Analysis of Dietary Informations in Newspapers and Magazine for Children (2002) (어린이신문 및 잡지에 게재된 식생활 관련 정보 현황조사(2002년))

  • Children regard newspapers and magazines as the important source of information. Because informations about diet in the newspaper and magazines are regarded as good, it is necessary to find out whether informations provided to children are correct. Thus, this study shows the present situation of informations on diet by monitoring 3 newspapers (Kids. Chosun, Kids. Donga, Kids. Hankook) and 2 magazines (Earinee - Dongsan, Sae-But) for children. This study focused on the quantitative and the qualitative analysis for articles and advertisements. For the quantity, rate and number were calculated. For the quality, the accuracy was analyzed. Result of this study were as follow; Analyzed the number of articles and advertisements on diet, there are 2 times more number of advertisements (339 cases) than that of articles (180 cases) in the newspaper. There are slightly more number of advertisements (24 cases) than that of articles (18 cases) in the magazine. Most of advertisements are about processed foods and children' favorite foods. Especially, the advertisement of processed foods are ranked first by the quantity with 245 cases (75%) in the newspaper. In the magazine, 10 cases (42%) are about processed foods. About source of advertisements on diet informations in the newspaper, there are 300 cases (86.7%) without evidence based data and 34 cases (9.8%) of interview with entertainers, from the total 346 cases. In the magazine, there are high rate of cases without evidence based data and interview with entertainers. For the evaluation of the information about diet in the newspaper, there are 148 cases (19.7%) with no clear guidance and position, some cases with advertisements for specific products and etc. Discordance between subjects and contents, and emphasis of specified field or some parts are found from the total 750 cases. About the accuracy of contents, from the total 180 cases in the newspaper, 99 cases (55%) are inappropriate and 19 cases (10.6%) are appropriate. In magazines from the total 18 cases, 7 cases (38.9%) are inappropriate and 11 cases (61.1 %) are appropriate. With these results, we can conclude that informations about diet in newspapers and magazine for children needs improvement. Therefore, for newspapers and magazines contents should be reported scienifically by inspecting contents and by taking professional advice, in order to spread the accurate information about diet. A Study on Purchase Patterns and Recognition of Processed Foods in Elementary. Middle and High School Meal Service Dietitians (초.중.고 학교급식에 따른 영양사의 가공식품 이용실태와 인지도 조사)

  • The results of this study on Purchase Patterns and Recognition of Processed Foods of School Meal Service Dietitians of elementary, junior and senior high schools in Chonbuk and Deagu Area are as follows : First, the rate of single cooking of the schools surveyed is 100% in Deagu and 66.9% in Chonbuk, and Chonbuk has more small-meal service schools which caused a higher labor cost than Deagu, Secondly, schools in Deagu has purchased not completely processed vegetables and fish and shells than Chonbuk, and Chonbuk(66.9%) has served more Kim-chi products than Deagu(41.6%). Thirdly, nutritional effects and preference have been considered as school dietitians make plans for the menu. Fourthly, the opinions of the school dietitians about processed food are in the order of high sodium content, convenience and the use of preservative, and Chonbuk has responded positively to the articles of future oriented quality, cooking usage and variety while Deagu has thought of it as an economical. The expected effects from the use of processed foods are in the order of saving labor time and student preferences. Fifthly, meat products have been frequently used and more frozen meat products have been used in Deagu and senior high school than Chonbuk and elementary and junior high schools, last, preferences on processed food are in the order of frozen sea food, noodles. dried sea food, processed vegetable and fruit, dairy goods and others. Senior high school dietitians have preferred packed meat products and other frozen processed food more than elementary and junior high school dietitians. The rate of serving processed food had a different depending on the number of students. In this study, dietitians recognize the harmful effects of processed foods over the merits, which means that the rate of using processed food is low. The proper usage of processed foods is thought to improve the preference of students, to have cooking time shortened and to help manage the meal service sanitarily and efficiently. Therefore, companies producing processed foods should do their best to develop safety and health oriented foods to gain the credibility, and the government should make new regulations for people to purchase and obtain processed foods without any doubt.

The Influence of Food Habits on Body Stature of Children (어린이의 식습관(食習慣)이 체위(體位)에 미치는 영향(影響)에 관한 연구(硏究))

  • The Purpose of this study was to determine every possible correlation between food habits and body statures of primary school children, aged ten years old. This study was conducted from July to October of 1975. In July, prepared questionaires concerning life style, anthropometry, food preference, and food behavior were distributed through school teachers to 425 children; 219 boys and 206 girls, in the 5th grade of three elementary schools in the city of Seoul. Then, in October, when subjects had been classified into underweight/obese by statistical analysis, mothers of obese or underweight children were interviewed by the authors to determine weaning history, daily food consumption of their children, and opinions of various snacks for children. Analysis of results in terms of correlation coefficient, chisquare test and percentage calculations, are as follows: 1. Food habits 1) Food $preference{\cdots}{\cdots}A$ varying number of foods were selected from 60 items were accepted. It was found that the food which children liked best was fruit and snacks were popular one. Lowest ranking among LIKED foods were from strongly flavored vegetables and organ meat. In general, girls had more food dislikes than did boys. Selected as liked foods were fruits, rice noodle soup, biscuits, and peanuts. Disliked foods were liver, green onions, onions, green pepper, mushrooms, oysters, shellfish, and pork. Items which children never ate before were liver, mushrooms, fish cake, boiled rice mixed with sorghum, mayonnaise, and fresh water firsh. Reasons which children gave for dislike were undesirable flavor and odor. 2) Food $behavior{\cdots}{\cdots}It$ was found that boys liked sweet and salty flavors more than did the girls who more often liked sour flavor. The majority of children enjoyed evening meals more than lunch and breakfast. A number of children skipped breakfast because of lack of appetite or lack of time before going to school. Snacks were the most popular food, especially among girls. Their snacking habits were formed by the encouragement of the mother, and the relieve boredom. Educational backgrounds of mothers and family economical levels of children were remarkable correlated with mothers' attitudes toward feeding of children. There were several interesting findings relating body stature to some other responses; such as that the obese child has a small number of brothers, higher birth order, higher educated mothers and higher family cultural background. It was also discovered that food perference, except for fat and oil group foods was not related to body stature. Sweet taste was liked best and pepperly taste was mostly disliked. Sour taste was popular in the group of underweight. Underweight children were more finicky, disliked snacking, and didn't get much attention from their mothers. 3) Correlation between body stature and nutrition during their infancy. The majority of children, both from obese and underweight, were breast fed as infant. Twenty five per cent of obese children and 17.4 per cent of underwight children started weaning at $1{\sim}6$ months old. The most popular supplemental food of weaning was cereal gruel for the obese group, while boiled white rice and cereal gruel were most common for the underweight group. Highly significant relationships were found between stature of parents and their children. In the obese group 47.8 per cent of fathers and 45.9 per cent of mothers were overweight; however, none of the fathers and only one mother was found to be underweight. In daily food consumption patterns, meals consisting of bread or noodle were popular in the obese group but disliked by the underweight group. The study found clear contrast in that the obese group liked meat and fish while the underweight group liked fruits and vegetables, especially kimchee. The obese children desired to eat cereal foods, milk and milk products, and fat foods while the underweight group desired to eat fruits and vegetables. Frequency of snacks per day was much greater in the obese group. Foods which mothers believed to be good for the health were carrots, cucumbers, fruits, milk, potatoes, sweet potatoes, and breads, while sweet foods such as candies, drinks. chocolate were considered not good for the teeth. Watching television was not significantly related to statures of children. Most significant relationships were found beween frequencies of family guest meals/and eating-out, and children's statures. Nutritional problems which have been considered for the malnourished children in addition to those of children who have a tendency toward obesity, must be taken into consideration in the development of proper nutrition education through the channels of regular school teaching and teaching by parents in the homes. Korean standards of anthropometric measurements for children should be revised, current measurements show much higher figures than present Korean standards.

Food Sources of Thiamin, Riboflavin and Niacin Based on Food Composition Table and National Annual Food Supply Data in Food Balance Sheet (우리 나라 식품수급표 자료을 분석한 티아민, 리보플라빈, 나이아시신의 주요 급원식품)

  • The purpose of the study was to find out the rich sources of vitamin B-complexes in Korea. Thirty kinds of vitamin B-complex (thiamin, riboflavin, and niacin) rich foods were selected based on vitamin content in 100g edible portion, single serving size, 100kcal energy content, and 1999 national annual food supply data. The results were summarized as follows: \circled1 Most of the thiamin rich foods selected were fishes: half of the foods selected was fishes when based on the contents in single serving size. On the other hand, about half of the foods selected were vegetables when based on the thiamin contents in 100kcal energy content. A relatively large number of food groups were included such as fishes, vegetables, beans, grains, meats, etc. when based on the contents in 100g edible portion, and national food supply data. \circled2 Most of the riboflavin rich foods selected were fishes and shellfishes, and vegetables: half of the foods selected were fishes and shellfishes when based on the content in 100g edible portion; two-thirds of the foods selected were vegetables when based on the content in single serving size; half of the foods selected were vegetables when based on the content in 100kcal. \circled3 The most important niacin sources are fishes: Most than 60% of the foods selected were fishes when based o the 100g edible portion, single serving size, and 100kcal energy content. Laver is very important source of all 3 vitamin B-complexes in Korea when based on the content in 100g edible portion, 100kcal energy content, and national annual food supply but not in single serving size. On the other hand, rice is rice is sources of all 3 vitamin B-complexes when based on the national annual food supply, but not in single serving size. On the other hand, rice sources of all 3 vitamin B-complexes when based on the national annual food supply, but is not included in 30 rich foods selected based on the content in 100g edible portion, single serving size, and 100kcal energy content. Mushrooms are also very important food sources of thiamin, riboflavin, and niacin when based on the vitamin content in 100g edible portion, single serving size, and 100kcal energy content but not included in 10 rich food selected based on the national food supply data.

Change on the Food and Nutrient Intake Patterns of Men over Thirty Years Old in Jeon-ju Area(1991-1997) (전주지역 30세 이상 남성의 식품과 영양소 섭취 형태 변화 (1991-1997))

  • The objective of this study was to estimate changes on the flood and nutrient intake patterns of men over thirty years old in Jeon-Ju area. The first survey was conducted from December in 1991 to January in 1992, tile second one from January to February in 1994 and the third one from July to August in 1997. The nutrition survey using 24-hour recall method was executed to 303 subjects : 89, 82, 132 in 1991, 1994 and 1997, respectively. Results of the study are as follows : Kimchi, rice, garlic and onions were the most frequently eaten food items. Total daily intakes of foods were 85 : 15, 81 : 19 and 81 : 19 in 1991, 1994 and 1997, respectively. The average numbers of foods per person were 15.7, 20.1 and 21.9 daily in 1991, 1994 and 1997, respectively and tends to increase significantly(p<0.05). The minimum numbers of foods per person were 4, 7 and 9 and the maximum numbers of foods per person were 27, 35 and 39 in 1991, 1994 and 1997, respectively. KDDS(Korean\`s Dietary Diversity Score) is determined by how many among the five food groups (cereals, vegetables, meats, milks, oils groups)were consumed per day. Most subjects earned the KDDS "3" ; 61, 46 and 42% in 1991, 1994 and 1997, respectively. Average daily energy intakes wee 1,62㎉(72% of RDA), 2,063㎉(89% of RDA) and 1,818㎉ (79% of RDA) in 1991, 1994 and 1997, respectively. Energy intake rates of cereals : total energy intake were 65, 59, and 60% in 1991, 1994 and 1997, respectively, which were decreasing. Protein intakes were 58g(72% of RDA), 79g(107% of RDA) and 71g(97% of RDA), respectively and animal protein comprised 46, 53, and 59%, respectively ; which were increased. Fat intakes were 12g, 20g and 20g, respectively and animal protein comprised 38, 46, and 48% ; which were increased. Fat intakes were 12g, 20g and 20g, respectively, of which animal fat comprised 46, 53, and 59%, respectively ; which were increased, too. Malnourished (under 75% of RDA) rates were respectively 64, 34, and 47% in terms of energy ; 64, 31 and 33% in protein ; 67, 51, and 61% in calcium ; 53, 26, and 18% in iron ; 85, 74 and 84% in Vitamin A. Super-nourished(above 125% of RDA) rates were respectively 1, 13, and 3% in energy ; 1, 29, and 21% in protein ; 5, 18, and 7% in calcium ; 16, 31, and 7% in iron ; 16, 31, and 7% in Vitamin A, 42, 76, and 62% in Vitamin C. The percentages of calories from protein : fat : carbohydrate were 14 : 12 : 74, 15 : 16 : 69 and 16 : 17 : 67 in 1991, 1994 and 1997, respectively. KDDS(number of five food groups per day), Meal Balance(number of five food groups per meal), DVS(average numbers of foods per person), amount of foods correlated positively with all the nutrient intakes(p<0.05). KDDS was positively correlated with energy, protein, fat, calcium, thiamin, riboflavin and niacin(p<0.05)in(p<0.05)

The Study on Dietary Patterns of Korean food and the Level of Proper Eating Habits According to the Recognition of the Kimchi Cooking Method - Based on the Result of 2014 National Dietary Survey - (김치조리법 인지 여부에 따른 한식식사패턴 및 바른식생활 실천에 관한 연구 - 2014 국민식생활실태조사 결과를 토대로 -)

  • Purpose: This study investigated the dietary patterns associated with Korean food and the level of proper eating habits according to recognition of the Kimchi cooking method, and aimed to suggest the necessity of dietary education of traditional foods such as Kimchi. Methods: Based on the results of the national dietary survey conducted in 2014 by Ministry of Agriculture, Food and Rural Affairs of Korea, a total of 1200 subjects were classified into two groups, one that knew how to make Kimchi (53.8%) and another that did not (46.2%). Results: The group that knew how to make Kimchi (FG) showed significantly higher scores in knowledge of how to cook most types of Korean foods and traditional fermented foods than the other group (NG). Moreover, FG showed significantly higher scores in regularity in meals and a higher frequency of Korean foods such as rice, Kimchi, and grilled or stewed food, while it showed significantly lower scores in dietary risk factors than NG. In addition, FG showed significantly higher scores in dietary education interest and number of meals with family during the week than NG. Finally, FG had significantly higher scores in the degrees of practice of all eight items related to proper eating habits. Conclusion: Since recognition of Kimchi cooking has a great influence on maintenance of dietary life, dietary education to improve the cooking ability of traditional foods should be further strengthened.

  • There are limited data on healthy dietary patterns protective against metabolic syndrome (MetSyn) development. We identified dietary patterns among middle-aged and older adults and investigated the associations with the incidence of MetSyn. A population-based prospective cohort study included 5,251 male and female Koreans aged 40-69 years. At baseline, all individuals were free of MetSyn, other major metabolic diseases, and known cardiovascular disease or cancer. Cases of MetSyn were ascertained over a 6-year of follow-up. Dietary patterns and their factor scores were generated by factor analysis using the data of a food frequency questionnaire. We performed pooled logistic regression analysis to estimate multivariable-adjusted relative risk (RR) and 95% confidence interval (CI) for associations between factor scores and MetSyn risk. Two dietary patterns were identified; (1) a healthy dietary pattern, which included a variety of foods such as fish, seafood, vegetables, seaweed, protein foods, fruits, dairy products, and grains; and (2) an unhealthy dietary pattern, which included a limited number of food items. After controlling for confounding factors, factor scores for the healthy dietary pattern were inversely associated with MetSyn risk (P-value for trend < 0.05) while those for the unhealthy dietary pattern had no association. Individuals in the top quintile of the healthy diet scores showed a multivariable-adjusted RR [95% CI] of 0.76 [0.60-0.97] for MetSyn risk compared with those in the bottom quintile. The beneficial effects were derived from inverse associations with abdominal obesity, low HDL-cholesterol levels, and high fasting glucose levels. Our findings suggest that a variety of healthy food choices is recommended to prevent MetSyn.

  • The survey was carried out to obtain some fundmental data to improve the dietary life and to establish the nutritonal education and policy on inhabitants limed in isle area near by demilitarized zone in Korea. For this, 33 families in the area of Kyodong island located at Kanghwa-Gun, Kyungki province were randomly selected. Trained surveyors visited each house to survey the food and nutritional status in summer during 3 days in August, 1987. The results are summarized as follows ; The number of foods they were taking totalled 17 categories and 134 kinds of which 104 kinds were vegetable foods. The average amount of food intake was 1465.3g per person per day, animal food occupied 9.6% only. The intake amount of fruit among vegetable foods, and fishes, shells, milk and eggs among animal foods was lower than the national average. Each proportion of carbohydrates fat and protein to the total energy intake was 70.4%, 9.7% and 19.9%. The foods they used to take a lot were rice, potatoes. cucumbers, cabbage KIMCHIE and YULMOO KIMCHIE in order of their intake amount. The energy intake was 3064 Kcal which is higher than nutritional requirements, and the energy ratio of cereals to the total energy in take is 76%. If the amount of fat intake is fixed to 20% of total energy intake, the amount of fat intake is 68g, but the actual amount of fat intake was only 33g. With an increase of total energy intake, supply of calcium and vitamin A should be increased much more.

Relations between the Micorfloral Composition and the Environmental Factors Affecting Korean Infants during Lactation (수유기 영아의 장내균총 조성과 환경인자와의 관계)

  • The relations between micorfloral compositions and environmental factors of 32 Korean infants were sought through statistical analysis after examination of fecal bacterial and questions to their mothers about feeding experiences at three different times for each subjects, about one week after birth, before weaning (2-3 months after birth), and after weaning 95-7 months after birth). The majority of mothers fed their infants cereal foods after the age of 4 months and began weaning with fruit juice and commercial weaning foods. Defection frequencies and fecal pH of infants decreased significantly during the examination period and 37.5% of total infants in fecal samples increased significantly during the examination period, which means that the kinds of bacterial genera increase with aging of infants. Frequencies of streptococci were significantly higher in infants fed delivered by Caesarian section than infants delivered naturally. Frequencies of clostridia were significantly higher in infants fed with cereal food before 4 months of age than after 5 months. The infants fed with probiotics showed significantly higher frequencies of veillonella at about 1 week old. They also showed significantly higher frequencies of clostridia before weaning than the infant fed with no probiotics, but significantly lower frequencies of C. perfringens before weaning. The infants fed with probiotics showed significantly higher number of streptococci at the age of about 1 week and significantly higher numbers of total aerobes before weaning, but significantly lower numbers of bacteroides after weaning than their counter parts. The fecal pH was directly proportional to the number of clostridia, klebsiella, and total aerobes at about 1 week after birth, to the number of E. coli before weaning, and to the number of streptococci and clostridia after weaning. Fecal pH had a negative relationship to the total number of anaerobes in 1-week-old infants. The infants that had diarrhea during lactation showed higher frequencies of bacteroides before weaning than those that didn't.
