우리나라 농촌지역의 메뉴패턴에 관한 연구 (II) - 지역별 비교 - (The Study of Menu Patterns in Korean Rural Areas (II) - Compared by the Area -)

  • This study was conducted to investigate frequently consumed menu patterns by the area and season, using the 24-hour recall method. Subjects were 1,041 living in five different Korean rural areas for the spring, autumn and winter. The purpose of this study is to suggest the menu pattern in rural areas for the basic data of the nutrition education program and nutrition intervention project by the area and season. The result are following : Most frequently used basic menu patterns, excluding side dishes, were rice+soup in Yeoju, Hoensung and Jungup, rice+stew in Ulsan, and only rice in Chungju. The most frequent menu pattern by the number of side dish was rice+soup+kimchi+1 side dish in Yeoju and Ulsan were rice+stew+kimchi in Hoengsung, and was rice+soup+2 side dish in Chungju and Frequently used menu patterns by the kind of side dish weer rice+soup+kimchi>rice+stew+kimch>rice+kimchi>noodle+kimchi in the order The most frequent menu pattern was rice+soup+kimchi in spring and autumn, and was rice+stew+kimchi in winter. The mean adequacy ratio(MAR) in spring and autumn was higher than that in winter. MAR in Ulsan is higher than that of other areas. With these results, we can conclude that there are difference in menu pattern by the season and area. For the nutrition program in the community, menu patterns should be carefully examined by the season and area. The results from this study can be used as basic data for nutrition education program in Korean rural areas.

호텔 고객의 뷔페 메뉴품질 만족도에 관한 연구 (A Study on the Satisfaction of the Buffet Menu Quality of the Hotel Customers)

  • This study aims at providing useful information to establish subdivided marketing direction by deriving factors of significant extent and practicable extent of buffet users toward menu quality among super deluxe hotels in Gyeongju, and furthermore aims at presenting implications for efficient management result and sales increase of buffet in the future. The result of positive analysis is as follows. Firstly, in result of analyzing difference between importance and performance of hotel buffet in Gyungju area, importance is much higher than performance. Secondly, respondents consider that the most important menu of hotel buffet is main dish such as hot food and instant food rather than menu such as beverage, soup and salad. When it comes to attribute of menu quality, it appeared that respondents put highly significant extent on sanitariness of food, freshness of food, flavor of food, and seasonality and variety of menu. Thirdly, oriental instant food is included in the second quadrant of IPA regarding buffet menu which should be intensively managed. And three attributes such as temperature of food, time of changing food, and creativity of menu are included in the second quadrant of IPA graph by attribute of hotel buffet's menu quality. Lastly, in IPA graph by hotel, the following menus of each hotel need to be intensively managed: Oriental instant food of A hotel, Western cold food of B hotel, Oriental instant food, Western instant food, and Oriental dessert of C hotel, and Western porridge soup, Oriental instant food, and Western instant food of E hotel. The aforementioned menus should be improved.

호텔 이태리 레스토랑의 메뉴 품질 만족도가 재방문 의사에 미치는 영향 (The Effect of the Menu Quality of Hotel Italian Restaurants on Satisfaction and Revisit Intention)

  • 본 연구의 목적은 서울 시내에 소재한 대표적인 특1급 호텔 이태리 레스토랑의 메뉴 품질이 고객 만족과 재방문에 미치는 영향 관계를 분석하는데 있다. 조사 기간은 2009년 6월 20일부터 6월 26일까지 7일 동안 이태리 레스토랑을 방문한 고객을 대상으로 설문조사를 하였으며, 분석방법은 빈도분석, 신뢰도분석, 요인분석, 상관관계분석, 다중회귀분석을 실시하였다. 연구 결과는 첫째, 이태리 레스토랑의 선택 기준은 음식의 맛이며, 이태리 레스토랑의 메뉴 품질에 대한 총 45개의 변수를 가지고 요인분석을 실시한 결과, 메뉴 구성 요인, 음식 품질 요인, 메뉴 서비스 요인으로 도출되었다. 둘째, 이태리 레스토랑의 메뉴 품질 중에서 메뉴 구성과 메뉴 서비스가 고객 만족에 유의한 영향을 미치는 것으로 나타났다. 셋째, 고객 만족은 재방문에 유의한 정(+)의 영향을 미치는 것으로 나타났다. 넷째, 이태리 레스토랑의 메뉴 품질 중에서 메뉴 구성은 재방문에 유의한 정(+)의 영향을 미치는 것으로 나타났는데, 음식 품질과 메뉴 서비스는 재방문에 유의한 정(+)의 영향을 미치지 않는 것으로 나타났다. 연구의 한계점으로는 서울 시내에 소재한 특1급 호텔 이태리 레스토랑으로 지역을 제한하여 조사를 하였기 때문에 전체적인 이태리 레스토랑의 메뉴 품질을 대표할 수 없다고 생각된다. 향후 연구에서는 외식업체의 이태리 메뉴 품질에 관한 다양한 연구가 진행이 되어야 하겠다.

한식 메뉴 명명 기준에 대한 내용분석 (The Content Analysis of the Korean Food Menu Naming Standard)

  • This research analyzed the naming standard of Korea menu names divided into two groups, main dish and side dish. The research was conducted by contents analysis of selected literature articles and multiple-response cross tabulation analysis. The result demonstrated that the naming standard of Korea food consisted of the main ingredient name - sub ingredient name - main condiment name and main recipe. On the other hand, the menu name that is in native language or has a historical origin is exempt from this classification. Therefore, this study proposes a new standard, 'Hansik Menu Naming', to assist the food service industry and correct the names of unknown foreign dishes.

패밀리 레스토랑의 메뉴 권유 판매가 고객 태도, 만족, 구매 의사 결정에 미치는 영향 (Effects of Recommendation Selling in Family Restaurants on Customer Attitudes, Customer Satisfaction, Customer Purchase Decision Making)

  • The purpose of this study is to investigate if recommendation selling (methods of recommendation selling, a key word used for recommendation, and employee attitude) influences the customers' menu decision. The results of the study are as follows: 'Menu picture' and 'explanation by word' among the tools used by employees for recommendation were found to influence customers' menu decision. The words such as 'new menu' and 'special only today' used by employees for recommendation were found to influence customers' menu decision. Employees' attitude elements such as 'interesting explanation', 'dressed up tidy', 'strong intention', and 'patience' were found to influence customer's menu decision. 'Recommendation selling' in the food and beverage industry means 'employees help customers make a good decision on food and beverage service'. This study makes an important contribution to the food industry in terms of providing substantial marketing strategies.

Markov Chain을 이용한 핸드폰 메뉴 선택 예측 (Prediction of Mobile Phone Menu Selection with Markov Chains)

  • Markov Chains has proven to be effective in predicting human behaviors in the areas of web site assess, multimedia educational system, and driving environment. In order to extend an application area of predicting human behaviors using Markov Chains, this study was conducted to investigate whether Markov Chains could be used to predict human behavior in selecting mobile phone menu item. Compared to the aforementioned application areas, this study has different aspects in using Markov Chains : m-order 1-step Markov Model and the concept of Power Law of Learning. The results showed that human behaviors in predicting mobile phone menu selection were well fitted into with m-order 1-step Markov Model and Power Law of Learning in allocating history path vector weights. In other words, prediction of mobile phone menu selection with Markov Chains was capable of user's actual menu selection.

  • As the life style of modern people is gradually being more scientific, up-to-date, and specialized, food habit and food cut lure are a measure of cultural level of a country. Studies on consumer behavioral model show that food habit is closely related to consumer preference, changing life pattern and increasing family income. The purpose of this study was, accordingly, to define the impact of menu characteristics on customer menu selection. For that purpose, some at tempts were made: First, discuss the theories on family restaurant and customer purchasing behavior as a standard of analysis. Second, find out if there are any differences in customer menu- selection factors in family restaurant Third, make an empirical analysis of menu-selection factors in family restaurant to suggest in which direction it should move forward Fourth, analyze the relationship of demographic characteristics to menu-select ion factors.

  • This study was carried out to develop a computerized menu planning for athletes who need weight control. The outine of the computer lprogram for menu planing that was developed in this study are as follows: First of all, the athlete's weight to be lost/controlled, age, sex and quantity of daily activity were put into the computer. When an individual file was formed, an ordered menu formulated to control the necessary quantity of nutrients were sufficient. The software is planned according to the sturcture of the menu which can be chosen at random. Also, it was made possible to change the menu according to one's preference. Therefore, this was similar to the manmachine system which is desirable form in using the computer. The developed software could be used not only for athletes but also for a nutrition councelling program for those who need weight control.

  • 엑셀이 자료 통계 분석에서 매우 편리하고 유용한 도구가 될 수 있음을 보여주기 위하여 지하철 이용객 자료로 가설을 검정하는 사례 연구를 시행하였다. 양적 자료는 엑셀의 기술통계량 메뉴에 의하여, 질적 자료는 히스토그램 메뉴에 의하여 기술되었고, 변수들간의 관계성 검정은 회귀 분석 메뉴에 의하여, 차이 검정은 T검정 메뉴에 의하여, 요인 검정은 분산배치법 메뉴에 의하여 전문적인 결과를 얻을 수 있었다. 엑셀만을 이용하여 자료 입력, 관리 및 통계 분석 결과를 편리하게 수행할 수 있는 사례가 되었다.
