The Optimum Effect of Long Chain Fatty Monoglyceride from Microemulsion by Lipase Catalyst (마이크로에멀젼에서 리파아제 촉매에 의한 고급지방산 모노글리세리드의 생성에 있어 최적효과)

  • Mono alkyl glycerides have bean obtained in good yield by enzyme catalyst from soybean oil. The reaction was carried out in an oil rich microemulsion formula. Best results were obtained with sodium bis(2-ethyl hexyl) sulfo succinate(AOT), isooctane as hydrocarbon component and buffer of pH 7. The enzyme used was a 1,3-specific lipase which leaves the 2-position intact. However, the 2-monoglyceride formed slowly undergoes long chain acyl migration to 1-mono-glyceride. Optimal reaction time at $35^{\circ}C$ reaction temperature was found to be three hour.

A Fabrication and Antifogging Performance of Random Polypropylene Film Containing Monoglycerides as Antifogging Agent

  • In this study, random polypropylene (rPP) was compounded with two of monoglycerides, namely, glyceryl monolaurate (GML) and glyceryl monostearate (GMS), as antifogging agents to improve its antifogging performance. rPP film samples were prepared by a film-casting method using a three-roll casting machine after melt blending through a twin screw extruder. With an increase in the monoglyceride content, the melt flow index for rPP films with GML and GMS increased, and their yield strength decreased. The incorporation of GMS in rPP was proven to be more effective in improving its physical properties than was rPP with GML. When GML and GMS were separately added to the rPP film at contents of more than 1 phr and more than 5 phr, respectively, the film exhibited antifogging performance.

Influence of Water and Surfactants on Wheat Starch Gelatinization and Retrogradation (수분과 계면활성제가 밀전분의 호화와 노화에 미치는 영향)

  • The effects of water contents and surfactants, sodium stearoyl-lactylate, sucrose ester and distilled monoglyceride(Dimodan) on wheat starch gelatinization and retrogradation were studied by differential scanning calorimetry. The endothermic peak patterns of starch varied with water content of starch. When water content was less than 30%, gelatinization did not occur. The onset temperature of gelatinization peak of native starch was $59{\sim}60^{\circ}C$ and that of endothermal peak of retrograded starch was $50{\sim}55^{\circ}C$. The enthalpy value of retrograded starch were greatest in the $40{\sim}50%$ water content. In the presence of surfactants, gelatinization temperatures shifted slightly to higher temperatures. DSC endothermal enthalpies of the amylose-lipid complex increased. The degree of retrogradation in starch was lower with surfactant than without surfactant, but enthalpy of amylose-lipid complex did not change during storage.

  • Anionic polyolic surfactants, ${alpha}-sulfo$ fatty acids that straight long chain alkyl group has from 12 to 18 hydrocarbon numbers, was synthesized with sulfur trioxide-dioxane complex to good yields. New sodium ${alpha}-sulfo$ long chain fatty acid monoglyceride were obtained by reaction that the ketalificaticn and esterification of glycerol, acetone and ${alpha}-sulfo$ long chain fatty acid and hydrolysis respectively. These reaction products separated by column chromatography and their $R_{f}$ values($R_{f}{\times}100$) were 19, 21, 24 and 26 respectively. These compounds were identified by infrared spectroscopy and $^{1}H$ NMR spectroscopy.

  • Enzymatic ethanolysis of fish oil with immobilized lipase was investigated for reducing the free fatty acid contents and enhancing the function of fish oil. Ethanolysis reactions were carried out in erlenmeyer flask (25ml) containing a mixture of squid viscera oil and 99.9% ethanol using 1% (based on w/w squid viscera oil) immobilized lipase. The reaction mixtures were incubated at $50^{\circ}C$ and shaken at 100rpm. Ethanol was added into the mixture by stepwise addition method of Shinmada[9]. Measurement of free fatty acid molar amounts was studied by Acid Value. Tendency of oil variation during transesterification was studied by TLC method. Enzymatic ethanolysis composed diglyceride, monoglyceride and fatty acid ethyl ester with reducing free fatty acid contents. Also, selective ethanolysis by Lipozyme TL-IM and Lipozyme RM-IM mostly did not react at the sn-2 position of squid viscera oil. Lipozyme RM-IM was more suitable enzyme to reduce the free fatty acid contents by ethanolysis than Lipozyme TL-IM. Squid viscera oil was transformed into suitable properties (5 in Acid Value) for functional fish oil production.

Studies on the Properties and Frying Performance of Domestic Rice Bran Oil (국산(國産) 미강유(米糠油)의 성상(性狀)과 튀김적성(適性)에 관(關)한 연구(硏究))

  • Properties and frying performance of domestic rice bran oil were studied. For this purpose, the analyses on the following characteristics were performed and their comparison with the characteristics of soybean oil was made: fatty acid composition, glycerides, composition, acid value, specific gravity, color, petroleum ether insoluble oxidized fatty acid, viscosity, smoke point, foam test, and water solubility. The results were as follow: 1) Fatty acid composition of domestic rice bran oil by gas chromatography was same as perviously reported, and similar to the fatty acid composition of the rice bran oil in foreign countries. Also the glyceride composition of domestic rice bran oil was analyzed by the methods of TLC, column chromatography, and high performance liquid chromatography. The results were monoglyceride ranged from one to four percent; diglyceride 30-30% and triglyceride 66-80%. Consequently, the composition was proven completely different from that of the other edible oils. 2) The high contents of mono-glyceride in rice bran oil resulted in high values of specific gravity and water-solubility respectively. However, high contents mono glyceride and diglyceride indicated little affection to changes of acid value, color, petroleum ether insoluble oxidized fatty acid, and smoke point on frying. 3) Because of low contents of linoleic acid, domestic rice bran oil was estimated stable on frying, whereas soybean oil was easily polymerized. 4) A serious foaming and low smoke point on Frying in domestic rice bran oil were caused by its impurities. It seems that monoglyceride and diglyceride had little relation with foaming and smoke point. 5) Oils with serious foaming and low smoke point on frying caused a substantial quality loss in terms of flavor and appearance of fried materials.

  • This study was conducted to investigate the effects of various emulsifiers on the quality of the waxy rice cake. Falling numbers of the waxy rice flour with monoglyceride, lecithin and control were not significantly different, but with sugar esther 0.5% and 1% showed higher value as 88.4 and 81 than control Initial pasting temperature of the waxy rice flour was 66.78$\^{C}$ and others were 66.45 ∼ 67.05$\^{C}$ by adding 0.5%, 1% of emulsifiers such as monoglyceride, lecithin, sugar esther. Waxy rice flour with 1% sugar ester showed the highest peak viscosity as like as falling number. Waxy rice cake wish various emulsifiers showed tendency to be slowly firming rate as compared with control. In all case, waxy rice flour with sugar ester 1% was considered to be more effective to the decrease of firming rate. Waxy rice flour with lecithin showed worse visual color than others and sugar ester provided best visual and sensory quality. After 5 days cold storage, waxy rice flour with sugar ester 1%\`s Aw was 0.875 and control\`s 0.911. These results suggested that water holding capacity of sugar ester was the best during storage.

Effects of Emulsifiers on Physical Properties of Rice Cookies (유화제의 첨가가 쌀 쿠키의 물성에 미치는 영향)

  • The effects of emulsifiers as additives on the physical properties of rice cookies were investigated in this study. The amounts of emulsifiers added were 3, 6, and 9% based on 100 g of rice flour. Peak viscosity of rice flour added with diacetyl tartaric ester of monoglyceride (DATEM) showed smaller decreases compared to addition of sodium stearoyl lactylate (SSL) or sucrose ester (SE). Hardness of dough as measured by TA increased upon addition of SSL, SE, and DATEM, whereas hardness of cookies increased upon addition of SSL and SE. In contrast, addition of DATEM did not increase hardness of cookies. Density of dough and cookies increased upon addition of SSL and SE, whereas density decreased upon addition of DATEM and spreadability showed the lowest values. From these results, it was confirmed that use of emulsifiers in cookies can control cookie texture. Compared to SSL and SE, DATEM increases hardness of dough and decreases densities of dough and cookies, making it effective in softening the texture of rice cookies.

Changes of Lipids in Flint Corn by a Growth Process I. A Study on the Non-Polar Lipid (경립종 옥수수의 성장과정에 따른 지질변화 I. 비극성 지질에 대한 연구)

  • In order to investigate the changes of lipid ingredient and fatty acid content in flint corn by a growth process, total lipids from flint corn(Zea may l.) were extracted, purified and fractionated into three lipid classes (neutral lipid ; NL, glycolipid ; GL, phospolipid ; PL) by silicic acid column chromatography (SACC). Non-polar lipid ingredients and fatty acid contents were determined by thin layer chromatography (TLC) and gas chromatography (GC). And non-polar lipid ingredients were quantitatived by TLC scanner. The crude oil among proximare composition increased 2.74% to 4.43% and NL and PL were fractionated by SACC increased 48.5% to 86.02%, 1.01% to 2.73%, respectively. But GL decreased 50.4% to 11.25%. Neutral lipid ingredients identified monoglyceride, were 1.1~3.7%, 11.9~16.1%, 2.3~4.2%, 16.7~21.5% and 58.5~63.6%, respectively. The major fatty acids of NL were linoleic (48.9~61.0%), oleic(22.3~34.2%), palmitic (10.3~11.7%) acids and stearic, linolenic acids were also detected as minor components. The ratio of total unsaturated fatty acid to total saturated fatty acid presented a higher percentage of 5.87~6.34. The physico-chemical characteristics of flint corn lipids were presented as specific gravity presented 0.920, refractive index 1.468, saponification value 191.2, unsaponificable matter 0.97%, acid value 0.58 and iodine value 124.6, respectively.
