아산시 거주 미취학 아동들의 신체계측 및 영양상태 조사 (Survey on Nutritional Status of Pre-school Children in Asan Measured by Anthropometric and Nutrient Intake Analysis)

  • The nutritional status of pre-school children is important for both physical growth and functional development. This study investigated the anthropometric, nutrient intakes and dietary quality of the pre-school children living in Asan for planning nutritional education program. The dietary intakes were measured by 2-day 24 hr recall recorded by children's mothers and the anthropometric data were collected by measuring children's weights, heights, and percent body fat at Asan Public Health Center. The children were 161 boys and 129 girls aged 5 and 6 years. When children's nutritional status was determined by their anthropometric status (underweight, normal weight and overweight) determined by z-score (normal range between -1.00 and 1.00), only 1.4% of the children belonged to underweight group while 55.7% and 42.9% belonged to normal and overweight groups, respectively. Significantly higher number of children belonged to overweight group for 5 year-olds. No differences were observed in nutrient intakes, nutrient adequacy ratio (NAR) and index of nutritional quality (INQ) values among nutritional status groups. Intakes of the most nutrients were adequate, but NAR and INQ of calcium and zinc were low. When nutrient intakes, NAR and INQ were compared by sex or age, all nutrient intakes were appropriate except calcium and zinc intakes of 6 year-olds. Nutrient intakes of 5 years were higher than those of 6 years. The mean of nutrient adequacy ratio (MAR) was 0.85 and mean INQ was 1.51 for all participants. The nutritional management program for pre-school children in Asan would be directed differently by age groups and education material should contain contents educating to consume moderate amount of food for 5 year-olds and to increase intake of foods with mineral nutrients such as calcium and zinc for 6 year-olds.

초등학교 급식 대표음식의 영양밀도 분석 및 영양소-단가 비교연구 (Nutrient Density and Nutrient-Cost Evaluation for the Representative Menus of the School Lunch Program in Korea)

  • The goals of the School Lunch Program(SLP) are to provide school children with approximately one -third of their daily nutrition requirements at a reasonable price, to foster good food habits, and to contribute to a better understanding of nutrition. In order to provide guidelines and appropriate nutritional information for SLP planning, and to identify inexpensive sources of each nutrient, representative SLP menus were analyzed for nutrient density using the Index of Nutritional Quality(INQ) and for nutrient cost. Recipes and prices of 776 meals were collected from 10 SLP primary schools in Seoul and Kyunggi province in Korea during 1995. From 4829 menu items in 776 meals, the 100 most frequently used menus were selected as representative SLP menus. From these 100 menus, eleven categories of menu were identified according to cooking methods and ingredients. Selected menus were placed into these 11 groups, with 3 to 5 menus in each except the milk group which contained only milk. The mean nutrient content, INQs, and nutrient-cost ratios were calculated for each menu and menu group. Among the 100 representative SLP menus, 'Jiajang-rice' contained the highest energy per serving portion. 'Grilled pollack ' was the highest in protein, 'Seasoned spinach ' in vitamin A, 'Spagehetti' in vitamin B1 , niacin and iron, 'Kongjorim'(hard-boiled bean with sauce) in vitamin B2 , strawberry in vitamin C, and 'fish stew ' and milk in calcium. Among the 11 menu groups, the 'One-dish' group was found to be the highest in energy , protein, vitamin A, B$_1$ and iron. The milk group was a good source of vitamin B$_2$ and calcium . The meat side dish group (panbroiled, fried or steamed )was the most suitable for providing niacin. The fruit group provided the highest level of vitamin c per portion. The nutrient densities(INQs) were found in the soup group (protein), Kimchi group(vitamin A), fruit group(vitamin B$_1$ and C), milk group(vitamin B$_2$ and calcium), stew group(niacin )and vegetable side dish group(energy, protein, vitamin B$_1$ and niacin) , vegetable side dish group(vitamin A), milk group(vitamin B$_2$ and calcium) , fruit and Kimchi groups(vitamin C), and stew group(iron). This information should be useful for school dietitians in planning most nutritious SLP menus with limited budgets. It could also be used for basic guidelines in nutrition education, and for future improvement of the SLP in Korea.

Reliability and Validity of the Diet Quality Index for 7-9-year-old Indian Children

  • Purpose: This study verified the reliability and validity of the Diet Quality Index for Indian children (DQIIC). Methods: The study sample included 100 school going boys and girls (7-9 years). The dietary behavior of children was studied using a questionnaire and 24-hour dietary recall. The DQIIC comprises 21 items which aimed to assess the diet of Indian children on the basis of variety, adequacy of consumption of dietary components, and moderation in the amount of nutrients that are associated with diseases and dietary habits. The reliability of the DQIIC was assessed using the split half method, Cronbach's alpha, and test retest reliability. Content validity was evaluated using content validity ratio (CVR). Results: The intake of iron was found to be less than the recommended dietary allowances. There was frequent consumption of empty calorie packaged foods and higher than the recommended amount of sodium. Reliability of the DQIIC was 0.85 by split half method and the correlation coefficient for test retest reliability was 0.87. Cronbach's alpha was 0.62 and CVR was 0.85 for this index. Most of the children fell in the moderately healthy category. Conclusion: The DQIIC is a reliable and valid tool to assess the diet quality of Indian children between 7-9 years.

한국 성인의 대사증후군 여부와 치료 유무에 따른 식생활 평가 : 2017년 국민건강영양조사 자료 이용 (Assessment of Nutrient Intake and Dietary Quality of Korean Adults in Metabolic Syndrome Patients According to Taking Medical Care: Based on the 2017 Korea National Health and Nutrition Examination Survey)

  • Objectives: This study established a practical direction for the prevention and management of metabolic syndrome by evaluating the health status, nutrition intake level, and diet quality according to metabolic syndrome and related drug treatment in Korean adults. Methods: The data from the 2017 KNHANES (Korea National Health and Nutrition Examination Survey) was analyzed. The analysis included 2,978 adults, classified into the normal, metabolic syndrome (MetS), metabolic syndrome with medicines (MetS-M), and without medicines (MetS-noM) groups. The nutrient intake, NAR (nutrient adequacy ratio), INQ (index of nutritional quality), and DDS (dietary diversity score) were analyzed. Results: The mean BMI was significantly higher in the MetS group than in the normal group for all subjects. Subjects of the MetS group tended to consume less energy and major nutrients, while males aged 50 ~ 64 and all females showed less intake of nutrients in the MetS-M group. The energy intake ratio was within 55 ~ 65 : 7~ 20 : 15 ~ 30 of KDRI (Korean Dietary Recommended Intake), but the carbohydrate energy ratio of all subjects aged 50 to 64 was over 65%. The NAR of the major nutrients was lower in the MetS-M group, the average INQ was around 0.8, especially the INQ of calcium and vitamin A was less than 1, and the total DDS score was less than 4 points. Conclusions: This study confirmed that the nutrient intake and diet quality differed among subjects diagnosed with metabolic syndrome and managed with medical care. The intakes of energy and many nutrients, the quality of diets, and the diversity of food groups in the MetS-M group were lower than in the normal group. Therefore, these will be an important basis for establishing a specific direction of diet education for preventing and managing metabolic syndrome according to gender, age, metabolic syndrome, and drug treatment.

우리나라 노인의 체질량지수에 따른 영양소 섭취 수준과 건강 상태 비교: 저체중 노인을 중심으로 (Comparison of the Nutrient Intake and Health Status of Elderly Koreans According to their BMI Status: Focus on the Underweight Elderly Population)

  • Objectives: With an increase in the population of the elderly in Korea, their nutritional status has become a cause for concern. This study was designed to compare the nutritional intake and health status of the Korean elderly according to their body mass index. Methods: The subjects were 3,274 elderly people aged 65 and above who had participated in the 2016-2018 Korea National Health and Nutrition Examination Survey. The subjects were divided into four groups: underweight, normal, overweight, and obese, based on their BMI. The general characteristics, daily energy, and nutrient intakes, nutrient intakes compared to the recommended nutrient intake, percentage of participants whose nutrient intake was lower than the estimated average requirement (EAR), index of nutrient quality, the mean adequacy ratio (MAR), intakes by food group, and health status of the four groups were compared. Results: Underweight elderly people showed lower energy, lipids, dietary fiber, vitamin C, riboflavin, niacin, phosphorus, sodium, and potassium intake and MAR score (P < 0.001) compared to the normal or obese elderly. The mean protein, riboflavin, niacin, vitamin C, phosphorus, and iron intake of the underweight elderly was lower than the EAR (P < 0.05). Underweight elderly people also had a lower intake of vegetables and fats, oil and sweets food groups than the other groups (P < 0.001). The prevalence of diabetes and dyslipidemia was higher in the obese group, but the percentage of anemia was higher in the underweight group. Conclusions: Underweight elderly people were vulnerable to undernutrition and were at a higher risk of anemia.

Effect of Dietary Lysophospholipid (LIPIDOLTM) Supplementation on the Improvement of Forage Usage and Growth Performance in Hanwoo Heifer

  • The present study investigated the effects of Lysophospholipid (LPLs, LIPIDOL$^{TM}$) on the growth performance and nutrient digestibility of Hanwoo heifers. A feeding trial was performed for 120 days until slaughter using a herd of 24 Hanwoo heifers. Eight heifers were assigned to each of 3 experimental groups (control, 0.3% LIPIDOL$^{TM}$ and 0.5% LIPIDOL$^{TM}$). Growth performance, nutrient digestibility, and carcass characteristics were investigated. Significantly improved nutrient digestibility was found in the LIPIDOL$^{TM}$ treatment group compared to the control (p<0.05). No significant effect by LIPIDOL$^{TM}$ supplementation on growth performance was observed (p>0.05). However, interestingly, greater carcass weight was detected in the treatment of LIPIDOL$^{TM}$ where less daily gain was found. Although not a significant effect, greatly decreased back-fat thickness and increased loin area were detected in the treatment of LIPIDOL$^{TM}$. In meat characteristics, LIPIDOL$^{TM}$ increased intramuscular fat and tenderness. Therefore, the present study results suggest that the inclusion of LIPIDOL$^{TM}$ in the diet of Hanwoo heifers can improve carcass performance and meat quality by increasing the carcass index and the meat quality index. The results also suggest that a level of 0.3% might be more efficient than 0.5% with regard to economic effectiveness.

대구지역 대학생의 식습관 및 영양섭취상태 (Studies on Nutrient Intake and Food Habit of College Students in Taegu)

  • This study was an investigation of nutrient intake and food habit of college students in Taegu. A total of 200 apparently healthy college students living in Taegu were selected for the study. The 24-hour recall were obtained from subjects. The following anthropometric measurements were made on all participants: weight, height, waist and hip circumferences, and bioimpedence. Dietary habits and energy expenditure were examined through questionnaires. Among the subjects 8.3% were obese and 17.7% were underweight in male and 38.8%, respectively. The average intake of nutrients and energy were below the RDA in male(except protein, vitamin C and phosphate) and female(except vitamin C and phosphate), whereas phosphorus intakes well exceed the RDAs for both groups. Lowest mean intake as percentile of RDA were calcium and riboflavin in male, and calcium and iron in female. The mean adequacy ratio(MAR), an index of overall dietary quality was 0.735 for males and 0.730 for females. The index of nutritional quality (INQ) were under 1.0 for vitamin A(0.91), B2(0.628), Ca(0.074), Fe(0.845) in male students and vitamin B2(0.752), Ca(0.649), Fe(0.594) in female students. The alcohol consumption level was negatively correlated (p<.05)with thiamin, ascorbic acid, carbohydrate, and energy consumption in male students. Also the alcohol consumption was negatively correlated (p<.05) with milk consumption in male students. Thus, unfavorable nutritional patterns of alcohol drinkers put them at double jeopardy regarding micronutrient intake and bone health. In conclusion, this study indicates that nutrient intake in the college student in Taegu is considerably lower than RDA. Another important finding of this study is that an unacceptable calcium and iron status was prevalent in a high percentage of subjects in the college student.

중.노년층에서 연령증가에 따른 영양소 및 식품섭취의 양적, 질적 변화에 대한 종단적 연구 (A Longitudinal Study on the Change of Nutrients and Food Consumption with Advance in Age among Middle-aged and the Elderly)

  • The purpose of this study is to investigate diet quality and changes in nutrient and food intake with increase in age. Subjects were 69 patients(28 males, 41 females) living in Jeon-ju city, over middle-aged, and they were the same patients studied 4-7 years ago in a previous study. Dietary survey with one day 24-hour recall method was used. Energy, calcium, vitamin A and vitamin B$_2$intakes were lower than the RDA and vitamin C was in excessive status in pre-test and post-test. In food groups examrned, the consumption of potatoes, beans, vegetables, seaweeds, beverages, seasonings, oils, fish & shells and milks was increased amount than 4-7 years before but the consumption of cereals(p<0.01), sugars, seeds, fruits, processed food, meats and eggs was decreased. Diet quality was assessed by %RDA, nutrient adequacy ratio(NAR), mean adequacy ratio(MAR), dietary diversity score(DDS), meal balance and food group pattern. In %RDA, those proportion of appropriate intake in post-test in were higher than those in pre-test. For most nutrient except vitamin A, the levels of NAR in post-test were higher than in pretest. The MAR, an index of overall dietary quality, was 0.77 for pre-test and 0.83 for post-test(p<0.05). When we counted the major food groups consumed(KDDS), 62.3% of subjects had a KDDS of 3 in pre-test and 42.0% of subjects had a KDDS of 4 in post-test. Based on these results, in terms of variety and balance, total diet quality was improved with advancing of age.

Evaluation of nutrient intake and diet quality of gastric cancer patients in Korea

  • This study was conducted to identify dietary factors that may affect the occurrence of gastric cancer in Koreans. Preoperative daily nutrition intake and diet quality of patients diagnosed with gastric cancer were evaluated. Collected data were comparatively analyzed by gender. The results were then used to prepare basic materials to aid in the creation of a desirable postoperative nutrition management program. The subjects of this study were 812 patients (562 men and 250 women) who were diagnosed with gastric cancer and admitted for surgery at Soonchunhyang University Hospital between January 2003 and December 2010. Nutrition intake and diet quality were evaluated by the 24-hr recall method, the nutrient adequacy ratio, mean adequacy ratio (MAR), nutrient density (ND), index of nutritional quality (INQ), dietary variety score (DVS), and dietary diversity score (DDS). The rate of skipping meals and eating fast, alcohol consumption, and smoking were significantly higher in males than those in females. The levels of energy, protein, fat, carbohydrate, phosphorous, sodium, potassium, vitamin $B_1$, vitamin $B_2$, niacin, and cholesterol consumption were significantly higher in males than those in females. Intake of fiber, zinc, vitamin A, retinol, carotene, folic acid were significantly higher in females than those in males. MAR in males was significantly higher (0.83) than that in females (0.79). INQ values were higher in females for zinc, vitamin A, vitamin $B_2$, vitamin $B_6$, and folic acid than those in males. The average DVS was 17.63 for females and 13.19 for males. The average DDS was 3.68 and the male's average score was 3.44, whereas the female's average score was 3.92. In conclusion, males had more dietary habit problems and poor nutritional balance than those of females. Our findings suggest that proper nutritional management and adequate dietary education for the primary prevention of gastric cancer should be emphasized in men.

담수 이후 용담호 영양상태 변동 요인 분석 (Analysis of Trophic State Variation of Lake Yongdam in Dam Construction)

  • We have performed to analyze the trophic state resulting of Lake Yongdam as a result of water quality and nutrient concentration. Lake Yongdam is artifitial multi-purpose Dam resulting from the floods of 2001. The water quality of Lake Yongdam may affect the status of the Geum river basin including the Daecheong reservoir. It is necessary to understand the trophic state to assess water quality until stability after flooding. Water quality was surveyed using depth and hydraulic condition analysis. Further density flow was estimated for stratification and trophic state of Lake Yongdam by chlorophyll ${\alpha}$ concentration (2001~2004). And Environmental factors on chlorophyll ${\alpha}$ concentration were analyzed statistically. Trophic state was evaluated as the oligotrophic state at the main stream of the reservoir and eutrophic state at the upper stream in 2001, but evaluated as eutrophic state in 2002 and 2003 by TSI of Aizaki. From the results of multiple regression analysis using stepwise method, chlorophyll ${\alpha}$ concentration was shown to be very significant when nutrient concentration is high upon initial filling of the Dam. Chlorophyll ${\alpha}$ concentration varied according to sample site, season and year. Concentration were high in the upper stream of Lake Yongdam 4, algae bloom in these watershed were affected by location and high nutrient levels in the summer season which have in turn increased phytoplankton bloom into the reservoir.
