We investigated nutritional characteristics and active components in the liver of Wagyu${\times}$Qinchuan cattle and Qinchuan cattle produced in Shaanxi (China). We observed significant differences (p<0.05) in the proximate composition of protein, fat, carbohydrate, total energy, and glycogen. Wagyu${\times}$Qinchuan cattle liver showed higher (p<0.05) sodium, iron, zinc, and selenium concentrations than Qinchuan cattle liver. The amino acid composition of Wagyu${\times}$Qinchuan cattle liver was richer (p<0.05) in 13 types of amino acids, with the exception of Asp (10.06%), Val (5.86%), and Met (1.72%). Total essential amino acids accounted for almost half the composition (39.69%) in Wagyu${\times}$Qinchuan cattle liver. Wagyu${\times}$Qinchuan cattle liver had lower (p<0.05) levels of monounsaturated fatty acids (18.2%), but higher (p<0.05) levels of polyunsaturated fatty acids (35.11%), compared with Qinchuan cattle liver (23.29% and 28.11%, respectively). The thrombogenic index was higher in Qinchuan cattle liver (0.86) than in Wagyu${\times}$Qinchuan cattle liver (0.70), and the glutathione (38.0 mg/100g) and L-carnitine (2.12 ${\mu}M/g$) content was higher (p<0.05) in Wagyu${\times}$Qinchuan cattle liver than in Qinchuan cattle liver (29.8 mg/100g and 1.41 ${\mu}M/g$, respectively). According to the results obtained, the liver of Wagyu${\times}$Qinchuan cattle, which is insufficiently used, should be increasingly utilized to improve its commercial value.

Objective: The objective of this study was to investigate the influence of dietary supplementation of Eucommia ulmoides leaf extract (ELE) on muscle metabolism and meat quality of pigs with and without pre-slaughter transportation. Methods: In a 43-day feeding experiment, a total of 160 pigs with an initial body weight 60.00±2.00 kg were randomly assigned into four groups in a completely randomized design with 10 replicates. Pigs in groups A and C were fed a basal diet and pigs in groups B and D were fed a basal diet supplemented with 0.5% ELE. Pigs were slaughtered with (group B and D) or without (group A and C) pre-slaughter transport. Muscle chemical composition, postmortem glycolysis, meat quality and muscle metabolome were analyzed. Results: Dietary ELE supplementation had no effect on the proximate composition of porcine muscle, but increased free phenylalanine, proline, citruline, norvaline, and the total free amino acids in muscle. In addition, dietary ELE increased decanoic acid and eicosapentaenoic acid, but decreased heptadecanoic acid, oleic acid, trans-oleic acid, and monounsaturated fatty acids in muscle. Meat quality measurement demonstrated that ELE improved meat water holding capacity and eliminated the negative effects of pre-slaughter transport on meat cooking yield and tenderness. Dietary ELE reduced muscle glycolytic potential, inhibited glycolysis and muscle pH decline in the postmortem conversion of muscle to meat and increased the activity of citrate synthase in muscle. Metabolomics analysis by liquid chromatographic tandem mass spectrometric showed that ELE enhanced muscle energy level, regulated AMP-activated protein kinase (AMPK) signaling, modulated glycogenolysis/glycolysis, and altered the metabolism of carbohydrate, fatty acids, ketone bodies, amino acids, purine, and pyrimidine. Conclusion: Dietary ELE improved meat quality and alleviated the negative effect of pre-slaughter transport on meat quality by enhancing muscle oxidative metabolism capacity and inhibiting glycolysis in postmortem muscle, which is probably involved its regulation of AMPK.
Objective: This study examines the genetic factors influencing the phenotypes (four economic traits:oleic acid [C18:1], monounsaturated fatty acids, carcass weight, and marbling score) of Hanwoo. Methods: To enhance the accuracy of the genetic analysis, the study proposes a new statistical model that excludes environmental factors. A statistically adjusted, analysis of covariance model of environmental and genetic factors was developed, and estimated environmental effects (covariate effects of age and effects of calving farms) were excluded from the model. Results: The accuracy was compared before and after adjustment. The accuracy of the best single nucleotide polymorphism (SNP) in C18:1 increased from 60.16% to 74.26%, and that of the two-factor interaction increased from 58.69% to 87.19%. Also, superior SNPs and SNP interactions were identified using the multifactor dimensionality reduction method in Table 1 to 4. Finally, high- and low-risk genotypes were compared based on their mean scores for each trait. Conclusion: The proposed method significantly improved the analysis accuracy and identified superior gene-gene interactions and genotypes for each of the four economic traits of Hanwoo.
The aim of this research was to evaluate: 1) the fatty acid profile of ten muscles from high marbled (HM, quality grade 1++) and low marbled (LM, quality grade 2) Hanwoo carcass, 2) the relationship between the fatty acid profile and sensory traits. There were significant (p<0.001) differences in fat content and fatty acid composition among the 10 muscles obtained from HM and LM Hanwoo steers. The proportions of SFA (saturated fatty acid), MUFA (monounsaturated fatty acid) and PUFA (polyunsaturated fatty acid) were significantly (p<0.001) different among the 10 muscles due to differences in all fatty acids except eicosapentaenoic acid (EPA, C20:5n-3). The high-fat muscles had a lower n-6/n-3 ratio compared to the low-fat muscles (p<0.001). LM muscles had a significantly (p<0.05) higher proportion of SFA than HM muscles due to a higher proportion of stearic acid (C18:0). On the contrary, HM muscles had a significantly (p<0.01) higher proportion of MUFA than LM muscles due to higher oleic acid (C18:1n-9) proportion. SFA had a significant correlation with CIE a* (r=0.281; p<0.01) and drip loss (%) (r=−0.233; p<0.001). Cooking loss (%) had a significantly (p<0.05) negative correlation with PUFA (r=−0.233; p<0.05). Overall palatability was positively correlated with SFA (r=0.262; p<0.01), but negatively correlated with PUFA (r=−0.567; p<0.001). There was no significant correlation between oleic acid and any of the sensory traits (p>0.05).
본 연구에서는 기존의 열풍건조기계의 단점을 보완하고 높은 온도에 의한 영양소 손실을 막기 위하여 저온 진공 건조기를 도입하여 고등어를 건조 시킨 후 마우스에 섭취시켜 고등어에 의한 혈청, 심장, 신장 및 지방조직에서의 지방산 조성 변화와 지질대사 개선효과를 알아보고자 하였다. 고등어군의 혈청, 심장 및 신장 균질물에서 중성지질, 총 콜레스테롤 및 LDL-콜레스테롤의 함량이 대조군(control)보다 낮은 경향이었으며 HDL-콜레스테롤 함량의 경우 고등어군의 혈청과 심장 균질물에서 대조군(control)보다 높은 경향을 나타내었다. 혈청 지방산 조성의 경우, 고등어군의 총 n-6 지방산 함량은 대조군(control)보다 감소한 반면 총 n-3 지방산의 함량은 고등어군에서 대조군(control)보다 증가하였다. N-3 계열 지방산 중에서 특히 22:6n-3의 함량은 대조군(control)에 비해 185% 증가하였다(p<0.05). 심장의 지방산 조성의 경우, 고등어군의 총 monounsaturated 지방산의 함량에서는 대조군(control)에 비해 유의적으로 감소하였다(p<0.05). 총 n-6 지방산은 유의적 차이는 없었으나, 총 n-3 지방산은 대조군(control)에 비해 증가하였고 그 중에서 22:5n-3와 22:6n-3의 함량은 고등어군에서 대조군(control)보다 증가하였다(p<0.05). 신장의 지방산 조성의 경우, 총 지방산 함량은 고등어군에서 대조군(control)보다 감소하였고 총 n-3 지방산의 함량은 대조군(control)에 비해 고등어군에서 증가하였으며 그 중에서 22:6n-3의 함량은 105%로 증가하였다(p<0.05). 지방조직의 지방산 조성의 경우, 총 monounsaturated 지방산의 함량은 고등어군에서 대조군(control)보다 증가하였고 고등어군의 총 n-6 지방산의 함량은 대조군(control)보다 감소하였으나(p<0.05), 총 n-3 지방산들 중 DHA 함량은 고등어군에서 매우 높은 수치를 나타내었다. 이상의 결과로부터 n-3 지방산을 많이 함유한 건조 고등어 식이는 혈청, 심장 및 신장의 n-3 지방산의 함량을 증가시켰으며 이렇게 증가된 n-3 지방산은 각 조직의 중성지질, 총콜레스테롤 및 LDL-콜레스테롤 농도의 감소와 HDL-콜레스테롤 농도의 증가 경향과 밀접한 관련이 있는 것으로 여겨지며 향후 n-3 지방산의 급원으로 건조 고등어의 활용도가 기대된다.

Objective: The purpose of this study was to evaluate the effect of rapeseed and linseed oil supplementations on performance and meat quality of lambs. Methods: The experiment was conducted on 18 growing (100-day-old) lambs of $19.7{\pm}1.9kg$ live weight, assigned to 3 groups of 6 animals each. Control lambs were fed meadow hay and concentrate alone. Experimental animals additionally received rapeseed or linseed oils at a dose of 50 g/d. The lambs were slaughtered at an average body weight of $35.7{\pm}0.5kg$. Results: The dressing percentage was higher in lambs fed rapeseed oil. Total saturated fatty acids (SFA) and C15:0, C16:0, C17:0, C21:0, C24:0 were lower in longissimus dorsi muscle (MLD) in lambs fed linseed oil. Supplementation of diet with linseed oil decreased concentrations of total monounsaturated fatty acids and C16:1, C17:1, C18:1 cis-9 in MLD. The concentrations of n-3 polyunsaturated fatty acids (PUFA) and C18:3 n-3, C20:5 n-3 in MLD were higher in lambs fed linseed oil than in other groups. Oils supplementation to diets resulted in increased concentration of C22:6 n-3 in MLD. The inclusion of linseed oil into the diet increased the contents of total PUFA, n-3 PUFA and C18:3 n-3, C20:5 n-3, C22:6 n-3 in semitendinosus muscle in comparison to control. A tendency towards a lower n:6/n:3 ratio in MLD was observed when lambs were supplemented linseed oil. Conclusion: The supplementation of linseed oil to diets seems to reduce the concentration of SFA and increase the concentration of n-3 PUFA. The n-6/n-3 ratio is an important nutritional factor, and its value has been favorably decreased below 2, thereby achieving an important target related to human health. Due to these changes carcass fatty acid profile was improved, and so enhanced lamb meat healthy properties.
The purpose of this study is to determine the possibility of using Flos Sophora japonica as natural health food source. To accomplish this purpose, the contents of general and antioxidative nutrients of Flos Sophora japonica a were measured. The contents of carbohydrate, crude protein, crude lipid and ash are 67.76%, 19.87%, 4.61% and 7.76%. And the calories of Flos Sophora japonica Linne was 318.32 Kcal. Total dietary fiber was 25.35% of total carbohydrates. The percentages of water soluble dietary fiber to insoluble dietary fiber were 1.80 % and 23.56 %, respectively. The protein were contained total 18 different kinds of amino acids. The contents of non-essential and essential amino acids were 4,898.78mg and 5,953.51mg. The K was the largest mineral followed by Ca, P and Mg, which means Flos Sophora japonica Linne is alkali material. The contents of saturated fatty acids, monounsaturated fatty acids and polyunsaturated fatty acids were 29.69%, 34.93% and 35.38%. Therefore, the amount of the total unsaturated fatty acid was higher than that of any other plant. The content of vitamin C in Flos Sophora japonica Linne was higher than that of any other plant, which suggest that it could increase blood elasticity. The content of rutin, which is responsible for capillary vessel permeability, was 22.60%. The contents of water soluble antioxidative materials in 1 mL of water-extracted Flos Sophora japonica Linne were 3.9 ${\mu}$g which is comparable to 1233.0 mmol of vitamin C in antioxidant effect. The general nutrients and other antioxidatant bioactive materials in Flos Sophora japonica Linne were also potential materials for good health food. It is expected that follow up study of Flos Sophora japonica Linne through developing processed food and evaluation of their functional properties would provide useful information as a source of medicinal foods.
본 연구는 갈화를 대상으로 약이성 음식으로의 활용을 위한 가능성을 타진하고자 계획 수행되었다. 따라서 갈화의 영양성분 분석을 통한 식품영양학적 접근, 생리활성 기능을 기대할 수 있는 관련 물질 함량의 분석하였다. 식품영양학적 접근에서의 갈화의 일반성분은 건량기준으로 당질 69.2%, 조단백질 19.9%, 조지방 2.2% 및 조회분 8.9%이었고 갈화 100 g의 함유 열량은 340.4 kcal로 분석되었으며, 총 식이섬유소 함량은 건량기준으로 총 당질 중 85.1%이었고 수용성 및 불용성 식이섬유소 함량은 각각 12.0%, 46.7%로 나타났다. 또한, 총 18종의 아미노산으로 구성되었으며 필수아미노산과 비필수아미노산 함량은 각각 5.0 g, 6.7 g이었고, 무기질 중 칼슘의 함유량이 가장 높았고 그 다음이 칼륨, 마그네슘, 인 순으로 나타나 알칼리성 재료임을 알 수 있었으며, 지방산 함량의 경우 총 포화지방산 25.37%, 단일불포화지방산 33.61% 및 다가불포화지방산 35.68%로 구성되어 있어 다른 식물류에 비해 불포화지방산의 함량이 높은 것으로 나타났다. 갈화 70% 에탄올, 헥산, 클로로포름, 에틸아세테이트, 부탄올과 물 추출물에서 DPPH 라디칼 소거능의 항산화 효과 결과는 $RC_{50}$값이 217.3, 134.5, 116.7, 109.9, 129.8, 473.5 ${\mu}g$으로 나타나, 에틸아세테이트 분획물에서 가장 높은 항산화 효과를 나타내었다.
쇠고기는 고품질의 단백질과 함께 비타민과 광물질을 공급해 주지만, 포화지방산과 콜레스테롤 때문에 일부 소비자들은 부정적인 이미지를 지니고 있다. 쇠고기내 과다한 지방, 특히 콜레스테롤,은 사람의 건강과 불가분의 관계를 지니며, 심장병과 고혈압을 비롯한 각종 대사성 질환의 주요 원인이다. 그러나, 한우 쇠고기내 콜레스테롤 함량에 관한 기초자료는 매우 제한되어 있다. 따라서, 본 연구는 한우, 앵거스, 및 화우 교잡종의 등심내 콜레스테롤 함량과 지방산 조성에 대한 비교 자료를 제공하고자, 61두의 한우와 각 15두의 앵거스 및 화우 교잡종 거세우로부터 등심을 채취하여 콜레스테롤 함량과 지방산 조성을 분석하였다. 한우의 등심내 콜레스테롤 함량은 32.36mg/100g 부터 75.42mg/100g까지 개체별로 광범위한 분포를 나타내었으며, 근내지방도가 “1”에서 “8”로 증가함에 따라 콜레스테롤 함량이 평균 42.76±1.41mg/100g에서 51.43±6.12mg/100g으로 증가하였다. 앵거스 거세우의 경우, 근내지방도가 가장 낮은 “Practically devoid”의 경우 56.84 mg/100g, 근내지방도가 가장 높은 “Abundant”의 경우 72.85 mg/100g을 나타내어, 근내지방도가 증가할수록 콜레스테롤 함량이 증가함을 알 수 있었다. 화우 교잡종 거세우의 경우, “Practically devoid”는 69.23mg/100g, “Moderately Abundant”는 78.93 mg/100g을 나타내어 전체적으로 앵거스 거세우와 하였다. 한우, 앵거스 및 화우 교잡종의 등심내 불포화지방산:포화지방산 및 단가불포화지방산:포화지방산의 비율이 각각 1.48, 1.08 및 1.17과 1.41, 1.03 및 1.10을 나타내어, 한우 거세우에서 현저하게(각각 P< 0.0135 및 P<0.0379) 높게 나타났다. 이상의 결과를 종합해 보면, 한우 거세우는 앵거스나 화우 교잡종 거세우 등심에 비하여 콜레스테롤 함량과 포화지방산의 비율이 현저하게 낮은 반면, 불포화지방산의 비율은 유의하게 높았다. 그러나, 향후 이들 육우의 유전적 배경, 사양 조건, 출하월령, 출하두수 및 샘플링 부위 등을 종합적으로 고려한 후속 연구가 필요한 것으로 판단된다.

- 기타 정상적인 서비스 운영에 방해가 될 경우
② 상기 이용제한 규정에 따라 서비스를 이용하는 회원에게 서비스 이용에 대하여 별도 공지 없이 서비스 이용의
일시정지, 이용계약 해지 할 수 있습니다.
제 17 조 (전자우편주소 수집 금지)
회원은 전자우편주소 추출기 등을 이용하여 전자우편주소를 수집 또는 제3자에게 제공할 수 없습니다.
제 6 장 손해배상 및 기타사항
제 18 조 (손해배상)
당 사이트는 무료로 제공되는 서비스와 관련하여 회원에게 어떠한 손해가 발생하더라도 당 사이트가 고의 또는 과실로 인한 손해발생을 제외하고는 이에 대하여 책임을 부담하지 아니합니다.
제 19 조 (관할 법원)
서비스 이용으로 발생한 분쟁에 대해 소송이 제기되는 경우 민사 소송법상의 관할 법원에 제기합니다.
[부 칙]
1. (시행일) 이 약관은 2016년 9월 5일부터 적용되며, 종전 약관은 본 약관으로 대체되며, 개정된 약관의 적용일 이전 가입자도 개정된 약관의 적용을 받습니다.
