Effects of Hot Environment and Dietary Protein Level on Growth Performance and Meat Quality of Broiler Chickens

  • This study was conducted to determine the effect of hot environment and dietary crude protein level (CP) on performance, carcass characteristics, meat visual quality, muscle chemical composition and malondialdehyde (MDA) concentration of tissues in broilers. Two hundred and sixteen 21-d old Arbor Acre broilers were used in a $4\times3$ factorial arrangement and randomly reared in 4 environmental chambers and fed on 3 diets with different CP levels for 3 weeks. The results showed: (1) when air temperature (AT) rose to $33^{\circ}C$, average daily feed intake, average daily gain, carcass weight, right breast meat weight, left thigh and drumstick meat weight decreased (p<0.05) and feed conversion rate decreased (p<0.05), but the ratio of carcass to live weight and of left thigh and drumstick meat weight to carcass weight increased (p<0.05). (2) There were significant differences in pH and shear force in breast meat, and shear force, L* and a* in thigh meat (p<0.01 or 0.05) among hot environments. Dietary CP level tended to affect breast meat pH and pH and L* of thigh meat (p<0.06 or 0.09). Compared to the normal temperature ($22^{\circ}C$), low temperature ($15^{\circ}C$) and hot humid (AT $33^{\circ}C$, relative humidity (RH) 80%) treatments significantly (p<0.05) decreased the tenderness of thigh meat. L* and a* value in thigh meat under high temperature treatments, regardless of RH, were higher (p<0.05) than those under normal temperature. (3) Protein content in breast and thigh meat of broilers fed under high temperature ($33^{\circ}C$) was lower (p<0.05) than that under $22^{\circ}C$, but fat content had an adverse change. High temperature ($33^{\circ}C$) increased the moisture of breast meat significantly (p<0.05). Protein content in breast meat increased significantly (p<0.05), in which fat content had an adverse change (p<0.05), when the dietary protein rose. (4) MDA concentration in liver and breast meat under hot humid (AT $33^{\circ}C$, RH 80%) treatment increased markedly (p<0.05). (5) High humidity could sharpen the bad effect of high temperature on performance, carcass yield and choice cuts, crude protein and moisture content in breast meat. It was concluded that a hot environment could affect the performance and meat quality of broiler chicks more significantly than CP level and that high humidity would aggravate the bad influence of high temperature on the broiler.

Quality and Acceptability of Meat Nuggets with Fresh Aloe vera Gel

  • Aloe vera has been used worldwide for pharmaceutical, food, and cosmetic industries due to its wide biological activities. However, quality improvement of low fat meat products and their acceptability with added Aloe vera gel (AVG) is scanty. The aim of this study was to explore the feasibility of using fresh AVG on physicochemical, textural, sensory and nutritive qualities of goat meat nuggets. The products were prepared with 0%, 2.5%, and 5% fresh AVG replacing goat meat and were analyzed for proximate composition, physicochemical and textural properties, fatty acid profile and sensory parameters. Changes in lipid oxidation and microbial growth of nuggets were also evaluated over 9 days of refrigerated storage. The results showed that AVG significantly (p<0.05) decreased the pH value and protein content of meat emulsion and nuggets. Product yield was affected at 5% level of gel. Addition of AVG in the formulation significantly affected the values of texture profile analysis. The AVG reduced the lipid oxidation and microbial growth in nuggets during storage. Sensory panelists preferred nuggets with 2.5% AVG over nuggets with 5% AVG. Therefore, AVG up to 2.5% level could be used for quality improvement in goat meat nuggets without affecting its sensorial, textural and nutritive values.

Effects of radish powder concentration and incubation time on the physicochemical characteristics of alternatively cured pork products

  • Previous research has indicated that radish powder could be a suitable replacement for chemical nitrite sources in alternatively cured meat products. However, the effects of radish powder level on the physicochemical properties of cured meat have not been systematically studied. In this study, we aimed to investigate the effects of varying concentrations of radish powder and incubation time on the physicochemical properties and cured meat pigments of alternatively cured meat products. We divided our experimental setup into seven groups with different radish powder concentrations and incubation times: control (0.01% sodium nitrite), treatment 1 (0.15% radish powder and 2 h incubation), treatment 2 (0.15% radish powder and 4 h incubation), treatment 3 (0.30% radish powder and 2 h incubation), treatment 4 (0.30% radish powder and 4 h incubation), treatment 5 (0.30% celery powder and 2 h incubation), and treatment 6 (0.30% celery powder and 4 h incubation). The cooking yield, CIE a* values (redness), and total pigment levels were not significantly different (p > 0.05) between any of the alternatively cured treatments and the control. However, when 0.30% radish powder or celery powder was added to the products, the CIE b* values increased significantly (p < 0.05) with incubation time. At the same vegetable concentration, the nitrite content, nitrosyl hemochrome, and curing efficiency also increased significantly (p < 0.05) as the incubation time increased from 2 to 4 h, regardless of the types of vegetable powder. Among the meat products cured with radish powder, treatment 4 showed the highest increase in residual nitrite content, nitrosyl hemochrome content, and curing efficiency, but showed decreased lipid oxidation. Our results suggest that increased concentrations of radish powder and longer incubation times would be more suitable for producing alternatively cured meat products comparable to traditionally cured products treated with synthetic nitrite.

Effects of Dietary Octacosanol on Growth Performance, Carcass Characteristics and Meat Quality of Broiler Chicks

  • Octacosanol, which has prominent physiological activities and functions, has been recognized as a potential growth promoter in animals. A total of 392 1-d-old male Arbor Acres broiler chicks with similar body weight were randomly distributed into four dietary groups of seven replicates with 14 birds each supplemented with 0, 12, 24, or 36 mg octacosanol (extracted from rice bran, purity >92%)/kg feed. The feeding trial lasted for six weeks and was divided into the starter (day 1 to 21) and the grower (day 22 to 42) phases. The results showed that the feed conversion ratio (FCR) was significantly improved in broilers fed a diet containing 24 mg/kg octacosanol compared with those fed the control diet in the overall phase (day 1 to 42, p = 0.042). The average daily gain and FCR both showed linear effects in response to dietary supplementation of octacosanol during the overall phase (p = 0.031 and 0.018, respectively). Broilers fed with 24 or 36 mg/kg octacosanol diet showed a higher eviscerated yield, which increased by 5.88% and 4.26% respectively, than those fed the control diet (p = 0.030). The breast muscle yield of broilers fed with 24 mg/kg octacosanol diet increased significantly by 12.15% compared with those fed the control diet (p = 0.047). Eviscerated and breast muscle yield increased linearly with the increase in dietary octacosanol supplementation (p = 0.013 and 0.021, respectively). Broilers fed with 24 or 36 mg/kg octacosanol diet had a greater (p = 0.021) $pH_{45min}$ value in the breast muscle, which was maintained linearly in response to dietary octacosanol supplementation (p = 0.003). There was a significant decrease (p = 0.007) in drip loss value between the octacosanol-added and the control groups. The drip loss showed linear (p = 0.004) and quadratic (p = 0.041) responses with dietary supplementation of octacosanol. These studies indicate that octacosanol is a potentially effective and safe feed additive which may improve feed efficiency and meat quality, and increase eviscerated and breast muscle yield, in broiler chicks. Dietary supplementation of octacosanol at 24 mg/kg diet is regarded as the recommended dosage in the broilers' diet.

Muscle Fiber, Connective Tissue and Meat Quality Characteristics of Pork from Low Birth Weight Pigs as Affected by Diet-Induced Increased Fat Absorption and Preferential Muscle Marbling

  • This study investigated how birth weight differences in piglets affected carcass and muscle fiber properties as well as meat quality at slaughter. Within litters, piglets were grouped according to their birth weight as either normal (NBW; 1.62-1.73 kg) or low (LBW; 1.18-1.29 kg). At 5 weeks of age, NBW piglets were randomly transitioned to control (C) or isocaloric high fat diets derived from non-dairy (HF), while LBW piglets were randomly transitioned to high fat diets derived from non-dairy (HF) or dairy sources (HFHD). Piglets were reared in individual pens under standardized housing and feeding conditions. Live weight was recorded weekly, and pigs were slaughtered at 12 weeks of age. Hot carcass weights, dressing percentages, lean meat yield, and primal cut proportions were determined. The m. longissimus thoracis was collected from the right side of the carcass for measurement of physical and chemical properties of meat and muscle fiber characteristics. Results indicated that LBW pigs compensated for their live weight compared to NBW pigs at 6 weeks of age. The mean muscle fiber diameter of LBW-HFHD group is significantly higher than NBW-C and NBW-HF group, and the type I muscle fiber diameter is significantly higher than NBW-C group. Dairy fat inclusion in LBW pig diet reduced carcass back fat thickness. This increased the calculated lean meat yield to be comparable to that of NBW pigs fed a commercial diet. Incorporating dairy-sourced high-fat into LBW pigs' diets appears to be an effective strategy for producing carcasses equivalent to NBW pigs.

  • This study was conducted to investigate the effect of different additives on the growth performance, feed efficiency and carcass characteristics in Holstein steers during 18month fattening periods. Twenty four Holstein steers, 5months of age and 176.6kg, were randomly allocated to 3 experimental groups 8 animals each for 18-months feeding trial. The groups were control (not additive), T1 (fed zinc, Vitamin C) and T2 (fed zinc, Vitamin C, Vitamin B6 and Selenium). According to feeding additives, final weight was not significantly different among the treatment groups, tended to be high at T2 group (827kg) compared to the other groups. Average daily gain was not different among the treatment groups during the experimental periods, but T2 group was significantly greater than T1 group in growing stage (p<0.05). The feed additives had no effects on DMI during experimental periods. Feed conversion ratio of T1 group in growing stage was significantly higher than those of other groups (p<0.05), average feed conversion ratio was tend to be decreased at T2 group rather compared with other groups. In the results of yield traits, carcass weight were relatively higher in T2 group than other groups (p<0.05). Rib-eye area, back fat thickness and yield index were similar between groups. In quality traits, marbling, meat color, fat color, texture and maturity were not significantly different among the groups. In economic efficiency, income was highest at T2 group as 91~393 thousand won among 3 groups.

  • 국내(國內) 산란(産卵)노계(老鷄)와 브로일러로부터 수동(手動) 및 기계발골(機械拔骨)을 할 때의 수율(收率), 발골육(拔骨肉)의 화학적(化學的) 조성(組性), 기계적(機械的) 특성(特性) 저장성(貯藏性), 미생물수(微生物數) 등을 조사하여 다음과 같은 결과를 얻었다. 1. 수동발골의 경우 35%, 기계발골의 경우 45%의 산육수율(産肉收率)을 보여 1차 수동발골을 거친 후 기계발골을 병행(竝行)할 경우 총 산육량(産肉量)은 도체중(屠體重)의 80%에 이르렀다. 2. 기계발골육(器械拔骨肉)은 수분(水分) 65%, 단백질(蛋白質) 12%, 지방(脂肪) 1.7%, Ca $0.2{\sim}0.4%$로서 수동(手動)발(拔)골육(骨肉)에 비해 수분(水分)과 단백질은 낮고 지방(脂肪), 회분(灰分) 및 Ca은 현저히 높았다. 또한 기계(器械)발(拔)골육(骨肉)의 총색소(色素)함량(含量)은 수동발골역(手動拔骨肉)의 2.5배로서 이는 주로 해모그로빈의 증가에 기인하였다. 3. 기계발골육(機械拔骨肉)의 고기 g당 유화능력(乳化能力)은 수동발골육(手動拔骨肉)의 70%에 불과하였으나 단백질 g당 유화능력은 오히려 더 높았는데 이는 기계발골육(機械拔骨肉)의 염용성(鹽溶性) 단백질(蛋白質)의 구성비(構成比)가 수동발골육(手動拔骨肉)보다 높았기 때문이었다. 4. $-20^{\circ}C$에서 냉동(冷凍)저장(貯藏)하는 동안 기계발골육(機械骨肉)의 TBA값은 4주(週)후부터 급격히 증가하였으며 유화능력(乳化能力)도 4주후부터는 낮아져 기계발골육(機械拔骨肉)의 저장(貯藏)은 4주(週) 이내가 권장되었다. 또한 저장 중의 미생물수(微生物數)는 큰 변화없이 $1.8{\times}10^{6}\;cells/g$으로서 수동발골육(手動拔骨肉)의 미생물수(微生物數)와 큰 차이가 없었다.

EFFECTS OF CIMATEROL ON CARCASS AND SKELETAL MUSCLE CHARACTERISTICS UNDER AD LIBITUM AND RESTRICTED FEEDING CONDITIONS IN LAMBS

  • Fifty-two wether lambs weighing 30 kg were randomly assigned to 5 treatment groups; 1) initial slaughter. 2) control-maintenance (CON-MT), 3) control-ad libitum (CON-AL), 4) cimaterol-maintenance (CIM-MT) and 5) cimaterol-ad libitum (CIM-AL). Ad libitum-fed animals had free access of a high-concentrate diet, whereas maintenance animals were restricted in feed intake to maintain the initial weight of 30 kg for 90 days. Cimaterol was administered in the feed at 10 mg/kg. Regardless of feeding level, the administration of CIM improved carcass weight (p < .05), dressing % (p < .01), longissimus muscle area (p < .01), leg conformation and muscling (p < .01), USDA yield and quality grades (p < .01) and protein concentration (p < .01) in carcass as well as in muscle. Cimaterol feeding decreased organ wt (p < .01), baekfat depth (p < .01), intramuscular fat and overall fatness. Cimaterol was effective for muscle accretion even under restricted feeding condition. The greater accretion of muscle was the result of the hypertrophy of both type I and type II muscle fibers but the hypertrophy of type II fiber (110%) was much greater than that of type I fiber (37%). Cimaterol feeding decreased muscle DNA concentrations but the number of nuclei per muscle fiber was not changed, indicating that the lower DNA concentration was due to the dilution effect caused by the hypertrophy of muscle fiber. As evidenced by lower flank streaking, lower marbling and darker muscle, CIM feeding adversely affected meat quality. Meat tenderness was also adversely affected, resulting in significantly (p H .01) tougher meat in CIM-fed animals.

토종닭 실용계의 생산성, 도체율 및 육질특성 비교 (Comparison on Performance, Carcass Yield and Meat Quality Characteristics of Korean Indigenous Commercial Chicken)

  • 본 연구는 국내에서 유통되는 토종닭 실용계 4종(한협3호: G, 소래1호: V, 우리맛닭1호: S, 우리맛닭2호: W)의 생산성, 도체율, 정육율 및 육질 특성을 비교하기 위해 수행하였다. 각각의 품종을 처리구로 총 4처리구, 처리당 6반복, 반복당 16수(♀ 8수, ♂ 8수)씩 총 384수를 완전임의 배치하였다. 체중은 S와 W 품종에 비해 G와 V 품종에서 유의적으로 높았으며(P<0.01), 증체량은 S 품종이 유의적으로 낮게 나타났다(P<0.05). 사료요구율은 8~10주령에서 W 품종이 유의적으로 높게 나타났다(P<0.05). 생존율은 처리구 사이에서 유의적인 차이를 보이지 않았다. 12주령 도체율과 정육율은 V 품종에서 가장 높게 나타났으나(P<0.05), 암수 사이에서 유의차가 없었다. 가슴육의 전단력은 G 품종이 유의적으로 낮게 나타났으며(P<0.05), 12주령에 수탉이 암탉에 비해 높게 나타났다(P<0.05). 가슴육의 L*(명도)는 V 품종을 제외하고 암탉이 높게 나타났으며, 품종 간 a*(적색도)는 G품종이 유의적으로 높았다(P<0.05). 가슴육의 b*(황색도)는 G와 V 품종이 높았으며(P<0.05), G 품종을 제외한 모든 품종에서 수컷이 암컷보다 더 높은 황색도를 보였다. 다리육은 적색도의 암수 효과를 제외하고 명도, 적색도, 황색도에서 품종, 암수 그리고 상호작용 효과에서 모두 유의적인 차이를 나타냈다(P<0.05). 결론적으로, 생산성은 G와 V종, 육질은 S와 W종이 우수한 경향을 보였다.

Effects of Stocking Density or Group Size on Intake, Growth, and Meat Quality of Hanwoo Steers (Bos taurus coreanae)

  • This study was conducted to investigate the effects of stocking density or group size on feed intake, daily gain, and carcass characteristics of Hanwoo (Korean indigenous breed) steers reared from 7 months to 31 months of age. Thirty Hanwoo steers were divided into four groups with three replicates each (a total of 12 pens). In each group, one (G1), two (G2), three (G3), and four steers (G4) per pen were allocated as treatments. Pen size was $32.0m^2$, and therefore Hanwoo steers in G1, G2, G3, and G4 were reared under different space allowances, i.e. 32.0, 16.0, 10.6, and $8.0m^2$/steer, respectively. Steers were reared following a conventional beef cattle management method in Korea, and were offered a fixed amount of commercial concentrate with ad libitum forages. Results were subjected to analysis of variance with stocking density as the main effect, and significance was declared at p<0.05. Although total feed intake was not significantly altered, it numerically increased in animals of low stocking density (G1) compared to those subjected to high stocking density treatment (i.e. G4). Feed conversion ratio was higher (p<0.05) in G3 compared to G1 and G2. Animals in G1 (low stocking density) grew faster (p<0.05) than those of high stocking density (G3 and G4). Back fat thickness, meat yield index, and meat yield grade were similar among all levels of stocking density. However, longissimus muscle area was larger in G1 and G2 (p<0.01) compared to G3 and G4, and animals in G3 produced smaller carcasses (p<0.05). Carcass quality traits, including marbling score, meat color, fat color, texture, maturity and meat quality grade, as determined by a group of experts, were not significantly different among the treatments. In conclusion, lower stocking density resulted in increased feed efficiency, daily gain, and carcass weight in Hanwoo steers. However it remains unclear whether such differences are the results of stocking density or group size, or a combination of both. Nonetheless, these results confirm previous studies reporting a negative effect of increased stocking density on animal productivity. Further, animal welfare under an intensive farming system in relation to economical return is discussed.
