The purpose of this study is to examine the current congregate meal service program for homebound elderly. One hundred three meal service centers in charge of the congregate meal service programs as part of the elderly foodservice program were surveyed for administrative structure, menu management, food purchasing and production management, hygiene, equipment, and facilities. Statistical data analyses were completed using the SAS 8.1 program for descriptive analysis and ANOVA. The meal cost of 54.4% of the congregate meal service centers ranged from ₩l,500 to ₩l,999 per meal. According to the menu analysis, all nutrients except calcium and Vitamin B2 were at levels of more than 33% of the Recommended Dietary Allowances for Koreans. A total of 81.5% of the centers were operated without the services of a dietitian, and food purchasing, menu planning and other foodservice management processes were handled by non-professionals, such as volunteers, cooks or social workers. Although 88.3% of the centers required a therapeutic diet menu for the health of the elderly, most directors (77.6%) replied that in their current status they could not afford to serve therapeutic diets. These results suggest that financial and systematic supports by government is very necessary. Fifty-five percent of the centers never used standard recipes. For determining portion sizes, 93.2% of the congregate meal service centers depended on the personal experience of the personnel. Finally, the current congregate meal services for the homebound elderly were not operated systematically. To improve the elderly food service program, it is strong1y recommended that it be managed by Professionals.
Apparent digestibility coefficients (ADCs) of dry matter, crude protein, crude lipid, nitrogen-free extract, energy and essential amino acids in animal-based feed ingredients were determined for olive flounder (Paralichthys olivaceus). A reference diet (RF) was formulated to contain 1.0% chromic oxide (Cr2O3) as an inert indicator. Nine test diets were formulated to contain RF and one of the feed ingredients (pollock meal [PM], jack mackerel meal [JMM], anchovy meal [AM], cod meal [CM], sardine meal [SM], sand eel meal [SEM], tuna meal [TM], meat meal [MM] and squid liver meal [SLM]) at a 7:3 ratio in each diet designated as PM, JMM, AM, CM, SM, SEM, TM, MM and SLM, respectively. Olive flounder, averaging 150 ± 8.0 g, were stocked at a density of 25 fish per tank in 400-L fiberglass tanks attached with fecal collection columns. Feces were collected from triplicate groups of fish one time a day for four weeks. Dry matter and crude protein ADCs of CM and SEM were significantly higher than the other tested ingredients. Lipid ADCs of JMM, CM and SEM were significantly higher than the other test ingredients. Energy ADCs of CM and SEM were significantly higher than that of the other tested ingredients. The availability of amino acids in CM was generally higher than the other animal protein sources. PM exhibited the lowest amino acid availability among the treatments. Interestingly, MM exhibited significantly higher nutrient digestibility than several marine-based ingredients. However, CM and SEM are seeming to be highly digestible and effective to use in olive flounder diet compared to the other tested ingredients. Overall, the results of this study provide information about the bioavailability of nutrients and energy in animal feedstuffs to apply when formulating cost-effective practical feeds for olive flounder.
Indicies of the labor productivity were assessed from 80 industry foodservice erstablishments in terms of meals served per labor hour, labor minutes per meal served, and labor cost per meal served. The labor productivity indicies were also assessed according to variables related to work such as working hours, paryment for the workers, volume of feeding, utilization of foodservice equipment, use of processed foods, and background of employees. The summary of the results was as follows: 1. Manufacturing sector among surveyed industry foodservice showed the highest labor productivity indicies followed by training institute. 2. 28.8% of surveyed establishments used dishwashing machine, while manual dishwashing was used in 71.3% of subjects, equipped rate point was 9.8 out of 20, and disposable dish was used in 30% of subjects. 3. A significant positive relationship was found between the number of meals and the labor procductivity indicies. As the number of meals increased, more meals were served per worker as per labor hour. 4. A significant negative relationship was found between price of meal and the labor productivity didicies. As the price of meal increased, less meals were served per worker as well as per labor hour.

Recently, swine production costs have increased due to increased feed cost, especially the price of corn and soybean meals. Soybean meal is traditionally an expensive ingredient, but the price of corn has dramatically increased because of increased biofuel production. This change has resulted in the swine industry looking for alternatives in order to reduce feed cost, resulting in decreased production costs. Thus, various alternatives have been used as feed ingredients to replace corn, soybean meal, or other expensive ingredients. One othercandidate may be palm kernel co-products that are a by-product of oil extraction from palm fruits. Palm kernel co-products have not been used in swine diets due to high fiber content and imbalanced amino acids compared with corn and soybean meal. However, recent studies showed that palm kernel co-products did not have any negative effects on growth performance of pigs when they replaced some proportions of corn and soybean meal. In addition, palm kernel co-products may provide some physiological properties to pigs by modifying gut microbiota and/or immunity of pigs, resulting in improvement of growth and health of pigs. Therefore, the value of palm kernel co-products were reviewed as one of the alternatives for corn, soybean meal, or other major ingredients in swine diets.
The purpose of this study was to evaluate the foodservice management practices and productivity in elementary schools in order to provide basic information for an efficient food service management. This approach was achieved using a variety quantitative and qualitative information including general foodservice management, managerial and operational factors, and the productivity in elementary school foodservice systems. The labor productivity in 28 school foodservice system was assessed and related to a number of influencing variables within the system. The productivity measurement was based upon the total meal equivalents as a ratio of the total direct and non-direct labor hours required to prepare these meals. Twenty-eight elementary schools located in Seoul and Kangnung were surveyed to get data for the variables. Questionnaire and a survey form were mailed. Statistical methods used in this study were descriptive analysis, $\chi$$^2$-test, 1-test and one-way ANOVA analysis. Elementary schools in Seoul were all located in urban areas, whereas elementary schools in Kangnung were in urban areas (40.0%), provincial areas (40.0%) and in isolated areas (20.0%). Total average number of meals including children and staff was 928.2${\pm}$ 650.0 with a yery significant difference (p<0.001) between Seoul and Kangnung. The average cost of school meal in Seoul and Kangnung were 1191.0 won and 1526.2 won, respectively. The result of Pearson Correlation analysis indicated that labor cost per meal, 1-week meal equivalents and meal equivalents per labor were significantly correlated with the productivity.

The aim of the present study was to evaluate the effects of replacing 70% of the protein from fish meal by protein from ensiled or dry cassava leaves and sweet potato vines on the performance and carcass characters of growing F1 (Large White${\times}$Mong Cai) pigs in Central Vietnam. Twenty-five crossbred pigs (Large White${\times}$Mong Cai) with an initial weight of 19.7 kg (SD = 0.84) were allocated randomly to five treatment groups with 5 animals per group (3 males and 2 females). Pigs were kept individually in pens ($2.0{\times}0.8\;m$) and fed one of five diets over 90 days. The control diet was formulated with fish meal (FM) as the protein source while the other four diets were formulated by replacing 70% of fish meal protein by protein from ensiled cassava leaves (ECL), dry cassava leaves (DCL), dry sweet potato vines (DSPV) or ensiled sweet potato vines (ESPV). Animals were fed their diets at 4% of BW. Results showed that final BW, ADG, DMI and feed conversion ratio (FCR) among the experimental treatments were not significantly different (p>0.05). ECL or DCL and ESPV reduced feed cost per unit gain by 8-17.5% compared to the fish meal diet. There were no significant differences in carcass characters among the diets (p>0.05). Lean meat percentages and protein deposition ranged 41.5-45.8% and 40.2-52.9 g/d, respectively. Using ensiled or dry cassava leaves and sweet potato vine can replace at least 70% of the protein from fish meal (or 35% of total diet CP) without significant effects on performance and carcass traits of growing (20-65 kg) pigs. Including cassava leaves and sweet potato vines could improve feed cost and therefore has economic benefits.
The objectives of this study were to analyze the factors that affect the productivity for university food services. In a survey involving four-year university dining centers throughout the country, and correlations among thriteen different variables that affect productivity were determined. Productivity index (PI) was determined by meals per hour, the average score for 38 institutions was found to be 14.2 meals/hour. For serving methods, the fixed ration had a higher PI than the self-serving. When two types of serving trays were considered, the PI of the compartmantalized trays was higher than that of the tray accompanying saparate small dishes. When single (S)-or. multiple(M)-menu was compared with the cafeteria style, a higher PI was obtained by the S-or M-menu. Among the three operation systems, the PI was found to be the highest by direct operation (17.6 meals/hour), followed by contract operation (11.1 meals/hour) and rent operation (7.9 meals/hour). For the factors that affect the productivity of the university food services, the total number sewed (r=0.54, p<0.001) and the use of convenient food items (r=0.28, P<0.05) exhibited positive correlations, while food costs and labor costs showed negative correlations. This suggests that the productivity of university food service increases as the total number served and the use of convenient food item increased, but decreases as the food costs and labor costs per meal increased. A regression analysis showed that three variables - total number sewed, labor cost per meal, number of employees-influenced about 73% components of food service showed a negative correlation with PI and a positive correlation with the labor cost per meal.

The digestibility of different vegetable protein sources were investigated and the effects of supplementing canola meal (CM) as partial inclusions were studied in growing pigs, to determine the performance parameters and its economic importance. In Exp. 1, four pigs (average initial $BW=15.4{\pm}0.35kg$, 5 weeks of age) fitted with simple T-cannula at terminal ileum, were fed four diets following repeated $4{\times}4$ Latin square design having adoption period of 7 days. Diet 1 was Nitrogen free diet containing corn starch. Diets 2, 3, and 4 were the basal diet supplemented with soybean meal (SBM), rapeseed meal (RSM), and domestic CM respectively. The AID of crude protein was decrease in RSM in comparison to SBM supplementation. The AID of Dietary indispensable amino acids (DIAA) such as Lys, Meth, Pha, and dispensable amino acid Ala, Pro, Asp were decreased (P < 0.05) in RSM supplemented diets. The SID of DIAA does not differ but the SID of Asp was higher (P < 0.05) in RSM and CM diets while SID of Pro was lower (P < 0.05) in RSM in comparison to SBM supplemented diets. In Exp. 2, 192 growing pigs (average initial BW $24.76{\pm}2.55kg$) were randomly allotted to four dietary treatments with increasing levels of CM i.e. 0, 3.75, 7.50, and 11.25 % respectively. Diets were fed in meal form for 35 days. Increasing CM levels in diets had no effects (P > 0.05) on growth performance and apparent total tract digestibility (ATTD) of nutrients and energy. Total weight gain, total feed intake, and feed cost per kg weight gain were not affected by increasing levels of CM in diets but total feed cost (TFC) per pigs was linearly reduced (26.463 to 25.674; P < 0.05). Broadly, the AID, and SID of amino acid was reduced in RSM but was not effected in CM in comparison to SBM supplemented pigs. Moreover, increasing levels of CM in pigs diet had no effect on the ATTD and performance but TFC per pig was reduced. Thus CM inclusion of up to 11.25 % in diets can be used for reducing the production cost in growing pigs without any negative effect.
Forty five Soviet Chinchilla rabbits weaned at 35 d of age were fed 5 experimental diets prepared by using oat plant meal ($T_2,\;T_4$) and tall fescue hay ($T_3,\;T_5$) at 25% and 50% level along with control ($T_1$). The gain in body weight at 84 d of age decreased with test material substitution, however, the differences were non significant when compared with oat plant meal and were significant (p<0.05) with tall fescue hay at both the levels. Feed conversion ratio also deteriorated with test material and its increasing proportion and the differences were significant (p<0.05). The performance-index calculated were 42.1, 36.7, 29.4, 33.3 and 18.8 in $T_1,\;T_2,\;T_3,\;T_4$ and $T_5$, respectively. Digestibility of all the organic nutrients decreased significantly (p<0.05) with test material incorporation, as a result nutritive value of the test diets decreased linearly. Nitrogen balance as per cent of intake was higher in oat plant meal substituted diet compared to tall fescue substituted diet. Cost per kg live weight gain was lowest with 50% oat plant meal followed by 25% oat plant meal incorporation. It was highest with tall fescue hay substitution. Nutritive value of oat plant meal as calculated was DCP 5.1%, TDN 35.8% and that of tall fescue hay was DCP 6.5%, TDN 30.8%. Thus, oat plant meal can be substituted safely up to 25% in the feeding regime of weaner rabbits whereas, for tall fescue hay the safe limit is below 25% level and needs to be ascertained.
Background: To reduce use of main feed ingredient like corn, soy bean meal (SBM) and wheat, alternative ingredients has been studied like copra meal (CM). Production amount of CM which has been high makes CM to be an alternative feed stuff. However, low digestibility on AA and low energy content by high fiber content can be an obstacle for using CM. This experiment was conducted to evaluate the effects of CM supplementation with ${\beta}$-mannanase on growth performance, blood profile, nutrient digestibility, pork quality and economic analysis in growing-finishing pigs. Methods: A total of 100 growing pigs ([Yorkshire ${\times}$ Landrace] ${\times}$ Duroc) averaging $31.22{\pm}2.04kg$ body weight were allotted to 5 different treatments by weight and sex in a randomized complete block (RCB) design in 5 replicate with 4 pigs per pen. Treatments were 1) Control (corn-SBM based diet + 0.1% of ${\beta}$-mannanase (800 IU)), 2) CM10 (10% copra meal + 0.1% ${\beta}$-mannanase (800 IU)), 3) CM15 (15% copra meal + 0.1% ${\beta}$-mannanase (800 IU)), 4) CM20 (20% copra meal + 0.1% ${\beta}$-mannanase (800 IU)) and 5) CM25 (25% copra meal + 0.1% ${\beta}$-mannanase (800 IU)). Four phase feeding program was used: growing I (week 1-3), growing II (week 4-6), finishing I (week 7-9) and finishing II (week 10-12). Results: In growth performance, there was no significant difference among treatments during whole experimental period. In growingI phase, G:F ratio tended to increase when CM was increased (P = 0.05), but ADG and ADFI tended to decrease in finishingII phase (linear, P = 0.08). Also, increasing CM reduced ADG (linear, P = 0.02) and feed efficiency (linear, P = 0.08) during the whole finishing period. In blood profiles, BUN was linearly increased as CM increased (linear, P = 0.02) at growingII period. In digestibility trial, there was no significant difference in dry matter, crude fat, crude ash and nitrogen digestibility. However, crude protein digestibility was decreased linearly (linear, P = 0.02). In economic analysis, feed cost per weight gain and total feed cost per pig were reduced in overall period when CM was provided by 25% (linear, P = 0.02). Conclusion: CM with 0.1% of ${\beta}$-mannanase (800 IU) could be supplemented instead of corn and SBM up to 25% without detrimental effects on growth performance and pork quality of growing-finishing pigs.
