붕어고음 잔사분말을 첨가한 Cookies의 품질특성 (Protein Qualities and textural Properties of Cookies Containing Crucian Carp Extraction Residue)

  • To find the possibility in utilizing the fish meat processing by-products, protein nutritional quality and textural properties of crucian carp extraction residue (CCER, feeze dired) incorporated into cookies were investigated. Moisture, ash and protein contents in cookies were increased with the higher residue treatments, but lipid contents were similar within all levels (3%, 9% and 15%). Major constitutional amino acids were revealed as glutamic acid, proline, leucine and arginine, and the sum of those amino acids was about 50% of total amino acid contents. Cookies with residue (CCER) had higher (80.74~84.50%) in vitro protein digestibility than standard cookies (83.32%), while slightly lower trypsin indigestible substrate (TIS) contents were showed in CCER containing cookies than control. CCER treatments resulted the decreased protein nutritional quality in C-PER (computed protein efficiency ratio) value from 2.41 (standard) to 1.15 (cinnamon flavored. 9% CCER), and those C-PER of all cookies were lower than ANRC casein (2.50). Lipophilic browning was developed steadily till 60 days storage and a significant (p<0.05) changes of browning ws not noteed between 60 days and 90 days storage. Color of cookies, expressed as L, a and b value, was significantly (p<0.05) lightened with the increased CCER. Similar trends by treatments were noted for hardness. Cookies containing 9% CCER were similar to control regarding textual and sensory properties.

Ecdysteroid 화합물들의 화학구조 특성에 대한 비교연구 (A Comparative Study on the Chemicostructural Characteristics of Ecdysteroids)

  • Objectives: This study was conducted in order to investigate the specific correlation between physicochemical properties and bioactivity in ecdysteroids found in living organisms. Methods: The examined steroidal compounds were classified into three groups according to their relevance to ecdysone activity. Each compound molecule was completely drawn to automatically calculate its physicochemical parameters and docked against 20-hydroxyecdysone to calculate the total distance. Electronic charge distribution was also observed for each molecule. All procedures were conducted using a computational chemistry program. Results: Ecdysone agonists showed different ranges of parameter values, such as log P, hydrophilic-lipophilic balance (HLB), solubility parameter (SP), hydrophilic surface (HPS), hydrogen bond (HB) and Kappa 2, when compared with antagonists and steroids without ecdysone activity. They also showed a similar electronic charge distribution that is significantly different from the electron charge distribution of antagonists and steroids without ecdysone activity. The total distance values of agonists, estimated by docking them with 20-hydroxyecdysone, were relatively small but showed no correlation with binding affinity with receptor ligand. Conclusions: These results suggest that physicochemical properties such as steric and electronic effects, hydrophobicity and hydrogen bonding may operate in combination to determine the binding activity of ecdysteroids to the receptor protein.

Higher Extraction of Phytochemical Compounds from Tartary Buckwheat Seeds by the Application of Surfactant Formulation

  • The aim of this study was to determine the suitability of surfactant to extract higher phenolic compound, flavonoid and antioxidant activity from Tartary buckwheat and evaluate the potentiality of surfactant as a screening agent for breeding purpose. Primarily, we employed two types of surfactant (Hydrophilic: Tween 20 and Lipophilic: Span 80) to select the suitable surfactant agent for the extraction of optimum bioactive compounds. Between two surfactants, Tween 20 showed highest efficiency at 4 mM concentration to extract total phenolic content (TP), total flavonoid (TF) and antioxidant activity (AA). Tween 20 at 4 mM concentration was fixed for further analysis along with hot water ($90^{\circ}C$) treatment as a control. In our findings, highest TP (118 mg/g), TF (38 mg/g) and AA (76%) was achieved in KW21 and KW22 among the fifteen accessions of Tartary buckwheat. In other way, TP, TF and AA was 200%, 120% and 110% higher in surfactant formulation compared with control treatment, respectively.

Helminthosporium sativum가 생성하는 독소물질에 대한 phytotoxicity 및 Dilution end-Points 측정 방법 개발 (Measurement of Dilution End-Points and Phytotoxicity of Toxic Metabolites Produced by Helminthosporium sativum in Barley, Wheat and Lettuce Roots)

  • 밀 보리에서 crown root rot 및 leaf blotch를 이르키는 Helminthosporium sativum의 독소물질을 분리하였다. 이는 독소물질에 대한 어떤 손상도 없이 C-18 column으로 분리되었으며, 실험적으로 가능한 inhibitor를 제거하였다. Lettuce 성장과 독소물질의 농도의 반응에는 semi-log 표에서 비례하였다. 또한 pathogen host인 밀 보리의 뿌리 성장에 사용한 결과 Lettuce의 반응과 동일한 결과를 얻었다. 또한, pathogen host인 밀 보리의 뿌리 성장에 사용한 결과 Lettuce의 반응과 동일한 결과를 얻었다. 독소물질과 식물의 반응을 측정하여 dilution end-points.의 결과로, 직접적으로 독소물질의 농도를 측정하는 방법을 개발하였다. (Y=a log x+b)의 공식과 통계처리로 사용하여 얻은 a와 b의 의미를 토론하였다.

  • 올레오겔은 친유성의 액체와 고체의 혼합물로 정의할 수 있다. 고상의 지질 물질(올레오겔 형성제)은 10 wt.% 미만의 농도로 네크워크 형성에 의해 오일을 함유할 수 있다. 올레오겔 형성제는 자발적 회합계와 결정화 입자계의 두 가지 그룹으로 나눌 수 있다. 본 연구에서는 다양한 올레오겔 형성제를 이용한 올레오겔 형성에 관한 최근 연구 결과를 살펴보고자 한다. 지질 네트워크 형성의 기본적인 양상을 올레오겔을 기본으로 한 결정화 입자와 관련하여 논의하고자 한다. 또한 올레오겔의 화장품에의 응용 사례에 대해 기술하고자 한다.

  • 미오-이노시톨과 라우르산, 미리스트산, 팔미트산, 스테아르산 및 올레산등 5종의 지방산 메틸에스테르를 디메틸술폭시드 용매내에서 에스테르교환반응을 행하였다. 에스테르교환반응생성물은 얇은막 크로마토그래피, 관 크로마토그래피에 의하여 각각의 에스테르를 분리할 수 있고 미오-이노시톨 모노에스테르는 향류분배 방법에 의하여 잘 분리할 수 있다. 모노에스테르의 수용액에 대한 표면장력, 기포력, 유화력등을 측정하고 색소법에 의한 임계미셀농도를 추정하고 HLB값을 산정하였다. 이 결과로 미오-이노시톨모노에스테르는 계면활성을 나타낸다는 사실을 알았다.

Essential Oil Prepared from Cymbopogon citrates Exerted an Antimicrobial Activity Against Plant Pathogenic and Medical Microorganisms

  • Essential oils are mixtures of volatile, lipophilic compounds originating from plants. Some essential oils have useful biological activities including antimicrobial, spasmolytic, antiplasmodial, and insect-repelling activities. In this study, we tested the antimicrobial activity of essential oil prepared from the aromatic plant, Cymbopogon citrates, against three important plant pathogenic and medical microorganisms, Pectobacterium carotovorum, Colletotrichum gloeosporioides, and Aspergillus niger. It effectively inhibited the growth of the bacterium, Pectobacterium carotovorum, in a dose-dependent fashion, and 0.5% of the oil inhibited the growth of bacteria completely. Similarly, the essential oil inhibited the growth of plant pathogenic fungus, Colletotrichum gloeosporioides, and the addition of 1% of essential oil completely inhibited the growth of fungus even after 5 days of culture. Finally, it effectively inhibited the growth of the medically and industrially important fungal species, Aspergillus spp. These results suggest that the essential oil from Cymbopogon citrates may be an environmentally safe alternative to inhibit antimicrobial agents for various uses.

나프티온산 유도체의 합성 및 계면활성에 관한 연구 (Studies on the Synthesis and Surface Activities of Naphthionic Acid Derivatives)

  • Four amphoteric surfactants, 1-(N-alkyl-N,N-dimethyl ammonio)-4-naphthalene sulfonates, were prepared by the alkylation of 1-(N,N-dimethylamino)-4,naphthalene sulfonic acid with chloroalkanes such as 1-decylchloride, 1-tetradecyl chloride and 1-hexadecyl chloride. These quaternary ammonium compounds such as 1-(N-decyl-N, N-dimethylammonio)-4-naphthalene sulfonate, 1-(N-dodecyl-N,N-dimethylammonio)-4-naphthalene sulfonate, 1-(N-tetradecyl-N,N-dimethylammonio)-4-naphthalene sulfonate and 1-(N-hexadecyl-N,N-dimethylammonio)-4-naphthalene sulfonate could be separated by means of thin layes chromatography and column chromatography. The surface chemical properties such as surface tension, foaming power, foam stability, wetting efficiency and solubilizing effect for these four compounds were measured. Also critical micelle concentration and hydrophilic-lipophilic balance(HLB) were evaluated. These compounds showed good surface as O/W type emulsifying agent and detergent.

  • 1-(carboxyalkyl) trimethyl ammonium chlorides such as 1-(carboxyundecyl) trimethyl ammonium chloride and 1-(carboxytridecyl) trimethyiammonium chloride were synthesized by the reaction of ${\alpha}-bromoalkanoic$ acid with trimethyl amine hydrochloride. In other hand, (carboxymethyl) alkyl dimethyl ammonium chlorides such as (carboxymethyl) dodecyl dimethyl ammonium chloride and (carboxymethyl) tetradecyl dimethyl ammonium chloride were synthesized by the reaction of alkyl dimethylamine with sodium chloroacetate. The four kinds of alky carboxy betaine such as 2-(trimethylammonio) dodecanoate, 2-(trimethyl ammonio) tetradecanoate, (dodecyl dimethylammonio) ethanoate and (tetradecyl dimethyl ammonio) ethanoate were prepared from 1-(carboxyalkyl) trimethyl ammonium chlorides or (carboxymethy1) alkyl dimethyl ammonium chlorides. The surface activities including surface tension, emulsifying power, foaming power, foam stability, deflocculating effect, effectiveness of wettability and solubilizing effect were measured and also critical micelle concentration and hydrophilic-lipophilic. balance(HLB) were evaluated. These carboxy betaines show good surface activities as O/W type emulsifing agent and detergent.

The Potentiometric Performance of Mercury (II) Ion-Selective Electrode Based on Tetracycline Antibiotics

  • Poly (vinylchloride) (PVC) membrane electrodes based on neutral carrier, tetracycline was prepared as an active sensor for Hg(II) ion, and tested in different contents of the potassium tetrakis (4-chlorophenyl) borate (KTpClPB) as lipophilic salt. Bis (2-ethylhexyl) sebacate (DOS), bis(l-butylpentyl) adipate (BBPA), 2-nitrophenyl octyl ether (NPOE) and dibutyl phthalate (DBP) were used as diverse plasticizing solvent mediators. This electrode shows excellent potentiometric response characteristics and display good linearity with log $[Hg^{+2}]$ versus EMF response, over a range of concentrations between $10^{-7}$ and $10^{-3}M$. With 30.8mV/decade Nernstian slope, the detection limit was $6.9{\times}10^{-9}M$ and the response time was less than 20s. The proposed electrode yields very good selectivity for mercury (II) ion over many cations such as alkali, alkaline earth, transition and heavy metal ions. And it shows a very stable potential values in a wide pH range. This reliable electrode prepared was kept at least a month without considerable alteration in their response to Hg (II) ion.
