Defatting and Sonication Enhances Protein Extraction from Edible Insects

  • Edible insects are attracting growing interest as a sustainable source of protein for addition to processed meat and dairy products. The current study investigated the optimal method for protein extraction from mealworm larvae (Tenebrio molitor), cricket adults (Gryllus bimaculatus), and silkworm pupae (Bombyx mori), for use in further applications. After defatting with n-hexane for up to 48 h, sonication was applied for 1-20 min and the protein yield was measured. All samples showed a total residual fat percentage below 1.36%, and a 35% to 94% improvement in protein yield (%). In conclusion, defatting with n-hexane combined with sonication improves the protein yield from insect samples.

갈색거저리 유충 분말을 이용한 패티 제조 및 품질특성 (Quality Characteristics of Patty Prepared with Mealworm Powder)

  • This study was performed to develop patties with quality characteristics using mealworm powder, followed by assessments of general compositions and the branched-chain amino acid (BCAA) levels of the patties. An analysis of the chromaticity of the patties shows that the lightness and yellowness were decreased, whereas the redness was increased, as the amount of mealworm powder was increased. According to the sensory evaluation, the mealworm patty that contain 20% of mealworm powder (M20) showed an overall high preference level. In terms of the mechanical properties, the hardness, gumminess, and chewiness were significantly increased, whereas the springiness and cohesivensee were decreased, as the amount of mealworm powder was increased. The general composition of the M20 consists of 41.84% (moisture), 8.78% (carbohydrates), 34.42% (crude protein), 13.15% (crude fats), and 1.81% (crude ash). The BCAA contents (leucine, isoleucine, and valine) significantly increased in correspondence with the increases of the as mealworm-powder amount regarding the M20, the BCAA composition consists of the following: leucine (2,906.25 mg/100 g), isoleucine (1,459.09 mg/100 g), and valine (1,813.18 mg/100g). The conclusion of this study suggests that mealworm is a potential food material that could possibly replace meat.

  • This study was performed to evaluate the quality characteristics of functional Dasik prepared with a mixture of freeze-dried mealworm (Tenebrio molitor) powder and dried pollack powder along with assessment of the general and fatty acid compositions of mealworms. General compositions, except for moisture content of freeze-dried mealworm powder, were higher than those of raw mealworms. The ratios of saturated fatty acids and unsaturated fatty acids of freeze-dried mealworm powder and raw mealworms were 1:3.31 and 1:3.19, respectively. Amounts of oleic acid, which was the most abundant among unsaturated fatty acids, of freeze-dried mealworm powder and raw mealworms were 41.12 and 37.84%, respectively. For color values, greater content of freeze-dried mealworm powder in functional Dasik resulted in lower L and b scores, whereas a value increased. In the case of mechanical properties, greater content of freeze-dried mealworm powder resulted in significant reduction of hardness, chewiness, and gumminess. In the case of sensory evaluation, color, taste, and overall quality of DPMD50, which was prepared with a 1:1 ratio of freeze-dried mealworm powder and dried pollack, were the highest. It was concluded that DPMD50 is a nutritious combination of edible insects and fish for protein fortification for growth and the elderly.

Substitution of Fish Meal by Mealworm (Tenebrio molitor) in Practical Diets for Pacific White Shrimp, Litopenaeus vannamei

  • Mealworm (Tenebrio molitor) was evaluated to investigate the effect of partial or total replacement of fish meal in diets for white shrimp, Litopenaeus vannamei. Experimental groups of shrimp with average initial body weight (2.43 ± 0.54 g) were fed each with 4 isonitrogeneous (38% crude protein) diets formulated to include 0, 25, 50 and 100% (diets 1 to 4, respectively) of fish meal substituted with mealworm. After eight weeks of feeding trials, shrimp fed with diet 3 and 4 revealed the highest values for live weight gain(8.01 ± 2.51 and 7.93 ± 1.12), specific growth rates (2.70 ± 1.12 and 2.59 ± 0.51) as well as better feed conversion ratio (2.69 ± 0.09 and 2.72 ± 0.19) compared to the control group with statistically significant manner (p<0.05). Survival range was 98% in all the treatments. An increase in weight gain and other growth associated parameters was observed with higher replacement. These results clearly indicate that 50% and 100% of fish meal protein in shrimp diet can be replaced by mealworm not only without any adverse effect but also the effect of promoting growth performance.

탈지 밀웜 분말 첨가량을 달리하여 제조한 설기떡의 품질특성 (Quality Characteristics of Sulgidduk Prepared with Different Levels of Defatted Mealworm Powder)

  • 본 연구는 고 탄수화물식품인 설기떡에 단백질함량이 높은 탈지 밀웜 분말 첨가량(0, 3, 6, 9 및 12%)을 달리하여 제조한 설기떡의 품질특성으로 색도, 기계적 물성, 관능평가, 일반성분, 분지사슬 아미노산 함량을 평가하였다. 품질 특성 평가를 수행한 결과, 색도의 경우 명도(L) 값은 탈지 밀웜 분말 첨가비율이 증가할수록 유의하게 낮아진 반면, 적색도(a)과 황색도(b) 값은 탈지 밀웜 분말 첨가비율이 증가할수록 유의하게 높아졌다. 탈지 밀웜 분말 첨가량에 따른 설기떡의 기계적 물성 측정결과 경도, 검성은 탈지 밀웜 분말 첨가비율이 증가할수록 유의하게 높아진 반면, 씹힘성, 탄력성과 응집성에서는 유의하게 낮아졌다. 탈지 밀웜 분말 첨가량에 따른 설기떡의 관능평가의 경우, 탈지 밀웜 분말을 6% 첨가한 설기떡(MS-6)의 색, 맛, 향 및 전반적인 기호도 점수가 가장 높았다. 탈지 밀웜 분말을 6 % 첨가한 설기떡(MS-6)의 일반성분을 대조군과 비교한 결과, 대조군과 MS-6간에 수분함량과 조회분 함량에는 차이가 없었으나, 단백질 함량은 MS-6이 높았고 탄수화물은 대조군이 높았다. 탈지 밀웜 분말을 6 % 첨가한 설기떡(MS-6)의 분지사슬 아미노산(BCAA) 함량을 대조군과 비교한 결과, 대조군에 비해 탈지 밀웜 분말 첨가로 근육형성 기능을 하는 branched amino acids인 valine($275.8{\pm}3.41mg/100g$), leucine($414.3{\pm}5.87mg/100g$) 및 isoleucine($188.9{\pm}2.31mg/100g$)의 함량이 유의적으로 증가되었다. 이상의 결과 탈지 밀웜 분말을 6 % 첨가한 설기떡(MS-6)은 일반성분 중 단백질함량, 아미노산 중 분지사슬 아미노산(valine, leucine 및 isoleucine) 함량이 대조군에 비해 높아져 영양적 단점이 보완되어 단백질 강화식품으로의 활용가치가 높을 것으로 보여진다.

Quality characteristics and antioxidant activity of roasted yakgwa according to the addition ratio of mealworm

  • The proximate composition, quality characteristics, antioxidant activity, and sensory evaluation scores of yakgwa added with mealworm powder (MP) were examined. MP contained 5.83 wt% moisture, 55.70 wt% crude protein, 35.96 wt% crude fat, 3.70 wt% crude ash, and 2.43 wt% carbohydrate and feature total polyphenol and flavonoid contents of 406.52 mg GAE/100 g and 21.18 mg NE/100 g, respectively. The DPPH and ABTS•+ radical scavenging activities and the reducing power of MP were determined as 90.25%, 44.06%, and 1.74, respectively. Except for moisture and carbohydrate content, the proximate composition of mealworm yakgwa (MY) increased with the amount of MP increased. The pH of the dough increased with the addition of MP, whereas the expansion degree tended to decrease. Sugar content was highest at MP contents of 0 wt% and 12 wt% (FM4 group), and hardness was lowest in the FM4 group. With the increasing MP content, the L, b values and antioxidant activity increased, whereas a value decreased. The sensory evaluation scores for the overall preference, appearance, color, and taste were lowest in the FM4 group. These results suggested that MP contents of 6-9 wt% were optimal for mealworm-based yakgwa.

Supplementation of Dried Mealworm (Tenebrio molitor larva) on Growth Performance, Nutrient Digestibility and Blood Profiles in Weaning Pigs

  • This experiment was conducted to investigate the effects of dried mealworm (Tenebrio molitor larva) on growth performance, nutrient digestibility and blood profiles in weaning pigs. A total of 120 weaning pigs ($28{\pm}3days$ and $8.04{\pm}0.08kg$ of body weight) were allotted to one of five treatments, based on sex and body weight, in 6 replicates with 4 pigs per pen by a randomized complete block design. Supplementation level of dried mealworm was 0%, 1.5%, 3.0%, 4.5%, or 6.0% in experimental diet as treatment. Two phase feeding programs (phase I from 0 day to 14 day, phase II from 14 day to 35 day) were used in this experiment. All animals were allowed to access diet and water ad libitum. During phase I, increasing level of dried mealworm in diet linearly improved the body weight (p<0.01), average daily gain (ADG) (p<0.01) and average daily feed intake (ADFI) (p<0.01). During phase II, ADG also tended to increase linearly when pigs were fed higher level of dried mealworm (p = 0.08). In addition, increasing level of dried mealworm improved the ADG (p<0.01), ADFI (p<0.05) and tended to increase gain to feed ratio (p = 0.07) during the whole experimental period. As dried mealworm level was increased, nitrogen retention and digestibility of dry matter as well as crude protein were linearly increased (p = 0.05). In the results of blood profiles, decrease of blood urea nitrogen (linear, p = 0.05) and increase of insulin-like growth factor (linear, p = 0.03) were observed as dried mealworm was increased in diet during phase II. However, there were no significant differences in immunoglobulin A (IgA) and IgG concentration by addition of dried mealworm in the growth trial. Consequently, supplementation of dried mealworm up to 6% in weaning pigs' diet improves growth performance and nutrient digestibility without any detrimental effect on immune responses.

국산 및 중국산 갈색거저리(Tenebrio molitor)의 영양성분 및 유해물질 비교분석 (Comparative Analysis of Nutritional and Harmful Components in Korean and Chinese Mealworms (Tenebrio molitor))

  • 국산 및 중국산 갈색거저리 유충의 일반성분의 함량 분석 결과, 갈색거저리의 동결건조 분말은 고함량의 단백질(50.32~52.99%)을 포함하고 있었고, 중국산 분말이 약 2.67% 정도 국산에 비해 높은 단백질을 함유하고 있었다. 갈색거저리의 필수 및 비필수아미노산을 포함하고 있었고, 분석된 아미노산의 함량은 국산과 중국산이 비슷한 수준을 나타내었으며, 비필수아미노산 중 glutamic acid의 함량이 다른 아미노산에 비해 가장 높게 존재하였다. 지방산의 분석 결과, 갈색 거저리 분말은 총 지방산 중 76.80~80.55%의 많은 불포화 지방산을 함유하고 있었다. 불포화지방산 중 linoleic acid는 국산 $20.80{\pm}1.1%$, 중국산 $34.69{\pm}1.9%$로 13.89% 차이, oleic acid는 국산 $51.40{\pm}0.47%$, 중국산 $40.20{\pm}1.5%$로 11.2%의 차이, linolenic acid는 국산 0.5%, 중국산 1.4%로 명확한 함량 차이와 유의성(p<0.05)이 인정되었다. 유해물질인 식중독균(E. coli O157:H7, Salmonella spp.)은 국산과 중국산 분말 모두에서 검출되지 않았으며, 중금속 검사 결과에서 수은(Hg)이 국산과 중국산에서 각각 0.03 mg/kg, 0.08 mg/kg으로 검출되었으나 일반식품의 기준치 이하로 확인되었고 그밖의 중금속은 존재하지 않았다.

  • The purpose of this study is to show probability of alternate food by using edible insects through the reports (Edible insects: Future prospects for food and feed security) edited by WFO (World Food Organization). We were carried out to develop the functional meat new product using Mealworm (Tenebrio molitor lavare) and Chicken breast. People's interest to the healthy, low-calories food is growing up, the Foodservice industry is developing and making Functional food, which helps to a sale strategy. Insects have played an important role as human food throughout history, especially in Africa, Asia and Latin America. A rapid increase in the human population is expected in the second half of the 21 century, which will lead to lower availability of food, especially animal protein As the problem of food supply and demand has come to the fore with climate change, Food and Agriculture Organization of the United Nations (FAO) has noticed edible insects as future food resources in order to prepare against the shortage of protein source. Recently consumers, especially patients have doubts about safety of raw materials for food. To overcome these limitations, I propose an enteral nutrition formula using edible insects as a raw material.

사출구 온도와 수분함량이 갈색거저리(Mealworm) 첨가 압출성형 백미의 품질 특성에 미치는 영향 (Effects of Die Temperature and Moisture Content on the Quality Characteristics of Extruded Rice with Mealworm)

  • 본 연구는 조직감과 영양적으로 뛰어난 쌀 팽화 스낵 제조를 위하여 쌀가루에 부족한 단백질과 불포화 지방산이 풍부하며 미래식량 자원으로써의 가치를 지닌 갈색거저리(mealworm)를 첨가한 쌀 압출성형물의 이화학적 특성에 대하여 살펴보았다. 압출성형 원료배합비는 쌀가루 100%, 쌀가루 95%에 갈색거저리 5%, 쌀가루 90%에 갈색거저리 10%를 첨가한 것으로, 압출성형 공정변수는 사출구 온도를 $120^{\circ}C$$130^{\circ}C$, 수분함량을 30%와 35%로 조절하였고 압출성형한 후 직경 팽화율, 비길이, 밀도, 파괴력 및 겉보기탄성계수, 조직감 분석, 색도, 수분용해지수 및 수분흡착지수, 수용성질소지수, 단백질 소화율, DPPH radical 소거활성, 산패도를 측정하였다. 갈색거저리 첨가 함량이 증가할수록 비길이는 증가하였으며 밀도는 감소하였고 팽화율은 다소 증가하였으나 유의적 차이가 없었다. 온도와 수분함량에 따른 변화에서는 사출구 온도가 증가하고 수분함량이 감소할수록 직경팽화율, 비길이는 증가하였으며 밀도는 감소하는 경향을 보였다. 또한, 갈색거저리 첨가 함량이 증가할수록 감소하는 경향을 나타내었으며 사출구 온도가 감소하고 수분함량이 증가할수록 값은 증가하였다. 수분용해 지수는 갈색거저리 첨가 함량이 증가할수록 감소하는 경향을 보였으며 사출구 온도와 수분함량이 증가할수록 값이 상승하였다. 수분흡착지수는 갈색거저리 첨가함량이 높을수록 증가하였으며 사출구 온도가 증가할수록 높은 값을 나타내었다. DPPH radical 소거 활성에서는 갈색거저리의 첨가 함량이 높을수록 값이 유의적으로 증가하였고 사출구 온도와 수분함량이 증가할수록 값이 증가하였다. 산패도는 갈색거저리의 첨가 함량이 높을수록 감소하였고 50일 이후에는 갈색거저리 첨가 함량이 높을수록 높은 상승 폭을 나타내었다. 쌀가루에 갈색거저리의 첨가는 쌀 팽화 스낵의 조직감과 영양적인 면을 개선하고 항산화성을 부여하였으며 사출구 온도와 수분함량도 압출성형 쌀 팽화 스낵의 품질에 영향을 미치는 것을 확인하였다.
