  • This study determined the characteristics of meal-related time use among employees living in one-person and multi-person households by conducting a comparison focused on gender and age differences. Among the questionnaires distributed to employees during the 2014 Korean Time Use Survey, 19,692 were used for final analysis. The results were as follows: First, the one-person households had shorter meal-related time use than did the multi-person households, except for the time spent having snacks and beverages. Second, meal-related time use was generally longer in non-working days than in workdays. Third, gender differences in meal-related time use were observed, with the more significant ones being the differences in time devoted to meal preparation and dishwashing. Fourth, in both the one-person and multi-person households, women spent a longer amount of time preparing meals and washing dishes than did men, but this difference was greater in multi-person households. Fifth, old individuals spend a longer time preparing meals and washing dishes than did young individuals. Policies must be enforced to improve the quality of diets in one-person households. Such households should also be provided nutrition education to increase their awareness of the importance of healthy and regular meals. Another essential requirement of policy is the provision of gender equality education for both the one-person and multi-person households.

  • In order to investigate the relationship among physical status, eating habits and life style, this survey was carried out by questionnaire in 1996. College students(413 cases) who resided in Chuncheon answered. The results are as follows: 1) The means of height and weight were $173.9\pm{5.0cm}$, $64.5\pm{8.3kg}$64.5$\pm$8.3kg in male students and $160.9\pm{4.5cm}$, $51.1\pm{5.8kg}$ in female students. 2) Under 20 of BMI(Body Mass Index) were 23.0% of male students and 58.3% of female students. 6.7% of males and 3.0% of females were over 25 of BMI. 3) There was a significant relationship between the type of favorite snacks and gender. There was a significant difference of BMI according to the level of the frequency and the amount of drinking alcoholic beverages. 72.6% of subjects took exercise regularly. But the BMI of subjects taking regular exercise and watching the weight tended to be higher than that of subjects not doing so. 4) Most students(78.5%) skipped breakfast, which was higher in the self-boarding students in than any other. It was because of the lack of time that they skipped their meals. This study suggests that a comprehensive nutrition education program is needed for college students in self-boarding houses and dormitories to improve their eating habits about skipping meals, and especially for female students to prevent inappropriate weight control.

  • This study has been performed to explore conveniences and inconveniences of daily lives in rural residential care facilities among the elderly residents. In this study, five males and seven females aged 68 to 78 were asked about socio-familial and physical aspects of their daily lives in the facilities such as meals, social activities, family visits, recreation, and health care. The answers of the qualitative interview were drawn as follow; first, the residents perceived well planned regular meals and snacks, free visits of friends, regularly supervised daily sanitary activities, periodic outdoor activities, education programs provided by religious experts, and pastoral farming lives as most convenient aspects of the retirement facilities. In addition, some felt that facility life made them free of familial conflicts, while others appealed fear of being forgotten because of distant location. On the other hand, they perceived the supervised group activities and meals as major inconveniences. They also felt persistently depressed when closely observing serious illness or deaths of their co-residents. Therefore in this study, suggestions were made as follows: first, combination of normal family life and retirement facility should be developed in the mixed form of community welfare center and shared home. Second, intensive medical care facilities should be in collaboration with the retirement facilities, so that the residents are relieved from stressful contacts with extremely ill patients in the residential area.

  • This study was conducted via survey of 300 enrolled male and female high school students in the Chungnam area. The survey focused on students' dietary habits, changes in dietary habits based on the school lunch menu, and satisfaction of school lunches, in order to identify new methods for changing dietary habits and improving satisfaction of school lunches. Regarding the general characteristics of those surveyed, most were 17 years old, and of the same gender. Ninety-nine percent of those surveyed lived in farming areas, and the majority of students' parents graduated from high school and are self-employed. Research on dietary habits according to gender found that male students ate more regularly than did female students, with a difference of (p<0.001) between the two genders. Regarding the degree of which students ate only what they want, differences of (p<0.05) were found between the genders. The types of snacks frequently consumed were found to be flour-based snacks for the male students, whereas the females mostly consumed sweet foods and bread snacks. Research on satisfaction of school lunches according to gender also showed a difference of (p<0.5). Specifically, 48.7% of male students responded 'average', whereas only 45.3% of female students responded in the same way. The reason for dissatisfaction of school lunches were quality and nutrition for the male students (30%) and taste for the female students (60.4%), with a significant difference according to gender (p<0.05). Regarding the types of food most left over, both female and male students answered fish, bean curd, and soy products.

  • The purpose of this study was to determine eating behaviors and nutrient intakes of 256 third grade primary school children(134:boys, 122:girls) in Kwangju. There were no significant differences in the heights, weights, physical circumferences measurements between the boys and girls, but the skinfold thickness measurements were significantly different. Most nutrient intakes were higher than the Rec ommended Dietary Allowances but the intake of energy, calcium, and vitamin E were lower than the RDA. The intakes of calcium, niacin, and vitamin E of the girls were significantly lower than those of the boys. With regard to meal volume, 13.6% of the subjects has been 'much'. With regard to meal speed, 24.6% of the subjects has been 'fast'. The study also found that 50% of the subjects skipped breakfast, 67.6% of the subjects had irregular meal times, 64.6% of the subjects ate snacks after dinner and 85.9% of the subjects ate snacks. These results show that the nutrient intake of children was related to snack eating more than regular meals. With regard to dietary behavior and nutrient intakes, meal volume, meal speed, skipping breakfast, eating snacks and eating snacks after dinner were major influences. But regularity of meal time was not influence on nutrient intakes. These results suggest that children's eating behaviors are in needs of correction. This reasserts the importance of nutrition education to children through teachers, parents and dietitians. The findings of this study should be applied to nutrition education to ensure better physical fitness of children.

In regularity of meal time, $56.3\%$ of the subjects had meals regularly. The older people were significantly higher than the younger people at regular intervals of meal times (p < 0.0001) . The majority of the subjects had appropriate meal amounts. $73.5\%$ of the subjects had balanced diets. Unbalanced diet was higher in younger people than in older people. The highest frequency to dining out was once a month and the lower age was significantly higher than older age (p < 0.001) When dining-out, the most important criteria for selecting a meal was the taste of food. $62.4\%$ of the subjects ate meat and greasy animal food more than once a week. The younger in age and higher in educational levels have increased meat intake frequency. In the eating methods of animal fat, $37.5\%$ of the subjects were high by eating generally untouched. The older in age, lower in education level have more increased animal fat intake frequency. $60.7\%$ of the subjects took snacks. The kinds of snacks were fruits, coffee, alcoholic drinks, candies and confectioneries, drinkables and tea, milk and dairy products, in order. Consequently, nutrition education is for them with special emphasis on regularity of meal times, unbalanced diets, dining-out and snacks to the younger people, whereas it is the necessary eating methods of animal fat and snacks to the older people.

The findings of this research were as follows : (1) In regularity of eating habit, boys had more regular terms than girls. In other words, girls more often did without meals or didn't have regular eating habit. (2) Boys were more likely to overeat than girls. On the other hand. girls tended not to eat up all food. (3) The 60% of the children, who were given the questionnaire. answered that they were greedy for delicious foods. It shows that good table manner will have to be taught to children. (4) The 70% of the children answered that they were eating the unbalanced meals. It shows that systematic and continuous guidance for correcting unbalanced meals will be necessary to children. Also, considering that the eating habit of unbalanced meals is more serious in lower grade students, the children will have to learn about balanced meals from lower grade. (5) The research showed that the children were eating out more often than before and that the 90% of the children were eating snacks. So, the table manner when eating out and food selection for snack will have to be taught to children systematically. (6) The children were likely to prefer rice to cereals and to prefer meat to fish. (7) The children tended to like fried food better than any ether food. In addition, they showed higher preference for instant foods like noodles. Therefore, the systematic guidance will be necessary for children not to select acidified fried food.

As for the survey daily of meals, starving breakfast and kind of snacks of subjects were significantly different among the groups by BMI. In animal protein food intakes, meat intake was the highest 'every day' food consumed by subjects, and there was a significant difference in distribution of BMI among subjects. Fruits, and greenish and yellow vegetables intakes were the highest 'every day' foods indicated by the normal weight group. Consumption of carbonated beverages and juices showed a significant difference among groups by BMI. The average of total-cholesterol was the overweight group was the higher value. There was a significant difference in diastolic blood pressure and systolic blood pressure among the groups by BMI. Average daily calories intake levels were insufficient and the intake ratio of carbohydrates, protein, and fat was the normal weight group 68 : 17 : 15, the overweight group 64 : 18 : 18 and the obese group 73 : 14 : 13. Results of the daily vitamin intake analyses displayed riboflavin, niacin, vitamin C, and folic acid levels lower than the RI levels. Fe intake was the normal weight group 81%, overweight group 76%, obese group 59% of the RI level. Therefore, it is necessary for college students to establish regular meals, good quality snacks and consuming more vitamin and mineral nutritions for optimal health conditions.

  • Objectives: The associations between the eating behavior and energy and macronutrient intake from meals and snacks consumed during different times of the day across the menstrual cycle were investigated in 74 healthy female college students. Methods: A 9-day food record was collected during the last 3 days before menstrual onset (phase 1) and the first 3 days after menstrual onset (phase 2) and from the 4th to the 6th day after menstrual onset (phase 3), respectively. Anthropometry was assessed and eating behaviors were measured using the Dutch Eating Behavior Questionnaire (DEBQ). Results: External eating was the most prevalent type of eating behavior, followed by restrained eating and emotional eating. Restrained eating was positively associated with energy, carbohydrate and lipid intake at the breakfast and midmorning snack during phase 3. However, emotional eating was also positively related to energy and macronutrient intake at the dinner and after-dinner snack during phase 1 and phase 3, with higher level detected in the phase 1. The association of emotional eating with the snack consumption was highest in phase 1. External eating was positively associated with energy and macronutrient intakes at the dinner and after-dinner snack across the three phases, the highest level being phase 1. In addition, restrained eating was positively associated with the weight, body mass index(BMI), fat mass, waist and hip girth of the subjects. Conclusions: Eating behaviors varied with regard to meals and snacks consumed during different times of the day across the three menstrual phases. Dinner and afterdinner snack consumption in premenstrual phase could be considered as a time when women are more prone to overconsumption and uncontrolled eating.

  • On the general trends of weight control for slimness, this study surveyed and compared eating attitude influenced by eating disorder, eating habits, and nutrition knowledge by obesity index in middle school girls. The purpose of this study was to investigate the eating disorders and eating habits, and analyzed these data by degree of obesity. This will provide basic information of nutrition education for adolescents who need to have proper body shape and dieting habits. This survey was conducted to one of girls' middle school in Incheon and all the data was analysed by SAS(Statistical Analysis System) program. The average height, weight and PIBW were 158.7cm, 48.2kg, and 93.9% in students. However, 50.8% of students were underweight or severely underweight. Most of female students perceived that they were normal or overweight even though they had underweight or normal. There was a significant difference in experience and intention of weight control by degree of obesity. In the overweight group, EAT-26 score tendency was high, especially preoccupation with losing weight(factor 1). It shows that obesity index had meaningful correlation with EAT-26 score and factor1. In dietary habit, overweight group showed more irregular meals tendency, and overeat frequently. On the other hand, this group had lower frequency and of smaller amount snacks. The intake frequency of meals and snacks showed in the affirmative way regardless of degree of obesity. The average score for nutrition knowledge about calorie and weight control was low. Correct answer rates were increased in higher overweight group. In conclusion, teenage girls who concerned too much about their slim body image need to be educated about accuracy concept of the body image. Also, practical and systematic nutrition education should be done for the correct nutrition knowledge and its application ability of individuals.
