The effect of dietary protein on growth and lipid levels of plasma and liver was studied in weanling male rats fed diets differing protein sources and amino acid balance. Rats were devided into 9 experimental diets which were grouped into 3 categories ; 1) Simple protein category includes gluten-, soy protein isolate-, and casein-containing diet groups, 2) Supplemented category includes casein supplemented with methionine, soy protein isolate supplemented with methionine, and gluten supplemented with lysine and methionine, 3) Mixed protein category includes diet groups containing gluten (2/3), casein (1/3), soy protein isolate (2/3) and casein (1/3), and casein (1/3), soy protein isolate (1/3) and gluten (1/3). The experimental diets composed of 15% protein, 65.8% carbohydrate, 10% fat and 1% cholesterol. The body wt. gain and P.E.R. were greater in rats of supplemented and mixed protein groups than simple protein groups. No statistical differences were found in plasma cholesterol among gluten, soy protein isolate and casein groups. Consumption of diets supplemented with limiting amino acid to gluten or soy protein isolate reduced the plasma cholesterol level by 23.2% and 34.2% respectively. However there was no difference between casein and the supplemented casein groups. The mixed protein groups shows relatively high plasma cholesterol concentration and low liver cholesterol levels. On the other hand gluten group showed low plasma cholesterol and high liver cholesterol levels, which means body cholesterol pool may not have been changed by the dietary protein. Feeding soy protein meal and the supplemented soy protein isolate resulted in lower plasma cholesterol, plasma triglycerides, liver cholesterol and liver triglycerides levels. This hypolipidemic effect is considered to see unique to soy protein isolate. Rats in gluten and the supplemented gluten groups showed lower plasma protein levels and a tendency of fatty liver.
The aim of this study was to determine whether Nutrition Quotient (NQ) for children, which has been developed from data on urban children, can be applied to children in rural areas. A total of 200 children (108 boys and 92 girls) in fifth and sixth grade at three elementary schools in rural areas of Gyeongbuk participated in the survey conducted during June 2012. Questionnaires consisted of items on food intake frequency and dietary behavior. Food intake data were obtained using the 24-hour recall method, and nutrient intake was calculated using the CAN-Pro 4.0 Program. Percentages of children who took less than the estimated average requirement were 76.5%, 49.5%, 45.5%, 33.5%, and 26.0% for calcium, vitamin C, iron, vitamin A, and folate, respectively. Significant associations were observed between intake frequencies of vegetables, kimchi, and fruits, and intake of vitamin C, folate, and dietary fiber. White milk and legumes showed positive correlation with intake of calcium and vitamin A. Eating breakfast, meal regularity, and diverse side dishes showed positive correlation with intake of folate and calcium. The 19 food checklist items could be categorized according to five factors. The mean NQ score of the subjects was 62.0, which was similar to that of urban children, 64.4. NQ score and factor scores for balance, regularity, and practice were significantly lower in children with lower socioeconomic level as compared to those with higher socioeconomic level. Higher NQ score showed an association with increased intake of vitamin B2, folate, vitamin C, and calcium. In conclusion, NQ offers a valuable instrument for evaluation of food habit and dietary quality of rural children as well as urban children, and children with low socioeconomic status should be monitored by testing with NQ checklist before implementation of nutrition programs.
Objectives Meal and nutrition are important lifestyle factors that affect maintenance and promotion of health status and are also associated with chronic diseases. In Sasang constitutional medicine, dietary behavior according to the characteristics of Sasang constitution (SC) types is a key component in health management. The aim of this study was to evaluate the nutritional status and quality of meals according to the SC. Methods This was a cross-sectional study of 1,947 subjects surveyed in a community-based cohort called the Korean Medicine Daejeon Citizen Cohort study. Data were collected including demographic characteristics, Korea Sasang Constitutional Diagnostic Questionnaire, and nutrition quotient (NQ) for adults. We analyzed the differences in NQ grade and scores among three SC types: Taeeumin (TE), Soeumin (SE), and Soyangin (SY), by conducting chi-square and ANCOVA tests. Results The distribution of SC into TE, SE, and SY types was 43.1%, 25.2%, and 31.8%, respectively. The mean NQ score of all subjects was 53.4±8.6. There was a significant difference in the distribution of NQ grades and mean of NQ scores among SC types, including total and four sub-factors: balance, diversity, moderation, and dietary behavior. The TE type had the lowest score for the moderation factors in the crude model. The SE type showed lower NQ scores than the TE and SY types in all domains except moderation after adjusting for variables. Conclusions We found that dietary behaviors had to be distinct according to the SC types. These results elucidate why it is important to develop a customized dietary habit management program considering the SC types.
The aim of this study was to develop a KDPS (Korean dietary pattern score) to assess dietary patterns and diet quality of Koreans from a food culture perspective. The KDPS was applied to dietary data collected during the Korean National Health and Nutrition Examination Survey of 2007, and the validity and reliability of the KDPS were evaluated. The targets of the study included 2,278 Korean adults aged 20n89 years. The KDPS was developed using the sum of the scores of 13 components. Each component scored up to 10 points and there was a total of 130 points. The first seven components were for the KSMS (Korean-style meal score) and assessed the dietary balance based on the 3-Chup Bansang daily basic table setting. The components numbered 8 to 13 were for the FGS (food group score), which measured the degree of compliance with the six major food groups based on the Korean recommendation for one serving size of grains, meats, vegetables, fruits, milk, and oils. This KDPS was verified through content validity, concurrent-criterion validity, principal components analysis, and a reliability analysis. The results showed that content validity and construct validity were high. The KDPS developed in this study adhered to the Korean dietary pattern and a healthy diet intake. Furthermore, this study presented an integrated index by scoring the Korean style table setting in addition to evaluating meals from a nutrition perspective. This study can be extended to develop a score for assessing.
The purpose of this study was to divide into a few groups of Bibimbabs with distinctive menu patterns and accompaniments from 484 Bibimbab menus of 360 elementary school foodservices around Busan city and Gyeongnam province. The menus were collected from the internet(http://www.kdclub.com) and the home page of elementary schools from December, 2004 to September, 2005. Moreover, Bibimbabs with high frequency were analyzed by seasons and regions to give informations for menu planing and developing in elementary school foodservices. The serving frequency of Bibimbabs was significantly different among seasons, highest in summer and lowest in winter. Kongnamulbibimbab and Bomnamulbibimbab were highest in frequency in rural areas meanwhile, Sanchaebibimbab, and Chamchibibimbab were frequently served in Busan. The basic structure of Bibimbab meal based on main dish, soup, kimchi and one or two accompaniments consisted of 'side dish', 'fruit & beverage', or 'starchy food & dessert'. Thus, most of the Bibimbab meals were composed of 4${\sim}$5 dishes. Five groups of Bibimbabs were suggested by the menu patterns and kinds of soups. Soups, fruit & beverage, and kimchi were included in the menu patterns of nearly all groups of Bibimbab. However, side dishes and strachy foods & desserts were included of excluded according to the groups of Bibimbabs. Some kinds of soups and side dishes were different among the groups of Bibimbab. These results suggest that the cost, avaliable labor and seasonal constraints contributed mainly to the numbers and kinds of accompainments in the Bibimbab meals. However, taste and sensory balance were also considered in the Bibimbab menus in the School Lunch Program.
경기도 화성군 팔탄면에 거주(居住)하는 60세(歲)이상 노인(老人) 50명(名)을 대상(對象)으로 영양섭취실태(營養攝取實態), 혈액분석(血液分析), 임상증세(臨床症勢) 등을 조사연구(調査硏究)한 결과는 다음과 같다. 1. 식품섭취실태(食品攝取實態) 곡류(穀類)에서 에너지의 82.1$\sim$84.8%를 섭취(攝取)하고 있으며 일반적으로 식물성식품(植物性食品)에서 거의 모든 영양소(營養素)를 섭취(攝取)하고 있었다. 2. 영양소섭취실태(營養素攝取實態) (1) 60$\sim$64세(歲) 남자(男子)의 경우 에너지 섭취(攝取)는 권장량(勸奬量)의 77.2%이었고 vitamin A 를 제외하고는 모든 영양소가 권장량(勸奬量)에 미달되었다. (2) 65세(歲) 이상의 남자(男子)는 에너지가 권장량(勸將量)의 84.1%를 섭취(攝取)하고 있었고 vitamin A, ascorbic acid를 제외하고는 모두 권장량(勸奬量)에 미달되었다. (3) 60$\sim$64세(歲) 여자(女子)의 경우 남자(男子)들보다 권장량(勸奬量)에 대한 에너지섭취(攝取)가 많으나 vitamin A, ascorbic acid를 제외하고는 모두 권장량(勸奬量)에 미달되었다. (4) 65세(歲) 이상 여자(女子)의 경우에서는 모든 영양소섭취(營養素攝取)가 권장량(勸奬量)에 미달되고 있다. 특히 칼슘섭취(攝取)는 권장량(勸奬量)의 4.6%로서 가장 낮은 비율(比率)을 타나내고 있다. (5) 전체 에너지섭취(攝取)에 대한 탄수화물, 지방, 단백질(蛋白質)의 구성비율(構成比率)은 79 : 10 : 11로서 탄수화물에 의한 에너지섭취(攝取)가 높게 나타났다. 3. 혈액분석(血液分析) Serum cholesterol, triglyceride level, cholesterol level, triglyceride level의 平均値는 각각 212.6mg/100ml, 122.3mg/100ml로서 각각 220mg%, 140mg%를 기준으로 할 때 조사대상자(調査對象者)의 52.0%가 고지혈증(高脂血症)을 나타내었다. 4. Blood pressure Systolic, diastolic blood pressure의 평균치(平均値)는 각각 141.2mmHg 96.4mmHg로서 160/95mmHg 를 준으로 할 때 32%가 고혈압(高血壓)에 해당하였다. 5. 임상증세(臨床症勢) 식욕지수(食慾指數) 및 식사(食事)의 balance에 따른 영양섭취실태(營養攝取實態) (1) 임상증세(臨床症勢) : 임상증세(臨床症勢)를 많이 가진 사람일수록 영양소섭취비율(營養素攝取比率)이 낮았다. (p<0.05) (2) 식욕지수(食慾指數) : 식욕(食慾)이 좋을수록 권장량(勸奬量)에 대한 영양섭취실태비율(營養素攝取比率)이 증가(增加)하였다. (p<0.05) (3) 식사(食事)의 균형도(均衡度) : 식사(食事)의 balance가 높을수록 영양소섭취비율(營養素攝取比率)이 증가(增加)하였다.
가금에서의 영양소리용성에 미치는 볏짚구성분의 영향을 고찰하기 위하여 증류수 혹은 0.25N NaClO$_2$ 800$m\ell$당 볏짚 100g의 비율로 침지하여 135$^{\circ}C$ 3.2kg/$\textrm{cm}^2$ 압력밑에서 각각 30, 60 및 120분 autoclave를 이용하여 가열하고 세척 건조(증류수 혹은 NaClO$_2$-30, 60 및 120-볏짚) NDF, ADF 및 리그닌량을 조사하였다. 갓부화한 단관백색 레그흔 숫병아리에 10일간 시판 병아리 사료를 급여하고 계속해서 8일간 밀기울(기초), 섬유소(선분), 무처리볏짚, 증류수-30-볏짚 및 NaClO$_2$-30-볏짚이 각각 17.0% 함유된 실험사료를 급여했다. 증류수-30, 60 및 120-볏짚의 건물손실율은 각각 9.7, 12.1 및 13.3%였으나, NaClO$_2$-30, 60 및 120-볏짚에서는 각각 8.8, 18.7 및 19.4%로, NaClO$_2$-60 및 120-볏짚에서는 증류수볏짚의 1.5배가 되었다. 증류수 및 NaClO$_2$ 볏짚의 건물손실은 주로 무처리볏짚의 세포내용물과 헤미셀루로스의 용출에 기인하는 것이었다. 증류수-30-볏짚을 급여한 병아리는 무처리 혹은 NaClO$_2$-30-볏짚을 급여한것에 비해서 증체량이 높고 사료요구량이 낮았다. 질소밸런스 및 축적율은 증류수-30-볏짚을 급여한것에서 무처리 및 NaClO$_2$-30-볏짚을 급여한것에 비해서 높았고, 조지방소화율은 높아지는 경향이 있었다. 무처리, 증류수-30 및 NaClO$_2$-30-볏짚을 급여한 병아리의 MEn/GE는 각각 71.9, 72.9 및 70.4%였으며, 대사체중(kg 0.75)당 MEn섭취량은 각각 307.3, 296.2 및 291.4 KCal가 되었다. 이때 kg 0.75당 1일 단백질축적량은 각각 1.647, 1.969 및 1.560g이었다. 한편 증류수-30-볏짚을 급여한 병아리의 단백질 1g 축적에 상당하는 MEn는 30.56Kcal로써 무처리 및 NaClO$_2$-30-볏짚을 급여한것의 36.90 및 37.58Kcal보다 낮았다. 따라서 무처리볏짚에는 에너지 이용성 혹은 단백질축적에 영향을 미치는 물질 혹은 성질이 존재하며, 이것은 볏짚을 끓임으로써 제거된다는 것을 시모고 있다.
현대 가정에서 가정간편식 (HMR)의 이용은 점점 늘어나고 있으나, 식습관이 형성되고 음식 섭취에 있어서 자기 주도적 성향을 나타내는 만 5세 유아자녀를 둔 어머니의 유아식사에서 HMR 이용 실태에 대한 연구가 미비한 상황으로, 본 연구에서는 유아 어머니를 대상으로 유아식사에서 HMR 이용 실태와 유아의 식사의 질과의 관련성을 규명하고자 하였다. 세종특별자치시내 유치원에 재원중인 만 5세 유아 자녀를 둔 어머니 337명을 대상으로 2020년 6월부터 7월까지 유아 식사에서 가정간편식 이용 실태, 미취학 아동대상 영양지수 평가를 위한 식습관에 대하여 설문조사를 실시하였다. 유아 식사에서 HMR 이용빈도를 조사한 결과 주 3회 이상 섭취가 62명 (18.4%), 주 1-2회 섭취 145명 (43%), 주 1회 미만 섭취 130명 (38.6%)의 분포를 보였다. 이에 유아 식사에서 HMR 이용빈도에 따라 대상자는 '주3회미만섭취군', '주1-2회섭취군', '주1회미만섭취군'의 세 군으로 분류하였다. 유아 어머니의 평균 나이는 38.3세였으며, 어머니의 직업은 세 군간에 유의적 차이가 없이 전업주부가 가장 많았다. HMR을 구입하는데 드는 한 달 평균 비용은 주3회섭취군은 20-30만원, 주1-2회섭취군은 5-10만원, 주1회 미만섭취군은 5만원 미만의 비율이 높은 유의적인 차이를 나타냈다 (p < 0.001). 자녀의 식사에서 HMR 이용 빈도에 따른 식습관은 세 군간에 콩이나 두유, 생선, 육류, 채소류 반찬, 흰 우유 섭취 빈도 모두 유의적인 차이가 없었으나, 과자 또는 달거나 기름진 빵 (p < 0.01), 가공 육류 (p < 0.001), 가공 음료 (p < 0.001), 피자나 햄버거 (p < 0.001)의 섭취 빈도는 세 군간에 유의적 차이를 보여 HMR 이용 빈도가 높은 군일수록 섭취 빈도가 높게 나타났다. 유아 자녀의 영양지수를 평가한 결과 영양지수 총점은 주3회이상섭취군 60.5점, 주1-2회섭취군 63.0점, 주 1회섭취군 64.5점으로 HMR 이용 빈도가 높은 주3회이상섭취군이 다른 두 군보다 유의적으로 낮았다 (p < 0.01). 영역별 점수에서 균형과 환경은 세 군간에 유의적인 차이를 보이지 않았다. 그러나 절제 영역은 주3회이상섭취군 44.1점, 주1-2회섭취군 51.3점, 주1회미만섭취군 57.5점으로 HMR 이용빈도가 높을수록 유의적으로 감소하였다 (p < 0.001). 이상의 결과를 통해 유아 어머니가 유아의 식사에서 HMR의 이용빈도가 높은 경우 전체 및 절제 영역의 식사의 질이 감소됨을 알 수 있다. 유아 자녀의 식사는 주 양육자 어머니가 준비하는 음식에 의존하게 되므로 자녀의 건강을 위한 균형 잡힌 영양섭취 및 올바른 식습관 형성을 위해 어머니의 올바른 식품 선택이 매우 중요하다. 특히 식습관 형성기에 있는 유아 자녀의 식사에서 지나친 가공식품의 사용을 절제할 필요성이 제시되었고, 이를 위해 유아 식사의 주된 관리자가 되는 어머니를 대상으로 한 영양교육의 필요성이 매우 높다.
Two experiments were conducted to evaluate the efficacy of feeding an Escherichia coli (E. coli) derived phytase to pigs fed P deficient, corn-soybean meal diets. In Exp. 1, one hundred and twenty crossbred piglets ($9.53{\pm}0.84$ kg) were allocated to one of five treatments which consisted of four low P diets (0.61% Ca, 0.46% total P and 0.24% non-phytate P) supplemented with 0, 500, 1,000, or 20,000 FTU/kg E. coli phytase as well as a positive control formulated to be adequate in all nutrients (0.77% Ca, 0.62% total P and 0.42% non-phytate P). The treatments were applied to six pens with four pigs per pen for 28 days. In Exp. 2, ten crossbred pigs ($19.66{\pm}1.16$ kg) fitted with ileal T-cannula were used in a nutrient balance study. The pigs were assigned to treatments similar to those used in Exp. 1 in a doubly replicated $5{\pm}4$ incomplete Latin square design (5 diets with 4 periods). Each period consisted of a 5-d adjustment period followed by a 3-d total collection of feces and urine and then a 2-d collection of ileal digesta. Supplementation with phytase linearly increased (p<0.05) weight gain, feed intake, feed efficiency, bone breaking strength and fat-free dry and ash bone weight. There were linear increases (p<0.01) in the apparent ileal digestibility (AID) of DM, GE, CP, Ca, total P, inositol hexaphosphate ($IP_6$) and some AA with increasing dose of E. coli phytase. Pigs fed 20,000 FTU/kg had a greater (p<0.05) AID of IP6 (80% vs 59% or 64%, respectively) than pigs fed diets with 500 or 1,000 FTU/kg phytase. There were linear increases (p<0.05) in the total tract digestibility of Ca, total P, Na, K, Mg, and Zn as well as in the retention of Mg and Zn with increased phytase dose. The retention and utilization of Cu, and the total tract digestibility of CP and Cu quadratic increased (p<0.05) with increased phytase dose. In conclusion, supplementation of 500 FTU of phytase/kg and above effectively hydrolyzed phytate in low-P corn-soybean diets for pigs. In addition, a super dose of phytase (20,000 FTU/kg) hydrolyzed most of the IP6 and consequently further improved mineral use, protein utilization and performance.

서비스를 일시 중단할 수 있으며, 예정되어 있는 작업으로 인한 서비스 일시중단은 당 사이트 홈페이지를
통해 사전에 공지합니다.
② 당 사이트는 서비스를 특정범위로 분할하여 각 범위별로 이용가능시간을 별도로 지정할 수 있습니다. 다만

제 13 조 (홈페이지 저작권)
① NDSL에서 제공하는 모든 저작물의 저작권은 원저작자에게 있으며, KISTI는 복제/배포/전송권을 확보하고
있습니다.
② NDSL에서 제공하는 콘텐츠를 상업적 및 기타 영리목적으로 복제/배포/전송할 경우 사전에 KISTI의 허락을
받아야 합니다.
③ NDSL에서 제공하는 콘텐츠를 보도, 비평, 교육, 연구 등을 위하여 정당한 범위 안에서 공정한 관행에
합치되게 인용할 수 있습니다.
④ NDSL에서 제공하는 콘텐츠를 무단 복제, 전송, 배포 기타 저작권법에 위반되는 방법으로 이용할 경우
저작권법 제136조에 따라 5년 이하의 징역 또는 5천만 원 이하의 벌금에 처해질 수 있습니다.
제 14 조 (유료서비스)
① 당 사이트 및 협력기관이 정한 유료서비스(원문복사 등)는 별도로 정해진 바에 따르며, 변경사항은 시행 전에
당 사이트 홈페이지를 통하여 회원에게 공지합니다.
② 유료서비스를 이용하려는 회원은 정해진 요금체계에 따라 요금을 납부해야 합니다.
제 5 장 계약 해지 및 이용 제한
제 15 조 (계약 해지)

제 16 조 (서비스 이용제한)

② 상기 이용제한 규정에 따라 서비스를 이용하는 회원에게 서비스 이용에 대하여 별도 공지 없이 서비스 이용의
일시정지, 이용계약 해지 할 수 있습니다.
제 17 조 (전자우편주소 수집 금지)
회원은 전자우편주소 추출기 등을 이용하여 전자우편주소를 수집 또는 제3자에게 제공할 수 없습니다.
제 6 장 손해배상 및 기타사항
제 18 조 (손해배상)
당 사이트는 무료로 제공되는 서비스와 관련하여 회원에게 어떠한 손해가 발생하더라도 당 사이트가 고의 또는 과실로 인한 손해발생을 제외하고는 이에 대하여 책임을 부담하지 아니합니다.
제 19 조 (관할 법원)
서비스 이용으로 발생한 분쟁에 대해 소송이 제기되는 경우 민사 소송법상의 관할 법원에 제기합니다.
[부 칙]
1. (시행일) 이 약관은 2016년 9월 5일부터 적용되며, 종전 약관은 본 약관으로 대체되며, 개정된 약관의 적용일 이전 가입자도 개정된 약관의 적용을 받습니다.
