메뉴 품질이 고객 가치와 고객 만족에 미치는 영향에 관한 연구 - 해산물 뷔페 레스토랑을 중심으로 - (A Study on the Effect of Menu Quality on Customer Value and Customer Satisfaction - Focused on Seafood Buffet Restaurant -)

  • 이 연구에서는 해산물 뷔페 레스토랑의 메뉴 품질 요인과 경영의 전략의 성공을 찾고 이해를 하는데 있다. 또한 고객들이 메뉴의 품질 측정 항목 중에서 가장 중요하게 생각하는 요인이 무엇인지를 도출하고 메뉴 품질 요인이 고객 가치를 통하여 고객 만족이 어떻게 이루어지는지를 알아보는데 이 연구의 목적이 있다. 해산물 뷔페 레스토랑의 무한경쟁시대에서 이 연구는 해산물 뷔페 레스토랑의 전략적인 방법과 영업의 활성화를 위한 기초자료를 제공하고자 하였고, 경영자에게 고객들이 원하는 기초자료를 보여주고 있다. 메뉴 품질의 하위 차원인 맛, 영양, 신선도는 고객가치에 정(+)의 영향을 미치는 것으로 나타났다. 즉, 고객은 seafood buffet restaurant에서 제공하는 맛, 영양, 신선도를 매우 중요하게 생각하는 필수 요소임을 제시하는 것이다. 고객 가치는 고객 만족에 정(+)의 영향을 미치는 것으로 나타났다.

IPA를 활용한 웰빙 퓨전 메뉴의 중요도-성취도 연구 (A Study on Importance-Performance of Wellbeing Fusion Menu using IPA)

  • 본 연구는 퓨전 레스토랑 이용 고객의 웰빙 퓨전 메뉴에 대한 중요도, 성취도(만족도) 품질 속성을 분석하여 세분화된 마케팅 방향을 설정하는데 유용한 정보를 제공하며, 향후 퓨전 레스토랑의 메뉴 개선 방안 모색과 동시에 효과적인 발전 방안을 제시하고자 한다. 퓨전 레스토랑의 웰빙 퓨전 메뉴 속성별 중요도, 성취도(만족도) 평가에 있어서 중요도가 성취도(만족도)보다 높은 것으로 나타났다. 고객은 음식의 맛, 식재료의 청결성, 기물의 청결성, 메뉴의 질, 음식의 신선도 등은 높게 평가한 것으로 나타났다. 퓨전 레스토랑에서 다소 많이 판매되는 웰빙 퓨전 메뉴에 대한 조사 대상자들의 섭취 경험을 조사한 결과, 가장 많은 섭취 경험을 가지고 있는 웰빙 퓨전 메뉴는 자장면(푸른면)으로 나타났고, 그다음은 단 호박 샐러드, 연어 샐러드, 새우 야채 그라탕 등으로 나타났다. 반면에 오븐 들깨 그라탕, 석류 드레싱 두부, 찹쌀가루 베이컨 롤, 석류 드레이싱 베이컨 등에 대해서 상대적으로 낮은 섭취 경험을 가지고 있는 것으로 나타났다. 퓨전 레스토랑의 웰빙퓨전 메뉴 속성별 IPA 분석 결과, 기존의 좋은 품질을 계속 유지하는 것이 바람직한 종요도와 성취도(만족도) 모두 높은 1사분면에는 음식의 맛, 식재료의 청결성, 기물의 청결성, 음식의 신선도, 메뉴의 질, 다이어트 메뉴(저지방, 저칼로리), 채식 메뉴, 음식의 영양, 메뉴의 다양성 등이 포함되었고, 중요도는 높은 반면에 이 평가 속성에 대한 성취도(만족도)는 낮게 평가되어 여기에 집중하여 우선적으로 시급히 개선해야 할 2사분면에는 가격, 기존 음식과의 차별성, 친환경 유기농 식재료로 나타났다.

산업체 근로자들의 급식 메뉴에 대한 만족도 조사 - 성별에 따른 기호도 중심으로 - (Menu satisfaction survey for business and industry foodservice workers - Focused on food preferences by gender -)

  • The purpose of this study was to evaluate satisfaction degree on menu served and identify food preference of the meal served to 271 business and industry foodservice workers from 4 institutions by gender difference. The demographics indicated that male(54.6%) and female(45.4%) were about an half each, mean age was ranged from 20 to 39 years old. The workers were not contented with most of menu quality attributes served from past foodservice operation. Primary complaint was improper temperature of the meal. Most workers liked meat and fish(52.1%) the most. Sensory quality evaluation from all workers was 3.37 points out of 5 points. However, female workers rated higher on the most of menu(3.72 points) compared with that of male workers(3.35 points), indicating that satisfaction was higher in the female workers(p<0.05). Mean preference of all the menu according to food type also have shown higher in female(3.52 point) than in male(3.45 point). Best food preference according to food type considering cooking method of male was given to barley rice, boiled rice with assorted mixtures, marine product stew, and Kimchi stew. On the other hand, females cared for curried rice, hash rice, and spaghetti but males have shown low preferences to those foods females liked. Also, females liked more of fried, grilled and broiled food. However, both males and females showed indifferent taste about the food cooked with steamed and stewed. From the findings, the business and industry foodservice workers were not well satisfied with menu quality considerably and differed in food preferences by gender clearly. Therefore, the manager of foodservice institution require to consider composition of gender ratio in menu preparation along with sensory quality evaluation to lead the successful foodservice management.

위탁급식 전문업체의 ERP 시스템에서 표준메뉴 정보품질이 사용자 만족도 및 업무성과에 미치는 영향 (Effect of Information Quality of Standard Menu on User's Satisfaction and Performance in ERP System of Contract Foodservice Management Company)

  • The purposes of this study were 1) to analyze the effect of the information quality of standard menu system of ERP on the user’s satisfaction 2) to analyze the effect of the information quality of standard menu system of ERP on the user’s performance. The questionnaires were distributed to 260 end users(dietitians, foodservice management managers) in charge of managing the institutional foodservice such as the office(government agencies, factories), schools(universities, middle and high school) and hospitals which were managed by contract foodservice management company “C” in Seoul and Kyunggi. The surveys were performed from July 26 to July 30, 2004. Two hundred and fifty questionnaires were responded(response rate : 96.2%). The statistical analysis was conducted by using SPSS Win(11.5). And the descriptive analysis, factor analysis, reliability test, pearson correlation and simple regression analysis were performed. The results showed that the information quality of standard menu system of ERP have a significant positive effect on the user’s satisfaction(p<0.001) and user’s performance(p<0.001). When constructing standard menu system on ERP in the contract foodservice management company, the information quality of standard menu system of ERP should be guaranteed in order to satisfy the end-user and to improve the user’s performance.

사업체 위탁 급식소에서 제공되는 메뉴에 대한 관리자 측면에서의 품질 관리 평가 (Evaluation of Menu Quality Management in Business & Industry Contract Foodservice from Manager′s Viewpoint)

  • The purpose of this study was to analyze and evaluate the menu served in business & industry contract foodservice by assessing nutritional value and by using menu-engineering technique from managers' view point. CAN-Pro program and Kasavana k Smith's Menu Engineering technique were used to evaluate the nutritional value and menu analysis, respectively. The data were analyzed using the SAS package program for descriptive analysis, t-test, ANOVA, and Pearson Correlation Analysis. As the result of nutritional value of lunch menu, all nutrient contents per meal were higher than a third of Korean recommended dietary allowances(RDA), But there was no problem when 20∼30% of plate waste was considered. Carbohydrate : Protein fat ratio was 62.7 : 16.4 : 20.8. Because animal : vegetable source ratios of protein, fat, calcium, iron were 44 : 56, 42 : 58, 22 : 78, 24 : 76, respectively, animal sources of calcium and iron needed to be supplemented. Plural set menus of A site were classified as STAR, PUZZLE, PLOWHORSE, DOG by Menu engineering technique. Set menus and soups & pot-stews among cafeteria menus in C site were operated properly without DOG and PUZZLE item. Side dishes of fishes, meats 8t eggs among cafeteria menus in C site were, for the most part, classified as STAR item, and side dishes of vegetables & salads and noodles among cafeteria menus in C site were STAR, PUZZLE, and DOG items. Impacts of menu information quality and nutrition information quality on technology acceptance characteristics and behaviors toward fast food restaurants' kiosk

  • BACKGROUND/OBJECTIVES: With the advances in technologies, self-service kiosks at foodservice operations are becoming a new way of service provision. This study examined the relationships among the menu information quality, nutrition information quality, technology acceptance characteristics, and customer behavioral intention toward the kiosks in fast food restaurants. SUBJECTS/METHODS: A survey with a self-administered method was distributed online and offline. The sample consisted of customers who had used the kiosks at fast food restaurants in the last six months prior to the survey. The study hypotheses were tested by applying structural equation modeling. RESULTS: Structural equation modeling revealed the positive impacts of menu information quality and nutrition information quality, technology acceptance characteristics, and behavioral intention toward kiosks at fast food restaurants. On the other hand, one hypothesis (Hypothesis 4) on the impact of nutrition information quality on the perceived usefulness was rejected. CONCLUSION: The study is the first to investigate nutrition and menu information at foodservice kiosks and relate them to technology acceptance. The study is very timely and adequate in the time of the 4th industrial revolution. The critical importance of the presentation of nutrition information and menu information at the kiosks at fast food restaurants was verified. The academic and industrial implications of the study findings were discussed.

이어콘을 적용한 음성 메뉴의 사용성 평가에 관한 연구 (A Study on the Usability Evaluation of Earcon Applied to Voice Menu)

  • This paper describes the experiment that investigated the possibility of design and evaluation of the usability of earcon applied to voice menu. The earcon has functions in providing navigational cue in the hierarchical menu, and also can be applied to voice menu for improving the recall rate and the response time. In this experiment, participants identified their location with the help of earcon applied to the voice menu with the various earcon parameters. In detail some participants listened to the good quality sound of voice menu using the structured earcon, and they recalled the location they heard. Other participants listened to the good quality sound of voice menu without earcon, and they recalled the location they heard in the same manner. And the response times were checked through their answers. On analyzing the results, we found the earcon applied to voice menu showed the increase of recalling rate from what they heard during experiment. That is the performance of task was better with earcon applied to voice menu than with voice menu without earcon. In the earcon applied to voice menu test, it showed the accuracy of 92.50%, but in voice menu without earcon test, people could only recall 66.25% among given questions. The response time was reduced from 4.98 sec to 3.85 sec. In addition, this experiment showed the 87.5% of participants preferred the earcon applied to voice menu.

호텔 양식당의 스타메뉴 개발에 관한 탐색적 연구 -서울지역 특1급 호텔을 중심으로- (A Exploratory Study on the Development of Star Menus in the Western Restaurants of the Hotels Focused on the Tourism Hotels in Seoul)

  • This exploratory study is to analyze the status of star menus and suggest the development strategy of star menus in the western restaurants of the tourism hotels in Seoul. The data was collected from the chefs who have been working over 15-years in tourism hotels in Seoul by judgement sampling. The questionnaire was composed of Miller and Pavesic's 'Fifty tips for a successful menu' and Khan's 'The evaluation of menu item development', The 30-menu items were selected from the 1st survey on the menu items that were high in both popularity and contribution margin by menu engineering method. The selected menu items were analyzed by 14 lists: simplicity, ready availability of ingredients, quality, flavor, presentation, preparation, service method, nutrition quality, preference, profitability, serving temperature, descriptive copy of menu and publicity. As a result of the study, appetizer category was recorded the highest score by 4.09. Smoked salmon, Tomato and mozzarella cheese, Cream of mushroom, Cream of asparagus, French onion soup, Grilled beef tenderloin, Grilled rib-eye steak, Roasted lamb rack, King prawn, Seafood spaghetti, Chef's salad, Caesar salad, Organic salad, Fruit plate, Italian tiramisu and Yogurt ice cream were recorded high score. The development strategy of star menu is belows : the menu writer must consider the productivity, effectiveness, popularity and profitability, the regular customers want varieties and creativity in the menu and the operators have to include the star menu items in the set menu.

패밀리 레스토랑 메뉴 품질이 고객 만족, 신뢰, 재방문 의도에 미치는 영향 (The Effect of Menu Quality of Family Restaurants on Customer Satisfaction, Trust, Revisit Intention)

  • 최근 패밀리 레스토랑은 서로 간에 경쟁뿐만 아니라 신규 외식업체의 등장으로 인하여 레스토랑의 경쟁 우위 전략 일환으로 메뉴 품질 향상이 절실히 요구되고 있다. 메뉴의 질적 향상은 고객과 레스토랑 경영에 있어서 매우 중요함에도 불구하고 기존의 틀을 벗어나지 못하고 독창성이 결여된 메뉴를 사용하기 때문에 많은 문제점을 가지고 있는 실정이다. 따라서 본 연구는 서울과 광주 지역에 소재하고 있는 패밀리 레스토랑인 O, T, V, B, M을 선정하여 총 199부의 설문지를 통계처리하여 메뉴 품질이 고객 만족과 신뢰, 재방문 의도에 미치는 영향 관계를 규명하였다. 첫째, 메뉴 품질은 고객 만족에 유의한 영향을 부분적으로 미치는 것으로 나타났다. 둘째, 메뉴 품질은 고객 신뢰에 유의한 영향을 부분적으로 미치는 것으로 나타났다. 셋째, 고객 만족은 재방문 의도에 유의한 영향을 미치는 것으로 나타났다. 넷째, 고객 신뢰는 재방문 의도에 유의한 영향을 미치는 것으로 나타났다. 고객들이 지각하는 패밀리 레스토랑 메뉴 품질 이미지가 고객 만족, 신뢰, 재방문 의도에 긍정적으로 작용할 수밖에 없으므로, 향후 패밀리 레스토랑 기업들이 치열한 경쟁에서 살아남기 위해서는 차별화된 메뉴 품질 향상이 요구된다는 점에서 중요한 의의를 줄 수 있을 것이다.

친환경 유기농 식품을 활용한 한식 건강 메뉴의 이용 실태 및 선택 속성의 중요도 연구 -성별을 중심으로- (Study on Actual State and Importance of Selection of Healthy Korean Food Menu Items Made from Environmentally-Friendly Organic Foods - Focused on Gender-)

  • Research on the actual state of healthy Korean food menu items made from environmentally-friendly organic foods showed that 65.6% of subjects had experience of purchasing environmentally-friendly organic foods, and both genders chose 'expensive but reliable' as their prime reason for purchasing. Having no experience of purchasing environmentally-friendly foods constituted 34.5% of respondents, and the reasons were 'high price' and 'finding no difference from ordinary food'. Research on awareness of healthy Korean food menu items made from environmentally-friendly organic ingredients showed that both men and women thought the given menu items were 'fresh' but had little awareness of other factors such as 'good value for price', 'good visual style' and 'various recipes'. Regarding development prospective of environmentally-friendly organic foods, the number of subjects who answered positively was 405 (93%), which indicates that most research subjects showed positive attitudes. Top-selling menu items in the grain section were Sundubu-jjigae, Dubu-kimchi and Jeonju-bibimbap, and pajeon took first place in the vegetable selection. Moreover, Imjasu-tang showed high scores in the meat section. Furthermore, research on menu selection showed that menu selection was usually dependent on 'the price of menu (3.86)', 'fresh ingredients (4.03)', 'harmony of color (3.65)' and 'mood of the day (3.25)'. Research on menu selection revealed that 'quality of food' factors had the greatest influence upon preference and purchase intention for environmentally-friendly organic foods. Visual and psychological factors and values had significant an effect. Therefore, the food service industry should use this study as a source to develop menu items, by considering quality and visual factors. In addition, there should be various research performed on marketing strategies about menus from using environmentally-friendly organic foods and high value products.
