 7 g/kg, respectively. The total digestible nutrient (TDN) level was 527 g/kg and the major portion of digestible nutrients was carbohydrate; 88 % organic matter (OM) was carbohydrate and 65 % of total carbohydrate was soluble or degradable fiber. The coefficient of variation (CV) of nutrient contents among production batches ranged from 4.65 to 33.83 %. The smallest CV was observed in OM, and the largest, in EE. The variation in CP content was relatively small (10.11 %). The storage stability test revealed that storage of BPR at $20^{\circ}C$ (room temperature) might not cause spoilage for 4 d, and possibly longer. If BPR is refrigerated, spoilage can be deferred for 21 d and longer. The in vitro ruminal fermentation study showed that substitution of annual ryegrass straw with BPR improved ruminal fermentation, as evidenced by an increase in VFA concentration, DM degradability, and total gas production. Conclusion: The major portion of nutrients in BPR is soluble or degradable fiber that can be easily fermented in the rumen without adverse effects, to provide energy to ruminant animals. Although its high sodium chloride content needs to be considered when formulating a ration, BPR can be successfully used as a feed ingredient in a ruminant diet, particularly if it is one component of a total mixed ration.

  • Plant biomass is a huge carbon-complex that has potential as a nutrient. Therefore we extracted and separated useful materials for plant growth from tea leaf and stem. The pre-treatment process including high temperature ($200^{\circ}C$) and pressure (20-40 kgf/$cm^2$) was treated for several minutes and extracted at $120^{\circ}C$ for 30-60 minutes. After that the chemical compositions and ingredients were analyzed from that plant-nutrient. As a result of mineral contents, calcium and magnesium concentrations are higher than other minerals. Also the result of carbohydrates analyses has shown that the sugar oligomer consists of xylose(95.3%) and glucose(4.7%), and the sugar monomer consists in the order of xylose (52.7%) > manose (22.8%) > arabinose (10.8%) > galactose (10.2%) > glucose (3.5%). Before applied to field, in vitro plant growth system and formulation were examined. To evaluate the effect of the nutrients, both strawberry green-house and persimmon fields were used in this test. The treated persimmons were heavier than controls scored at 13-22%. In addition, the storage-period was extended in the treated strawberries. Interestingly in the treated strawberry, the contents of polyphenols were increased (38-57%). These results suggest that the plant-nutrient can afford to help for plant growth and storage, and it can be substituted for other commercial nutrients. In conclusion, this plant-nutrient may help to extend eco-friendly or organic farming in Hadong-gun area.

  • American ginseng (Panax quinquefolium L.) is a perennial herbaceous plant widely cultivated in China, Korea, the United States, and Japan due to its multifunctional properties. In northwest China, transplanting after 2-3 years has become the main mode of artificial cultivation of American ginseng. However, the effects of the cultivation process on the chemical properties of the soil and bacterial community remain poorly understood. Hence, in the present study, high-throughput sequencing and soil chemical analyses were applied to investigate the differences between bacterial communities and nutrition driver factors in the soil during the cultivation of American ginseng. The responses of soil nutrition in different ecological niches were also determined with the results indicating that the cultivation of American ginseng significantly increased the soluble nutrients in the soil. Moreover, the bacterial diversity fluctuated with cultivation years, and 4-year-old ginseng roots had low bacterial diversity and evenness. In the first two years of cultivation, the bacterial community was more sensitive to soil nutrition compared to the last two years. Proteobacteria, Actinobacteria, Gemmatimonadetes, Acidobacteria, Firmicutes, and Bacteroidetes dominated the bacterial community regardless of the cultivation year and ecological niche. With the increase of cultivation years, the assembly of bacterial communities changed from stochastic to deterministic processes. The high abundance of Sphingobium, Novosphingobium, and Rhizorhabdus enriched in 4-years-old ginseng roots was mainly associated with variations in the available potassium (AK), total phosphorus (TP), total potassium (TK), and organic matter (OM).

  • This study evaluated the correlation between serum uric acid level and the nutrients adequacy ratio (NAR) using data from the Korea National Health and Nutrition Examination Survey (KNHANES) 2016~2019. This is a cross-sectional study in which 6,579 Korean male adults were divided into quartiles according to their uric acid levels. All analyses were performed with adjusted age. Uric acid decreased as the age increased from the age group 19~29 years to 30~49 years and then to 50~64 years. Interquartile results of serum uric acid levels showed that increases in the serum uric acid levels were associated with decreases in LDL-cholesterol (P<0.01), triglycerides (P<0.001), body weight (P<0.001), waist circumference (P<0.001), body mass index (P<0.001), systolic blood pressure (SBP) (P<0.001), diastolic blood pressure (DBP) (P<0.001). However, uric acid levels decreased with an increase in HDL cholesterol (P<0.001). The analysis of the NARs according to the quartiles of serum uric acid levels in men showed that an increase in serum uric acid levels was associated with a decrease in the NAR levels of dietary fiber (P<0.001), calcium (P<0.001), and folic acid (P<0.001).

  • This study examines the sociodemographic and anthropometric data, health-related and dietary habits, and nutrient intakes according to depression levels in men and women aged over 65 years. A total of 2,938 subjects were analyzed from the 2016~2018 Korean National Health and Examination Survey. Statistical analyses for complex samples were applied using the SPSS software package. Based on the health questionnaire-9, the subjects were applied into two groups. The percentage of depression in women was significantly higher than in men (P<0.001). The factors associated with men's depression were marital status (P<0.05), household income (P<0.001), occupation (P<0.01), and body mass index (P<0.01). Women's depression was found to be significantly associated with household income (P<0.001), education level (P<0.01), basic living allowance (P<0.001), and body weight status (P<0.01). Perceived health status, stress level, quality of life, not feeling very well for the last two weeks, and activity restriction (P<0.001, respectively) were significant health-related habits associated with depression in both sexes. Diabetes (P<0.05) amongst men and hypertriglyceridemia (P<0.01) in women were significant factors associated with depression. Frequency of meals and eating meals together were significant dietary habits associated with depression by sex. Significant associations between improper nutrient intake and depression were also derived for both sexes; 7 nutrients were identified in men and 10 in women. Our results indicate that different factors are associated with depression in the elderly based on sex. Hence, sex-based health promotion programs are required to prevent the onset of depression among the elderly.

  • The spatial and temporal trends of water qualities in Lake Soyang was statistically analyzed in this study. The water qualities include nutrients, ionic contents and chlorophyll-a (Chl-a) measured during 1993${\sim}$2000. The rainfall intensity and runoff from the catchment appeared to play an important role in water quality trends in the lake. According to seasonal Mann-Kendall test, conductivity, TP, and Ctl-a did not show any trends of increase or decrease over the 8 year period, while TN declined slightly. It was found that the variation of TP was a function of interannual inflow and rainfall. In the analyses of spatial trend, conductivity, based on the mean by site, showed a downlake decline over the eight year period. Minimum conductivity was found in the headwaters during summer monsoon of July to August and near the dam during October. This result indicates a time-lag phenomenon that the headwater is diluted by rainwater immediately after summer monsoon rain and then the lake water near the dam is completely diluted in October. During summer period, TP and TN had an inverse relation with conductivity values. Concentrations of TP peaked during July to September in the headwaters and during September in the downlake. Also, TN increase during the summer and was more than 1.5 mg/L regardless of season and location, indicating a consistent eutrophic state. Values of Chl-a varied depending on location and season, but peaked in the midlake rather than in the headwaters during the monsoon. Regression analyses of log-transformed seasonal Chl-a against TP showed that value of $R^2$ was below 0.003 in the premonsoon and monsoon seasons but was 0.82 during the postmonsoon, indicating a greater algal response to the phosphorus during the postmonsoon. In contrast, TN had no any relations with Chl-a during all seasons.

  • Objective: Along with increasing livestock products via intensive rearing, the accumulation of livestock manure has become a serious issue due to the fact that there is finite land for livestock manure recycling via composting. The nutrients from livestock manure accumulate on agricultural land and the excess disembogues into streams causing eutrophication. In order to systematically manage nutrient loading on agricultural land, quantifying the amount of nutrients according to their respective sources is very important. However, there is a lack of research concerning nutrient loss from livestock manure during composting or storage on farms. Therefore, in the present study we quantified the nutrients from dairy cattle manure that were imparted onto agricultural land. Methods: Through investigation of 41 dairy farms, weight reduction and volatile solids (VS), total nitrogen (TN), and total phosphorus (TP) changes of dairy cattle manure during the storage and composting periods were analyzed. In order to support the direct investigation and survey on site, the three cases of weight reduction during the storing and composting periods were developed according to i) experiment, ii) reference, and iii) theoretical changes in phosphorus content (${\Delta}P=0$). Results: The data revealed the nutrient loading coefficients (NLCs) of VS, TN, and TP on agricultural land were 1.48, 0.60, and 0.66, respectively. These values indicated that the loss of nitrogen and phosphorus was 40% and 34%, respectively, and that there was an increase of VS since bedding materials were mixed with excretion in the barn. Conclusion: As result of nutrient-footprint analyses, the amounts of TN and TP particularly entered on arable land have been overestimated if applying the nutrient amount in fresh manure. The NLCs obtained in this study may assist in the development of a database to assess the accurate level of manure nutrient loading on soil and facilitate systematic nutrient management.

  • The fertility of stream water in major streams of the Lake Shihwa Watershed was compared using water analyses and algal growth potential test (AGPT) in typical drought seasons from December 2001 to April 2002, The water quality varied considerably depending on streams. These streams were very rich in inorganic nutrients that the nutrient levels and characteristics of each stream could be easily determined. Through AGPT, 63.6% of growth was observed in the average values of each stream, with non-growth accounting for 36.4%. AGPT results showed that 40.9% of the 22 stations were in hypertrophic condition and 54.5% in eutrophic condition. AGPT values were significantly correlated with TIN, $NH_4$, and SRP (p <0.001); compared to other nutrients, however, they were more related to SRP and $NH_4$. Moreover, the values increased with high concentration of N and P and low N/P ratios. Nonetheless, the values were more dependent on P concentration than N concentration. This suggests that the effect of P on the water quality of lake situated in downstream may serve as a potential indicator of phytoplankton development. Depending on the drainage pattern of streams, the wastewaters of wastewater treatment plant (WwTP) and untreated wastewater (UTW) were found to have 53.4% and 46.6%, respevtively, of TIN, 51.9% and 48.1% of $NH_4$, 62.9% and 37.1% of $NO_3$, 62.6% and 37.4% of SRP, and 44.1% and 55.9% of SRSi. The AGPT value was 51.1% in WwTP wastewater and 48.9% in UTW wastewater, the concentration of WwTP wastewater was slightly higher. For untreated wastewaters flowing into the constructed wetland and into the lake, TIN accounts for 43.0% and 57.0%, respectively, of nitrogen components, $NH_4$ 44.4% and 55.6%, $NO_3$ 39.6% and 60.4%, SRP 53.5% and 46.5%, and SRSi 52.3% and 47.7%, respectively. The AGPT value was 58.0% in the constructed wetland and 42.0% in Lake Shihwa; the concentration in streams flowing into the wetland was slightly higher. Therefore, Persistent and large development of phytoplankton in Lake Shihwa cannot be prevented unless a measure tophytoplankton control is implemented. This is because the concentration of nutrients in specific streams flowing into the lake is very high, even though the inflow of water is low.

  • This work investigated the decomposition of aqueous anatoxin-a originated from cyanobacteria using an underwater dielectric barrier discharge plasma system based on a porous ceramic tube and an alternating current (AC) high voltage. Plasmatic gas generated inside the porous ceramic tube was uniformly dispersed in the form of numerous bubbles into the aqueous solution through the micro-pores of the ceramic tube, which allowed an effective contact between the plasmatic gas and the aqueous anatoxin-a solution. Effect of applied voltage, treatment time and the coexistence of nutrients such as $NO_3{^-}$, $H_2PO_4{^-}$ and glucose on the decomposition of anatoxin-a was examined. Chemical analyses of the plasma-treated anatoxin-a solution using liquid chromatography-mass spectrometry (LC-MS) and ion chromatography (IC) were performed to elucidate the mineralization mechanisms. Increasing the voltage improved the anatoxin-a decomposition efficiency due to the increased discharge power, but the energy required to remove a given amount of anatoxin-a was similar, regardless of the voltage. At an applied voltage of 17.2 kV (oxygen flow rate: $1.0L\;min^{-1}$), anatoxin-a at an initial concentration of $1mg\;L^{-1}$ (volume: 0.5 L) was successfully treated within 3 min. The chemical analyses using LC-MS and IC suggested that the intermediates with molecular weights of 123~161 produced by the attack of plasma-induced reactive species on anatoxin-a molecule were further oxidized to stable compounds such as acetic acid, formic acid and oxalic acid.

  • The purpose of this study was to examine nutrition management conditions of lunch with the elementary schools and middle schools in the Changwon area. 292 students (5th and 6th graders) from three elementary schools and 330 students from three middle schools (boys, girls, and co-ed) participated in the aggregate selective plate waste measurement for 5 days. Planned menus, serving sizes and plate waste amount data were collected. Nutrient analyses for the planned, served and consumed menus at school lunches were performed by using CAN-PRO 3.0. Nutrient analyses of the planned, served and consumed menus were compared with nutrient management standard (former edition) for school lunch and 1/3 Korean Dietary Reference Intakes (KDRIs). Significant difference was found in the average consumption rate between the elementary schools (82.2%) and the middle schools (71.8%). Specifically, the consumption rates of steamed rice (p < 0.001), side dish 1 (p < 0.001), and Kimchi (p < 0.01) at the middle schools were significantly lower than those of the elementary schools. When the nutrient contents in the served menus were put into percentages to the nutrient contents in the planned menus, middle schools (92.3%) showed bigger serving loss than the elementary schools (95.4%). In the nutrient assessment comparied with nutrient management standard (former edition), middle school lunches showed comparatively less energy or less some nutrient contents against the standard than the elementary school lunches. Specifically, in case of boys in middle schools, Vitamin C was the only nutrient content that satisfied the standard in the planned menus, served menus and consumed menus. In the 1/3 KDRIs based assessment, middle schoolers were found not to be provided proper nutrients with school lunches. To improve nutrition management at middle school foodservices, dietitians should reinforce nutrient assessment for menu planning, and try to decrease serving loss and plate waste.
