This study was performed to investigate nutritional effect of various dietary fibers on lead absorption, and protein and lipid metabolisms in growing rats. Sixty male rats of Sprague-Dawley strain weighing 140$\pm$1.1g were blocked into 10 groups according to body weight and fed 10 kinds of diet different with fiber sources [non-fiber, cellulose, pectin, guar gum or carboxymethylcellulose(CMC)] and lead levels (0 or 1%) for 4 weeks. Results were summerized as follows : 1) Food intake, weight gain, FER and PER were remarkably decreased in lead(Pb)-added groups. Weight gain, FER and PER in Pb-added pectin group were significantly lower than those in Pb-added non-fiber group. 2) Liver and kidney weights, femur weight and length, hematocrit and hemoglobin content were decreased in Pb-added groups. Especially femur and liver weights in pectin groups were the lowest among groups. 3) Total protein content in serum was significantly decreased in Pb-added groups but was not different with dietary fiber sources. Total lipid content in serum was not different with dietary Pb levels and fiber sources, but cholesterol content in serum of guar gum group was significantly decreased by Pb addition. 4) Nitrogen, lipid and cholesteol contents in liver were significantly decreased in Pb-added groups, and lipid content in liver of pectin and CMC groups was lower than other groups. 5) Daily urinary and fecal excretions of nitrogen, kipid and cholesterol were decreased in Pb-added groups, and fecal nitrogen was significantly increased in Pb-added groups, and fecal nitrogen of cellulose and guar gum groups was significantly higher than other groups. Fecal excretions of lipid and cholesterol were increased by dietary fibers, and especially fecal lipid was remarkably increased in pectin and guar hum group. 6) Pb contents in liver and femur were decreased by dietary fibers. Especially Pb contents in liver, kidney and femur were significantly decreased in guar gum group. 7) Daily urinary and fecal excretions of Pb were significantly increased in cellulose and guar gum groups, and fecla excretion of Pb in guar gum group was twice of non-fiber group. Pb absorption ratio was significantly decreased in guar gum group. In conclusion, dietary fibers have effect on protein and lipid metabolisms, and decreased intestinal absorption of Pb by increasing fecal excretion. But the degree of effect was different with dietary fiber sources.
This study was carried out to determine the lipid content and neutral lipid compositions of Japonica and indica rice bran oils. The average content ratio of neutral lipids, g]ycolipids and phospholipids were 89.5 : 4.0 : 6.5 in japonica rice bran oil and 93.7 : 2.6 : 3.7 in Indica rice bran oils, respectively. It was seen that the neutral lipid content was significantly higher in JAponica rice bran oil, while the contents of glycolopods and phospholipids were significantly higher in japonica rice bran oils. The neutral lipids consisted of esterified sterol, triglyceride, free fatty acid, free sterol, diglyceride and monoglyceride. Triglyceride was the highest (48.7-49.7%) among the neutral lipids. Major fatty acids of rice bran oils were oleic (39.65-43.68f)), linoleic (32.62-39.42%) and palmitic acid (16.54-18.83%). The linoleic acid content was higher in Japonica rice bran oils than in indica rice bran oils.
Total lipid content, lipid class and fatty acid composition of the Antarctic krill Euphausia superba collected from the water of King George Island, Antarctica during austral summer of 1997-1998, were investigated. The overall lipid content of 5. superba was 72 mg/g dry mass similar to the reported values for most temperate species. The neutral lipid of E. superba was 29% of the total lipid and that of phospholipid was 71%. The majority of neutral lipid was triacylglycerols(31.6% of neutral lipids) while phosphatidyl choline (44% of phospholipid) was the most abundunt in phospholipids. The quantitative composition of the fatty acid in E. superba show consisting mostly of the saturated 16:0 (16.6% -22.1%), along with the polyunsaturated 20:5(n-3) (20.6% -22.1%) and 22:6(n-3) (14.9% -16.9%) acids.

Environmental and medium factors were investigated as basic data for optimizing DHA production when using Thraustochytrium aureum. To study the effect of environmental conditions, the rotation speed and culture temperature were changed. Plus the trend of the growth characteristics, lipid content in the biomass, and DHA content in lipids were evaluated according to various initial glucose concentrations. The biomass, lipid, and DHA analyses showed that the physiological characteristics of T. aureum were closely related with the environmental and medium conditions, as in the case of other marine microorganisms. For example, a low rotation speed of 50 rpm lowered the cell growth rate as well as the DHA content in the lipids. A low temperature had a negative effect on the cell growth, yet a positive effect on the lipid content in the biomass. Different initial glucose concentrations had no effect on the lipid content in the biomass or DHA content in the lipids, yet did affect the cell growth. Accordingly, these results show that environmental and medium factors must be synthetically considered in order to optimize DHA production when using T. aureum.
Dietary lipid biomarkers (fatty acids, fatty alcohols, and sterols) in adult specimens were analyzed to compare and understand the feeding ecology of the euphausiid, Euphausia pacifica, from three geographically and environmentally diverse Korean waters (Yellow Sea, East China Sea, and East Sea). Total lipid content of E. pacifica from Korean waters was about 10% dry weight (DW) with a dominance of phospholipids (>46.9% of total lipid content), which are known as membrane components. A saturated fatty acid, C16:0, a monounsaturated fatty acid, C18:1(n-9), and two polyunsaturated fatty acids, C20:5(n-3) and 22:6(n-3), were most abundant (>60% of total fatty acids) in the fatty acid composition. Some of the fatty acids showed slight differences among regions although no significant compositional changes of fatty acids were detected between these regions. Phytol, originating from the side chain of chlorophyll and indicative of active feeding on phytoplankton, was detected all samples. Trace amounts of various fatty alcohols were also detected in E. pacifica. Specifically, krill from the Yellow Sea showed relatively high amounts of longchain monounsaturated fatty alcohols (i.e. 20:1 and 22:1), generally found in herbivorous copepods. Three different kinds of sterols were detected in E. pacifica. The most dominant of these sterols was cholest-5-en-$3{\beta}$-ol (cholesterol). The lipid compositions and ratios of fatty acid trophic markers are indicative of herbivory in E. pacifica from the Yellow Sea and East Sea (mainly feeding on dinoflagellates and diatoms, respectively). The lipid compositions and ratios of fatty acid trophic markers are indicative of carnivory or omnivory in E. pacifica from the East China Sea, mainly feeding on microzooplankton such as protozoa. In conclusion, lipid biomarkers provide useful information about krill feeding type. However, further analyses and experiments (i.e. gut content analysis, in situ grazing experiment, etc.) are needed to better understand the feeding ecology of E. pacifica in various marine environments.
Effects of cooking and drying methods on the lipids content and neutral lipid component of shrimp, Metapenaeus joyneri, were investigated. Total lipid content of the fresh shrimp was 6.0%(dry basis), which was not changed significantly depending on the cooking and drying methods. Lipid of the fresh shrimp was composed of 36.8% of neutral lipids, 21.5% of glycolipids, and 41.7% of phospholipids. Freeze dried shrimp was substantially higher in neutral lipid contents but lower in glycolipid and phospholipid contents than hot air dried one. Main components of the neutral lipids were triglycerides, free sterols, free fatty acids and esterified sterols. Freeze dried shrimp contained higher triglycerides contents than hot air dried shrimp, whereas free fatty acids content in hot air dried shrimp was greater than that of freeze dried one due to the decomposition of triglycerides to free fatty acids during hot air drying. Major fatty acid composition of the total lipid were palmitoleic acid, eicosapentaenoic acid and docosahexaenoic acid, and that of neutral lipid were palmitic acid, palmitic acid, oleic acid, eicosapentaenoic acid and docosahexaenoic acid in fresh shrimp.
This study was done to investigate the effect of age and dietary linolenic acid content and the linolenic acid/linoleic acid(LNA/LA) ratio on the lipid metabolism and formation of PGI2 and TXA2. The male Sprague-Dawley rats were fed 6 different with 0.2, 0.4, 0.6 of LNA/LA ratio within either 8% LNA(high LNA) or 4% LNA(low LNA) of fatty acid content for different feeding period(1, 4, 12 month). The dietary fat used were sesame oil, perilla oil, soybean oil and beef tallow. The concentration of serum total lipid, total cholesterol and HDL-C were increased with aging. Triglyceride concentration was decreased in 0.2 ratio of LNA/LA. The lipid content of liver showed similar tendency to that of serum. The ratio of PGI2/TXA2 was increased in 1 month rats and antithrombotic effect was reduced significantly with increasing age. The PGI2/TXA2 ratio was tended to be higher in diet of 0.2 and 0.4 LNA/LA ratio at high LNA level and in diet of 0.6 LNA/LA ratio at low LNA level. Especially PGI2/TXA2 ratio was increased linearly with rising LNA/LA ratio at low LNA level. It seemed that the LNA content and LNA/LA ratio had interaction to increase the antithrombotic effect bychanging TXA2 synthesis. And the dietary fatty acid related effect lowering the serum and liver lipid content, excepting triglyceride, was increased when dietary n3/n6 ratio was high(0.6) at both high and low n3 level. Therefore, it could not be recommended to consume large amount of n3 fatty acid or high ratio of n3/n6 to prevent cardiovascular diseases. These results suggested that the dietary fatty acid ratio of n3/n6 could be determined based on the n-3 content of dietary fat to reduce the risk of cardiovascular disease.
Lipid classes and fatty acid compositions of eight species of wild and cultured seawater fish in Korea were investigated. Total lipid (TL) contents of wild and cultured fish were $2.64\pm1.88\%$ and $5.42\pm1.76\%$, respectively, except for rockfish and striped beakperch. Non-polar lipids (NL) in all fish samples comprised approximately $84\%$ of the TL content. The proportion equation of NL content to TL content was y=0.9296x-0.4468 $(R^2=0.98l2, p<0.001)$. The most abundant NL class was triglyceride. The prominent fatty acids in all fish samples were 16: 0, 18: 1(n-9), 22 : 6(n-3) (docosahexaenoic acid, DHA), 16: 1(n-7), 20 : 5 (n-3) (eicosapentaenoic acid, EPA), 18 : 0 and 18 : 1(n-7). The polyunsaturated fatty acid (PUFA) group was the richest among the total fatty acids (TFA). DHA and EPA were comprised of approximately $85\%$ of n-3 PUFA. There was a positive correlation between TFA content and n-3 PUFA content; y=0.292x-0.0055 $(R^2=0.9349, p<0.001)$. The n-3 PUFA content of the cultured fish was approximately twice as much as that of the wild fish. Therefore, cultured fish were proven to provide better sources of n-3 PUFA if compared to wild fish.

This study was designed to determine total lipid and trans fatty acids(tFAs) content of 157 food items commonly consumed in the Korean diet and to prepare the database for the estimation of tFAs intake in Koreans. Total lipid and tFAs content was determined by Bligh and Dyer method and attenuated total reflection infrared spectroscopy, respectively. The content of tFAs in margarines ranged from 0.8% to 25.2%, depending on the manufacturers. In bakery products, cakes contained higher levels of tFAs(0.8~16.9%) than hamburgers(0.8~8.4%) and doughnuts(4.9~10%). The distribution of tFAs in crackers and cookies was wide(0.8~25%), whereas meat and fish products contained 0% to 8.9% of tFAs. Fried chickens had 0% to 14.6% of tFAs and French fries had 5.2% to 18.8% of tFAs. In noodles, nuts, chocolates and fermented fish sauces, tfAs were not detected.
This experiment was carried out to investigate comparison of total cholesterol, lipid and fatty acid composition of breast and thigh from female and male broiler meats. Total lipid and neutral lipid content of female and male broiler breast meats were lower, but phospholipid and glycolipid contents were highter than thigh meats. Unsaturated fatty acid composition of broiler thigh meats were higher than breast meats on neutral and phospholipid, but breast meat was higher than thigh meat on glycolipid. Glycolipid content in total lipid was lower in female than male broiler meat. Contents of palmitic acid in neutral lipid, palmitic stearic linolenic arachidic and arachidonic acid in phospholipid, palmitic and stearic acid in glycolipid were higher than male broiler meat. The highest content of total cholesterol in defatted tissue was thigh tissue of male and undefatted thigh tissue of female.
