급식소에서 이용되는 감자의 전처리 방법에 따른 미생물학적 및 관능적 품질 평가 (Evaluation of the Microbiological and Sensory Qualities of Potatoes by the Method of Processing in Foodservice Operations)

  • The purpose of this study was to evaluate the microbiological and sensory quality changes from packing methods(PE; $85{\mu}m$ thick, vacuum; PE+LLDP+nylon; $50{\mu}m$ thick), and storage temperatures($3^{\circ}C,\;10^{\circ}C\;and\;25^{\circ}C$) and length of storage(1, 2, 4, 6 day) on the different types of processed potatoes(washed, peeled, or cut). Microbiological quality decreased gradually and significantly throughout the storage period in all cases. The processed potatoes stored at $3^{\circ}C$ with vacuum packing after immersion in chlorine water showed the lowest microbiological growth and had higher scores for the sensory quality factors(appearance, flavor and texture). The processed potatoes stored at $10^{\circ}C$ were rated wily better appearance, but they showed unacceptable microbiological quality at up to 4 days of storage. Overall, a temperature of $3^{\circ}C$ is recommended to maintain acceptable of microbiological and sensory quality in processed potatoes used in foodservice operations.

감마선 조사된 고춧가루 첨가 무생채의 저장 중 품질 변화 (Microbiological and Sensory Qualities of Musaengchae(Radish Salad) with Gamma-irradiated Red Pepper Powder added Prior to Storage)

  • 본 연구에서는 고춧가루에 오염된 미생물을 제거 또는 감소시키기 위해 감마선 조사기술을 이용하였고, 이를 이용하여 무생채를 제조한 후 저장 중 미생물학적 안전성과 품질특성을 평가하고자 하였다. 무생채용 원재료의 총세균수는 고춧가루, 무, 쪽파, 마늘의 경우 각각 6.71, 3.39, 2.21, 2.10 log CFU/g 수준인 것으로 나타났다. 대장균군의 경우 고춧가루에서만 2.15 log CFU/g 수준으로 나타났다. 방사선 조사된 고춧가루를 이용하여 제조된 무생채의 경우 저장 중 대장균군은 검출한계 이하로 나타났다. pH와 색도의 경우 대조구와 실험구간 유의적 차이는 없었으며, 관능적 품질 역시 모든 평가항목에서 유의적인 차이가 없는 것으로 나타났다. 따라서 10 kGy 이하로 조사된 고춧가루를 이용한 무생채는 관능적 품질변화 없이 미생물학적 안전성을 향상시키는 것으로 판단된다.

매실 엑기스를 첨가한 샐러드 드레싱의 품질 평가 (Qualitative Evaluation of the Salad Dressing Added with Prunus mume Extracts)

  • This study aimed to determine the physicochemical, microbiological and sensory qualities of salad dressing with added Prunus mume extracts. For this study, dressing was blended with Prunus mume extracts to different concentrations of 0, 10, and 20%. Physicochemical and microbiological effects of dressing with added Prunus mume extracts were assessed during production and storage days by measuring pH and Aw and by determining total plate counts and coliforms. Effects of salad dressing added Prunus mume extracts on the total plate counts and coliforms of salad dressing were observed during storage at $3^{\circ}C$ and $25{\pm}1^{\circ}C$ for 30 days. Prunus mume extracts showed antibacterial properties, and improved the microbiological quality. Sensory scores for salad dressing with added Prunus mume extracts were higher than those for the control group.

저장기간에 따른 냉동 비빔밥 나물의 미생물학적, 관능적 특성 (The Microbiological and Sensorial Properties of frozen bibimbap namul during storage)

  • Namul cooked with the standard recipe was examined by research of microbiological test for three months and sensory evaluation of frozen namul after reheating. When the namul was freezed storage, in the microbiological test namul began to change on the 40th day, but there was no problem about stability of storage until 3 months. The overall qualities of taste, flavor, color and texture were examined by sensory evaluation of frozen namul after reheating. The pH was seemed to change slowly, its color was changed on the 20th day from the beginning of storage. Radish root represented substantial difference in texture and overall quality on the 20th day. The off-flavor of immature pumpkin stated on the 25th day. Later 10days nettle tree mushroom began to be changed in its taste, texture, overall quality and appearance, then on the 25th day it was seemed to have low preference. But oak mushroom kept its quality good for 25 days. Oyster mushroom was changed in color, appearance and overall quality on the 20th day. Bracken had low preference in taste, texture and moisture on the 25th day. The color of spinach was changed on the 15th day, and its taste on the 20th day. Soybean sprout was changed in taste, texture and overall quality on the 15th day, and overall quality marked low preference on the 25th day Root of bell flower was changed on the 25th day(p<0.05).

오미자가 나박김치의 발효 중 관능적 및 미생물학적 특성에 미치는 영향 (Effects of Omija (Schizandra chinensis Baillon) on the Sensory and Microbiological Properties of Nabak Kimchi during Fermentation)

  • Application of omija(Schizndra chinensis Baillon) to improve the quality and preservation of nabka kimchi was attempted and the optimal amount of omija level and its effect on the sensory and microbiological properties of nab마 kimchi during fermentation were examined. Effects of omija juice which had been prepared by extracting omija seeds for 9 hr at room temperature (22.5$\pm$0.5$^{\circ}C$) with different ratios (0.5, 1.0, 1.5, 2.0%;w/v) of water were examined against control (kimchi prepared without omija). Organoleptic and microbiological properties of nabak kimchi were measured up to 25 days at 1$0^{\circ}C$ after preparation. Sensory properties were evaluated in the aspects of both acceptability and intensity characteristics. In whole, 0.5 and 1.0% treatments showed higher values of evaluation, compared to control, 1.5, and 2.0% treatments throughout the fermentation period. As fermentation progresses, however, sample of 1.0% treatment ranked first between day 4 to 7 and also so did sample of 0.5% treatment along with 1.0% treatment from behind day 10. As for color, control, 0.5% treatment, and 1.0% treatment were more favored than rest of the samples. In texture, 2.0% treatment showed the highest values, whereas control was rated the lowest. In the intensity of characteristics 1.5% and 2.0% treatments showed higher values except sweet taste in which 1.0% treatment ranked top during the initial 7 days and then 0.5% treatment took the first place at behind day 10. total cell counts and number of lactic acid bacteria were gradually increased and then decreased showing the maximum levels of microbial counts on different days, to say, day 2 for control and 0.5% treatment nd day 7 for 1.0, 1.5 and 2.0% treatments. The application of omija juice in nabak kimchi enhanced eating qualities of the fermented product and the fermentation-retarding effect of omija juice was clearly shown during the initial seven days of fermentation. The optimum levels of omija juice in nabak kimchi obtained through experiments were between 0.5 to 1.0% for color, fermentation-retarding effects, and savory taste of the product.

채소군별 미생물학적 안전성 확보를 위한 적정 소독방법 (A Study on the Microbiological Quality of Vegetables in Relation to the Sanitization Method Used and Vegetable Types)

  • In this study the microbiological quality of vegetables was evaluated in relation to the sanitization methods used and vegetable types which consisted of raw food ingredients used in foodservice operations. We analyzed the microbial quantities on lettuce and spinach, which were used as leaf vegetables and cucumber and tomato, which were used as fruit vegetables according to various disinfection methods using different chlorine concentration(50 ppm, 100 ppm, 200 ppm) and exposure time(5 min, 10 min) over 5 days. When the effects of the disinfection methods on microbial qualities and sensory evaluation were analyzed, the following results were obtained. First, in the leaf vegetables, disinfection with a chlorine concentration of 200 ppm for a 5 minutes exposure time was needed to control microbial growth. Second, fruit vegetables sterilized with tap water had reduced microbial qualities after an extended amount of time relative to chlorine disinfection, that is, disinfection with a chlorine concentration of 50 ppm for 5 minutes exposure time was desirable.

Effect of Electron Beam Irradiation on Microbial Growth and Qualities in Astragalus membranaceus

  • Electron beam irradiation was applied to examine the microbial growth and qualities of vacuum-packaged Astragalus membranaceus, a Korean medicinal herb. Samples were irradiated at dose of 2, 4, 8, 12, and 16 kGy, respectively. Microbiological data on A. membranaceus showed that populations of total bacteria, yeast and mold, total coliforms were significantly reduced with increase of irradiation dose. Populations of microorganisms in A. membranaceus were decreased by 2-3 log cycles at 8 kGy irradiation. Color measurements showed that electron beam treatment caused negligible changes in Hunter color L, a, and b values of A. membranaceus. Sensory evaluations showed that there were no significant changes among the samples. These results suggest that electron beam irradiated A. membranaceus have better microbial safety and qualities, compared with the non-irradiated control.

Gamma Irradiation of Ready-to-Cook Bulgogi Improves Safety and Extends Shelf-Life without Compromising Organoleptic Qualities

  • We investigated the effects of gamma irradiation on the microbiological, chemical and sensory qualities of bulgogi, a traditional Korean meat product. Gamma irradiation reduced the number of coliform bacteria and bacterial colonies counted in Salmonella-Shigella selective agar to a non-detectable level. Thermophillic microorganisms (mainly Bacillus spp.) in bolgogi refrigerated for 20 days were also significantly reduced by 3 log cycles by 2.5 to 7.5 kGy of irradiation, compared to the control. Electron donating ability and shear force of ready-to-cook bulgogi was not significantly affected by gamma irradiation. Irradiation increased the 2-thiobarbituric acid reactive substances (TBARS) value. The irradiated, raw, ready-to-cook bulgogi had significantly higher scores in color and appearance than those of non-irradiated controls from sensory evaluation. The overall acceptance of cooked bulgogi had higher scores in non-irradiated or 2.5 kGy-irradiated bulgogi than the 5.0- or 7.5-kGy irradiated counterparts. In conclusion, irradiation at 2.5 kGy is recommended as a method to improve shelf-life, safety, and to achieve acceptable quality of ready-to-cook bulgogi without any adverse changes in the sensory characteristics.

Determination of the Effect of Different Ground Mustard Seeds on Quality Characteristics of Meatballs

  • This study investigated the effect of yellow, black, and brown mustard seeds on color, lipid oxidation (thiobarbituric acid-reactive substances [TBARS]), and microbiological and sensory qualities of meatballs during storage. Heat treatment of mustard seeds affected the TBARS value of meatball samples (p<0.0001). The addition of mustard seeds decreased TBARS value of meatball samples (p<0.0001). Heat treatment of mustard seeds decreased the $L^*$, $a^*$ and $b^*$ values of meatball samples (p<0.0001). The meatball samples with mustard seeds increased $b^*$ value of meatball samples however it decreased $a^*$ value of meatball samples (p<0.0001). The addition of mustard seeds decreased aerobic mesophilic bacteria count (p<0.0001), Enterobacteriaceae count (p<0.0001), psychrophilic bacteria count (p<0.0001) and yeast and mold count of meatball samples (p<0.0001). On a given storage day, the yellow mustard added meatballs sample was given higher color, appearance, flavor, acceptability ratings than those added black and brown mustard. Regarding sensory and microbiological properties, mustard seed contributed to microbiological quality and sensorial properties of meatball samples.

감마선 조사 수입 오렌지의 상온저장(20℃) 중 품질 특성 (Quality Characteristics of Gamma Irradiated-Imported Orange during Storage at Room Temperature (20℃))

  • 방사선 기술에 대한 오렌지 수입국의 검역 기준을 정립하고, 이를 활용하기 위한 목적의 일환으로 오렌지에 0.4, 0.6, 0.8, 1, 1.5, kGy로 감마선 조사를 실시하여 $20^{\circ}C$에서 15일 동안 저장하면서 미생물 및 이화학적 품질 특성을 조사하였다. 일반 호기성 세균과 효모 및 곰팡이는 비조사구에서 저장기간 증가에 따라 유의적으로 증가하였고, 조사구에서는 선량이 증가할수록 유의적으로 감소하여 미생물 감소 효과를 보였다. Vitamin C 함량은 조사선량과 저장기간의 증가에 따라 유의적으로 감소하였다. 관능평가는 색깔을 제외한 신맛, 단맛, 질감, 향, 전체적인 선호도에서 조사선량과 저장기간이 증가할수록 감소하였고, 향이 가장 낮은 선호도를 보였다. 이상의 결과를 종합하여 볼 때, 감마선 조사는 미생물학적 안정성에는 효과가 있지만, 1 kGy 이상의 감마선 조사는 오렌지의 품질 및 관능 특성에 좋지 않은 영향을 미치는 것으로 보고, 품질을 유지하기 위한 최적 선량은 0.4~0.6 kGy인 것으로 사료된다.
