A Study on the Actual Conditions about Use of Ritual Space of Beommul-dong in Daegu-city (대구 범물동의 동제(洞祭)공간 이용실태에 관한 조사연구)

  • The ritual for community is a group ritual performed by the regional community of a village for the safety of the residents and abundant harvests. However, many ritual places have been destroyed by the anti-superstition movement, New Community Movement (Saemaul Movement), industrialization and urbanization since the 1960s. Under the circumstances, this study researched the status of use of the ritual place in Beommul-dong in Daegu where the ritual was revived in 2004 after having been suspended since the end of the 1980s due to urbanization. The revival of the ritual for community in Beommul-dong in Daegu, which had been maintained by the village people alone, is the prime example of the vitalization of local community as the recreation of local community, since the ritual has been transformed into a kind of festival involved with and financed by the local government. The study on analyzing the usage pattern of the ritual place may provide useful sources to come up with the modernized functions of the ritual place as a community place, where the heads of the ward office and cultural center, lawmakers and most of the residents perform the ritual, share foods and tread on the God of the Earth across the village at 11:30 in the morning on every January 16 of the lunar calendar.

Importance and Satisfaction Analysis of Consumers Who Prefer Home Meal Replacement Using Local Foods by Product Types (국내산 식재료를 활용한 가정간편식을 선호하는 소비자의 선택속성에 대한 제품 유형별 중요도와 만족도 분석)

  • The purpose of this study was to compare and analyze the importance and satisfaction of consumer selective attributes by home meal replacement (HMR) types using local ingredients. This study was conducted from December 4 to December 8, 2020. A total of 380 responses organized according to preferred types of HMR (100 for Ready to Eat (RTE), 92 for Ready to Heat (RTH), 88 for Ready to Cook (RTC), 100 for Ready to Prepared (RTP) were used for the final analysis. Statistical analysis was conducted by descriptive analysis, paired t-test, and importance-satisfaction analysis by HMR type. Findings of this study showed significant differences in consumer selective attributes by HMR type. RTE and RTC need to improve quality while RTH needs to improve quality and packaging. Notable selective attributes were quality, packaging, and information. They were located in different quadrants of each HMR type. All other attributes appeared in the same quadrant. Further research is needed to determine differences in quality, packaging, and information for each HMR type. Results of this study provide basic data for developing products and marketing strategies for each type of HMR products using local ingredients.

Survey on Food Characteristic Preferences for Rural Healing Tourism for Adults in Urban Areas (도시지역 성인의 농촌치유관광 음식 특성 선호도 조사)

  • This study was conducted to investigate food needs for dining out in the context of rural healing tourism by surveying food preference characteristics. A total of 600 adults in an urban area completed an online questionnaire on food characteristics for rural healing tourism. Regarding the purpose of rural healing tourism, 61.2% of respondents answered 'relaxation' while 6.3% answered 'promotion of health'. Exactly 66.3% of respondents selected Korean foods (rice) as the preferable food type for dining out in the context of rural healing tourism. Respondents considered 'regionality' and 'ingredient' as more important among food quality characteristics, whereas 'professionality' was less important. Females perceived 'nutrition' and 'cooking' as more important than males. Among food characteristics of professionality, regionality, and traditionality, respondents most preferred 'using regional specialty food'. Preference for 'using traditional food' significantly increased with subject's age. Respondents rated 'balanced nutrition' most highly among food characteristics of health and nutrition. 'Seasonal food' was the most preferred food characteristic among cooking and ingredients. Females showed higher interest in nutrition, cooking, and ingredients and higher preferences related to food characteristics of nutrition, cooking, and ingredients than males. In conclusion, Korean foods (rice) or Korean full course menu items using local specialty foods or seasonal foods with balanced nutrition are needed for dining out in the context of rural healing tourism.

A Study on the Application of Dietary Life Education Programs for Activation of the Rural Convergence Industry (농촌융복합산업 활성화를 위한 식생활교육 프로그램 적용 연구)

  • This study is to analyze the effects of dietary life education of elementary school students by gender and by grade to seek for solutions of activating the rural convergence industry in linkage with dietary life education. Subjects were 152 students of eight elementary schools in Chungcheongnam-do. As a result of the study, after application of the dietary life education program, the scores were statistically significantly improved and four sub areas(education at the dining table, practice of green dietary life, reduceing food wastes, learning about local foods) showed a statistically significant improvement. Scores by gender were statistically significantly improved among both male and female students and the results of analyses by gender in four sub areas of dietary life education were also statistically significantly improved. Scores by grade were statistically significantly improved in all grades and the results of analyses by grade in four sub areas of dietary life education were also statistically significantly improved. Since the dietary life education program in the present study is effective for dietary life improvement, the results of the present study are expected to be utilizable in education of elementary school students and lead to the consumption of regional foods by increasing the ability to select proper foods.

Study on Ritual Food Bulcheonwi's Commercialization of Andong Kwon Clans of Choongjae Kwonbeol's Head Family (안동 권씨 충재 권벌 종가음식의 상품화 연구)

  • This study was conducted on the head family house of Panseogong coterie of Andong Kwon clans in Daksil village, Bongwha gun, Kyungbuk: historical sources survey and field visit over four rounds were conducted from March to June 2014. In-depth interview, storytelling, and nutrition facts were used as methods of research using 49 participants, and the potentials of trend goods were the main purpose of this research. The specialties of bongwha prefecture in the Chosun Dynasty were pine nut, manna lichen, ginseng, sweetfish, and wild honey. Ritual food bulcheonwi's offerings a feature in Choongjae Kwonbeol's head family - were sacred wine, me, gang, otang, myun, myunjeok, pyunjeok, pyunchung, pyun, po, chungpomook, dojeok, sookchae, ssam, chimchai, sikhye, chogwa, silgwa, soojunggwa, etc. The ritual foods of bulcheonwi's head family house Choongjae Kwonbeol were commercialized through storytelling. Choongjae Kwonbeol's ritual ceremonies, recognized for their national royalty, were reorganized as the traditional Korean table settings, so that the Korean people could easily access them. The special meal called "Geumgyeporansang" represented the head family house foods' essence to share and serve others through the Dacshil village's natural beauty, Bonghwa's local ingredients, and festivities after the "Chungjae Gwunbal Bulchun" rituals. The ritual foods called "Cheongamjungsang", utilizing "Chungjae Gwunbal Bulchun" rituals, were represented in the form of a lunch box: such foods illustrate the classical scholar's mindset that enjoys the nature and arts through education and virtue.

Effect of Tourism Motivation for Traditional Indigenous Foods on Expectation, Community Attachment and Tourism Satisfaction in Festival Event (축제이벤트에서의 전통향토 음식체험관광에 대한 관광동기가 기대도와 지역애착 및 관광만족에 미치는 영향)

  • In this study, an empirical analysis was carried out to determine the effect of tourism motivation for traditional indigenous foods experience tourism on expectation, community attachment and tourism satisfaction in festival event. The result is as follows. First, the effect of tourism motivation for foods experience tourism on expectation of tourism products in experience event showed that exchangeable, educational, aesthetic, derivative and adventurous attributes have a positive effect on expectation of tourism products. Second, the effect of tourism motivation for foods experience tourism on community attachment in experience event showed that exchangeable, educational, aesthetic and derivative attributes have a positive effect on community attachment. Finally, expectation of tourism products and community attachment had a statistically significant effect on community attachment and tourism satisfaction, and tourism satisfaction, respectively. That suggests that the development of various food tourism resources as the tourist value, which can get tourism resources of traditional foods through festival events, could not only introduce tourists to unique food culture, but add the pleasure of delicious food and tourism. Consequently, the preservation, inheritance and development of regional indigenous foods could increased local patriotism, and develop the related industry, maximizing economic effects.

A Study on the Effects of Selection Attributes for Agricultural Products on Using Local Food Store (농산물 구매선택 속성이 로컬푸드 직매장 이용에 미치는 영향 연구)

  • Purpose - As consumers' needs for purchasing fresh and safe food have been bigger in Korea, their interest in local food is also growing recently. So, the number of local food stores has been increased from 3 in 2012 to 103 in 2015. Local food stores should operate a business responding consumers' needs in order that local food stores are not to be a one-time fad. Therefore, the purpose of this study is to analyze the characteristics of consumers who use a local food store and provide helpful implications to design a strategy for sustainable growth of local food store. Research design, data, and methodology - In this study, Probit model was used for empirical analysis in order to examine the effect of purchase choice attributes of agricultural products, consumer's satisfaction, and their demographic factors upon the intention to use a local food store. After estimating coefficients of the probit model, marginal effects were calculated as a standard normal, and cumulative distribution is differentiated with respect to explanatory variables. To collect the data, questionnaire survey was carried out with the consumers using the local food store (Youngjin Nonghyup near to Jeonju city located in Jeollabuk-do). Result - The data analysis found that the more consumers are satisfied with local food store, the higher intention they have to use the local food store. In addition, it was known that the factors related to quality of agricultural products and shopping convenience among the purchase choice attributes have a considerable impact on the purchase intention of a local food store. In demographic factors, income was turned out to be an important factor affecting purchase intention of local food. Such a result supports the hypothesis that high income consumers are likely to purchase local food, which is based on the inference that consumers who have a high income tend to pursue wellbeing life. Futhermore, information delivery, through a reputable media source among general factors, was known to play an important role in forming an intention to purchase local food. According to the analysis of marginal effects, probability of purchase intention of a local food store is increased by 11.4%, if a monthly average income of a household is above 4.5 million Won(Korean currency). If purchasing satisfaction with local food stores is high, the probability of purchase intention would be increased by 24.1%. Likewise, such a probability goes up by 8.7%, 5.8%, respectively as an increasing one unit of quality of agricultural products and shopping convenience of local food stores, respectively. Conclusion - For attaining sustainable growth in a local food store, it is considered necessarily to establish a proper store operation system to meet consumers' needs, especially for quality and shopping convenience of local food. Moreover, as it was found that appropriate communication through media source has a positive effect on the intention to use local food store, PR activity seems to be necessary to expand the consumers' demands for local foods.

A Study on the Selection of Cheongju City's Local Food (청주시 향토 음식 선정에 대한 연구)

  • A survey was conducted of 1,390 citizens of Cheongju city', asking them to select 10 foods that they think are most suitable as local among 89 already- recognized local foods. The data were then analyzed by age, gender, and vocation. The results classified by sex showed that for males, first place was marsh snail soup (282), second, acorn jelly soup (174), third, bean noodle (164), and fourth, three-tiered pork and Haejang soup (158). In females, marsh snail was in first place (520), second, acorn jelly soup (322), third, bean noodle (272), fourth, three-tiered pork (271), and fifth, Haejang soup (262). Combining the results of males and females showed first place was marsh snail soup (802), second, acorn jelly soup (496), third, bean noodle (436), fourth, three-tiered pork (429), fifth, Haejang soup (420), sixth, wild plant mixture rice (323), seventh, Boshin broth (322), and eighth, minced chicken soup (321). The classification by vocation of males and females showed that fewer housewives chose three-tiered pork, while fewer clerks chose less wild plant mixture rice. Instead, housewives and clerks chose more Boshin broth and minced-chicken soup, which other males chose less. However, it is unreasonable to select wild plant mixture rice, bean noodle, or Boshin broth as the favorite local food since these can be eaten or collected only during the summer season.

  • Organized feeding programmes can contribute to the health and well-being of students All such programme must be planned carefully, taking into account the nutritional needs of the group to be fed, available food supplies, facilities for food preparation and distribution, and available funds. In most instances provision must be made for training staff to operate large-scale feeding proframmes. Nutrition education should be an important aspect of all feeding programme, and should provide simple clear information on food and nutrition in relation to health. The early participation of parents and the local community in the programme, particularly through the production of local low-cost foods of high nutritional value will help to insure continuity after external aid has ceased. Programmes should be evaluated in order to measure the benefits obtained in relation to the cost of the operation. Anthropometric data, absenteeism and scholastic achievement may serve as indicators in school feeding programmes.

  • Green tourism has recently focused on an alternative plan for activating a rural economy and coping with an income inequality between urban and rural areas. The Rural Development Administration has supported farm restaurants with the aim of increasing the income of farmers, determined unique native local foods and developed programs based on the experience rural life since 2007. Farm restaurants, which are the new type of local food restaurants, have unique food and various experiencing programs that reflect their own regional characteristics. We would like to understand how the farm restaurants have been developed and what types of characteristics they have based on the currently operating farm restaurants. The management situations and value of farm restaurants as tourist attractions were investigated as well in the tools for rural development.
