송절편을 첨가한 송이주의 향기 성분 (Flavor Compounds in Pine Mushroom Liquor Added with Pine Tree Chips)

  • 송이버섯이 첨가된 전통주를 제조한 후 송절편을 첨가하여 첨가량과 숙성 기간에 따른 향기 성분의 변화를 기체 크로마토그래피 질량분광법을 통해 조사하였다. 송절편을 첨가하지 않은 대조구에서는 총 3종의 향기 성분이 검출되었으나, 송절편을 첨가한 송이주에서는 총 15종의 향기 성분이 검출되었다. 송절편을 5% 첨가한 실험구에서 송이버섯 특유의 향기 성분인 β-fenchyl alcohol과 2-octanol, methyl cinnamate은 숙성기간 동안 상대적인 함량이 증가하여 8주 후에는 각각 67.57%, 2.14%와 0.94%를 나타냈다. 주성분 분석 결과 송절편 첨가에 의한 β-fenchyl alcohol의 상대적 함량 증가가 송이주의 향미 특성에 영향을 미치며, 송이주의 향미 특성은 송절편의 첨가량 보다 숙성 기간에 의해 더 큰 영향을 받는 것으로 판단된다.

Minimization of Off-Flavor Occurrence During the Storage of Modified Atmosphere Packaged Pleurotus ostreatus

  • This study was conducted to investigate the minimization of off-flavor occurrence and the maintenance of high quality in modified atmosphere packaged Pleurotus ostreatus during the storage. There are 4 treatments used to preserve high quality and for deodorization of MAP mushroom: Artemisia princeps, Artemisia capillaries, green tea and activated charcoal. The mushrooms were packed in polyethylene film with each treatment and were stored at 5 and $20^{circ}C$. No difference was observed in weight loss, $CO_2\;and\;O_2$ concentration, or color of mushrooms packed with or without treatment. However, the principal component analysis (PCA), electronic nose, revealed differences in off-flavor occurrence between control (MAP mushroom without treatment) and treatment groups at $5^{\circ}C$. This result suggested that Artemisia princeps and Artemisia capillaries was masking the off-flavor in MAP mushroom because the unique flavor of them was strongly revealed and green tea and activated charcoal might have a role of removing the off-flavor by adsorbing ethanol and acetaldehyde, which is known to cause off-flavor. The sensory test showed that Artemisia princeps and Artemisia capillaries dough treatment inhibited microbial growth.

능이버섯의 향기특성 (Aroma Characteristics of Neungee(Sarcodon aspratus))

  • 능이버섯의 향기성분을 조사하기 위하여 SDE, SFE, headspace 로 추출하고 GC, GC-MS로 동정하였으며, 능이버섯의 향기특성을 조사하기 위하여 GC-olfactometry 방법중 AEDA법을 이용하였다. 그 결과 SDE 추출물에서는 33개, SFE추출물에서는 26개, headspace 추출물에서는 17개의 화합물이 동정되었다. 확인된 화합물의 주성분은 1-octen-3-ol, 1-octen-3-one, 3-octanone, 2-octen-1-ol, 3-octanol, 1-octanol 등의 $C_8$ 화합물과 benzeneacetaldehyde등이었다. AEDA 결과 능이버섯의 주된 향기특성으로는 생능이버섯내(unknown), 생버섯내(1-octen-3-ol), 곰팡이내(1-octen-3-one), 흙내(3-octanol), 풀내(1-octanol), 강한 풀내(2-octenal), 단 꽃내(benzeneacetaldehyde), 목재내(L-linalool), 치즈내(3-hydroxy-2-butanone), 상큼한 단내(2-decanone), 약간의 불쾌한 고기내(3-methyl thiopropanol), 시큼한 우유내(propanoic acid) 등으로 나타났다.

  • Shiitake mushroom contained numerous nutrients, special flavor (lenthionine) and taste. In Asia, they are thought to have numerous medical properties f3r several diseases such as diabetes, anemia, tumors. Phosphates are known to increase hydration and water binding, stabilize meat emulsions, improve juiciness and tenderness, provide mineral supplementation, and maintain flavor of processed meat products. A Comprehensive Review of Tropical Milky White Mushroom (Calocybe indica P&C)

  • A compressive description of tropical milky white mushroom (Calocybe indica P&C var. APK2) is provided in this review. This mushroom variety was first identified in the eastern Indian state of West Bengal and can be cultivated on a wide variety of substrates, at a high temperature range ($30{\sim}38^{\circ}C$). However, no commercial cultivation was made until 1998. Krishnamoorthy 1997 rediscovered the fungus from Tamil Nadu, India and standardized the commercial production techniques for the first time in the world. This edible mushroom has a long shelf life (5~7 days) compared to other commercially available counterparts. A comprehensive and critical review on physiological and nutritional requirements viz., pH, temperature, carbon to nitrogen ratio, best carbon source, best nitrogen source, growth period, growth promoters for mycelia biomass production; substrate preparation; spawn inoculation; different supplementation and casing requirements to increase the yield of mushrooms has been outlined. Innovative and inexpensive methods developed to commercially cultivate milky white mushrooms on different lignocellulosic biomass is also described in this review. The composition profiles of milky white mushroom, its mineral contents and non-enzymatic antioxidants are provided in comparison with button mushroom (Agaricus bisporus) and oyster mushroom (Pleurotus ostreatus). Antioxidant assay results using methanol extract of milky white mushroom has been provided along with the information about the compounds that are responsible for flavor profile both in fresh and dry mushrooms. Milky white mushroom extracts are known to have anti-hyperglycemic effect and anti-lipid peroxidation effect. The advantage of growing at elevated temperature creates newer avenues to explore milky white mushroom cultivation economically around the world, especially, in humid tropical and sub-tropical zones. Because of its incomparable productivity and shelf life to any other cultivated mushrooms in the world, milky white mushroom could play an important role in satisfying the growing market demands for edible mushrooms in the near future.

유통 중 신선편이 버섯 제품의 포장실태 및 관능적 품질 조사 (Survey on packaging status and sensory quality of fresh-cut mushrooms from retail markets)

  • 신선편이 버섯의 유통 시 포장실태 및 관능적 품질을 파악하기 위하여 2009년 1월~10월에 계절별로 수도권 인근의 대형할인마트를 직접 방문하여 신선편이 버섯 제품 총 51종을 수집하여 조사하였다. 수집된 신선편이 버섯은 혼합형과 단독형으로는 느타리버섯, 팽이버섯은 송이채 다듬어지거나 큰느타리버섯, 표고버섯은 슬라이스나 다이스 절단되어 바로 조리(튀김, 볶음, 전골, 육개장, 찌개 등) 에 사용할 수 있도록 하였고 대부분이 알루미늄이나 PS, PET, nylon 등을 재료로 한 용기에 담겨 PVC 랩이나 견고한 PP, PS 덮개 형태로 포장되었으며 89%가 제조일이나 유통기한을 표시하였다. 수집된 신선편이 버섯 제품의 관능학적 품질 조사 결과, 갈변 발생이 심한 것이 10%, 이취 발생이 심한 것이 4%를 차지하였으며 전체적 품질은 90%의 제품이 판매 가능한 수준이었다. 계절에 따른 관능학적 품질에 차이를 보여 가을과 겨울에는 상품성이 높게 유지되었으나 봄과 여름에는 갈변이나 이취 발생 억제를 위한 신선도 관리에 유의할 필요가 있는 것으로 판단되었다.

한국산 털목이버섯의 휘발성 향기성분 (Volatile Flavor Components of Korean Auricularia polytricha (Mont.) sacc. Mushroom)

  • 건조 털목이버섯의 휘발성 향기성분을 분석하기 위해 SDE 방법으로 정유성분을 분리한 다음 GC-MS를 이용하여 성분을 확인하였다. 확인된 30개의 휘발성 향기성분중 acid 11종류, alcohol 10종류, aldehyde 5종류, ketone 3종류, 기타 1종류였다. 건조된 털목이 버섯의 주요 향기성분은 hexadecanoic acid(16.74%), benzeneethanol(7.77%), pentadadecanoic acid(7.59%), dihydro-5-pentyl-2(3H)-furanone(4.28%), tetradecanoic acid(3.37%), pentanoic acid(3.68%), 1-octen-3-ol(1.26%)등이 확인되었다.

느타리버섯 통조림 제조에 있어서 관능적 특성의 최적화 (Optimization of Sensory Properties in Preparation of Canned Oyster Mushroom)

  • Four-dimensional response surface methodology was applied to determine the optimum preparation conditions and to monitor sensory qualities of canned oyster mushroom during preparation. The optimum preparation conditions predicted for each corresponding sensory parameter of canned oyster mushroom were 181.29 g of oyster mushroom 205.36 ml of solution and 6.49min of roasting time for color, 214.01g, 195.79ml and 5.07min for appearance, 227.71g, 224.26ml and 6.50min for flavor, 250.30g, 183.63ml and 17.32min for taste, 211.59g, 178.21ml and 17.79min for mouth-feel, 249,.02g, 188.79ml and 17.80min for overall palatability of canned oyster mushroom, respectively. The optimum conditions, which satisfied with all sensory properties of canned oyster mushroom, were 240g, 200ml and 17min for content of oyster mushroom, content of solution and roasting time, respectively. Sensory scored predicted at the optimum conditions were in good agreement with experimental ones.

냉동 자연 송이버섯의 피클 조리법 표준화를 위한 연구 (A Study on the Characteristics of Pine-tree Mushroom(Tricholoma matsutake Sing.) Pickle for the Standard Recipe)

  • This study investigated the rheological and sensory characteristics of pickle with frozen pine mushroom. P3(Developed pickle seasoning) was the best by preference among three kinds of pine mushroom pickle seasoning. For flavor and functionality, pine mushroom pickle was processed by using three kinds of method(P3-1: P3+cinnamon 10 g, P3-2: P3+licorice 10 g and P3-3: P3+licorice 5 g+cinnamon 5 g). As a result, the product from P3-3(P3+licorice 5 g+cinnamon 5 g) was the best preferred pine mushroom pickle. The pH value of P3-3 was 2.15, 42.9 degrees Brix, and its color value was L(54.65), a(-1.61), b(17.87). Its texture level was higher than that of other products, but it would be lowered on storage. Until the 28th day of storage, microorganisms in pine mushroom pickle seasoning were detected less than 30 CFU/mL.

진공예냉에 의한 표고버섯의 선도 연장 (Freshness Keeping of Shiitake Mushroom by Vacuum Cooling)

  • Vacuum cooling were carried out for freshness keeping of shiitake mushroom. Shiitake mushroom was cooled within 30 minutes from $20.5^{\circ}C$ to $0.5^{\circ}C$ by vacuum cooling, and then temperature drop of $6.6^{\circ}C$ per weight loss of 1% was taken place during precooling. Weight loss, surface discoloration and softening were reduced by precooling. Judging from organoleptic properties such as cap opening, discoloration, texture and off-flavor, shelf-life of precooled mushroom was lengthed by 20% than that of non-treated mushrooms. Considering effect of packing material on freshness of shiitake mushroom after precooling, weight retention, hardness and organoleptic properties of mushroom packed with PVC wrap were superior to those packed in carton box.
