몇가지 과실, 채소류를 혼합한 사과주스의 SOD 유사활성 (Superoxide Dismutase-like Activity of Apple Juice Mixed with Some Fruits and Vegetables)

  • 국내에서 시판되고 있는 16종의 과실, 채소 착즙액 및 농축품의 SOD 유사활성을 pyrogallol autoxidation 방법을 이용하여 측정하였으며 이들의 열안정성, 사과주스에 첨가시 사과주스의 SOD 유사활성 상승효과를 조사하였다. SOD 유사활성은 브로콜리 착즙액이 41.7%, 딸기, 당근 착즙액 등이 30% 이상으로 높게 나타났으며 그 다음은 케일농축액, 키위 착즙액, 무 착즙액이 $24.1{\sim}27.6%$ 정도의 SOD 유사활성을 나타내었다. $95^{\circ}C$에서 20분까지 처리시에도 SOD 유사활성은 오히려 증가하는 경향을 나타내었다. 사과주스의 SOD 유사활성을 100%로 할 때 사과주스에 당근농축액과 키위착즙액을 20% 첨가시에는 120%정도, 딸기와 브로콜리 착즙액은 135%의 높은 SOD 유사활성 상승효과를 나타내었다. 특히 무 착즙액의 경우 사과주스에 20% 첨가시 148%로 가장 높은 상승효과를 나타내었다.

김치 젖산균과 효모의 혼합배양 방법에 의한 과채류즙의 발효양상 (Fermentation Aspects of Fruit-Vegetable Juice by Mixed Cultures of Lactic Acid Bacteria Isolated from Kimchi and Yeast)

  • Fermented beverage using lactic acid bacteria isolated from kimchi was investigated. Lactic acid bacteria KL 1, KD 6, KL 4 strains from kimchi, or obtained Lactobacillus acidophilus, Lactobacillus plantarum, Leuconostoc mesenteroides with and without yeast(Saccharomyces cerevisiae) were inoculated in fruit vegetable juice for single and mixed culture fermentation. During the fermentation by bacterial strain and yeast for 1~3 days at 30oC, various fermentation behaviors were observed. The growth rate of mixed culture of KL 1 and yeast was higher than that of single culture by KL 1 alone during the fermentation. The amount of organic acid produced by the mixed culture fermentation of KL 1 and yeast was 0.82%(3 day) or 0.58%(1 day) and with the final pH of 3.3(3 day) or 4.2(1 day). These mixed culture systems of isolated strains or other bacterial strains had almost similar results of growth rate and acid production. Among several bacterial strains, KL 1 was suitable for the mixed culture fermentation with yeast in terms of desirable fermentation behavior and organoleptical quality. The selected strain, KL 1 was identified as Leuconostoc spp. through the series of tests on carbohydrate fermentation and biochemical characteristics.

당뇨유발 흰쥐에서 돼지감자 여주 혼합즙 음용에 의한 혈당저하 효과 (Effect of Helianthus tuberosus Juice Mixed with Dried Bitter Melon Juice on Hypoglycemic Function in Streptozotocin-Induced Diabetic Rats)

  • 식품을 혼합하였을 때 생리 기능 상승효과가 있을 것을 기대하여 돼지감자즙에 건조 여주즙을 5% 혼합하여(돼지감자 여주즙) 일반 영양성분을 알아보았고 streptozotocin(STZ)으로 당뇨를 유발한 흰쥐에 이를 음용수로 4주간 공급하고 혈당지표로서 혈액 포도당 농도 변화, 최종혈당 농도, 경구 당부하 검사, 혈청 인슐린 농도를 실시하였다. 돼지감자 여주즙 100 g당 수분 82.22 g, 열량 67.00 cal, 당류 2.52 g, 탄수화물 15.45 g, 조단백 1.21 g, 조회분 1.02 g, 나트륨 0.49 mg을 함유하였고 포화지방산, 조지질, 콜레스테롤은 검출되지 않았다. 돼지감자 여주즙을 3배의 증류수로 희석하여 4주 동안 음용수로 공급한 흰쥐의 사료 이용효율은 NC군 0.138에 비하여 STZ군은 -0.024~-0.054로 유의적으로 낮았다. 사료섭취량은 적응기간에는 하루 32~34 g이었는데 STZ 투여 1주일 후 NC군의 $38.6{\pm}9.2g$에 비하여 STZ군은 $25.2{\pm}5.4g$으로 실험군별 차이가 컸다. 4주 후에는 NC군의 사료섭취량이 STZ군, HT2.5군, HT5.0군보다 유의적으로 많았다. 흰쥐의 시작 체중은 153.5~163.0 g으로 비슷하였는데 STZ 투여군은 체중이 감소하였다. NC군의 체중은 4주 후 평균 157.0 g 증가하였는데 당뇨유발군들은 4주 동안 체중이 8~44 g 정도 감소하였다. 하루 동안 물 섭취량은 적응 기간에 평균 $75.0{\pm}6.7mL$였는데, STZ 투여 4주 후에는 STZ군이 $159.2{\pm}6.1mL$로 가장 많았고 돼지감자 여주즙군은 NC군보다 많았고 STZ군보다는 적었다. 혈장 포도당의 수준은 NC군의 $113{\pm}4.5mg/dL$에 비하여 STZ 투여 1주일 후 STZ군은 $476.7{\pm}22.8mg/dL$로 약 4배 높았고 HT군은 $376.3{\pm}25.8mg/dL$, HT2.5군은 $405.2{\pm}35.1mg/dL$, HT5.0군은 $342.8{\pm}29.7mg/dL$로 STZ군보다 낮았다. 당부하검사에서 포도당투여 후 120분 동안 혈당을 낮추는 효과가 돼지감자군들에서 컸으며, 돼지감자 여주즙 음용 4주후 흰쥐의 혈청 인슐린분비가 많아졌음을 알 수 있었다. 이상의 결과는 돼지감자 여주즙 음용이 당뇨 개선에 도움이 될 것으로 평가되며 돼지감자의 고부가가치를 높일 수 있을 것으로 기대된다.

과채쥬스 제조를 위한 혼합조건의 선정 (Selection of Mixing Ratio for Preparation of Mixed Vegetable Juice)

  • A preferable mixing ratio of a six-vegetable juice was suggested in this study. The vegetables used for preparation of mixed vegetable juice were carrot(Ct), cabbage(Cg), pear(Pr), cucumber(Cr), celery (Cy) and dongchimi(Di). The characteristics of pH, titratible acidity, reducing sugar, turbidity, solids, color and acceptability were compared to determine the mixing ratio. The vegetables showed a wide ranHe of pH of 3.70-6.01, acidity of 28.92 uv~74.40 nd and reducing sugar of 1.20ft~ 12.69fo. Celery juice showed the higest suspension stability and "b" value and the lowest values in Hunter "L" and "a" values among the 6 vegetable juice. The preferable mixing ratio of two-vegetable juice selected were Ct-Di(1 : 4), Cg-Pr(1 : 3) and Cr-Cy(3 : 1). From the various ratio of the three of biary mixtures of Cg-Pr(1 : 3): Ct-Di(1 : 4): Cr-Sy(3 : 1), two ratio of 5.0 : 2.5 2.5(V-6A) and 6.0 : 2.0 : 2.0(V-6B) were suggested as the most prefered six-vegetable juice. Pear, dongchimi and cucumber were found to be influential on the preference. The pH and titratible acidity of the two juices with different ratios were in the range of 4.92~4.98 and 36.g∼37.4 ml, respectively.

Color Changes in Clarified Fruit and Vegetable Juices by Mixing Ratios

  • Clarified fruit and vegetable juices (apple, carrot and tangerine) were produced using ultrafiltration and their color change due to the mixing ratio were evaluated. clarification was carried out by passing he supernatant of extracted juice through a filter and also by using a membrane of molecular weight cut-off 10,000 Daltons to obtain the juice ultrafiltrates. The mixing ratio between apple and carrot juices was kept constant at 1:1 while increasing the amount of tangerine juice according to 10, 20, 30, 40 and 50% an stored at 4$^{\circ}C$ prior to the color measurement. Hue angle ({TEX}$h_{ab}${/TEX}) and {TEX}$L^{*}${/TEX}-value increased as the tangerine mixing ratio increased. The color difference indicated by ΔE-value also increased as the amount of tangerine increased indicating that the color of the mixed juice became pale and the changes were slight but distinctive. On the other hand, chroma ({TEX}$C^{*}${/TEX}), {TEX}$La{*}${/TEX}- and {TEX}$b^{*}${/TEX}-values decreased as the tangerine mixing ratio increased indicating that the color of the mixed juice became slightly more grayish and the samples were becoming les yellow. A simple mathematical model to predict each color characteristic is proposed.

유자즙 첨가 된장의 품질 특성 (Quality Characteristics of Doenjang prepared with Yuza Juice)

  • The influence of the yuza juice addition on quality of the doenjang was investigated by analyzing their chemical properties. The 80 days pre-fermented(PFD) and non-fermented(NFD) doenjangs used in the present study were mixed with yuza juice designed at different ratio (0, 1, 3, 5% (w/w)), These doenjangs were fermented for 60 days and then analyzed chemical properties, respectively. The moisture content was higher in yuza juice added groups than control group. But Ash, crude lipid and crude protein contents were higher in control than yuza juice added groups. The pH and formol-N were higher in yuza juice added NFD groups however, acidity was reversed. Among the free sugars, glucose contents was the highest. And, free sugars contents were higher in yuza juice added PFD groups than control group. Five kinds organic acids were detected, and succinic acid content was the highest. The organic acid contents were higher in proportion to adding volume of yuza juice, in all groups. The contents of Free amino acids were higher in yuza juice added PFD groups and among these, 1% yuza juice added PFD group(3970.0 mg%) was the highest. Hunter L value was lower by yuza juice added volume and higher in PFD groups. Hunter a and b values were non-significantly difference in PFD and NFD, respectively.

백년초의 첨가비율을 달리한 백년초떡의 품질 특성 (Qualitative Characteristics of Beaknyunchodduk with Various Percentages of Beaknyuncho)

  • This study was aimed at evaluating a proper mixing ratio of making Beaknyuncho(Opuntia ficus-indica var. saboten) Sulgidduk with different types of extraction, a fruit and a stem of Beaknyuncho, and by different making methods. As a result, moisture content was the highest(43.22%) in FP1 and the lowest(38.55%) in SJ60. The low lightness and yellowness are increased with more powder and juice of both fruit and stem added. The mechanical characteristics, hardness, adhesiveness and gumminess were increased as powder and juice were added. And cohesiveness and springiness were decreased. The identification test showed that a sample containing stem juice was the most preferable for taste, chewiness, moistness and after-taste. The preference test showed that a sample containing stem juice was the most preferable for color, texture and overall quality and a sample containing stem powder was preferable for flavor and taste. Both SJ60 mixed with 60% Beaknyuncho stem juice and FP3 mixed with 3% fruit powder proved to be the most desirable in both sensory evaluation and texture characteristics.

혼합과채주스의 가공방법에 따른 저장 중 품질특성 변화에 관한 연구 (Studies on the Quality Changes of Mixed Fruit and Vegetable Juices as Influenced by Processing Conditions during Storage)

  • Physicochemical properties and microbiological quality chanties were investigated on mixed fruit and vegetable juices (apple, carrot and cucumber) stored at 4$^{\circ}C$ without pasteurization(NT), with light piasteurization (LP; 66$^{\circ}C$, 10 sec) and with full pasteurization(FP; 90$^{\circ}C$, 60 sec). Effects of ultrafiltration (UF) on the changes during storage were also examined. pH, viscosity, a-value and b-value remained relatively constant and all samples revealed Newtonian characterisitics. Total acidity and turbidity tended to increase slightly; however, total vitamin C content and L-value slowly decreased during storage up to about 2 months. During the first 4 weeks storage, soluble solids content slowly increased and then decreased. Mold and Yeast and Bacteria were not detected in LP, UP and UF treated samples during storage studied; however, E. coli were detected after 24 days storage. No distinctive storage effects were found among samples prepared; however, ultrafiltration had a considerable effect on the color and soluble solids content of mixed fruit and vegetable juice.

장용정 Omeprazole정제와 캅셀제의 액제화 투여 방법의 용출시험 (Dissolution Test to Optimize Liquid Formulations for Enteric Coated Tablets and Capsules Containing Enteric Coated Granules of Omeprazole)

  • Omeprazole is usually administered as encapsulated enteric-coated granules and enteric-coated tablets because of its acid-labile nature. For children and patients who can not swallow, it can be mixed with water or other liquid after a capsule is opened or a tablet is crushed. This study was performed to compare omeprazole liquid formulations of tablet and capsule Omeprazole 20 mg capsule containing enteric coated granules was opened and 20 mg entric-coated tablet was ground to be mixed with sodium bicarbonate solution, orange juice or water. Each liquid formulation was poured into dissolution tester, mixed with first solution (artificial gastric juice; pH 1.2) for two hours, then with second solution (artifical enteric juice; pH 6.8) for thirty minutes. pH was measured periodically for two and half hours. Samples were drawn periodically, mixed with lansoprazole as an internal standard, and injected to HPLC. As results, pH of sodium bicarbonate solution of omeprazole was significantly higher than that of orange juice or water in first solution (6.2-7.4 vs. 1.2, p<0.005). At 150 min, concentrations of omeprazole in three diluents with granules and in sodium bicarbonate solution of tablet powder sustained significantly higher than in other solution of tablet powder (p<0.001). In conclusion, enteric-coated granules from capsule with three diluents and powder from tablet in sodium bicarbonate solution was stable during dissolution test, which would be appropriate and recommended for patient who can not swallow solid preparations.
