Nitrogen Metabolism in Lactating Goats Fed with Diets Containing Different Protein Sources

  • This study aimed to evaluate urea excretion, nitrogen balance and microbial protein synthesis in lactating goats fed with diets containing different protein sources in the concentrate (soybean meal, cottonseed meal, aerial part of cassava hay and leucaena hay). Four Alpine goats whose mean body weight was $42.6{\pm}6.1kg$ at the beginning of the experiment, a mean lactation period of $94.0{\pm}9.0days$ and a production of $1.7{\pm}0.4kg$ of milk were distributed in a $4{\times}4$ Latin square with four periods of 15 days. Diets were formulated to be isonitrogenous, containing 103.0 g/kg of CP, 400 g/kg of Tifton 85 hay and 600 g/kg of concentrate. Diet containing cottonseed meal provided (p<0.05) increased excretion of urea and urea nitrogen in the urine (g/d and mg/kg of BW) when compared with leucaena hay. The diets affected the concentrations of urea nitrogen in plasma (p<0.05) and excretion of urea nitrogen in milk, being that soybean meal and cottonseed meal showed (p<0.05) higher than the average aerial part of the cassava hay. The use of diets with cottonseed meal as protein source in the concentrate in feeding of lactating goats provides greater nitrogen excretion in urine and negative nitrogen balance, while the concentrate with leucaena hay as a source of protein, provides greater ruminal microbial protein synthesis.

  • 본 연구에서는 농축대두단백으로 두유를 만들고 protease를 이용하여 대두단백질을 여러가지 정도로 가수분해한 후, 단백질이 일부 가수분해된 두유에서 L. acidophilus 또는 L. bulgaricus의 생육과 산생성을 관찰하고 제조된 대두 젖산균음료의 관능성을 조사하였다. protease 처리에 의하여 젖산균에 의한 산생성이 촉진되었는데 특히 L. acidophilus에 의한 산생성이 현저하게 촉진되었다. 그러나 pH와 생균수는 큰 변화가 없었다. 15분 가수분해 시료에서 이미 산도가 상당히 증가하였으며 그 후 3시간이 경과하여도 산도의 변화가 현저하지 않았다. 0.1% protease 처리로 대두젖산균음료의 전체적인 기호도가 다소 개선되었다. protease 처리 15분에 비단백태 질소의 함량이 상당히 증가하였고 2시간에 최대치에 도달하였다.

Effects of Timing of Initial Cutting and Subsequent Cutting on Yields and Chemical Compositions of Cassava Hay and Its Supplementation on Lactating Dairy Cows

  • Two experiments were conducted to examine the production and quality of cassava hay and its utilization in diets for dairy cows. In experiment I, a $2{\times}2$ Factorial arrangement in a randomized complete block design with 4 replications was carried out to determine the effects of different initial (IC) and subsequent cutting (SC) on yield and composition of cassava plant. The results revealed that cassava could produce from 4 to 7 tonne of DM and 1.2 to 1.6 tonne of CP for the first six months after planting. CP content in cassava plant ranged from 20.8 to 28.5% and was affected by different SC regimes. Condensed tannin in cassava foliage ranged from 4.9 to 5.5%. Initial cutting at 2 months with subsequent cutting at 2 month intervals was the optimal to obtain high dry matter and protein yield. In the second experiment, five crossbred Holstein-Friesian cows in mid lactation with an initial live-weight of 505${\pm}6.1kg$ and average milk yield of 10.78${\pm}1.2kg/d$ were randomly assigned in a $5{\times}5$ Latin square design to study the effects of 2 levels of CH (1 and 2 kg/hd/d) and concentrate (1 to 2 kg of milk and 1 to 3 kg of milk) on milk yield and milk composition. The results showed that cassava hay increased rumen $NH_3-N$ and milk urea nitrogen (MUN) (p<0.05). Cassava hay tended to increase milk production and 4% FCM. Milk protein increased in cows fed cassava hay (p<0.05). Moreover, cassava hay could reduce concentrate levels in dairy rations thus resulting in increased economic returns. Cassava hay can be a good source of forage to reduce concentrate supplementation and improve milk quality.

Black gram (Vigna Mungo L.) foliage supplementation to crossbred cows: effects on feed intake, nutrient digestibility and milk production

  • Objective: An experiment was conducted to examine the effect of dietary supplementation of dried and ground foliage of black gram (Vigna mungo L.) on feed intake and utilization, and production performance of crossbred lactating cows. Methods: Eighteen lactating crossbred (Bos taurus${\times}$Bos indicus) cows (body weight $330.93{\pm}10.82kg$) at their second and mid lactation (milk yield $6.77{\pm}0.54kg/d$) were randomly divided into three groups of six each in a completely randomized block design. Three supplements were formulated by quantitatively replacing 0, 50, and 100 per cent of dietary wheat bran of concentrate mixture with dried and ground foliage of black gram. The designated supplement was fed to each group with basal diet of rice straw (ad libitum) to meet the requirements for maintenance and milk production. Daily feed intake and milk yield was recorded. A digestion trial was conducted to determine the total tract digestibility of various nutrients. Results: The daily feed intake was increased (p<0.05) with the supplementation of black gram foliage. Although the digestibility of dry matter, organic matter, crude protein, and ether extract did not vary (p>0.05), the fibre digestibility was increased (p<0.05), which ultimately improved (p<0.05) the total digestible nutrients content of composite diet. Although, the average milk yield (kg/animal/d) and composition did not differ (p>0.05) among the groups, milk yield was increased by 10 per cent with total replacement of wheat bran in concentrate mixture with of black gram foliage. The economics of milk production calculated as feed cost per kg milk yield (INR 10.61 vs 7.98) was reduced by complete replacement of wheat bran with black gram foliage. Conclusion: Black gram foliage could be used as complete replacement for wheat bran in concentrate mixture of dairy cows in formulating least cost ration for economic milk production in small holders' animal production.

The Use of Cassava Chips as an Energy Source for Lactating Dairy Cows Fed with Rice Straw

  • Thirty-six crossbred (70% Holstein Friesian) cows in mid-lactation were assigned to one of four treatments. The dietary treatments were concentrate based, containing 13.5, 27.0, 40.5 and 54.0% of cassava in concentrate replacing ground maize (16.0% CP). There were curvilinear responses to intake of organic matter, non-structural carbohydrate and metabolisable energy. Cassava and corn fed in a ratio of 50:50 maximised organic matter, metabolisable energy intake; milk yield, milk protein and lactose yield. Milk fat yield was not affected by levels of inclusion. Dietary treatment did not influence ruminal pH, ammonia and volatile fatty acid concentrations or plasma glucose. The low market price for cassava resulted in a lower concentrate feed cost. The optimal level of cassava in a dairy cow diet is suggested as being between 20.0 and 30.0% of cassava in dry matter intake when fed with rice straw.

두유(豆乳)의 가열처리가 젖산균의 산생성(散生成)과 대두요구르트의 품질에 미치는 영향 (Effects of Heat Treatment of Soy Milk on Acid Production by Lactic Acid Bacteria and Quality of Soy Yogurt)

  • 농축대두단백으로 만든 두유를 여러 가지 정도로 가열 처리한 후 젖산균 5종을 각각 접종하여 두유의 가열처리가 젖산균의 생육과 산생성 그리고 대두요구르트의 관능성과 커드의 침전에 미치는 영향을 관찰하였다. 먼저 산생성을 보면 표준시료(비가열(非加熱)시료)에 비하여 $60^{\circ}C-10$분 또는 그 이상의 가열로 모든 균주에서 산생성이 촉진되었으며 그 촉진의 정도는 대체로 가열의 정도가 높을수록 점차적으로 증가하여 Streptococcus lactis를 제외한 4균주의 산생성이 $121^{\circ}C-1$분에서 가장 높았다. 그러나 생균수는 가열 처리로 큰 변화가 없었다. 대두젖산균 음료의 관능성에 미치는 영향을 보면 $95^{\circ}C-30$분 시료의 관능 성은 표준시료보다 현저하게 우수하였으나 $121^{\circ}C-15$분 시료의 관능성은 표준시료보다 현저하게 저조하였다. 한편 두유의 가열처리로 대두젖산균 음료의 침전이 지연디는 경향을 보였으며 특히 $121^{\circ}C-15$분의 가여로 침전이 현저하게 지연되었다.

Variations in the Production, Qualitative Characteristics and Coagulation Parameters of the Milk of the Riverine Buffalo Determined by the Energy/Protein Content of the Diet

  • Sixteen Mediterranean pluriparous buffaloes were subdivided into two uniform groups of eight animals. The average weight of the two groups at the start of the trial was 671.2 and 656.7 kg. The number of days from calving were 33.4 and 33.3, and the average milk production was 12.73 and 12.33 kg/d. The trial lasted for 114 days, and was divided into two sub-periods of 58 and 56 days. The two diets, administered ad libitum, had the same forage/concentrate ratio (53/47) but in their formulation the percentage of the two forages varied. Diet 1: alfalfa hay = 10%, maize silage = 43%, concentrate 1 = 47% (6.63 MJ/kg DM of net energy; 179.5 g/kg DM of crude protein). Diet 2: alfalfa hay = 20%, maize silage = 33%, concentrate 2 = 47%, (5.99 MJ/kg DM of net energy; 155.4 g/kg DM of crude protein). For the overall trial period (33-146 days in milk), the intake of dry matter was 17.23 kg/d for Group 1 and 17.29 kg/d for Group 2 and corresponded to 2.50 and 2.58% (p<0.01) of live weight. There was no significant difference between the average weight (689.7 and 669.4 kg) and the body condition score (6.49 and 6.42) of the two groups of buffaloes. Group 1 produced a greater quantity of milk (11.89 vs. 10.90 kg/d, p<0.10) of better quality both for its higher fat content (82.32 vs. 77.29 g/kg, p<0.10) and its protein content (47.36 and 46.38 g/kg). The milk produced by the buffaloes receiving Diet 1 had a better clotting ability, lower values of r (15.98 and 16.42 min) and K20 (1.66 and 1.75 min) and a higher value of A30 (54.45 and 52.73 mm). Taking into consideration the two sub-periods, milk production was significantly different only in the first sub-period (33-90 DIM), in favour of Group 1 (13.08 vs. 11.56 kg/d, p<0.05), while the positive effect of Diet 1 was cancelled out (10.71 and 10.24 kg/d) in the second part of the trial (91-146 DIM).

Physicochemical, Textural, and Sensory Properties of Low-fat/reduced-salt Sausages as Affected by Salt Levels and Different Type and Level of Milk Proteins

  • This study was performed to develop low-fat/reduced-salt sausages (LFRSS; <3% fat and <1.5% salt) containing milk protein (whey protein concentrate, WPC, or sodium caseinate, SC) that showed the similar cooking yield and textural characteristics to those of regular-fat/salt sausage control (RFC; 20% fat and 1.5% salt) or low-fat sausage control (LFC; <3% fat and 1.5% salt). Low-fat sausages (LFS) were formulated with a 2.5% fat replacer (konjac flour:carrageenan:soy protein isolate=1:1:3) and various salt levels (0.75, 1.0, 1.25, and 1.5%). LFS had differences in color and expressible moisture (EM, %) values as compared to those of RFC. A minimum salt level of 1% and addition of nonmeat proteins were required to manufacture LFRSS that have similar characteristics to those of RFC. However, LFS with 2% milk proteins reduced the hardness and gumminess as compared to LFC. These results indicated that 1% milk protein in combined with 1% salt was a proper level for manufacturing of LFRSS.

Effects of Roughage Neutral Detergent Fiber on Dairy Performance under Tropical Conditions

  • $Holstein\;{\times}\;indigenous$ multiparous dairy cows were offered diets with increasing roughage neutral detergent fiber (NDF) contents to determine the effects on intake, milk yield and compositions. Roughage NDF contents were 15, 18, 21 and 24% dry matter (DM), and concentrate NDF content was 10% DM. Experimental treatments were isonitrogenous and isocaloric diets. Maximum and minimum temperature humidity index during the experimental period were 85.9 and 76, respectively. Intakes of DM, crude protein and net energy, 4% fat corrected milk, milk protein and average daily gain decreased with increasing roughage NDF contents (p<0.05). Intakes of ether extract (p<0.01) and dietary NDF (p>0.05) and milk fat (p<0.01) increased with increasing roughage NDF contents. The results support the conclusion that higher DM intake, optimal milk yield and compositions can be maintained with lower roughage NDF diets for dairy cows under tropical conditions.
