Purpose: This study aimed to examine the compliance to a low-salt diet, sodium intake, and preferred salty taste in elderly patients with hypertension. Methods: A cross-sectional descriptive design was used. Participants were 105 elderly patients with hypertension living in a rural area. The compliance with a low-salt diet, sodium intake, and preferred salty taste, blood pressure, body mass index, and waist circumference were measured, and compared according to the general characteristics and the levels of blood pressure. Descriptive statistics, $X^2$-test, t-test, and ANOVA were used for data analysis. Results: compliance with a low-salt diet was marginally elevated. Sodium intake was relatively high and the main sources were seasonings and vegetables. The participants tended to prefer high levels of salt. Sodium intake was significantly higher the hypertensive individuals (stage I and II) compared to prehypertensive subjects on a normal maintenance diet. Sodium intake from vegetables was also significantly different between the two groups. Conclusion: Nursing intervention for hypertensive elderly patients should include strategies to decrease sodium intake.
This study was conducted to identify adults' knowledge, dietary behavior related to sodium, the attitude towards a low-salt diet, and to examine the relation between these variables. The participants were 366 adults in Jeonbuk area. The data were analyzed using Pearson correlation coefficients, ANOVA and Duncan test with SPSS v. 12.0. The score for participants' knowledge about sodium was 12.32 points of a possible 16, the score for dietary behavior related to sodium was 45.74 points of a possible 70, and their score for attitude towards a low-salt diet was 30.35 points of a possible 50. The knowledge showed significant differences by gender (p<.05), and concern about health (p<.05). The dietary behavior of sodium use showed significant differences by gender (p<.001), age (p<.001), educational level (p<.05), job (p<.001), income (p<.05), BMI (p<.05), smoking (p<.01), drinking (p<.01), exercise (p<.05), regularity of health checkup (p<.001), and concern about health (p<.01). The attitude towards a low-salt diet showed significant differences by gender (p<.001), age (p<.001), job (p<.001), income (p<.001), smoking (p<.05), regularity of health checkup (p<.001), and concern about health (p<.001). There was a significant positive correlation between knowledge about sodium, dietary behavior related to sodium, attitude towards a low-salt diet. Dietary behavior related to sodium showed a positive correlation with attitudes towards a low-salt diet. In conclusion, it is necessary to consider the related factors for the development and implementation of systematic education programs that can encourage and promote preventive dietary behavior for disease, e.g. stomach cancer, and hypertension among adults.
This study was performed to investigate the effect of sodium intake on blood pressure and blood parameters. 20 young adult women were fed the diets containing 290.5 mEq (high-Na diet) and 51.3 mEq (low-Na diet) Na for 6 days, respectively. BMI, DBP, and MBP were significantly lower in low-Na diet than those in high-Na diet. 20 subjects were divided into 3 groups according to the salt-sensitivity. In salt-sensitive group, decreases in SBP, DBP, and MBP by low-Na diet were shown. And there were not significant difference in blood pressure of salt-resistant group between high- and low-Na diet. In count-reactive group, MBP in low-Na diet was significantly higher than that in high-Na diet. Hemoglobin, creatinine, uric acid, and haptoglobin levels in serum were significantly higher in low-Na diet than those in high-Na diet. Among groups with different salt-sensitivity, increments of haptoglobin by low-Na diet were shown in salt-sensitive and counter-reactive groups. Actually, low sodium diet affects not only the blood pressure, but other biochemical parameters which in turn affect an individual overall health. Also salt-sensitivity should be considered as an important determinant. Therefore, for the patients who need restricted Na diet, it would be suggested that various biochemical changes and individual salt-sensitivity should be carefully considered along with dietary Na manipulation.
Urbanization is usually followed by changes in eating habits, with a specific trend toward the consumption of ready-to-eat products, such as processed foods. Among the latter, meat products are known contributors to high dietary sodium owing to salt addition. Salt plays an essential role in maintaining the quality of meat products in terms of acceptability and safety. However, an excessive salt intake is linked to high blood pressure and cardiovascular diseases. Hence, several studies have been competing for the discovery of salt alternatives performing in a similar way as common salt. A number of replacements have been proposed to reduce salt consumption in meat products while taking into account consumer preferences. Unfortunately, these have resulted in poorer product quality, followed by new adverse effects on health. This review addresses these recent issues by illustrating some established approaches and providing insight into further challenges in developing low-salt meat products.
This study was done to explore the effect of Korean women's salt usage behavior on their sodium intake and excretion according to aging. Dietary sodium intake and salt usage behavior were analyzed to compare the difference between young and middle-aged women. One hundred fifty six young women and 77 middle-aged women without hypertension or any current medication were recruited. Body mass index, waist hip ratio, blood pressure were measured from each subject. Salt usage behaviors were surveyed with questionnaire, sodium intake with 24-hr recall method, and sodium excretion with spot urine. Middle-aged women were more obese than young women according to body mass index and waist hip ratio. Blood pressure was significantly higher for the middle-aged. Young women consumed more fats and middle-aged women more carbohydrates. Middle-aged women consumed more sodium and potassium, and excreted more sodium. Among questionnaire items, kimchi, soup or pot stew, or salted vegetables were found to be related with high sodium diet. Salted vegetables and salted nuts and potato chips were significantly correlated with young women's high sodium diet, while soy sauce on fried food, kimchi, salted vegetables accounted for middle-aged women's high sodium diet. With these results, we concluded that middle-aged women consumed more carbohydrates, less fat, and more sodium and potassium than young women. Middle-aged women frequently choose kimchi, soup or pot stew, or salted vegetables, and they contribute to high sodium intake. We recommend to choose low-salt kimchi, less soup or pot stew, and more fresh vegetables for lower sodium diet.
Agricultural drainage salt generated during irrigation of crops in San Joaquin Valley, California, exceeds 600,000 tons annually and cumulates in the field in a rapid rate. As a result, the waste is taking out more farmlands for salt storage and disposal, imposing serious concerns to environment and local agricultural industry. In searching for a potential solution to reduce or eliminate the waste, this research explored feasibility of producing a value-added product, sodium sulfate, from the waste and utilizing the product in textile dyeing. The results indicated that sodium sulfate could be produced from the salt and could be purified by a recrystalization method in a temperature range within the highest and lowest daily temperatures in summer in the valley. The recovered sodium sulfate samples, with purities ranging from 67% to 99.91, were compared with commercially available sodium sulfate in the dyeing of levelling dyes with nylon/wool fabrics. In nylon/wool fabrics, C.I. Acid Yellow 23 had similar exhaustions among Na₂SO₄ I, Na₂SO₄ II, Na₂SO₄ III and Na₂SO₄ Ⅴ which had similar ratios of sodium sulfate and sodium chloride in recovered salts. Na₂SO₄ Ⅳ had low exhaustion which had low ratios of sodium sulfate and sodium chloride. In nylon/wool fabrics, C.I. Acid Blue 158 had similar exhaustions among Na₂SO₄ I, Na₂SO₄ II, Na2₂SO₄ III, Na₂SO₄ IV and Na₂SO₄ Ⅴ despite of Na₂SO₄ Ⅳ had low ratios of sodium sulfate and sodium chloride Generally, the dyeing of levelling dyes using recovered salts from farm drainage has similar or low exhaustion than the dyeing of levelling dyes using commercial sodium sulfate.
This study compares salt-related dietary patterns according to sodium intake. A survey was conducted with 257 college students(130 male and 127 female students) in the Busan area. Dish Frequency Questionnaire 70(DFQ 70) was used to quantitatively estimate sodium intake. A short dish frequency questionnaire(DFQ 15) was used to screen subjects with high or low- salt intake. The sodium intake of male students based on DFQ 70 was significantly higher than that of female students(p<0.05). Sodium intake has significant negative effects on systolic and diastolic blood pressure(p<0.05). In the high-salt intake(HS) group, classified by DFQ 15, the number of male students was significantly higher than that of female students(p<0.01). The systolic blood pressure of the HS group was significantly higher than that of the low-salt intake(LS) group(p<0.05). Salt-related dietary behavior score and eating habit score for the HS group were significantly higher than those for the LS group(p<0.01). The sodium intake of the HS group based on DFQ 70 was significantly higher than that of the LS group(p<0.01). In these results, college students in Busan area showed high blood pressure and high sodium intake compared to Korean DRIs. The results indicate a need for various education programs to help college students practice a low-sodium diet.
Although excessive intake of sodium is known to cause various diseases and threaten public health and policies for reducing overconsumption of sodium are being implemented, the theoretical research on sodium intake is incomplete. This study attempted to provide a policy basis by examining whether or not planned behavior theory, which is a typical health communication theory used to describe health-related behaviors, can be applied to explain sodium intake behavior. Especially, sodium ingestion behaviors were compared using the theory of actions planned for men and women as well as young people, middle-aged, and elderly persons, who are predicted to show differences in eating habits. In this study, questionnaires were prepared to measure the daily eating habits of subjects and subordinate factors of planned behavior theory: behavioral beliefs, outcome expectations, normative beliefs, compliance motivation, and control beliefs. Questionnaires were given to 93 college students and their families. As a result of the difference analysis and path analysis of the questionnaire responses, the following suggestions were obtained. First, age difference is more obvious than sex difference in terms of low salt intentions. For example, older people are healthier than younger people in terms of eating habits and health concerns. Second, the elderly are more likely to practice the low-salt formula when they are provided information on the benefits and effects of the low-salt formula compared to younger ones. Third, systematic efforts are needed to promote a culture that emphasizes the health benefits of a low salt diet rather than providing piecemeal information on the advantages and effects of a low salt diet.
In order to study low salinity Oiji (cucumber pickled in salt) with a reduced content of sodium, which was accomplished by replacing the salt in this saliferous food, we produced Oiji using sea tangle and, then performed physicochemical and sensory evaluations. It was found that the moisture content of Oiji was decreased with increasing the amount of added sea tangle. The pH and acidity were significantly different between the samples made with sea tangle, and the pH and acidity showed no consistent tendency according to the amount of sea tangle powder added. The salinity of Oiji was the highest in the control Oiji (2.92%), and the higher the amount of sea tangle added, the lower was the salinity in the Oiji with the salt replaced by sea tangle (2.78 to 2.89%). The sodium content of Oiji was also the highest in the control Oiji (591.65 mg/100 g) and significantly decreased with the increasing addition of sea tangle (560.43~366.71 mg/100 g). The color value of Oiji showed a significant difference between the samples, with no consistent tendency according to the amount of added sea tangle powder. The hardness of Oiji was significantly greater in the Oiji with the salt replaced by 40% of sea tangle, with greater hardness noted as the amount of added sea tangle powder increased (217.70 g). As a result of the acceptance test of Oiji, there were significant differences between the samples in overall acceptance, appearance, and taste, showing that the Oiji with salt replaced by 30% of sea tangle was significantly highest in overall acceptance and taste. The attribute difference test showed a significant difference only for the brown color, while no significant differences were found between the samples for off-flavor, bitter taste, fermented taste, salty taste, sour taste, hardness and crispness. The above results demonstrated that when sea tangle was substituted for 30 to 40% of the salt content, the Oiji with a low content of sodium and low salinity can be produced with a high level of taste and overall preference. Therefore, this study firmly demonstrated that 30 to 40% of the salt can be replaced by sea tangle as a substitute in order to produce Oiji that has low salinity, a low sodium content.
Sodium chloride (NaCl) is a very important as one of major food ingredients in food industries. Recently, as the potential risk of adult diseases such as hypertension by overingestion of sodium, health authorities of many countries are executing policies for the reduction of sodium to suppress the overingestion of sodium by intake of NaCl. As general ways, the replacement of NaCl with either alternative salts, such as solar salts and minerals, for examples calcium, magnesium, potassium, lactic acid, and so on, and the addition of flavor enhancers were used to reduce the contents of sodium in foods. Upon reducing NaCl in foods it is important to develop practically adaptable technologies on the basis of the consideration of the unique functions of NaCl in foods, in particular effects on rheological characters, function as a humectant, shorten shelf life time, and so on.
