The purpose of this study was to identify tourist product factor combinations which confer the highest utility to tourists and to establish the relative importance of factors in terms of their contribution to total utility across gender. Among 250 questionnaires, 230 questionnaires were utilized for the analysis. $X^2$ analysis, Conjoint model, Max. Utility model, BTL model, Logit model, K-means cluster analysis, and one-way anova analysis were used for this study. The findings from this study were as follows. First, the Pearson's R and Kendall's tau statistics showed that the model fitted the data well across gender. Second, it was found that total respondents and three clusters regarded taste price as the very important factor across gender. Third, it was found that the male and female tourists most preferred product with light red color, shaped package, and highly pungent taste sold at a cheap price in factory. Fourth, it was found that the male tourists most preferred simulation product with light red color, shaped package, and highly pungent taste sold at a cheap price in factory. The female tourists most preferred simulation product with light red color, shaped package, and mild taste sold at a cheap price in factory. Finally, the results of the study provide some insights into the types of effective product designs that can be successfully developed by marketers.

To furnish basic data for the utilization of leaf mustard as a raw material of salted and fermented vegetable food, major chemical compositions of Dolsan Leaf Mustard (DLM) were investigated. The moisture and ash contents of DLM were 87.5% and 1.4%, respectively. Compared with other Korean traditional or Japanese leaf mustard, DIM contained more crude protein (3.8%) but less crude fat (0.3%) and crude fiber (1.3%). As an alkali food, leaf and leat stalk had pH of 5.7 and 5.8, titratable acidity of 687 and 318mg/100g and alkalinity of 2.5 and 5.2, respectively. The major free sugar in DLM was glucose and fructose was also detected in a small amount. The contents of total and reducing sugar in leaf and leaf stalk were 574, 352, 820 and 538mg%, respectively. Total amino acid contents of leaf and leaf stalk were 8.0 and 2.5% on wet basis. Although the amino acid compositions of leaf and leaf stalk were different each other, glutamic acid and proline were the major amino acids in both of the leaf and leaf stalk. Significantly higher amount (ca.10.3-fold) of free amino acid was present in leaf (3074mg%) than in leaf stalk (298mg%). Glutamic acid and aspartic acid were the major free amino acids and essential amino acid contents in leaf and leaf stalk were 869 and 68mg% being 22.9 and 28.3% of total free amino acids.

To examine taxonomic relationships among 24 leaf mustard allies (Brassica juncea) derived from domestic collections and introduced species, principal component analysis (PCA) and cluster analysis on 16 morphological characters were carried out. Of 16 characters, total fresh weight, total dry weight, shoot fresh weight and leaf length were useful characters for the understanding of taxonomic relationships among them. Cluster analysis using scores of the principal components indicated that 24 leaf mustards could be grouped into domestic collections and introduced species at 1.0 of average distance in UPGMA. Moreover, in experiment of $F_{1}$ recombination test, heterosis appeared greatly in Sanchiohbachirimen takana A ${\times}$ Akaohba takana, Goheung namyang ${\times}$ Sanchiohbachirimen takana B, and Goheung namyang ${\times}$ Akaohba takana cross combinations. Sanchiohbachirimen takana A and Akaohba takana have a high parent combining ability for breeding cultivars using cytoplasmic male sterility.

This study investigated which nutrient solution is suitable for growth and secondary metabolite contents when three different vegetable plants are grown simultaneously in one hydroponic cultivation bed. Seeds of pak choi (Brassica compestris L. ssp chinsensis), red mustard (Brassica juncea L.), and arugula (Eruca sativa Mill.) were sown in the shape of a triangle in three places on rockwool cubes. The rockwool cubes were placed in semi deepflow technique (semi-DFT) hydroponic systems in a rooftop greenhouse after three weeks of growth as seedlings then cultivated with four different nutrient solutions, Korea Horticultural Experiment Station (KHE), Hoagland, Otsuka-A, and Yamazaki, at the rooftop greenhouse for two weeks. The leaf area of pak choi cultivated in Otsuka-A was the largest but SPAD values, leaf area, and fresh weight of arugula were highest with KHE treatment. The total glucosinolate (GSL) content of pak choi was 151.7% higher in KHE than in Hoagland, and there was no significant difference in Yamazaki and Otsuka-A treatments. The total GSL content of red mustard was 34.6 μmol·g-1 in Hoagland, and it was 32.6% higher in Hoagland than in Yamazaki. Total GSL content of arugula was 57.5% higher in Yamazaki and Hoagland nutrients than in KHE and Otsuka-A nutrients solutions. The total GSL content of three plants grown with KHE was 40.7% higher than with Yamazaki, and the other nutrient solutions did not show significant differences. Therefore, KHE nutrient solution is considered suitable for nutrient solution composition for the cultivation of three different Brassicaceae crops in a single hydroponic cultivation system.

Myrosinase in leaf mustard was purified and characterized to furnish a grounding information for utilizing the pungent taste and the potential antimicrobial capability of Dolsan leaf mustard to enhance the taste and storage life of kimchi. When myrosinase was purified from leaf mustard through a series of DEAE Sephadex, chromatofocusing and Con A Sepharose column chromatography, specific activity of the enzyme increased 7107-fold compared with that of crude enzyme preparation, and 18.8% yield was obtained. The purified myrosinase showed the optimum pH of 5.9, isoelectric point of 4.6, molecular weight of 129 kD, Km of 0.206 mM, and Vmax of $2.039\;{\mu}M{\cdot}min^{-1}{\cdot}mg\;protein^{-1}$, respectively. The optimum concentration of L-ascorbic for the maximum activity of the enzyme was 0.6 mM, and the enzyme activity decreased at a higher concentration of L-ascorbic acid than 0.6 mM, showing almost no enzyme activity at a L-ascorbic acid concentration of higher than 2.0 mM. Myrosinase activity in leaf mustard kimchi immediately after the kimchi was formulated was shown to be about 70 nmol/min/mg protein which decreased rapidly after 3 days of storage at $20^{\circ}C$, showing that less than half and almost none of the enzyme activity was retained in 4 and 10 days of storage, respectively.

This study was carried out to investigate the pesticide residue pattern among different leafy vegetables applied with foliar spraying under greenhouse and to check extrapolating from some residue trial data to other minor crops. Leafy vegetables used in this study were: Mustard greens (Brassica juncea L.), Kale (Brassica oleracea L.), Dacheongchae (a kind of pak-choi (Brassica rapa subsp. chinensis L.)), Leaf broccoli (Brassica oleracea var alboglabra), Perilla leaf (Perilla frutescens (L.) Britton var. Frutescens), Leaf lettuce (Lactuca sativa L.), Swiss chard (Beta vulgaris L. subsp. vulgaris) and Red leaf chicory (Cichorium intybus L. var. foliosum Hegi). These are cultivated all year under indoor or outdoor and cut the leaf from plant continuously during harvest time. The amounts of pesticide deposit in/on the continuous harvesting leafy vegetables were affected by the ratios of leaf area to weight. Ratio of perilla leaf was the largest among crops as 58 $cm^2/g$. The residue levels of 7 pesticides in/on perilla leaf were the highest than those of other crops through the statistical analysis from zero day to fifth day after last application. The representative crop in 8 crops was perilla leaf selected based on the amounts of daily consumption and the high residues. This study suggest that the continuous harvesting leafy greens should be separated from the one time harvesting leafy vegetables for the pesticide recommendations because of different harvesting habits and pre-harvest intervals.

The objective of this study was to compare the anticancer activity of glucosinolates against four different cancer cells; SNU-251, SNU-354, SNU-C4, MCF-7 and to determine the amounts of glucosinolates in mustard leaves. Green and red mustard leaves were cultivated on the field of Rural Development Administration from May to July, 2010. After the leaves were harvest and lypophilized, the fine powder was extracted with boiling 70% methanol(v/v) for the measurement of anticancer activity and then applied to the cancer cells obtained from Korean Cell Line Bank(KCLB). The anticancer activity of red leaf mustard was higher than that of green mustard leaf, particularly in SNU-251 for 24 hr and in SNU-C4 for 48 hr. In both green and red mustard leaf, sinigrin was the most abundant glucosinolte and was determined as 4.71 and 3.06 mg/g dry wt., respectively, but glucoiberin only presented 0.14 mg/g dry wt. with minor amounts.

Compositional changes in pungent components of Dolsan Leaf Kimchi during fermentation were investigated. Major volatile compounds identified in the kimchi were 3-isothiocyanate-1-propene(allyl isothiocyanate, AITC) di-2-propenyl disulfide, 1-methoxy-2-butanol, 4-isothiocyanate-1-butene and dimethyl trisulfide. The contents of allyl isothiocyanate and 4-isothiocyanate-1-butene decreased, while dimethyl trisulfide increased during fermentation and storage. 1-methoxy 2-butanol increased at the initial stage of fermentation, showing highest at 2~3 days, and decreased thereafter. Di-2-propenyl disulfide decreased after 5 days and increased after 10days of storage. Total glucosinolate content increased by 3days and decreased from 4days of storage.
The principal objective of this fundamental research was to analyze the physicochemical changes and sensory properties of Dolsan leaf mustard pickles (DMP) for the development of low-salt pickles in order to contribute to the diversification of food. The DMPs were stored at −2℃ for 90 days, with salinity maintained at 1.63% to 1.85%. The pH was decreased during storage, and the acidity was gradually increased for up to 60 days of storage, after which it was increased rapidly to 1.10. The L-values (lightness) from the stems were decreased during storage. The a-values (greenness) were increased, while the b-values (yellowness) were decreased. It was shown that the DMP had a progressive browning phenomenon and the number of lactic acid bacteria gradually decreased. The sensory evaluation showed that crunchy textures were decreased and touch textures were increased at 30 days. Therefore, Dolsan leaf mustard is suitable as a material for low-salt pickles during storage for 90 days. The results of the analysis of the physicochemical and sensory properties indicate that the optimal storage for DMP was maintained for up to 30 days.

There is extensive evidence suggesting the protective role of fruits and vegetables against chemically induced carcinogenesis. We have tested the ability of a representative range of Korean vegetables to act as blocking agents against neoplastic initiation by determining the induction level of quinone reductase , an anticarcinogenci marker enzyme, in hepalclc 7 cells exposed to vegetable extracts. Among thirty vegetables tested, Arcitum lappa(Burdock), Brassica juncea (Mustard leaf), Pteridium aguilinum (Bracken) and Chrysanthemum cornoratium(Crown daisy) caused a significant induction of quinone teductase activity with a limited increase in arylhdrocarbon hydroxylase activity. Combination of crown daisy with burdock had synergistic effect on quinone reductase induction. Quinone reductase-inducing activity was found mostly in hesane and ehtylactate fractions of MeOH extract of crown daisy while it ws not quinone reductase activity in liver, kideny, lung, and small intestine, confirming the presence of potent QR inducer (s) in crown daisy. These sata suggest that some vegetables including crown daisy induced QR merits further investigation as a potential cancer preventive agent in human.
