Nutrient Intake Determined by School Lunch Plate Waste and by Selfreported Food Consumption of Selected High School Students in Seoul (점심급식 잔반 조사와 자가 섭취 상태 조사법을 통한 서울 지역 일부 남녀 고등학생의 영양섭취 실태 조사)

  • The Purposes of this study were to assess high school students' nutrient consumption at the ordinary time and to analyze nutrient contents and nutrition consumption of lunch. The questionnaires for self-reported food consumption were distributed to 210 students enrolled in a boy's high school and a girl's high school located in Seoul area. A final response rate was 87.1%, excluding responses that had significant missing data. Data of self-reported food consumption and BMI(Body Mass Index) were analyzed with descriptive analysis and t-test using SPSS Win(ver. 12.0). To measure the serving size and the waste amount, data were collected for three meals in a three day period at each school. A weighed plate method was employed to measure plate wastes and consumption of the menus served. Nutrient analyses for the served and consumed menus were performed using CAN-PRO. The result of nutrient intake determined by self-reported food consumption demonstrated 74.2% of boys and 70.0% of the girls did not meet EAR(Estimated Average Requirement) for calcium. In addition, the data collection showed that 60.2% boys and 26.7% girls did not consume EAR for Vitamin B$_1$. Nutrient analyses of the served and consumed menus at school lunch were compared with 1/3 of the Dietary Reference Intakes(DRIs) for this age group. The served menus did not meet 1/3 of the Recommended Intake(RI) for calcium, iron, and vitamin B$_2$. In contrast, the menu provided to students exceeded almost five times(490%) more than the sodium needed for 1/3 of the Adequate Intake(AI). Considering the amount of the students' plate waste, intake of vitamin A and vitamin C were below 1/3 of the RI, and calcium, iron, and vitamin B$_2$ intake were also reduced. Students' sodium consumption still exceeded 1/3 of the AI at 340.0%.

A Survey of Food and Nutrient Intakes in Female College Students (여대생의 식품 및 영양소 섭취량 조사)

  • Purpose: The study was done to investigate Food and Nutrient Intakes of female college students and define differences between teen-age groups and women in their twenties. Method: The subjects of this study were 821 female college students. They were eighteen to twenty nine years old. Nutrient intakes were measured by the Moon, S. J. Scale (1980). Data was collected from June 13 to June, 27. Data was analyzed with the SPSS program by Chi-test, t-test and Pearson's correlation coefficients. Result: Female college students' mean intake of calories, protein, fat, and carbohydrates were $1560.7{\pm}367.71kcal,\;62.0{\pm}19.03g,\;33.1{\pm}9.85g,\;and\;253.7{\pm}57.52g$ respectively. Their mean intake of calcium, phosphorus and iron were $592.9{\pm}221.82mg,\;918.2{\pm}284.24mg\;and\;13.7{\pm}4.50mg$ respectively. Intake of calories, calcium, iron and vitamine B1 were below their Percent of Recommended Intake. Nutrient intakes showed a significant difference between age groups. Teen-age female college students had more nutrient intakes than the women in their twenties. In addition, there was a difference in food consumption behaviors between the teen-age group and the twenty-something group. Conclusion: The nutrient intake of female college students changed by age. Many teen-age female college students ate breakfast well, thus their intake of calories, protein, fat, carbohydrates, minerals such as calcium, phosporus and vitamins was significantly higher than the over twenty years old students. Teen-age female college students like fruits and sugars but over twenty years college students preferred coffee. This study can be useful in directing a dietary consumption status of women to improve nutritional health.

Comparison of Self-living Ability, Obesity Indices and Nutrient Intake according to Physical Fitness among the Elderly in Rural Areas (농촌 지역 일부 노인에서 신체 기능 정도에 따른 활동 제한도, 비만도 및 영양소 섭취 수준의 변화 양상 비교)

  • Aging is associated with decreased energy expenditure, thermogenesis and energy requirements. Maintenance of physical fitness of the elderly has been reported to reduce the rate at which the basal metabolic rate, muscle strength, skeletal muscle mass and bone density deteriorate. Skeletal muscle disease is known to increase the risk of physical disability and psychological problems. This study was conducted to investigate changes in disability, emotional problems, body compositions, obesity indices and nutrient intake levels according to physical fitness with the elderly in rural areas. According to the results, physical fitness was negatively related with Activities of Daily Living(ADL, p<0.05), Instrumental Activities of Daily Living(IADL, p<0.001), Body Mass Index(BMI, p<0.001) and abdominal obesity(p<0.05), while it showed a positive correlation with the General Self Efficacy Scale(GSES)(p<0.001) and nutrient intake(p<0.05). When changes in these factors were compared according to the range of quartile of the Fullerton Advanced Balance Scale(FAB Scale), GSES(Q1=35.3, Q2=43.5, Q3=53.2, Q4=51.9, p<0.001), BMI(Q1=36.1%, Q2=34.7%, Q3=33.2%, Q4=28.6%, p<0.01), abdominal obesity(Q1=1.02, Q2=0.99, Q3=0.97, Q4=0.94, p<0.001) and nutrient intake(Q1=71.1%, Q2=75.4%, Q3=80.6%, Q4=80.2%, p<0.05) differed significantly. Taken together, these results suggested that better physical fitness would lead to a reduction in negative factors including physical disability and obesity indices, but to an increase in positive factors such as GSES and nutrient intake. The results of this study are expected to be used as basic data for the development of programs to promote the health of the elderly in a local society.

  • The daily food intake for dairy cows has to be effectively controlled to breed a sound group of cows as well as to enhance the productivity of the cows. But, feed stuffs are fed in the common bulk for a group of cows in most cases despite that the individual food intake has to be varied. To obtain the feed for each cow, both the nutrient requirements and the nutrient composition of fred have to be provided in advance, which are based on the status of cows such as weigh marginal weight amount of milk, fat concentration in milk, growth and milking stages, and rough feed ratio, etc. Then, the mixed ration fur diet would be computed by the nutrient requirements constraints. However, when TMR (Total Mixed Ration) is conventionally supplied for a group of cows, it is almost impossible to get an optimal feed mixed ration meeting the nutrient requirements of each individual cow since the constraints are usually conflicting and over-constrained although they are linear. Hence, addressed in this paper is a simulated annealing (SA) technique to find the food intake for dairy cows, considering the characteristics of individual or grouped cows. Appropriate parameters fur the successful working of SA are determined through preliminary experiments. The parameters include initial temperature, epoch length. cooling scheduling, and stopping criteria. In addition, a neighborhood solution generation method for the effective improvement of solutions is presented. Experimental results show that the final solution for the mixture of feed fits the rough feed ratio and some other nutrient requirements such as rough fiber, acid detergent fiber, and neutral detergent fiber, with 100 percent, while fulfilling net energy for lactating, metabolic energy, total digestible nutrients, crude protein, and undegraded intake protein within average five percent.

Comparing the Nutrient Intake, Quality of Diet, Eating Habit Scores and Dietary Behaviors of University Students in Iksan, according to Their Type of Residence (익산지역 대학생의 주거형태에 따른 영양소 섭취량과 식사의 질, 식습관 및 식태도 비교)

  • The aim of this study was to compare the dietary patterns and behaviors of university students according to their type of residence. The subjects consisted of two thousand two hundred fifty students from Wonkwang University. They were divided into three groups : those who live in their family homes (393 men, 392 women) ; those who live in university dormitories (371 men, 401 women) : and those who live in houses with cooking facilities (345 men, 348 women). This cross-sectional survey was conducted using a self-administered questionnaire. The nutrient intake data collected from a three-day recall were analyzed using the Computer Aided Nutritional Analysis Program and the diet quality was estimated using the Nutrient Adequacy Ratio, Mean Adequacy Ratio and Index of Nutritional Quality. The results showed that the mean daily intakes of calcium were lower than the Korean Recommended Daily Allowance (RDA) in all groups. There was a significant difference in the nutrient intake, dietary quality and dietary behaviors of the three groups. The nutrients intake and dietary quality of the men were poorer than those of the women in all three groups. The subjects living in dormitories and houses with cooking facilities seemed to have lower levels of nutrient intake and dietary quality. However, the concern about nutrition and interest in health information was higher among those living in dormitories and houses with cooking facilities than among those living in their family homes. Male students living in houses with cooking facilities had more dietary problems than students living in their family homes or in dormitories possibly because they might have had a lower ability in meal management. These results suggest that the type of residence affects the nutrient intake levels, and dietary quality of university students in Iksan. Nutritional education is essential if university students are to practice optimal nutritional habits, including the eating of well-balanced diets and selecting of foods of high quality. Therefore, nutritional education for university students is needed so as to improve their health and a nutritional education program should be developed to meet the various needs of these students.

Relations of Life Style, Nutrient Intake, and Blood Lipids in Middle-Aged Men with Borderline Hyperlipidemia (경계수준의 고지혈증 중년 남성의 생활 습관 및 영양상태와 혈중 지질수준과의 관계)

  • Hyperlipidemia and related heart disease will be growing public health problems as the population ages. It is therefore of great importance to identify modifiable risk factors. So this research investigated associations among life style, nutrient intake, and blood lipids in middle-aged men with borderline hyperlipidemia. Dietary intakes were assessed by food-frequency questionnaire and convenient method. The subject's histories of alcohol use and smoking were assessed via a questionnaire. Current smokers were classified as smokers, whereas past smokers and subjects who never smoked were classified as nonsmokers. With regard to alcohol intake, the subjects were stratified into drinkers and nondrinkers. In drinkers the frequency were measured. Frequency of alcohol intake and weight were associated with high blood lipids and blood pressure. The highest quartile of calcium intake had lower triglyceride concentration than did those in the lower three quartiles. High calcium intake was associated with low blood triglyceride concentration. These results suggest that healthy weight and high calcium intake and less alcohol intake can contribute to maintenance of healthy blood lipids in men.

Nutrient Intake and Breast Cancer Risk in Korean Women : A case - control study

  • To investigate the association between breast cancer risk and nutrient intake in Korean women, a case-control study was carried out. Incident cases (n=224) were identified through cancer biopsy between february 1999 and December 2000 at two university hospitals in Seoul. Hospital-based controls (n=250) were selected from patients in the same hospitals, during the same periods. food intake was investigated with semi-quantitative food frequency questionnaire (98 items) by a trained dietitian. Subjects were asked to indicate the average intake, for a 12-month period of three years prior to the baseline phase. In this study, no apparent association was found between fat intake level and breast cancer risk. High fiber intake showed a significant inverse association only among premenopausal women. In terms of antioxidant vitamins, $\beta$-carotene and vitamin C among premenopausal women and vitamin C intake among postmenopausal women was significantly associated with a decreasing risk of breast cancer. A protective effect of high calcium consumption was observed among postmenopausal women. In conclusion, our findings support epidemiological evidence that antioxidant vitamin intake could lower the breast cancer risk in Korea.

  • This study was designed to investigate the effect of nutrient intake on bone mineral density (BMD) of the lumbar spine(L2longrightarrowL4) in 41 postmenopausal women. The BMD of the lumbar spine was positively correlated with caiorie protein animal protein fat animal fat calcium animal calcium milk ad dairy calcium phosphorus iron animal iron vitamin A thiamin animal calcium milk and dairy calcium phosphorus iron animal iron vitamin A thiamin riboflavin niacin and ascorbic acid intake. Postmenopausal wmen of BMD$\geq$100% showed enhanced calorie protein fat calcium phosphrous niacin intake compared women of BMD<100% In the group of calorie protein riboflavin intake$\geq$recommended dietary allowances(RDA) BMD was significantly higher than BMD in the group of these nutrient intakes$\geq$700 mg/d is significantly higher than BMD that of examined using stepwise multiple regression analysis. From this analysis in subjects aged 50~59 years fat intake only in subjects aged 60~69 years niacin intake Ca/P in total subjects fat riboflavin intake were signifiant independent predictors of BMD In the group of menopausal significant independent predictor of BMD This study suggests that dietary calcium is a major constituent affecting lumbar spin BMD in postmenopausal women whose menopausal period is over than 5 years.

Assessment of Dietary Intake of Preschool Children in Busan : Assessment Based on Food Group Intake (부산지역 학령전 아동의 식생활평가 : 식품군 식품섭취 상태평가)

  • To assess diet quality by food group intake and to investigate the interrelationship of age, dietary diversity score(DDS), dietary variety score(DVS), dietary frequency score(DFS), food group intake and nutrient intake with food group intake, a dietary survey was conducted with 176 preschool children aged 1 to 6 in Busan using a 24-hr recall method. Food group intake was assessed by food number consumed and intake frequency by six food groups(grain, meat, vegetable, fruit, dairy, sweets group). The mean food numbers consumed and intake frequencies by six feed group were 3.1 and 4.0 in the grain group, 3.6 and 4.0 in the meat group, 3.5 and 4.1 in the vegetable group, 1.0 and 1.1 in the fruit group, 1.3 and 1.5 in the dairy group, 1.4 and 1.4 in the sweets group respectively. As age increased, the intake frequency of the grain group(p<0.05) increased but that of the dairy group(p<0.05) decreased significantly. The DVS and DFS didn't show significant correlations with intake frequency of the dairy group. The grain group intake had significant positive correlations with intakes of the meat, vegetable, and fruit groups. The vegetable group intake had signigicant positive correlations with intakes of the grain and meat groups. The dairy group intake had significant positive correlation with sweets group intake but negative correlations with intakes of the grain and vegetable groups. As the intake frequency of the meat group increased, the NAR(nutrient adequacy ratios) of all nutrients and NAR(mean adequacy ratio) increased significantly. NARs of provein iron, vitamin B$_1$, niacin had the highest correlation with the meat group intake and those of protein, calcium, phosphorous, and vitamin B$_2$ had the highest correlation with the dairy group intake. NARs of vitamin A and vitamin C had the highest correlation with intake of the vegetable and fruit groups respectively. [ $Entr{\acute{e}}e$ ] Popularity Affects Nutrient Intake among School-Aged Children Eating School Breakfasts

  • The purposes of this study were to investigate the effects of the popularity of menu items in nutrient consumption of school-aged children participating in a School Breakfast Program. The weighed plate waste method was used to determine the nutrient intake of students. The nutrient intake was evaluated based on the popularity of the menu item, gender, and grades. The average intakes of all nutrients except energy, fiber, and sodium were well within the goals. Actual nutrient intake varied based upon the popularity of $entr{\acute{e}}es$ and the popularity of menu items was a main effect in nutrient content of meals. When the most popular $entr{\acute{e}}es$ were served, school-aged children's energy intake and School Breakfast Program participation rate increased. Saturated fat and sodium intakes also were higher than the goal when the most popular $entr{\acute{e}}es$ were served. The significant main effect was grades for total fat (p < 0.05) and calcium (p < 0.05), which was qualified by the two-way interaction between gender and grades for saturated fat (p < 0.05), protein (p<0.1), iron (p<0.01), vitamin C (p<0.01) and carbohydrates (p<0.001). Gender itself was not a significant main effect. Based on the findings, the suggestions for educating school-aged children on more healthful breakfast food choices and reformulating recipes for the popular $entr{\acute{e}}es$ are made.
