Quality Characteristics of Fermentation Gastrodia elata Blume by Saccharifying Methods (당화방법에 따른 유산균 발효천마의 품질특성)

  • This study aimed to evaluate the quality characteristics of Gastrodia elata Blume fermented by lactic acid bacteria after saccharifying by 3 methods including enzyme, malt, and rice-nuruk. The lactic acid bacteria (LAB), Pediococcus inopinatus BK-3, isolated from kimchi could reduce the unpleasant taste and odor of Gastrodia elata Blume. The total acidity value of Gastrodia elata fermented by LAB on the malt and rice-nuruk extract solution for 3 days was 2.23% and 2.33%, respectively. After saccharification by malt and rice-nuruk extract solution for 3 days, the viable cell number of fermented Gastrodia elata was 9.14 log cfu/mL and 9.27 log cfu/mL, respectively. The total acidity values were increased above 3.35% by malt and rice-nuruk extract solution for 8 days. Thus, the viable cell number was the highest by malt and rice-nuruk extract solution fermentation for 3 days. The amino acid content of Gastrodia elata fermented by LAB after saccharification by malt extract solution was higher than that of other saccharifying methods. The free sugar content and p-hydroxybenzyl derivatives induced by the enzyme method were higher than those of other saccharifying methods. The overall acceptability was the highest at 4.2 point in Gastrodia elata fermented by malt extract solution.

A Case of Diffuse Large B-cell Lymphoma transformed from Primary Thyroid MALT Lymphoma (갑상선 MALT 림프종으로부터 전환된 미만성 거대 B세포 림프종 1예)

  • Diffuse large B cell lymphoma (DLBCL) is main subtype of primary thyroid lymphoma and can be histologically transformed from a low-grade B-cell lymphoma. The characteristics and treatment guidelines of these particular DLBCL have not been fully established. The mainstay of treatment of primary thyroid DLBCL is multimodality treatment with chemotherapy and radiotherapy. Meanwhile, surgery can be considered only for diagnosis or alleviation of airway compressive symptoms. A 57-year-old female visited our outpatient clinic for recently enlarged long-held anterior neck mass. A thyroid mass compressing the airway and esophagus was identified on imaging, which was diagnosed as MALT lymphoma by excisional biopsy. After staging, the patient underwent total thyroidectomy with regional lymph node dissection for treatment of stage IIE MALT lymphoma and relieving airway compromise symptoms. The final diagnosis was DLBCL transformed from MALT Lymphoma, and chemotherapy was additionally performed. We report this rare experience with a review of literature.

  • The investigation was aimed to reduce the period of bed log through the protection of harmful fungi and to know the effects of physiological activating substances on the yield increase of Lentinus edodes. Mycelial growth was evaluated both the bed logs and physiological activating substances, respectively. I percent extract of Allium cepa and malt as a physiological activating substance was highly effective in mycelial growth of Lentinus edodes. Better effects among the bed logs by the application fo physiological activating substances observed in both Quercus serrata and Carpinus laxiflora. This results suggested that supplement of physiological activating substances to the bed log would be beneficial for the production of Lentinus edodes.

  • Primary malignant lymphoma of the parotid gland is extremely rare entity and seldom described in the literature. Extranodal marginal zone B-cell lymphoma of mucosa associated lymphoid tissue(MALT lymphoma) is a relatively indolent disease and tents to remain localized for prolonged period of time. MALT lymphoma can be diagnosed after immunohistopathological study. Clinically, most MALT lymphomas are localized at the time of diagnosis and may be curable with local therapy alone, either surgery or radiotherapy. We present a case of MALT lymphoma in both parotid glands of patient who detected a left infraauricular huge mass as a first symptom and underwent surgical excision and immediate reconstruction using sternocleidomastoid myocutaneous flap.

  • Pulmonary mucosa-associated lymphoid tissue-derived (MALT) lymphoma is a rare disease. This disorder is considered to be a model of antigen-driven lymphoma, which is driven either by autoantigens or by chronic inflammatory conditions. Low-grade B-cell MALT lymphoma may develop from a nonneoplastic pulmonary lymphoproliferative disorder, such as lymphocytic interstitial pneumonitis (LIP). A recent estimate predicts that less than 5% of LIP patients acquire malignant, low-grade, B-cell lymphoma. In Korea, there has been no previous report of malignant low-grade, B-cell lymphoma, acquired from LIP. Here, we present the case of a patient with LIP that developed into pulmonary MALT lymphoma, six years after diagnosis.

  • An extranodal marginal zone B-cell lymphoma of the mucosa-associated lymphoid tissue (MALT) is the most frequent type of non-Hodgkin's lymphoma that primarily involves the lung. The radiographical discovery of a pulmonary lesion in an asymptomatic patient is the most common clinical presentation. In general, the prognosis of a localized extranodal pulmonary marginal zone B-cell lymphoma of MALT type is excellent. We report a case of a 61-year-old man who sought evaluation of an incidentally discovered mass in the lung.

  • A 74-year-old female presented with a complaint of dry mouth, continuous spontaneous burning sensation in the tongue, and asymptomatic submucosal soft tissue mass on both sides of the lower labial mucosa. She refused to undergo total excision of the mass due to concern about the possibility of complications such as nerve damage because of the large size of the mass. As her clinical features and magnetic resonance imaging indicated the possibility of Sjögren's syndrome, a biopsy of the minor salivary gland of the right lower lip was performed. Consequently, she was diagnosed with mucosa-associated lymphoid tissue (MALT) lymphoma. Although the patient had typical signs and symptoms of Sjögren's syndrome, the histopathological result of MALT lymphoma made it impossible to determine whether the patient had a history of Sjögren's syndrome. For patients with risk factors for MALT lymphoma, such as Sjögren's syndrome, a biopsy of the labial minor salivary gland with immunohistochemical staining can be helpful in the diagnosis of not only Sjögren's syndrome but also MALT lymphoma.

  • The 64-year-old female patient with cough and intermittent hemoptysis of six months duration visited our hospital. On chest computed tomography, a small, ovoid, 1.3cm sized and well enhanced lesion was detected on the distal trachea. Two multiple lobulated lesions on the sigmoid and transverse colon were revealed on the colonoscopy. The histological findings showed small and medium sized lymphocytes infiltration, CD20 and CD79a positive staining and multiple lymphoepithelial lesions on the distal trachea and colon tissues. Herein, a case of primary MALT lymphoma, with involvement of the trachea and colon, which was treated with rituximab (CD20 anti-monoclonal antibody), cyclophosphamide, adriamycin, vincristine and prednisolone (CHOP regimen), is reported.

Changes in Solubility of Barley Arabinoxylans during Malting (보리의 제맥과정 중 Arabinoxylan의 용해성 변화)

  • Barleys at different malting stages from steeping to 5 day germination were investigated for soluble, insoluble, and total arabinoxylans at three different extraction temperatures of 21, 45 and $65^{\circ}C$. Slight differences in total arabinoxylan levels in barleys were observed during malting stages. During germination, initially insoluble arabinoxylan could be more soluble, thus the solubilized arabinoxylan tended to increase until 4 day germination. The proportion of soluble arabinoxylan in germinating barleys was increased from ambient temp ($21^{\circ}C$) to 45 or $65^{\circ}C$. Two barley malt samples were selected at two different stages of germination, well-modified malt germinated for 96 hr and poorly-modified malt for 60 hr, and mashed isothermally at 45, 55, 65, or $75^{\circ}C$ for 2 hr. Increasing temperature over 45 to $75^{\circ}C$ slightly decreased the amount of arabinoxylan solubilized in wort. Arabinoxylan content of wort from well-modified malt was not significantly different from poorly- modified malt at all mashing temperatures.

  • The cultural conditions in shake flasks were investigated under which maximum amounts of laccase produced by a strain of white-rot fungus Coriolus versicolor CV3. The enzyme yields on potato-malt extract medium by the fungus were higher than on other media consisted of onion infusion or malt extract, with maximum activity of $1.50unit/m{\ell}$ culture or 119.5 unit/g mycelium at 11 days of incubation. Maximum yields of laccase and growth were obtained by supplementation of yeast extract or potassium nitrate to the potato-malt extract medium. Addition of 2.5-xylidine at $4{\times}10^{-4}M$ concentration to the medium induced the laccase production 3.1-fold higher than the basal level, while the mycelial growth was somewhat repressed. The pH optimum for the growth and laccase formation by the fungus was between pH 4 to 4.5.
